The first day’s festivities were capped off with a Dessert and Art Auction which showcased works from area cooks and artists, which raised over $2000. The Scholarship Fund currently helps 10 Comstock graduates that are studying in 5 different colleges or universities. This fund would not exist if it wasn’t for the hard work of Janita Hinds. Her dedication and hard work has made this scholarship fund into one of the best local scholarship funds in West Texas. The school’s heartfelt gratitude goes to Mrs. Hinds for all of her hard work on behalf of the graduates of Comstock ISD. Thanks to all that made the Cook Off such a great success. Bryan and Rebecca also won the New Revolution King and Queen of the Hill, by being first to top the gnarly Tres Cuevas Climb – a 15% grade of adult-size rocks. They also won the Starlight Theatre Fastest Man and Woman Award. Hula hoopers, cheerleaders and jammin’ musicians waved participants around the track including home turf Team Desert Spots. In the 100K, Mark Yuhas (BBNP, TX) placed 5 th with a time of 05:37:54. Mastering the 50K loop was Brad Butler (Alpine, TX) placing 2nd with a time of 02:28:42. 4th Annual Richard Hinds Chili Cook Off Results

Thirty five of the nation’s best chili cooks found their way to Comstock to participate in the4th Annual Richard Hinds Memorial Chili Cook Off on February 21-22nd. Janita Hinds, theevent’s sponsor and ramrod, always says that the 3rd weekend in February will be thewindiest of the year. She should be given a job with the Weather Service, as February 21stwas no disappointment in the wind department. But then wind has never been an obstacleto true blue chili cooks.

The Chili Cook Off raises funds for the Richard Hinds Memorial Scholarship which fundsscholarships to graduates of Comstock ISD. TERLINGUA, TEXAS – Weather perfection glowed on 441 mountain bikers pursuing thefinish line of the 2009 Starlight Mas O Menos Mountain Bike Endurance Fest produced byDesert Sports. Important Insurance NoticeIf you are holding a cookoff, please make sure the venue has their owninsurance before having them listed as an additional insured on the CASIcertificate for that event. Holding a cookoff at a location that does not haveinsurance, and basically sharing the CASI insurance for their liability, couldhave catastrophic consequences to our insurance and ability to continueholding cookoffs.

The purpose of CASI insurance is to protect CASI and is not to protectthose too foolish to protect themselves.

From the PresidentSpring has sprung! You can always tell because thetrees are budding, flowers are starting to bloom, andthere’s pollen everywhere. There’s one other way toknow it’s spring. The Upcomings listings in theTerlingua Trails become longer and longer.

This is good, as it indicates that even though theeconomy may not be the greatest, folks still are outcooking chili and helping those charities which the

cookoffs benefit. From March through June, there are 11 automatic qualifiercookoffs and 23 Pod cookoffs.

During this same period, a few of the “granddaddy cookoffs” include the 39th AnnualTexas Ladies State, 38th Annual Howdy Roo, 36th Annual SAP-CASI, 33rd AnnualCowtown, 31st Annual Pasadena Pod, 30th Annual Top of Texas, 29th Annual SOT Pod,28th Annual Rose City Pod, 27th Annual Sightfest, 26th Annual Colorado State, 25th

Annual Wichita Falls American Legion, and 24th Annual Wyoming State Cookoffs.Houston Pod, the oldest CASI Pod, is also holding their annual Pod Cookoff; don’tknow which number it is, but I’m sure it’s a big one.

It’s enouraging to me when I see cookoffs of this caliber still being held after all theseyears. This indicates a commitment by Pod members and cooks alike which is notfound in many organizations these days.

Before you know it, the Great Peppers’ Meeting will be here. Bucky Seelig and KenRodd have announced that they will not be seeking re-election to the Board. Futureissues of the Trails will include job descriptions, not necessarily for an office, but forthe various jobs performed by the Board, as well as other information relative toserving on the Board.

