WWE HAD OUR FIRST FAMILY WEDDING THIS PAST summer! My son, Charlie, and his bride chose a simple, yet architecturally elegant wedding venue that reflected their love of old Toronto’s urban charm. The food and libations were amazing and the party went into the wee hours. It was wonderful… even if it did come and go in a heartbeat!

Oh well, the memories linger and one of the happiest is of sharing wedding and pre-wedding celebrations with family and friends. So naturally it occurs to me, where do we most often do life’s celebrating? And not just that, where do we simply live our lives? The answer is, in our homes. They are like stages on which we play out our joys, sorrows and everything in between.

No wonder we spend so much time getting our homes to reflect what’s important to us, and what makes us comfortable. In this issue I’m happy to introduce a home whose owners and their team have done just that (page 18). Hampton Lodge stylishly expresses the couple’s personal interests, embraces their love of entertaining, and perhaps most importantly, offers a refuge from the world at large.

On page 30, our Home & Builder feature takes you to the countryside near Ilderton, north of London, where Sifton Properties Ltd. is offering a contemporary lifestyle in a small-town setting. I think that is quite an appealing combination!

I guess the days will continue to get shorter, colder and darker. But that’s ok. Now there’s more time to cosy up inside and flip through the pages of OUR HOMES London and Middlesex to get ideas for a new project or two. In doing so, think about the many ways your home is important to your life. Think about the people in your home and what they mean to you. Then it all makes sense that “home is where the heart is.”

PHOTO BY ALEX HARTEEVERY HOMEOWNER MAKES decisions. They range from where to place the furniture to when to sell the house. I often hear about the decision-making process that goes along with renovating or building a custom home. When it comes to dollars and cents, there is little room for error and decisions can easily become permanent. Here at the Manor I’ve fallen in love with my new free-standing bathtub. That purchase was an easy decision as I love a deep, luxurious bath. I first saw the tub in an issue of OUR HOMES London and coveted it for awhile until it became reality.

Weighing on my mind lately has been whether or not I should paint the beautiful 1920s wood panelling that fills my main hall and second floor. It’s a big deal it’s 101 feet (yes, I’ve measured it) from the front door to the top of the second floor, and that’s only one side of the hall. I see this as a really big decision!

If I’ve had this conversation with you, please forgive the repeat but First Lady Jacqueline Kennedy painted lots of panelling in the White House. Of course some of it was removed later by another presidential family,

but “Lady” Kennedy, looking for a less-English feel, took the lead on replacing the rich, dark stain on the oak and mahogany in the dining room with a pristine soft green and white paint. She also covered some panelling with wall paper in the master suite. Her renovations are still referred to by some as “brilliant” in a home that everyone has an opinion about.

As many designers will tell you, take your time, study the images you like and recognize what they have in common. These are what you will be happy with once they are in your home.

I wish you the best in the decisions it takes to make your house a home. If you want to weigh in on the panelling, drop me a note. I haven’t made that decision yet, although the way I see it, the next family can just remove it if they don’t like it….

There are some decorating decisions that can’t be based strictly on aesthetics, and flooring is one of those areas prone to outside elements. Some factors that affect flooring choices are: lifestyle (pets, children, handicaps), environment (humidity, heating, cooling) and allergies (dust, toxins, materials).

Don’t be discouraged if you have three dogs with long claws and really love the look of hardwood. Interior products have come a long way and there are several alternative options, like tiles, that simulate wood or cork planks. There are tons of choices, so make sure you do your research! The final selection has to match your personal style, but more importantly your lifestyle.

FLOORING 101:Hardwood – Comprised of solid planks of timber that are dried in a kiln (or outside) and generally sanded and stained on site. For example, pine is a softer option that is more easily dented or dinged, whereas walnut is a denser species less prone to deep scratches. Wood creates a warm setting and is ideal in living rooms… and pretty much everywhere else except for wet locations.

Engineered hardwood – Not to be confused with laminate (below), engineered hardwood is actually wood layered on top of a composite sub-structure, allowing for longer lengths and less cupping than solid timber. It is pre-finished, eliminating the mess of on-site finishing that occurs with solid planks. This is an extremely popular choice.

