After 38 years in the wine industry, it’s hard to top yourself.
Successful winery – check. Popular tasting room – check. Gorgeous
vineyards and hundreds of awards and accolades – check. So what
keeps Gary Eberle going? It’s the love of the grape, the love of fine
wine and the true belief in the value of hospitality that makes every
visitor a friend at Eberle Winery.
Considered one of the premier wineries in Paso Robles, Eberle is
currently celebrating 33 years of fine winemaking. Nestled on ahilltop overlooking the 60-acre Estate Vineyard, Gary Eberle and
Winemaker Ben Mayo handcraft every bottle of wine that has Gary’s
name on the label. Currently at 27,000 cases produced each year, all
Eberle wines are aged in 17,000 square feet of underground caves.
This magnificent space is not just for the Reserve wines which he
makes on very special years (13 total since 1979), the caves are also
home to the Wild Boar Room where Eberle hosts private events and
guest chef dinners featuring celebrity chefs from around the country.
The VIP room in the caves is perfect for small groups to enhance their
wine tasting experience with a private tour guide and access to library
and reserve wines. The Wine Spectator calls it, “One of the best tours
on the Central Coast!”Known as the “Godfather of Paso Robles”…Gary Eberle is a true
pioneer who helped create the appellation and has worked tirelessly
to promote Paso Robles on a national and international basis. Eberle
built Estrella River Winery in 1973 (currently Meridian Vineyards)
and was the fourth winery in the region. To date, there are more than
200 wineries in the area and Paso Robles is now considered a
premiere destination for anyone searching for that perfect glass of
wine.
A lot can happen over decades. For Gary, it meant leaving Estrella
River and opening up his own Eberle Winery. It also meant becoming
the first person to create a 100% Syrah in the United States – ther
now an Estrella clone named after him – and a lifetime of mentor
and educating new winemakers in the art and science of mak

The original Rotta vineyard and winery was first established in
1908 by Joe Rotta and was later sold to Clement Rotta in the 1920s.
After prohibition the winery was bonded and became known for itshearty Zinfandels that were mainly sold straight from the barrel into
gallon glass jugs. Today grandson, Michael Giubbini, is proud to be
carrying on the family tradition, “We are the only one of the three orig-
inal family owned San Luis Obispo County wineries still in operation
– I’d like to keep it that way.” Michael remembers working the vine-
yards as a child and has many fond memories of those early days
around the winery. The sense of tradition and history is very impor-
tant to him.
One of Michael’s first tasks when he took over in 1990 was to care
for the old head-pruned vines that had been farmed by his grandfa-
ther many years ago. He replanted some of the forsaken vines;
however, the vineyard still has several of the original Zinfandel vines,
now more than 70 years old. The estate vineyard’s name was changed
to Giubbini and until 2002 most of the grapes were sold to Castoro
Cellars and were labeled with the Giubbini Vineyards designation.
Mike also revived the winery and resurrected the Rotta label.
Together with Mark Caporale, his partner and Rotta’s winemaker, he
produces approximately 17,000 cases of wine with grapes sourced
from the estate vineyards and other local grape growers using a unique
blend of history and modern winemaking. Both partners believe that
“good wine is made in the winery – great wine begins in the vineyard.”
According to Mark, “When you have the best grapes, it takes only a
little magic, cooperation from Mother Nature and sound winemak
to produce premium wine.” Today those old estate vines are a k
element to the wine production at Rotta and they continue to prod
hearty Zinfandel just like in the old days.
Carrying on with a sense of tradition, the tasting room locatedthe property was built from the old wood of the original win
building. The charming tasting room is located in the Templeton h
and is open daily from 10:30 a.m. to 5:30 p.m. In addition to
Zinfandel, the tasting room offers a wide range of premium white
red wines. For a $3 per person tasting fee, visitors are offered a sel
tion of Chardonnay, Muscat Canelli, Zinfandel Rosé, Zinfan
Merlot, Cabernet Franc, Cabernet Sauvignon and the recen
released Bordeaux-style blend known as Trinity. The 2006 vintag
the Giubbini Vineyard Estate Dry Farmed Zinfandel was also recen
released and tends to sell out quickly. The Reserve Merlot is anot
popular wine in the tasting room and although it is currently sold
the next vintage will be released the end of the month.
It is always nice to end a tasting with something a little on
sweet side. At Rotta you can sample the Zinfandel Port or for a v
unique experience try the Black Monukka – Rotta Winery is
exclusive producer of this rare, sweet dessert wine. The wine is ac
ally aged in small barrels left outside in the sun for an extend
period of time. The warmth of the sun while aging gives the win
delicious caramel and butterscotch flavor with nutty aromas. T

