EcoSmart system technology is your assurance that Combitherm ovens are

designed to drive down ownership costs and minimize environmental impact.

For instance, the Combitherm seals in the steam used for cooking cycles. So Combitherm uses 70% less water than conventional combi ovens. That’s because, unlike “open system” oven design, steam has no direct escape route.

Plus, Combitherm steam levels are adjusted automatically. Adjustments are based on oven temperature and product load to simplify operation and take any guesswork out of control settings.

The EcoSmart system also admits less cold air into the cooking chamber. High temperatures are easier to maintain, temperature fluctuations are kept to a minimum, and faster cooking times are achieved. Savings from more efficient use of gas, electricity and water also contribute to a faster ROI.

BOILER-FREE DESIGN All gas Combitherms (and select electric models) feature a “boiler-free” design. Boiler and steam generator maintenance is completely eliminated. There’s also no need for generator flushing, de-liming, water reservoirs, or level controls.

COMBISMOKERTM Combitherm combi ovens offer complete smoking capability in addition to standard combi cooking modes. Available on all size gas and electric models, our unique smoking feature gives you the ability to smoke any product – hot or cold. Provide your customers a unique food flavor profile without the addition of sodium, fat or sugar. Plus, the Combitherm can go from smoker mode to steaming without flavor carryover. You can add a smoker to your kitchen at a fraction of the cost of buying a dedicated smoker.

THE GOLD-N-BROWNTM FINISHING TOUCH Now you can actually cook high-moisture products — including poultry and french fries — to a lovely and even golden brown without the fuss, fats or health concerns associated with deep fat frying. Six different levels of browning give you the ability to control food quality and achieve a perfect finish on a variety of food items.

STEAM VENTS AUTOMATICALLY Our patented Automatic Steam Venting safety feature helps eliminate incidental burns. The oven releases steam in sequence with selected cooking programs, automatically venting the oven to protect the operator.

HACCP DOCUMENTATION Combitherm ovens with CombiTouch® controls feature built-in HACCP documentation software as standard. Every detail of each cooking procedure is thoroughly documented in accordance with HACCP criteria. All relevant information is recorded and stored. Information can then be downloaded via USB stick and displayed in a detailed format for evaluation and printing.

What is Rack Management? First developed by Alto-Shaam, it’s an easier and more efficient way to prepare and hold foods in high-volume applications. And one of Rack Management’s key components is the Combitherm.

The Rack Management system is a thoroughly integrated approach to high-volume food production. It uses interchangeable roll-in carts to transfer pans or plates of food from station to station. Menu items can be rolled into the Combitherm, cooked, and then moved to an Alto-Shaam Quickchiller™ for up to five days of refrigerated storage. Once removed from the

Quickchiller, prepared foods can be plated during off-peak hours and held cold until needed. Retherm the plates in the Combitherm with minimal labor, and then place them in a Halo Heat® CombiMate® holding cabinet until time for service.

Rack Management is a simple and efficient way to streamline production and reduce labor costs. It simplifies menu preparation, letting you prepare many items outside of peak production periods. Plus, it helps enhance food safety by reducing the risks associated with food handling and cross contamination.

Food is prepared ahead of time in the Combitherm. Once cooked, food

can be removed from the Combitherm, then chilled and stored in the Quickchiller.

As serving time nears, food is placed back into the Combitherm for retherming.

Rethermed food can be placed in the Halo Heat CombiMate holding cabinet until ready to serve.

Fully automatic smart control simplifies Combitherm operation. Intuitive touchscreen control, programmable deluxe control, or simple S-Control lets you bake, roast, broil, steam or retherm — all at the touch of a button.

COMBITOUCH® CONTROLThe Alto-Shaam CombiTouch touchscreen control offers a simple interface that commands all of the Combitherm’s cooking functions.

Graphic controls - The graphic-based control overcomes language barriers while simple, logical procedures ensure that correct steps are followed every time.

An excellent memory - Store up to 250 recipes with multiple steps, identified by your uploaded pictures. The CombiTouch comes with more than 100 pre-programmed recipes.

Standard HACCP - CombiTouch includes downloadable HACCP functionality.

Six levels of Gold-n-Brown™ - Six precise browning levels are available with CombiTouch. The Gold-n-Brown feature controls humidity for perfect cooking and browning. Maintain the ideal cooking environment for the ideal finish.

Superior baking - The two-speed reversing fan provides excellent and consistent baking results. A moisture injection feature provides perfect sheen and crust on breads and pastries.

Multi-shelf timers - Track cooking time of either seven or 10 different food items in the same oven with multi-shelf timers. Time is tracked in minutes and seconds.

On-board diagnostics - The CombiTouch system includes on-board diagnostic functionality with results displayed right on the touch screen.

Reduced energy setting - CombiTouch features an interactive control display with reduced energy setting.

OTHER CONTROL OPTIONSDeluxe control option - The Deluxe Control features Rapid-Touch™ program selection and an easy-to-read instruction display (programmed in multiple languages). This control lets you pre-program up to 250 multi-step cooking procedures. Each procedure can be programmed with up to 20 individual cooking steps, and then stored in memory by name or number. Probe and smoke capabilities are optional.

Standard Control option - The standard control is the same as the Deluxe control, with the exception of the Rapid-Touch programming capability.

S-Control option - Optional rotary dial offers fingertip control of cooking mode, temperature setting and cooking timer. Also features fan speed control, CombiClean® and cool-down mode. Probe and smoke capabilities are optional.