Laminate – Made of a photographic image of a finish (most commonly wood) on top of fibreboard with a protective coating on top. It is a cost-effective alternative to wood and is easy to install. It is generally floating (not glued down) on top of a sub-floor with a layer of cushion in between, often cork or foam. Unfortunately, it can scratch and cannot be buffed.

Cork – This is a good environmental choice with the benefits of sound absorption and cushion. Comes in planks or tiles and many different patterns and

colours. This is a user-friendly choice and is great for households with pets and children. Because of the cushion, it is a popular choice for yoga studios or simply for people with back issues who stand for long periods of time.

Ceramic – Sold as tiles in various shapes and sizes, the word ceramic stems from the Greek word for “pottery.” It is ideal for bathrooms and laundry rooms, and the joints are filled with grout. Provides endless decorating options.

Stone – Stone is wonderful for transferring and holding radiant heat. It can be smooth, textured, polished or honed. Stone is a natural option with limitless looks. Some examples are: slate, limestone, marble, granite and quartz. It’s a great choice for an entry area or mudroom.

Glass – This is sold by the sheet or in tiles – clear, tinted or etched. Tiles are installed as per ceramic or stone and can be used for bathroom and shower floors. Sheets can be used as flooring, allowing you to see through to a room below. This requires specialized installation and can be exceptionally costly.

Leather – Sold in tiles with a cork backing, leather flooring is generally recycled, no VOCs, relatively low-maintenance and environmentally friendly. It is available in multiple textures and colours. Creates a lovely home office or walk-in closet.

Concrete – Poured concrete is another excellent choice with radiant heat. It maintains warmth and is also cool in the summer. Can be stained, polished or have a pattern pressed into it. Looks modern, is maintenance free and easy to clean. Great anywhere.

Carpet – Nylon, sisal and wool are the most common wall-to-wall carpeting options. Looks vary wildly depending on the type of weave, colour and pattern. Cosy on the feet, it’s a nice choice for bedrooms and basement family rooms. Not ideal for allergy sufferers.

Vinyl – An inexpensive option often used commercially. It is very durable, low maintenance and easy to keep clean. It is glued directly to sub-flooring with no grout joints. This is a good basement workshop option. OH

I“I guess you could say we’re collectors.” That’s a delightful understatement by one of the owners of Hampton Lodge, a 3,600 sq. ft. country home just west of the city. He and his partner wanted a place they could fill with cherished childhood keepsakes, plus collectibles and objets d’art from their many travels.

But they also wanted comfortable, everyday living spaces wrapped up in classic architecture and quiet elegance. Their inspiration for Hampton Lodge’s exterior form and interior layout? The work of noted 17th-century architect Inigo Jones. On trips to England over the years, the couple admired the graceful lines of the few remaining Jones originals, as well as replicas incorporating his classic style. So it made sense that their wish-list include 10-and-a-half-foot ceilings, wide doorways, large-scale windows, generous room proportions and gutsy and decorative mill and plaster work; in other words, features creating airy sophistication and the kind of spatial volume required for abundant art and collectibles.

“We wanted to build a country villa and we wanted to do something that pleased our historical senses and embraced our love of antiques,” says one owner.

They commissioned Nicholls and Associates Ltd., and custom homebuilders Bruce McMillan and Company to take their project from vision to reality. Gary Nicholls, recalling the owners’ cultivated design sense, says he enjoys incorporating historical elements into his custom work.

The owners love antiques, collectibles and elaborate finishes such as the historically-referenced plaster mouldings on the fireplace. Formal details in the home are tempered by minimal window coverings and spacious proportions.

“There are all kinds of period details here,” he notes. “The scale of the windows, bull-nosed Indiana limestone sills, exterior crown mouldings, copper eavestroughs, brick quoining, chimney pots and the frieze over the entryway... these all add up to an English sensibility.”

Decorative sidelights and a glass transom window frame the front door (County Heritage Forest Products Ltd.) which opens to a spacious hall where a favourite bronze rendering from Sorrento, Italy offers a dramatic welcome to the home. The room is not the kind of hallway that’s familiar to most but, in the style of an English country manor, it’s a living space of its own, as well as a route for getting from place to place in the house.