Jada Vineyards, so named for a city located
in Northern Sicily, came to fruition when Jack
Messina was considering property in Paso
Robles in which to establish a vineyard. Theproperty was planted with barley but Messina
knew that the cool coastal air from the Pacific
Ocean, abundant sunshine, massive deposits
of calcareous shale and limestone underneath
shallow top soils of clay loam, was perfect to
build his family-owned winery.
After selling grapes to a handful of
premium wineries in the area, Messina
persuaded Scott Hawley to oversee the wine-
making and begin crafting what would
become the first Jada wines. In 2007, ground
was broken on the winery and the doors tothe tasting room were opened in May, 2008.
The inaugural vintage included only five
wines – Jack of Hearts, Passing By, Jersey Girl,
and Hell’s Kitchen, which were all reds, and
one white wine called XCV. All the names
have a story that goes with them, but that is
something you will need to visit Jada to sort
out.
Jada is committed to small-lot, limited-
production winemaking with a focus on
Rhône and Bordeaux blends. “We are of the
philosophy that making wine requires a great
deal of attention, but minimal intervention,”
says harvest manager and winemakers
apprentice, Josh Messina, Jack’s son. There are
just nine wines in total at Jada; six reds, two
whites, and a rosé and the idea of a vast port-folio isn’t in keeping with their objectives.
However, there are the perennial favorites like
Jersey Girl, which is 100 percent estate Syrah;
Hell’s Kitchen, a blend of Syrah, Grenache,
Mouvedre and Tannat; and Jack of Hearts, a
proprietary blend of Cabernet Sauvignon,
Petit Verdot and Merlot. Their wines have
won prestigious awards including the San
Francisco Chronicle Wine Competition and
the Long Beach Grand Cru.
Once inside the tasting room, the stained
concrete floor, alight with a colorful pattern,lifts the eyes up to the soft wood tones of the
sleek tasting bar. The ceiling narrows down,
forcing the eyes to the windows behind the
tasting bar with beautiful views to the vine-
yards. Stepping into the adjoining room,
known as the viewing deck, there is an expan-
sive area of tables and chairs which allows
views of the vines. The facility is a hip
modern design which juxtaposes the earthy,
laid back rolling hills. Knowing they have
ardent fans, they established the Long-Life
Wine Club, and custom events through
the year are a tribute to their members. “I
given that we would not be where we
today without the fanatical support of
wine club members,” Josh adds. As w
growth in any industry, things change. Wthe advent of their third anniversary
month, David Galzignato joins Jada as w
maker. Formerly the winemaker at Cha
Krug in Napa, he was also winemake
small-lot wineries like Paraduxx, Mark Da
Winery and Lewis Cellars. Galzignato inhe
11 varieties of estate grapes planted at J
including Syrah, Mouvedre, Tannat, Viogn
Roussanne, Grenache, Cabernet Sauvign
Cabernet Franc, Merlot and Petit Verdot.
But it wasn’t always this way. In 1999
acres of grapes were planted to replacebarley, and in 2006, a major replanting

sanne, and two different clones of Sy

and Rhone estate blends that are
not found at many wineries in
California.” And several growers
in the area have mentioned that
their Merlot alone shows the
promise of being some of the best
anywhere in California. “Wewant to continue our journey as a
below-the-radar, word-of-mouth
boutique winery,” Josh says. “We
don’t want to be big; we want to
just blow your socks off in the
consistency of our wines.” In
Jada’s opinion all wines should all
taste like special reserve wines.

