varieties; Chardonnay, Pinot Noir and Pinot Meunier. A range of styles are produced from non-vintage,

to rosé, vintage and a host of prestige, vintage luxury cuvées.

Although nothing is more synonymous with celebrations,

Pascal Doquet, Coeur de Terroir, Le Mesnil Sur Oger, Grand Cru, 2006 £ 10 5.0 0 £ 19.0 0 A vineyard man through and through, viticultural methods are 100% organic and he harvests his grapes when they are as ripe as possible. Aged for ten years sur latte, showing ginger, anise and blueberry, this is his most complex wine to date.

Dom Perignon, 2008 £ 3 4 0.0 0 This rich, powerful Champagne showed so much promise that it was the first Dom to be released out of sequence (after the 2009 vintage) to allow for additional aging. It balances incredible purity and elegance, with a stacked, concentrated feel on the palate. A rare mix of ripe, pure, concentrated fruit paired with purity, focus, and precision.

Louis Roederer, Cristal, Brut £4 4 0.0 0 A Champagne for the ultimate celebration, first created by Roederer in 1876 for the court of the Tsar of Russia. Light gold in colour, this is an intense and refined blend of Pinot Noir and Chardonnay with notes of apricot, hazelnut and fresh pastry.

Sparkling wines

Gusburne Estate Brut Reserve, 2013 £6 0.0 0 This fresh and lively sparkling wine is produced by an award winning English estate on the low slopes of the ancient Kentish escarpment at Appledore. The extensive two hundred hectare Estate is on a single site with twenty hectares under vine cultivation with Chardonnay, Pinot Noir and Pinot Meunier grapes.

Bouvet Ladubay Rubis Rouge NV, 2014 £ 5 0.0 0 £9.0 0 A sparkling red wine from the Loire Valley. Bright and shimmering cherry red with a peony pink froth. A round and robust wine made by ‘méthode traditionnelle’, delightful to relax and unwind with.

Nor’ Royale £9. 5 0 Simple but sophisticated, our version of this classic uses Braemble, topped up with Champagne and some added sparkle.

Haitian Revolution £9.0 0A refreshingly elegant elderflower infused take on the classic mojito, lengthened with Champagne.

The Rob Adam £9. 2 5 Robert was a renowned Scottish architect who studied in France & Italy before returning home to design some of Edinburgh’s finest buildings.

This cocktail of Monkey Shoulder, French Vermouth and Italian Maraschino reflects the influence of his time abroad and can be served as a single cocktail or a sharer for two. (garnish contains milk)

The Lady Nairn £8.0 0 Lady Nairn was a contemporary of Robert Burns, who was forced to conceal her gender so that her works could be published.

This drink is a homage to her written work, which encapsulated Scottish life in her time. Using Brochan Oat Vodka, oatmeal shrub, and a hint of cinnamon to garnish, this elegant but vivacious cocktail is proof that you shouldn’t judge a book by its cover. (contains gluten free oats)

The Agnes of Dunbar £8.0 0Agnes was a brave Countess of the 14th Century who defiantly defended her castle from the English for six months during the failed siege of Dunbar.

In her honour, we have crafted an aromatic Negroni Style drink, with Bols Genever, Campari, Antica Formula and a hint of Braemble to soften the edges.

The Gracies F O R 4 - 6 P E O P L E T O S H A R E £6 0.0 0The Gracies are a South American family of Scottish descent whose ancestors founded Brazilian Jiu Jitsu, an intelligent, grappling based martial art and way of life.

One to share with family or friends! We use Cachaca, a Brazilian Style of Rum, with pineapple, lychee and a hint of kaffir lime, topped off with a bottle of Champagne.