On display in the hall is a massive antique flat-to-the-wall cabinet (Memory Lane Antiques) showing off period toys, many of which the owners grew up with, while further down the hall wing-chaired seating flanks an antique fireplace surround (gas insert from Porky’s BBQ & Leisure). Grey slate floors and patterned area rugs are a classic touch, while glass doors and transom windows (Golden Windows Limited) connecting the back of the hall to the outdoor deck, garden and hot tub allow streams of natural light.

The hall divides the home’s public and private spaces; living room, dining room and kitchen on one side and den, bedrooms and baths on the other.

The living room is spacious and gracious, with several seating areas. Its finishes add historical reference: reclaimed Hemlock floors laid in a herringbone pattern and plaster mouldings, niches and an elaborate fireplace surround (Puglia Mouldings & Plasterwork Ltd.) A grey-green wall colour (Hardwick White, Farrow and Ball) was chosen as a soft backdrop for art, and to show off the room’s detailed trim.

ceiling in the den embellished with decorative tiles collected from the owners’ travels. The funky colour choice of Middleton Pink (Farrow and Ball) and large-scale leather furniture (Austin & Taylor Home Furnishings Inc.) make the room a comfortable combination of home workspace and relaxation centre.

“The owners wanted to have a bit of fun with this room,” says Robin Manton of Red Bird Designs, adding that Middleton Pink, in honour of the Duchess of Cambridge, is light and delicate without being “too little girl.”

The den leads directly into the master suite where Manton suggested another strong colour palette, this time a clean, mid-tone Regency blue (Lulworth Blue, Farrow and Ball) to complement striped wallpaper (Closet Stripe, Farrow and Ball).

Two other fashionable bedrooms and a guest bathroom as well as a large exercise room, laundry room and powder room finish off the Hampton Lodge interior.

Outside, formal and casual spaces meet again. The front elevation

is all about elaborate brick and stonework (London Ferrell Brick & Stone) with big-scale chimneys (Ed’s Concrete Products Ltd.) fashioned after those designed by British country-house architect Edwin Lutyens. As well, there are berms and landscaped beds (Branch Complete Maintenance) inspired by the 18th-century style of Capability Brown, whom many consider to have been “England’s greatest gardener.”

Board and batten siding on the sides and back of the house makes a cottage-like backdrop for the screened porch, deck and hot tub. Behind the house, a red and green tool shed is reminiscent of Carrodoc Township’s tobacco kilns. The property’s woodland path, playfully marked with vintage signs the couple collected over the years, meanders from this country-casual setting, curving toward the front of the property where it finishes off with stately views of gardens, stone and brickwork, pillars and iron gates. It’s a transition, the owners would say, that nicely captures the essence of Hampton Lodge. OH

The living room opens to an equally elaborate dining room. Here, there is impact from a block-printed wallpaper based on an 18th-century French damask pattern (St. Antoine, Farrow and Ball), along with a plaster ceiling medallion and chandelier (Guildwood Lighting & Fireside) with hand-made shades (Exclusive Lampshades). Framed stained-glass images (Rose Window Stained Glass, formerly of London) of places the couple has travelled to hang in each window. The pair enjoys the formality of the dining room and entertain here often. They say their friends consider the experience, which always includes fine china and crystal, to be a “rare” event, with the conversation usually turning to the story behind their antique dining table from England and how it once sat none other than Katherine Hepburn!

The kitchen, connected to the dining room

by a Jones-inspired panelled swing door, departs from the style of other rooms in the home since the owners thought a traditional manor-house kitchen would be too formal as a place to cook and hang out.

“We actually wanted a cottage kitchen,” one owner recalls, adding that’s why they went for a vaulted, beadboard ceiling. Martin Wood Design built and installed white cabinetry and Classic Granite and Marble Ltd. supplied Caesarstone counters. Appliances are from Goemans Appliances, and the sink and plumbing fixtures are from London Bath Centre.

With clear sight lines between the open kitchen on one side of the hall, the den on the other, and the master bedroom beyond that, this portion of the house is cheery and relaxed. Yet historically-styled features have not been forgotten, such as the unique coffered

IIf you dream of country living but aren’t ready to give up the convenience of city life, Sifton Properties Ltd.’s Timberwalk neighbourhood in Ilderton offers an attractive and affordable compromise.

