GRAN PATRÓN BURDEOS 78/156 Distilled from the finest Blue Agave grown in the highlands of Jalisco, Mexico. The Tequila is matured in a blend of American and French oak barrels and aged for a minimum of 12 months. It is then distilled again before it is racked in vintage Bordeaux barrels, hand-selected to add the distinctive flavors of vanilla, raisins and dried fruit found in the finest Bordeaux wine.

PATRÓN ROCA “Roca” (Spanish for “rock”) - namely, the two-ton volcanic stone wheel, also known as a “tahona,” that’s used to crush the baked agave and squeeze out the juice that becomes the basis for tequila. Most modern day tequila makers have long abandoned this old-fashioned process in favor of modern crushing methods. But the idea with Roca was to honor tradition and get that purer agave flavor. Roca is made by fermenting both juice and some of the agave fiber together; the fiber, which is later separated, adds a certain richness of flavor.

EL JOLGORIO SINGLE VARIETY MEZCALS El Jolgorio is a range of artisanal mezcal from Oaxaca, made from a wide variety of rare, unique agave species. In Mexico, there are around fifty different species of agave used for mezcal production, each yielding a mezcal with its own distinct character. In 2010, the Cortés family began building a collective of top mezcal distillers from around Oaxaca, with the goal of sharing the true culture and spirit of mezcal with the world. In all, El Jolgorio represents sixteen different families, working in ten different regions of Oaxaca, Mexico, each with its own special story. Every bottle is hand-marked with the specific details of each batch, to truly connect the drinker with the family behind the expression.

OLD RIP VAN WINKLE BOURBONS
The heritage of the Old Rip Van Winkle Distillery started over 100 years ago with Julian “Pappy” Van Winkle’s sole vision to make an “honest and good product.” It all began with a collaboration with a traveling whiskey salesman, W.L. Weller & Sons, during and after the Prohibition Era. From the warehouse to the road, he set out with a mission to create the finest bourbon and would not accept anything less. Pappy’s son, Julian Jr, operated the distillery from 1964 until the family sold it in 1972. He never stopped bottling on the side and eventually created the Old Rip Van Winkle label with his son, Julian III. It was after his father’s passing and during a lull in the sales of premium bourbons that he focused on perfecting the essence of his family’s business. Julian purchased the Old Hoffman Distillery in Lawrenceburg, Kentucky and despite very little advertising, the quality of Old Rip Van Winkle sold itself. In 1999, Buffalo Trace purchased the W.L. Weller label and with the addition of Preston Van Winkle into the family business in 2001, the family’s exact recipe and strict quality of standards have been maintained ever since for future generations to enjoy.

The Balvenie DCS Compendium is a whisky collection curated by David C Stewart MBE, the fifth and longest-serving Malt Master at The Balvenie Distillery. This chapter is a selection of needles in our proverbial haystack of maturing stock across the decades. David wasn’t sure where to begin, although “I had a few ideas of where there might be some surprises,” he laughs. David’s role is one of reacting to the unexpected, dealing with it and marching on. “I supply the figures and forecasts as I see them, but the final decisions are really in the hands of the family. It is my job, however, to decide how to deal with these decisions.”

Created by Maurice Hennessy in 1870 for his circle of friends, X.O was born at a turning point in history. The 100 eau-de-vie assembled to create X.O were aged for multiple years – some 30 – to give it unparalleled robustness. Its intense and deep amber color is a sign of its strength. Its flavors of candied fruit and its subtle and lightly spicy nose create a complete harmony. The long finish expresses all the complexity of the cognac’s blending and its long aging process.