Kentucky Bourbon Glazed
Pork Ribs paired withNiner Wine Estates 2007Bootjack Ranch Syrah
I’m from the Midwest and not only is the Kentucky Derby huge
but so is barbecue. That’s why I got so excited about Niner WineEstates Tasting Room Manager Heather Lane’s new pairing. She,
along with her husband, were inspired by the May 7th Club 9 Pick-
Up party which is a Kentucky Derby themed event. So it’s only appro-priate that this pairing follows the same theme.
Syrah and pork are a natural combination in the food-and-winepairing world. Not only is the 2007 Bootjack Ranch Syrah a
wonderful year-round wine but it works particularly well when you
add in a smoky, meaty, earthy component like the pork ribs. I havewatched countless grilling shows and I’m sure you will agree that any
recipe containing molasses and Kentucky Bourbon are going to be
great. Whenever I get a chance to try a new marinade or glaze, I’m onit. This recipe is no exception. I always think that cooking ribs is
going to be difficult but Heather’s recipe is easy and very rewarding.The 2007 Bootjack Ranch Syrah melds wonderfully with the round-
ness of the pork. The glaze helps to highlight the same attributes
found in the Syrah but also acts as a compliment to its spiciness.
There is a rustic hickory pit barbecue essence to this wine whichmakes for a great pairing. Add the smokiness from the grill and you
have a flavor explosion dish worthy of any summer barbecue party.Grapes for this wine were grown at Bootjack Ranch, on the east
side of the Salinas River, in Paso Robles. This complex wine showsblack fruit, berries, plum and a smoky oak character in the nose. It
has floral notes with good acidity. At this time, the 2007 Bootjack
Ranch Syrah is only available to Niner Wine Estates Club 9 members.Their wines can be purchased online or in the tasting room so be sure
to stop by for the best selection.The “Run for the Roses” event is set for Saturday, May 7th from 2

KENTUCKY BOURBON GLAZED
PORK RIBS

Niner Wine Estates Tasting Room Manager
• 4 pounds of pork spare ribs, cut into 6 inch sections. Place in an extra large stock
pot with approximately one and hal f inches of water.
Add to pot:
• 1 medium white onion, quartered
• 1/2 tablespoon minced garlic• 1/2 tablespoon seasoned salt
Cover stockpot, bring to boil; then reduce to simmer for 45 minutes -- be sure to
rotate ribs about every ten minutes. While the ribs are cooking on the stove, creat
the sauce in a medium-sized pot.
• 1/4 cup apple cider vinegar
• 1/3 cup molasses
• 3/4 cup Kentucky Bourbon
Simmer and stir until the molasses is dissolved. Then add the following:
• 2 cups ketchup
• 2 teaspoons seasoned salt
• 1 teaspoon course ground black pepper• 2 tablespoons liquid smoke
• 1/2 teaspoon cayenne (for medium heat);
1 teaspoon cayenne (for hot) – season to taste
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 1/2 teaspoon Colman’s Powdered Mustard
Simmer and stir for 10 minutes, then turn off – let it cool and thicken.
Place ribs on barbecue and coat with sauce. Cook on high heat for about 5 minute
per side, serve and enjoy with a glass of our estate-grown 2007 Syrah!

2007 Cheval Sauvage Pairedwith Salmon WellingtonIt’s that time of year when we want to leave the heavy food and wine
in search of lighter fare and this pairing is spot on. Clay Brock, the
General Manager and Director of Winemaking at Wild Horse Winery
said, “Salmon and Pinot are a classic food and wine pairing…it is a
marriage made in heaven.” The Wild Horse 2007 Cheval Sauvage,
their classic Burgundian style Pinot Noir, has beautiful Old World
earthy aromas followed by an abundance of brown sugar, strawberries,
and Asian spices. This dish combines two of my favorites; wild caught
salmon prepared wellington style in a flaky pastry crust. Due to thefirmness of the fish, it naturally lends itself for this preparation. As it
bakes, the herbs meld into the pastry and produce such a wonderful
aroma that you can’t wait for it to come out of the oven. The subtleties
of this dish along with the extremely silky and lush tannins of the
2007 Cheval Sauvage makes for a delicious pairing.
Cheval Sauvage, French for “Wild Horse,” is their finest Pinot Noir.
Only the best Pinot grapes are selected for this label. Coming from
specifically selected barrels of wine from individual vineyard lots,
bottles bearing the Cheval Sauvage label represent less than one
percent of Wild Horse’s Pinot Noir production and the vineyard often
varies with each vintage release. The 2007 Cheval produced around1000 cases. The 2008 will be released at a big release party at the
winery on Saturday, September 18. In celebration of the new vintage
“futures” are being sold at 30% off by the case. This is the largest
discount offered to the public on this spectacular wine. The wine is
available to both wine club members and guests to the winery and can
also be found in select fine restaurants.