Located close to the heart of town, Timberwalk is an easy walk to amenities like the Ilderton arena, community centre, farmer’s market, and a selection of restaurants and parks. It’s also less than 10 minutes’ drive from the busy retail hub of Fanshawe and Hyde Park Roads in north London.

Sifton Sales Representative, Megan Corfield, says she’s already received plenty of positive feedback about The Walnut, one of several model homes now open for viewing in the Timberwalk subdivision.

The 2,728 sq. ft. two-storey house offers plenty of room for a growing family.

“Homeowners are looking for clean lines, true family spaces, and great function – not only in the space planning but also in the materials used within the home,” says Sifton Décor Consultant, Allyson Switzer.

Polished porcelain tile flooring from the Nustone Series, supplied by Centura Tile and installed by Sacwal Flooring Centres, keeps the foyer and mudroom bright and welcoming, and is also resistant to everyday spills and scratches.

A large den offers a private escape from the rest of the main floor, and can be closed off from the open-concept living space by sliding pocket doors painted bright blue (Fiji by Benjamin Moore). “It’s amazing how a pair of typical doors can take on a new role as a piece of artwork with just a punch of colour,” comments Switzer.

The room overlooks the home’s covered front porch, and is showered in natural light thanks to the addition of three piano windows from Dashwood Industries Inc.

A formal dining room, painted Chelsea Gray (Benjamin Moore), offers ample space for entertaining and opens onto the home’s great room, which flows seamlessly into an informal café dining area and the kitchen. “The open concept allows the homeowner to cook and still watch the kids at the same time,” says Switzer.

The kitchen, designed by Greg Christie of GCW Custom Kitchens & Cabinetry Inc., features sleek cupboards painted Kendall Charcoal (Benjamin Moore). The grey colour provides a striking contrast to the white Caesarstone (Frosty Carinna) counters and white porcelain tile floor.

The kitchen will delight budding cooks with its walk-in corner pantry and free-standing country-style centre island with butcher block top. Stainless-steel appliances from London Major Appliances and pendulum lights from The Lighting Shoppe add a contemporary edge.

The great room’s yellow birch Preverco engineered hardwood floors (Sacwal) and Revere Pewter (Benjamin Moore) walls create a warm and welcoming environment for family gatherings. A soaring cathedral ceiling defines the space, while a fireplace surround of Grey Wolf 3D marble ledgestone by My Fireplace provides a unique visual focal point.

London Stair & Railing created a stairway to the upper level that also overlooks the great room and offers a large windowed landing that brings additional natural light into the home, making the fully-carpeted upper level bright and airy. The second floor

laundry closet is proving to be a popular feature with potential homeowners, says Corfield, who notes that The Walnut model is available in both a three and four-bedroom layout.

The home’s spacious master bedroom is also generating plenty of positive feedback, she says. Two large windows and a tray ceiling create a bright, elegant atmosphere, and the room can easily accommodate a full bedroom suite with room for a separate sitting area or reading nook.

The master en suite has both a soaker tub and tiled walk-in shower (Paton Bros.

Ltd.), with a small chandelier from The Lighting Shoppe for added elegance.

The additional bedrooms have full closets and large windows, making them inviting and practical spaces for children or guests.

The home’s unfinished basement comes with oversize egress windows, and could easily be transformed into a play area, media or games room.

Switzer says her goal was to create a home that feels warm, comfortable and inviting – and The Walnut does indeed strike the perfect balance between contemporary family living and Ilderton’s traditional rural roots. OH

It’s one of life’s many joys – entertaining friends and family, hosting parties and surrounding ourselves with the people we love.

Many of us consider our entertaining habits and desires when making major life decisions like purchasing or renovating our homes. We like large, open spaces, outdoor living rooms etc., but we may not always consider the environmental impact of entertaining. If you’re like me, the major downside to entertaining comes afterwards – the cleanup.

The thought of washing tons of dishes after cooking, cleaning and hosting is exhausting, but I also can’t stand the idea of serving food and drinks to guests from materials like plastic and Styrofoam – not to mention being responsible for the associated environmental impact.

Luckily, the disposable dinnerware industry has come a long, long way in creating environmentally friendly, sustainable disposables that not only feel great, but look great too!

