I. GENERAL INSTRUCTIONS

Please read carefully this manual before using your Hobart oven. 1.0 FOREWORD. Hobart reserves the right to alter the design of their products without prior notice. Whilst every effort is made to ensure this publication reflects the latest design, the Company cannot guarantee full compliance. Take pride in your Combi - keep it clean and in good mechanical and electrical condition. 2.0 GENERAL INFORMATION The information and instructions contained in this manual may not cover all details or variations in the equipment, nor provide for every eventuality to arise with installation, operation, or maintenance. If additional information is required please contact your local Hobart office. 3.0 SAFETY INFORMATION. The procedures and precautions contained in this manual apply to the Combi Range only when it is used in the prescribed manner and are only intended for baking, roasting, steaming and stewing food products intended for consumption and are due to be used in the catering business. If the machine is used other than in the prescribed manner, the operator will be responsible for his/her own safety and for the safety of the other persons who may be involved. The information in this manual has been prepared to assist the operator to understand, maintain, and operate the combination oven. In order to prevent accidents, read, understand and follow all the precautions and warnings contained in this manual before installation or operating for the first time. This manual must be studied to obtain a clear knowledge of the combination oven and its capabilities. Hot water, steam and electricity are dangerous and may cause injury if sufficient precautions are not taken prior to operating or servicing the combination oven. Before installing the unit, make sure that the power and the frequency correspond to the one given on the technical data plate. These must correspond in order to avoid any possible damage to the machine and/or operator. If you are uncertain, please ask to a qualified technician. Ensure the electrical supply has been isolated and ALL pressure has been vented and water drained before commencing work to dismantle the water/pressure system. In certain fault finding situations it may be necessary to operate the machine full of hot liquid; in which case extreme caution must be used. Only suitably qualified personnel must service the steam cooker. 3.1 SAFETY GUIDELINES. Ensure sufficient precautions are observed during manually handling of the combination oven particularly when moving into position on installation. Reference must be made to manual handling regulations. The combination oven weights are given in the manual. • Do not hose or pressure clean this appliance. It is vital to adhere to the cleaning instructions detailed in this manual. • Do not remove any covers or loosen any fittings whilst the machine is operating. • Ensure this manual is kept in an easily accessible place near the combination oven for future reference. • All operators must be trained in the safe operation of the appliance. • Ensure the electrical supply has been isolated and all water exhausted before attempting to service or move the combination oven. • Electrical machinery, steam and water are potentially hazardous and may cause injury if sufficient precautions are not taken prior to operating or servicing the machine. • Always have your combination oven regularly serviced; at least once a year, depending on frequency of use. For information on service contracts please contact your local Hobart sales office. • Open the cooking chamber carefully in case the chamber drain is blocked.

Warranty conditions : Are following are excluded from the warranty due to the application and site responsibilities: glass (door inner and outer) breaking, bulbs (cavity lighting) and cavity gaskets, plus any failure due to an incorrect installation undertaken by third parties, misuse due to incorrect cooking practices and general lack of cleaning, maintaining, repairing or descaling the unit. 3.2 WARNING SYMBOLS. To identify the safety messages in this manual, the following symbols have been used. The "Warning" symbol is found primarily where the corresponding information is important for the safe use of the machinery. The electrical hazard symbol is used when there are risks of an electrical nature. Prior to servicing the machinery, always isolate/disconnect the power cable from the mains supply. 3.3 SAFETY INSTRUCTIONS. ONLY A FULLY TRAINED AND COMPETENT PERSON MUST USE THE COMBINATION OVEN. The following instructions must be observed when using the appliance. Note: The combination oven must only be used for the purpose it was design and inline with the supplied operating instructions. 3.3.1 NEVER • Allow children or unqualified personnel to operate the combination oven. • Operate the appliance if a fault develops or the machine is unsafe. • Wear loose clothing. • Use bleach, hypochlorite or chlorine compounds to clean the combination oven internally or externally. • Use excessive force when operating which could affect the stability of the combination oven • Operate the appliance if parts are disassembled. • Use the combination oven in an unsafe condition. • Clean the machine with scouring powder or a scouring pad. • Dry tea towels and cloths on the appliance • Use without correct work equipment (ppe). • 3.3.2 ALWAYS • Use the combination oven in a well-lit area. • Clean the machine door seal after machine clean and after drain down. • Use the combination oven as intended and inline with the operating instructions. • Be aware of hot surfaces in particular the cooking chamber door. • Isolate the electrical supply and turn off the water at the end of each day following the drain down sequence. 3.4 LIABILITY. Installations and repairs which are not carried out by Authorised technicians or the use of other than original spare parts, and any technical alterations to the machine, may affect the warranty set out in the standard conditions of sale. This unit complies with the CE mark. It respects the Low Voltage norm and the Electro-Magnetic Compatibility (EMC). Keep this manual near the unit.