Blending Seminar and learn the art of blending wine during this fun
and informative session. Experience first-hand what being a wine-
maker is all about. You will get to sample a variety of Pinot Noir from

INGREDIENTS
• 1 tablespoon kosher salt
• 1 ½ pounds salmon fillets
• 1 teaspoon chopped fresh thyme
• 1 teaspoon dried oregano
• 1 teaspoon chopped fresh basil leaves
• 2 teaspoons dried dill weed
• 1/2 cup Dijon mustard
• 1-1/2 cups mayonnaise
• 3/4 cup crumbled feta cheese• 1 cup frozen chopped spinach,
thawed and drained
• 1 (17.5 ounce) package frozen puff pastry, thawed
• 1 egg white, beaten
DIRECTIONS
Preheat an oven to 375 degrees.
Sprinkle salt on both sides of the salmon. Mix thyme, oregano, basil, dill,
mustard and mayonnaise in a small bowl and spread over the salmon, then
sprinkle the feta cheese on top. Layer the spinach over the feta cheese.
Roll the pastry out wide enough and long enough to wrap around the
salmon, about ¼ inch thickness. Place the salmon in the center of the pastry
and fold the pastry over the salmon. Place the roll seam-side down on the
baking sheet. Cut several small slits in the pastry to allow steam to escape.
Brush the egg white onto the pastry.
Bake in the preheated oven until the pastry is golden brown and the salmon
flakes easily with fork, about 45 minutes.

The 32-point compass rose has long
been a symbol of guidance and direction to
travelers throughout the ages, but when
you’re traveling through Paso Robles wine
country, it’s the unmistakable emblem of
Edward Sellers Winery.
“You always need a direction in life, a
road map to help guide you along the way,”
said owner Ed Sellers. Both Ed and his wife
Dani have traveled all over the world and it
was during a trip to Venice that they first
saw a painting of the same 32-point
compass rose that graces each of their
bottles. Lucky for us, their lives were later
guided from Orange County to Paso Robles
on a visit to their dear friends John andKendall Carson. At the time they were
looking to purchase a property in Healds-
burg, but after their trip to Paso Robles,
they realized they’d found their new home.
One year later in 2004, they bought their
30-acre property and produced their first
vintage of 2,500 cases of five different types
of Rhône-style wines.
While working on the property, Edward
Sellers fans could visit the tasting room in
downtown Paso Robles, but this past
September marked the opening of their new
tasting room overlooking their vineyards.
The urban barn style is both modern yet
comfortable, and as you enjoy your tasting,
you’re also treated to a sneak peak of the

As Rhône-varietal enthusiasts, Ed and
Dani were thrilled by how closely the soil
and growing conditions in Paso Robles
resemble those of the Rhône region in
southeastern France. The combination of

helps to develop intense flavors in their
wines, which are a combination of old-world style with a California fruit twist.

Roussanne and Syrah Sélectionnée (a blend
of their best Syrah), Edward Sellers also

Calcareous Winery, so named for the calcareous limestone soils that
abound on the property, is well-known for planting Chardonnay, but
also Cabernet Sauvignon and Syrah, which are their two top red vari-
eties. You’ll also find Pinot Noir, Viognier and other wines, though
hearty reds are the focus. To make those bold, expressive red wines,
and soft whites, they turn to winemaker Jason Joyce.
“Here at Calcareous, we pick some grapes at the end of August,
and some we pick in the middle of November,” Jason says. “Contrary
to what some say, waiting until November is not some ploy to get the
fruit over ripe in order to make big jammy Paso wine. Each variety
planted here marches to its own beat when determining the timing of
when its fruit will be ready. Some vines take their own sweet time,”he states. Therefore Jason spends a lot of time in the vineyard,
assessing the timing of his vines. “It’s a common throw away line in
winemaker bios about how the best wine is made in the vineyard,” he
says of the redundant refrain. But pruning vines actually is a back