When shopping for green disposables, look for items that are not only made from recycled materials, but those that can be recycled or composted again, or better yet, those that are biodegradable in your own backyard composter.

STYLISH ECO-TAININGOne brand that has made a splash in the disposable cutlery industry is Aspenware, which is made right here in Canada, from two thin slices of wood, bonded together by a proprietary process. This means it’s 100 per cent compostable and biodegradable. So, even if you toss these in the garbage, they’ll turn back into soil within 49 days! The cutlery is made from trembling aspen, paper birch and poplar, which are all fast growing species of trees with short life cycles that naturally reseed when felled. They’re also considered waste product by logging companies and are usually left to rot or be burned. Plus, a single log can yield 20,000 individual knives, forks or spoons that look neat and are sure to spark some conversation amongst guests.

Also trending in eco dinnerware are leaf products, such as VerTerra’s attractive, full line of dinnerware, cutlery and serving dishes made from just two products – fallen palm leaves and water. Philip Jacobsen of Greenmunch, a Canadian company committed to “sustainable entertaining with style,” explains that “after

collecting fallen leaves that would normally be burned, steam, heat and pressure are applied to transform the leaves into durable plates that will naturally compost in two months in a backyard or commercial composter.” The products are non-toxic, biodegradable, compostable, durable, lightweight, convenient and stylish.

Bamboo products can also fall into this category, however, there’s a lot of “greenwashing” happening, leading people to believe that all bamboo products are earth-friendly choices. In reality, many bamboo products not only have to travel across the world to reach us, but undergo chemically intensive production processes and are combined with toxic materials. It’s important to do your research to find trustworthy brands, and looking for organic, bamboo-sheath products is a good start.

ECO-NOMICALWhile products like Aspenware and VerTerra are smart, beautiful choices for entertaining in style, they may not be your top choice if you’re just looking for an economical way to replace typical disposables for a simple backyard barbecue or child’s birthday party.

In these cases, look for products that are made from sustainable materials, such as sugarcane. “Sugarcane is a renewable, fast growing resource that is grown for a number of purposes, like cane juice,” says Jacobsen. “Once the juice is extracted, the sugarcane stalk is usually incinerated or discarded. The pulp can be broken down and be used to make products that would otherwise be made from tree fibre. The resulting sugarcane dinnerware is also compostable in a commercial facility.” It’s compostable in a backyard composter too, but will take longer.

Another option is products made from Polylactic Acid (PLA), a material derived from plant starch. These materials perform and look like traditional plastic, however, they are compostable, but do require a commercial composter.

With such a wide range of eco-friendly options available – something for every budget and style – it’s time to say goodbye to harmful disposables and hello to healthy entertaining you can feel good about… without having to do the dishes. OH

This is why the hospitality industry is such a great place to look to for inspiration. Hotel en suites are ours for just a few days (or one night only!), and during this short time they need to make a big impact so we’ll visit again.

To get that unforgettable boutique appeal in your own bathroom (even on a budget), here’s my guide to high-end hotel style:

1. NATURE WORKS WONDERS

• A bathroom shouldn’t feel like a purely functional space, and natural materials go a long way toward lending an inviting character. I love adding a touch of wood to a washroom, like the block stools in the James Royal Palm (a Miami must-stay), or the mid-century walnut stool in my own bathroom.

• People are often afraid to add marble to a wet space, but with just a little care, a stone counter will elevate any room to a sense of true luxury – and a relatively small vanity countertop does not have to be an impossible investment. For an even smaller touch, add capiz-shell soap dishes, canisters and candleholders.

• If nothing else, a vase or planter of flowers (real or faux) adds new energy to the room and a pop of colour you can live with.

2. ALL THE MOD-CONS

• Even if you tend toward more traditional tastes, the bathroom is often a favourite place to indulge in a more modern appeal or transitional charm (the best of both worlds). New hardware can completely update a space, so switching out the towel bar, robe hooks and paper holder to a contemporary style can make the whole room feel new and current.

• The modern trend in bathroom design is toward the look of furniture over bulky built-ins, like the leggy vanities at the Shangri-La Hotel Vancouver. You can look to vintage shops for quirky consoles to transform into a vanity, or try a floating option (like the IKEA Godmorgon cabinet, which I have used for several clients) to keep floor space open while staying minimalist.

