•Take off the first layer of the chestnuts

• Cook the fennel and chestnuts in cold water.

Peel the second skin of the chestnut.

Once peeled, mash them in the food mill

Add the milk and salt. Cook the mixture until it

is creamy

Once finished cooking, is served to all

students, for proving the cream of chestnuts

This chestnut cream is ideal to accompany mushrooms