as much focus as sorting the fruit, punch downs and pressing during
harvest. “When done correctly with proper care, the foundation for
great wine is laid,” Jason admits. “The way a vine is pruned is the f
step you take in influencing the fruit of the next vintage.” Propruning outlines how much fruit each vine will yield for
following year. “It can not be overstated how important viney
practices like pruning are in determining the wine. With each cu
are impacting how the vine will grow, how it will produce fruit,
how healthy it will be. The ideal goal is to get two buds from e
spur position. This way we get the low yields and concentrated f
we hope for,” he says. And making wine at a smaller operation me

In ink on my calendar, is June 2-5 when Pismo Beach hosts Wine,
Waves & Beyond to benefit AmpSurf, a non-profit organization
founded by Iraq Veteran Dana Cummings (http://www.ampsurf.org). At this event, Central California’s Wine Country meets the breath-
taking Central Coast. Some of the best Wineries, Breweries and Culi-
nary Artists will be participating. There are a wide-range of lodging
choices in Pismo and Shell Beach from which to choose. If you wish,
you can park your car and never return to it until you are ready to go
home which is how I prefer to spend many of my weekends getaways.

Paso Wine Man returns to kick-off the 29th Annual Wine
Festival, May 20-22. A Toast to Paso is the second in the 2011video series following, Zinfandel – Paso’s Wine, which received
more than 75,000 YouTube views since February. In this new
video, Paso Wine Man leads the community from the vineyard to
the winery and tasting room to the Downtown City Park for a
toast to the future and to the 29th Annual Wine Festival. The
park is an iconic location for Wine Festival, as
marquee events take place there throughout the
weekend. All ticket levels are currently on sale at

Grand Tasting (2-6 p.m.), Saturday Wine Country

“Futures also known as ‘barrel samples’ have

in 2008,” said Stacie Jacob, executive director of
the Paso Robles Wine Country Alliance. “The addition of a
Futures Auction was a natural complement, allowing guests to
not only sample an unreleased wine, but also bid to secure a caseof these highly sought out and limited wines.”
Attendees are invited to not only toast, but taste the future,
now during RESERVE. More than 50 wineries feature wines in
four distinct categories including library, reserve, futures and
refreshing power white/rosé samples. Each of the seven wineries
featuring futures (Anglim Winery, Caliza Winery, Clavo Cellars,
Cypher Winery, Four Vines Winery, Silver Horse Winery and
Villicana Winery) will have five cases of wine available on the
auction block. The top five bidders of each futures wine w
secure a case to take home once it has matured through the wi
making process and is ready for release. The top bidder of ea

Celebrating 10 years

Ten years ago Robert Hall decided to
“retire” in Paso Robles with 40 acres of land.
He planned on planting grapes and perhapshaving a winery; however, no where in his
wildest dreams did he expect to have a
winery with a national distribution, an
80,000 case production, a spectacular hospi-
tality center and to be honored with the
Golden State Winery award.
Robert gives much of the credit for the
winery’s success to several of his employees
who have been with him almost since the
beginning. His key long term employees
include winemaker Don Brady, cellar master
Juan Contreras, vineyard manager RichardRaper, director of marketing Kim Murphy-
Rodrigues and hospitality director Jeanice
Reyes. “With my team of key individuals in
place I am able to travel and know that my
business is in good hands.”
Travel time is likely to increase for Robert
since he has recently given national distribu-
tion to Domaine Napa Wine Company. The
distributor had been doing a fantastic job
representing the brand in California for the
past eight years and will now represent
Robert Hall in 50 states. Robert Hall will also
be stepping up their international presence
with distribution in 14 countries. Clearly this
is not retirement for Robert; however, he
doesn’t mind at all, “I want to go to work each
day, I enjoy everything I do from spendingtime on the tractor to traveling to support our
sales team.”
The hospitality center located on Highway
46 East is a place Robert built with passion.
His expansive background in hospitality
including restaurants, entertainment and
liquor stores assisted him in his vision for
building a hospitality center which includes
his love of wine, food and entertainment. The
tasting room located at the hospitality center
is open daily from 10-6 to provide visitors
and locals with an opportunity to taste the
wines that have been made with “the Essence
of Paso Robles™” and continue to win gold
and best of class awards time and time again.
There is always cause for celebration at
Robert Hall Winery and thanks to Robert’s
vision the hospitality center has many event
facilities. The underground wine caverns,
spacious tasting room, wine library, Meritage
dining room, open-air amphitheatre, picnic
areas and bocce ball courts are all available as
perfect venues for celebrating. Although they
are often booked for private part
weddings and concerts, Robert Hall is p
ning a large number of events open to
general public to celebrate the winery’s