• Similarly, the faucet, often seen as the “jewel” of a bathroom, can have big impact on the atmosphere. By pairing a simple vanity and sink with one high-impact fixture, you can make the entire combination feel much more expensive, so splurge a little here.

3. CLEAN UP

• For a crisp, clean bathroom vibe, it helps to avoid fabrics where possible. Contemporary spaces typically use glass panels rather

than a shower curtain to open the space and give mildew one less place to hide.

• I recommend using a sleek in-window shade rather than flowing curtains here to achieve that cosmopolitan sophistication. You can keep them closed all day and still let light filter in.

• Clean, white towels go a long way! Treat yourself to a fresh set and hide the well-worn or multi-coloured pieces in a linen closet.

4. FINISHING TOUCHES

• Large slab mirrors are popular for opening up small bathrooms, however they must be finished well to avoid looking too inexpen-sive. Ideally, a mirror should be inset into a tile finish, or framed, so it feels like a part of the décor and not just an add-on.

• Don’t forget the importance of layered lighting in the bathroom – even a small space should have more than a single potlight. Install sconces above or beside your mirror(s), or add a table lamp to your counter for unexpected character and less shadowing.

• Gold and other warm metals are a big trend in interiors, and the trend is not going away any time soon. “Classic design, whether traditional, modern or contemporary, is considered classic for its lasting appeal,” Sue says.

Decorative items, however, can be another story. It’s much less costly to change backsplash tiles, accessories and paint colours if they go out of style. Sue suggests adding soft furnishings, also relatively easy to replace. “I can’t stress how comfortable a cushioned bench or upholstered chair will make you feel,” Sue says.

As for bathrooms, don’t get carried away with bells and whistles. If you are renovating, you must consider your plumbing infrastructure. Can it handle fancy extras like shower jets? And think about size. How much space is really required? If you keep size under control, Sue suggests, the bathroom can be where luxury, like a heated floor, is most affordable. She added glam to a small bathroom in her own home with a marble inlay floor.

Finally, be a little unpredictable with your finishing touches. Sue suggests art in the bathroom and books in the kitchen, as well as a mix-up of collectibles and groupings from different eras and styles. They are personally pleasing and add those necessary layers to make your house a home. OH

Whether you’re renovating or building, kitchens and bathrooms are likely to consume the lion’s share of your budget. That’s why once the dust has settled, you want a beautiful, well-functioning room to show for the money you’ve spent. But how the heck do you get to that point?

Sound professional advice is a must. Sue Jory of Susan Jory Interiors says she likes clients to bring ideas to her so the room she helps them achieve is a personal reflection of themselves. She usually starts the ball rolling by urging clients to keep “tons of pictures” of rooms they like. That way, they bring their own ideas to her.

“I find there is nothing more individual than taste,” she says, adding that another way to start the process is simply to ask clients for a checklist of what they don’t want, such as an

all-white kitchen or dark-stained wood. “I then help them understand the whole

process and various ways they can spend their money,” she says.

It’s up to the clients to think carefully about where their priorities lie. If they are putting in a new kitchen, for example, Sue advises them to give lots of thought to selecting construction materials.

“While you’ll never miss wooden, dovetail drawers if you don’t have them, you’ll never regret spending the money if, of course, you’ve got it to spend,” Sue says. “Otherwise melamine and metal box drawers will function as well.”

As for countertops, stone is lovely but so is a combination of stone and laminate if that’s better on the budget.

Sue remembers growing up around

beautiful things, the result of her mother’s fabulous taste and passion for decorating and redecorating the family home and cottage. That rubbed off on Sue who took to redoing her bedroom “every weekend and driving my mother crazy,” she recalls. Eventually her creative bent led her to the professional home and design world, first running The Very Thing, a design source for children’s rooms, then, 10 years ago, founding Susan Jory Interiors.

Sue, who is also an interior design consultant with Westhaven Homes Inc., and works closely with her husband, local contractor Andrew Walker, says people should beware of trends when they are spending big on kitchens or bathrooms. Her advice is to be realistic about whether or not they will like the “look” of their cabinets and countertops 10 years later.