II. SAFETY INSTRUCTIONS The Hobart oven complies with all relevant safety standards. However, it doesn’t eliminate any risk such as the ones resulting from a unauthorised practices and usage of the oven. The operators should also respect the following instructions.

Non authorised maintenance or cleaning and modifications made to the unit by non qualified technicians may cause a definitive failure of the oven and pose risk of injury to the operator.

Please read carefully the instruction manual and ensure suitable training is undertaken for all persons who will be using the oven.

Make sure that the installation, the maintenance and the modifications to the unit are appropriate and made by qualified technicians.

Environnement

• Do not use the unit in a toxic or explosive environment.

• Do not use the oven if the temperature is below 4°C. Some components might be damaged. If the oven has been moved from a cold place (plane hold, ware house, etc,…) to its installation location, wait untill the oven has reached the ambient temperature before turning on the electrical supply.

• Do not store gas or flammable liquids near the oven. They would be a potential fire hazard due to the heat generated in operating the oven.

• Avoid placing the oven near equipment using hot oil (fryers etc). Water spilt or transferred onto hot oils/greases presents a high risk of burn.

Handling

• Wear suitable gloves or other protective means to remove cooking utensils (pans, trays, core temperature probes…) from the oven cavity as it is cooking. Caution: They may be very hot.

• Remove the core temperature probe from the food before removing them from the cavity.

• Do not let the core temperature probe hang. Store it inside the storage compartment in the front cabinet below the display.

• When using pans containing liquids or food giving a lot of liquid while cooking, use the racks which below 1.6M height as identified to avoid the risk of over spillage and burns.

Cooking

• Do not heat up flammable products.

• If you have to open the door during cooking, it is recommended to slightly open it to let steam escape and the fully open. This would avoid potential risks of steam or heat contact which could cause burns when a big quantity of steam escapes from the cavity.

• Do not watch inside the vent pipe nor leave the hand above it. Evacuated steam/heat at the same temperature of the cavity may be evacuated there.

Maintenance

• Isolate the mains services before undertaking any service operations and before opening of the side panel(s) or of the display board.

• If you notice that one of the door glass is damaged (scratch, notch, cracks…), have it changed immediately. It might break if you were using it.

It is very important to descale your oven to ensure optimal and secure operation of your oven. Your water consumption will thus be even lower than the rate of scale formation will be low.

IV. INSTALLATION

a. transportation Make sure the equipment hasn’t been damaged during transportation. Move the appliance still packed with a fork lift truck or other suitable means ensuring it is not tilted. For any handling, the appliance should be in the vertical position and care should be taken to protect the service pipes located under the unit.

To lift the oven, don’t take it from the front but sidew ays.

b. Unpacking. Before unpacking, make sure that the protective packing film is not perforated. Damage caused during transportation must be notified to the carrier on receipt of delivery.

Using suitable tool cut and remove the steel packing bands bands. Remove the outer carton. Inspect to ensure that the appliance is not damaged.

For any claim concerning transportation damages the carrier must be advised immediately.

c. Precautions of Installation

Do not site the oven against the wall to allow ventilation. Recommended distances must be adhered too (see below). Do not install with the sides close to a hot source. The surface on which the oven stands must be flat, horizontal and must be able to support the weight of the unit. The machine must be secured in position. Make sure that no flammable equipment is nearby the unit. Adjust the stand by setting its feet at the right height.

Other Precautions : 1) 100 mm minimum, if no heat source or with insulated side panels

2) 300 mm advised for ease of serviceability

3) 500 mm if heat source without insulated side panels

Note : Distances less than recommended on the control panel side when next to heat source an insulated side panel must be fitted to the machine. Failure to adhere to these instructions could invalidate your warranty.

IMPORTANT NOTE TO INSTALLERS 1. When installing the CPRO in hard water areas or when the descale system is to be utalised it is important that the descale system is set up at the time of installation. Details on the set up are found in paragraph VI - d of this manual. Failure to adhere too these instructions could invalidate your warranty.

2. Installation distances from other appliances are stated within paragraph III-b of this manual.

20 level units: Locate the oven into the position required. Make sure that the trolley locates and fits in easily. If there is a floor grid in front of the oven, install metal strips to allow passage for the wheels of the trolley. After correct and level location of the oven verified, adjust the feet in order to align it to the trolley. Note: shims are supplied for additional alignment and adjustment to the trolley as required.

Handling of the 20 level preheating device with the door being opened :

The floor has to be absolutely flat. The oven/trolley i nterface works only under that condition.

After heating up the oven, double check the oven installation for correct alignment. The 20 level units have to be fixed to the floor (2 fixing kits provided with the oven) or fixed to the back (parts to be purchased).