an affair like none other! The 4th Annual SLO Wine
& Grill Affair is an exciting event that benefits a
very special non-profit organization in SLO, Transi-
tions Mental Health Association. Transitions-
Mental Health Association is a non-profit organiza-
tion that helps children and adults live, work and
grow in our community. TMHA operates 27
programs at over 35 locations that reach over 2,000
people and 1,500 families in San Luis Obispo and
Santa Barbara counties. The emphasis of TMHA’s
many services is to teach vital independent living
skills, and build a framework for community re-
entry through personal empowerment and hands
on experience. For over 30 years, T-MHA has been
dedicated to providing housing, employment, case
management and life-skills support to teens and
adults with mental illness; and support, resources
and education for their loved ones
Wineries will gather on the historic Filipponi
Ranch at Per Bacco Cellars to compete in a friendly
cook-off style event. Each winemaker will be on the
grill ready to serve up a signature grilled dish to pair
with their wines. Guests will vote on their favorite
food and wine pairings to declare a “People’s
Choice” winner. There will also be a panel of local
“celebrity” judges to give us an official winner! Live
music, local chocolate, olive oil and cheese vendors
will also be on hand to support Transitions.
This event has been a major success for the past
three years and this year is gearing up to be the best

The Central Coast Wine Classic Foundation is pleased to announcethe grantees for funds from the 2011 Twenty-Seventh Annual Central
Coast Wine Classic, to be held from July 7th through 10th, in Avila
Beach, Shell Beach, San Simeon, Arroyo Grande, San Luis Obispo and
Paso Robles. From net proceeds from the Wine Classic, the Founda-
tion funds specific projects for 501(c)3 non-profit corporations in San
Luis Obispo County and Santa Barbara County whose missions are in
the Healing, Performing or Studio Arts. Over the past seven years the
Foundation has conferred grants totaling $1,615,943 to 76 such non-
profits. Grants for 2011 will be conferred in early October in San Luis
Obispo.
For 2011, the Wine Classic Foundation Board has chosen thefollowing beneficiaries: Avila Beach Civic Association, The Center for
Nanomedicine in Santa Barbara, Coast Caregiver Resource Center in
Santa Barbara, Friends of Hapitok in San Luis Obispo, Friends of the
Atascadero Martin Polin Library, Friends of the Visual Arts & Design
Academy in Santa Barbara, The Link Teens at Work Program in Atas-
cadero & San Miguel, Loaves & Fishes in Paso Robles, North County
Rape Crisis & Child Protection Center in Lompoc & Santa Maria,
Northern Chumash Cultural Preservation Kinship in San Luis Obispo,
Poetic Justice Project in Santa Maria, Santa Barbara Master Chorale,
Santa Barbara Neighborhood Clinics, The Sexual Assault Recovery &
Protection Program of SLO County in San Luis Obispo, United Cere-
bral Palsy in San Luis Obispo and Visiting Nurse & Hospice Care inSanta Barbara.
Over the Twenty-Six-Year History of the Central Coast Wine
Classic, it has been recognized as one of the top charity wine auctions
in America and has been lauded by such eminent publications as Wine
Spectator, which is one of the event’s annual sponsors, among others.
A major benefit for San Luis Obispo County tourism, the Wine Classic
hosted patrons from thirty states and almost two hundred California
communities during the 2010 event. The Official Hotel venue of the
2011 Central Coast Wine Classic is now the Avila Lighthouse Suites,
directly across the street from the beach and park in Downtown Avila
Beach.
The theme for 2011 is “The rejuvenation of Avila Beach,” with
many of the activities taking place in and around Avila Beach. Activi-
ties include a Barrel Tasting, a Reserve Tasting, various Symposia on
specific wine types, such as Malbec, Special Wines from Around the
World, and Chardonnay from throughout California, as well as a
Cooking Demonstration hosted by San Francisco Bay Area Culinary
Icon, Narsai David, Winery Dinners, including an Outdoor Winery
Dinner Concert at the Avila Beach Resort featuring world-renowned
percussionist Airto Moreira and his Group, a Black-Tie Dinner at
Hearst Castle, featuring Chefs Roy Yamaguchi, D.K. Kodama and
George Mavrothalassitis from Hawaii, and the exciting Rare & F Wine & Lifestyle Auction, featuring an array of fine wines and uni
lifestyle excursions in California, the United States and around
world to countries such as France, Italy, Spain, Africa, Australia
New Zealand.