IIf you’ve ever tried ordering a Caesar outside the country, you were likely met with a confused expression or offered a Bloody Mary in its place, and then disappointed to learn that the latter tastes nothing like its much-loved Canadian sister.

Many people wouldn’t guess, with a name like Caesar, that the drink is a Canadian creation, but it was actually invented in Calgary in 1969 by restaurateur Walter Chell to celebrate the opening of a new Italian restaurant at the Calgary Inn (now Westin Calgary). It’s now estimated that more than 350 million Caesars are consumed each year in Canada!

With such a following, it’s surprising that the Caesar’s origin hasn’t been touted more in national ad campaigns, like the infamous poutine has been.

Clamato juice is a proprietary blend of tomato juice and clam broth made by Mott’s – created very soon after the success of Chell’s drink invention. Although several brands offer similar tomato and clam blends, the Caesar has really become synonymous with Mott’s.

Clint Pattemore, Mott’s Clamato Caesar Mixing Officer, says, “With over 350 million Caesars enjoyed in Canada each year, it is clear that the Caesar is something special. The flavour is unlike that of any other cocktail and the unlimited possibilities are what make the Caesar so unique and enjoyable.”

There are countless variations to try. In fact, Mott’s holds an annual “Best Caesar in Town” competition as part of the Prince Edward Island International Shellfish Festival with a $1,000 grand prize.

Common variations include the addition of horseradish, using barbecue sauce instead of Tabasco, replacing vodka with gin, whiskey or tequila, and getting creative with different garnishes, like orange wheels, spicy pickled green beans and olives. However, there are some incredibly unique and mouthwatering recipes worth trying that you won’t likely find in restaurants.

A classic Caesar is served with ice in a tall glass rimmed with celery salt and contains:

• Rim a highball glass with citrus and rimmer. Fill the glass to the top with ice. Add the ingredients in the order listed. Stir well to mix the cocktail, and garnish.

*Ginger-infused gin: Chop or grate two “thumbs” of peeled ginger and add to a 750ml bottle of gin for two to three days, tasting regularly until desired ginger fla-vour is achieved. Strain out ginger using a cheesecloth or coffee filter. OH

Upon close reflection you may notice that this recipe does not really resemble true chili. Sure there are beans and meat in a tomato-y sauce, but that’s about where the similarities end. However, this resulting hearty chili-like stew is just as delightfully satisfying after a hard winter’s day on the slopes – and a welcome change from the chili powder-laced traditional chili thanks to dry-cured chorizo sausage and a generous sprinkling of smoked paprika.

Look for dry-cured chorizo sausage in the deli department of most grocery stores. It’s a Spanish sausage that’s loaded with the sensuous flavours

of garlic and paprika. The sausage is often available hot or mild, either one will work fine in this recipe; it just depends on how hot you can handle it! And don’t confuse it with fresh chorizo, which is found in the meat department and has to be cooked through.

If you like, double the recipe and freeze half for an easy meal down the road. It can also be refrigerated for about three days and, like chili, the flavour only improves.

For an extra special presentation, top with sour cream, fried chorizo slices and thinly-sliced green onion.

INGREDIENTS: (Serves 4)

125 g dry-cured chorizo sausage, diced

2 tsp olive oil

Half sweet onion, diced

3 cloves garlic, minced

1 tsp dried thyme

1 tsp smoked paprika

450 g ground pork

2 small Yukon Gold potatoes (about 375 g), peeled and diced

1 can red kidney beans, drained and rinsed

2 cups chicken broth

3 tbsp tomato paste

3 cups baby spinach leaves

DIRECTIONS:

• In a large saucepan, cook sausage over medium heat until browned, about 5 minutes. Transfer to bowl and set aside.

• In the same saucepan, heat oil over medium heat; cook onion, garlic, thyme and paprika, stirring often, until onion is softened, about 4 minutes. Stir in pork; cook, stirring to break up pork, until browned, about 5 minutes. Stir in potatoes and sausage; cook, stirring, for 2 minutes.

• Stir in beans, broth and tomato paste; bring to a boil. Reduce heat and simmer uncovered, stirring occasionally until slightly thickened and potatoes are tender, about 20 minutes. Stir in spinach; cook, just until wilted, about 1 minute. OH