V. CONNECTIONS

a. Water connection Connection on cold potable water supply. Note: An approved double check valve must be installed upstream to the appliance Minimum permissible operating pressure 250 kPa; maximum pressure 500 kPa.

Provide suitable was approved ½” hose with R ¾’’bore BSP union nut stopcock and line strainer. If water harness is above 5 °e Clark, a suitable non base exchange water softener for the boiler less model should be installed. The site water quality must be checked both prior to e correct requirements are met. Water conductibility has to be between 10 and 200 µS/cm. When the oven is not in use (e.g. during the night) turn off the mains stopcock. The machine is a dual fill unit. In order to use less potable softened water, remove the dual fill manifold and connect the softener on the connection given by the sticker on the back panel.

b. Drain Cavity Drain :Connect to Tundish (R 1” female).

Door Drip tray : Female 10mm hose connection (at the rear) to evacuate the water from the drip tray fixed onto the door Note: The pipes for evacuating the water from the cavity drain and from the drip tray must be able to support a temperature of 90°C.

Do not position the oven over a floor drain and avoid a long pipe run (max 1 metre) from oven.

c. Connecting the Drop Pick

Door Drip Tray drain connection (rear view). Make sure the customer drain pipe doesn’t go above the height of this connection.

The drip tray pipe (10mm inner diam.) is sloping downhill towards rear of machine.

d.Exhaust air Exhaust air should evacuate in the room, if possible into a canopy. Do not cover the exhaust air opening. Danger of injury: The exhaust air temperature can be as high as that in the cooking compartment.

e. Electrical connections To be undertaken by an trained/authorised electrician f ollowing the local regulations.

The technical data plate is situated on the side of the display panel. By the installation, place the mains isolator close to the machine (provided by customer). During prolonged breaks in operation, e.g. overnight, turn the main isolator off. Standard voltage: 400/50/3 + N + Earth

f. Checking

Compare the data given on the data plate with that for the bulding’s power supply and the circuit diagram.

Check that the fuse protection and cables are adequate for the current load.

g. Machine Connection (see implementation sketch refer to paragraph III-b ) Draw cable (suitable for current capacity of the oven) through the entry bush joint on the underside of the oven. Connect cable to the designated terminal block located behind the display board side. Tighten all screws of the terminal block. Tighten the entry bush compression nut. The appliance must be earthed. The terminal screws is located directly beside the entry bush. PROTECTIVE conductor terminal

VI OPERATION

a. First operation Turn on the mains water supply. Ensure the non return component of the chemical tube is connected and placed into the correct chemical (detergent or descale as applicable).

Make sure that suction pipes for detergent and descale p roduct are correctly connected.

Before using the unit, heat the oven up to 250°C in convection mode. A smell and some smoke may occur, this is considered as normal, if it persists, switch the machine off and call Hobart. Let the oven cool down. Clean the oven (see refer to Instruction Manual) Then, check the oven operating in steam and combi (convection and steam) modes.

b. Loading the oven (Maximum Load) :

Combi-Pro 061 : 30 kg Combi-Pro 101 : 50 kg Combi-Pro 102 : 100 kg Combi-Pro 161 : 80 kg Combi-Pro 201 : 180 kg Combi-Pro 202 : 250 kg

Recommended machine loadings must be adhered too for protection of the operator and the oven.

Place the cooking load in appropriate container or on grid in accordance with the instructions for use and slide them into the racks. 20 levels unit: Make sure the floor is horizontal under the oven. When the oven is used with a monobloc trolley and when this one is not in place inside the oven, the interlocked preheating plate must be in place for the oven to operate.

VII. Failures

a. Safety during repair No operation nor access to any electrical components should be done before making sure that the unit is disconnected from any power supply on which the oven might be connected.

b. Fault code identification Some failures are electronically controlled and are displayed on the screen as an error code. If one of them occurs during the operation of the appliance, the relevant number is displayed on the screen. The failures are automatically reset after repair and validation of the failure. Frost Protection When the oven is not regularly in operation or in very cold weather or if the room is not heated,

• Drain the boiler, • Disconnect or isolate the water supply, • Drain the solenoid valves in removing the non return valves.

VIII. CLEANING IMPORTANT NOTE: If left grease deposits can/may catch fire. It is very important to keep clean the cooking chamber and the inserts/trolley.

If the electrical power is interrupted during a cleaning cycle, a rinse cycle is run automatically to eliminate any detergent product trace within the cooking chamber.

Do not wash the appliance with a spray gun or a high pre ssure cleaning machine. The symbol « Danger » appears near the critical information for a good operation of the unit.

NEVER USE ANY ABRASIVE OR CHLORED PRODUCT ON THE MACHIN E. USE PRODUCTS WHICH HAVE BEEN APPROVED BY HOBART - BOTH CLEANING (ECO-UNIPRO) AND DESCALING PRODUCTS (DESCALE-PRO). IX. MAINTENANCE

Note : All appropriate safety practices and procedures must be undertaken when servicing this equipment.