The Santa Ynez Valley winery tasting room offers one of the CentralCoast’s most comfortable and comprehensive visitor experiences,
including daily winery tours and extensive picnic facilities. Archive
photos and other artifacts chart the Firestone family’s pioneering
heritage, from turn-of-the-century tire innovation to the establishment
of Santa Barbara County’s first estate winery in 1972. The recently
remodeled tasting room features an island bar and picture windows
that overlook our estate vineyards. We strive to offer an informative and
welcoming atmosphere that will appeal to wine enthusiasts and novices
alike.
Tours guide you through the history of the winery, and through the
production of fine wine from vine to glass. Tours begin at the demon-
stration cork tree and continue out into the estate vineyards. The
winemaking process is then showcased from the crush pad to the
fermentation cellar to the barrel cellar. Tours typically last between 20
to 30 minutes, depending on the volume of guests and depth of ques-
tions.

There’s an old French proverb that states that “in water, one s
one’s own reflection; but in wine one sees reflected the hear
another”. If this is true, then there are many hearts to be seen reflec
in each sip of Carina Cellars wine.
What began in 2002 as an exciting dream between owner Da
Hardee and winemaker Joey Tensley, has since grown to beco
known as a leading producer in high-quality Rhône-style win
Tensley’s passion for winemaking stems from a career built on ex
rience; after graduating high school in Bakersfield he moved to Sa
Barbara and immediately became involved with the wine indus
Beginning his career at Fess Parker, Babcock and Beckman winer
Tensley moved on to create his own label, Tensley wines, in 19
and although he has never received a formal education, Tensle
credited with creating some of the most outstanding wines on
Central Coast.
Hardee too was bit by the “wine bug” early on. While still
college Hardee had already begun his odyssey of collecting wi
from around the world, and when he became a practicing attorney
built his first wine cellar. After moving to Santa Barbara in 19
Hardee became actively involved in the local wine community wit
dream to begin his own winery. His dream came true only six ye
later.

“Drink good wine”. A simple motto for a man whose namesake
winery produces some incredibly intriguing and complex wines. Ertu-
gral “Art” Sevtap is the owner and winemaker of Sevtap winery, which
came onto the Santa Ynez Valley wine scene in 2008 with only a few
hundred cases of hand-crafted Bordeaux-style wines, produced with
fruit from several prominent vineyards throughout the Central Coast.
A couple years later Art had more than tripled
his production, as well as opened the doors to
his tasting room in downtown Solvang. Yet the
journey to the fulfillment of this dream offered
several interesting turns along the way.
Born in Istanbul, Turkey, Art immigrated tothe US in 1992 to attend school for deep sea
diving in Irvine, but a last minute decision
brought him to Santa Barbara instead. Once here
he attended Santa Barbara City College to study Marine Technology,
and after a couple years, moved to New Orleans as an Underwater
Construction Worker for the oil rigs and pipelines. During this time,
Art loved watching Chef Emeril Lagassi’s cooking show on the Food
Network, so three years later he gave up life at sea for a job at Emeril’s
restaurant, Nola in the French Quarter of New Orleans.
In time, Art came back to Santa Barbara where he worked at Pierre
Lafond and drove for Jeep Tours throughout Santa Ynez Valley. As achef, Art had always appreciated wine, but now his passion for food
and wine became clear. He began to take vineyard management and
chemistry classes at Hitchcock University as well as UC Davis exten-
sion, which helped him land his first wine job in production at Kalyra.