This appliance has been designed and manufactured using the latest technologies.

It is important to instigate a full maintenance program to ensure the continued operation and reliability of the machine. It is recommended to have at least one full service per year.

Please note that the frequency of service maintenance will depend on customer usage and may vary due to this. Contact Hobart UK to discuss and arrange your service plan.

It is strongly recommended that service works are undertaken by a suitably trained and competent person/technician.

XI. UP DATE PROCEDURE COMBI PLUS

- Up dating the CPU board : Copy on a USB stick the two files to up date the oven without modifying the file names or the file extensions names.

- Switch off the oven - Connect the USB stick - Switch on the oven. - The updating will run automatically. File transfer will last about 30 seconds and then the new software number will be displayed during a few seconds.

The oven is updated.

- Press on and confirm to launch LCD updating. The updating will run automatically. A window indicates that the updating is in progress. Be careful: Do not switch the oven off during files transfer as the board wouldn’t be updating via the USB stick. Files transfer will last a few minutes. At the end, the windows will disappear indicating that the transfer is finished. The oven is ready to run with the new LCD board version. The oven is updated.

b. Up dating the CPU board : Copy on a USB stick the two files to up date the oven without modify the file names or the file extensions names.

- Switch off the oven - Connect the USB stick. - Switch on the oven.

MONTAGE HOTTE: - Couper l'alimentation électrique du four.- Démonter la tôle coté pupitre, la tôle coté charnière et la tôle arrière (Uniquement si le fonctionnement de la hotte est géré par le four)- Percer le dessus et le châssis du four suivant le plan ci-joint. Faire attention au passage des fils électriques. Si besoin les déplacer pour faire le perçage. ATTENTION: - S'il s'agit d'un montage en porte à droite, faire un perçage symétrique au plan. - Dans le cas où le fonctionnement de la hotte est géré par le four, percer le trou pour le presse-étoupe. Sinon, ne pas le faire.- Monter le presse-étoupe sur la tôle de dessus. (Uniquement si le fonctionnement de la hotte est géré par le four)- Retirer la vis RL M4 qui se trouve sur l'avant et au dessus du four.- Dans le cas d'un montage en porte à droite, déplacer les pièces "TOLE SP. AVANT", "TOLE SP. ARRIERE" et "TOLE CACHE COTE PUPITRE" qui se trouvent sur la hotte, de manière à avoir un montage symétrique par rapport au montage reçu. - Visser sur l'avant et dessous la hotte, le pion fourni avec celle-ci. (Détail A)- Positionner la hotte sur le four de manière à faire correspondre le pion avec le trou sur le haut de la façade où la vis a été retirée.- Utiliser les vis M6 pour la fixation arrière de la hotte. Caler avec les rondelles fournies si besoin.- Dans le cas où le fonctionnement de la hotte est géré par le four, faire passer le fil par le presse-étoupe puis Brancher la hotte suivant le schéma fourni. Retirer le fusible F3 et le remplacer par le fusible 3.15 A fourni.- Raccorder la sortie des condensats à l'évacuation d'eau.- Rebrancher l'alimentation électrique du four.- Dans le cas où le fonctionnement de la hotte est géré par le four et si besoin, régler le temps de fonctionnement de la hotte "porte ouverte" en modifiant le paramètre 53. CANOPY ASSEMBLY:- Disconnect the oven from the main electrical supply.- Remove both sides and back panels *- When drilling the top panel and the chassis in accordance with the attached drawing, take care not to damage any electrical wiring etc... If necessary, move it before drilling. ATTENTION: - If the oven has right hand hinges, drill symmetrically to the drawing. - When the canopy operation is powered by the oven, drill the hole for the stuffing box. If not, don’t make this hole.- Fit the stuffing box on the top panel.*- Remove screw RL M4 which is on the front and above the oven.- For a right hinged oven, The “SP FRONT SHEET” and “SP BACK SHEET” which are on the left of the canopy have to be fixed on the right. The “DISPLAY BOARD COVER SHEET" which is on the right has to be fixed on the left. It is not necessary to move these for a left hinged oven.- Screw the provided pin (detail A) underneath the canopy on its front part.- Position the canopy on the oven to let the pin correspond with the hole where the screw had been removed.- Use M6 screws for the back fixing of the canopy. Use washers as well if necessary to wedge the canopy.- When the canopy operation is powered by the oven, let the cabling go through the stuffing box and connect the canopy according to the wiring diagram. Remove fuse F3 and replace it with the 3.15 A fuse supply. - Connect the condensate pipe to the drain pipe.- Connect the oven to the main power supply.- When the canopy operation is powered by the oven, if necessary, adjust the operating time of the canopy “with the door opened” by modifying parameter 53. * Only when the canopy is powered by the oven.