Please consider serving CASI as a member of the Board of Directors. If you have anyquestions, don’t hesitate to ask one of us or even one of the past Directors.

I’ll be cooking at Texas Ladies’ State and in Louisiana, Alabama and Florida duringthe next month and hope to see you at one of these cookoffs. Meanwhile, keepcooking chili and supporting charities, support our sponsors, and have fun all thewhile.

Here it is; the chili year is half over!! Here is hoping thatall of you are racking up the points and cooking a lot ofchili. The weather in Texas has finally been nice enoughthat you can cook without your gloves and heavy coat.And it won’t be long until we start complaining about howhot it is!

Several things were brought to my attention last month.One is the rule about signing your ticket. The rule states“Each chili cook must sign the secret ticket slip in ink withfirst and last name at the time the judging cup is issued andinitial Official Entrants List that the cup was received.”This does mean that it is to be signed. It should not be

stamped.

Our Regional Referees need to ensure that if they assign a referee to a chili cookoff theylet the promoter know who it is and how to contact that person. This will help make thecookoff go a lot smoother for everybody.

We have had several requests for new cookoffs in several areas. When I receive an inquiryabout how to have a chili cookoff or where there is a cookoff in a specific area, I always sendthe answer back, not only to the person, but to the Regional Referee. Thank you to thoseReferees to whom I have sent these contacts for following up and not only contacting theperson, but assisting them with their needs.

I have had several comments on the blog. Please send me your comments and suggestions.I am still new at the process, but I am learning more about it every day. You can access theblog at www.edjanice.blogspot.com . I am trying to keep everyone updated on cookoffsand other news, as well as share ideas and thoughts. Your comments are welcomed.

Wanted:Krazy Flats Coordinator

The Board of Directors is soliciting applications from anyone interested in beingthe Krazy Flats Coordinator during TICC 2009. The Krazy Flats Coordinator willwork under a CASI Board member and may solicit volunteers to work in KrazyFlats. Job duties include:

> Cleanup of Krazy Flats Concession and Pavilion Areas prior to and afterevent

> Set up of tables and chairs and tear down at conclusion of event> Securing ice from ice trailer to stock freezers prior to event> Securing beer and icing down stock> Stocking concession items for sale> Selling of wristbands to early arrivals in Krazy Flats> Replenishing ice and beer stock, when necessary> Work with CASI Treasurer on cash/inventory reconciliations and

pickups> Ongoing cleaning of patio/concession area> Packing of all unsold merchandise and beer at conclusion of event> Preparing and coordinating Volunteer schedule> Meet and greet sponsors visiting Krazy Flats Saloon> Within two weeks after event, submit report to CASI Board outlining

operations, suggestions, concerns, etc.

Attention All Cookoff Promoters!

Apparently there is some misunderstanding about the deadline for enteringyour event in the Terlingua Trails. The deadline for publication is the 15th ofevery month. The Trails goes to the press on the 16th. If information is notreceived by the 15th, your ad will not appear in the next edition of the Trails,it will appear in the following month.. The rule book states that your ad mustappear in the month prior to the event. SO, if you are having a cookoff in themonth of June, you must send in your information before the 15th of April sothat it will appear in the May Trails, which is the month prior to the event. Anycookoff that fails to appear in the month prior to the event will be placed onAdvertising Probation.

When I became the CASI TallyMaster, one of the thingsmy predecessor, Elton Homesley, warned me about wasthe penmanship of the American people. I didn’t worryabout that too much. I thought Elton may have beenexaggerating since I wouldn’t get paperwork fromeveryone in America. Also, my career in the engineeringfield had exposed me to the worst handwriting in theEnglish speaking world. But I soon learned he was right.

We focused on that area in the early years and, while theproblem hasn’t been eliminated, it has become

manageable. However, a couple of recent examples have made me think it’s time to mentionit again.

First of all, let me say that having poor handwriting doesn’t make you a bad person; it shouldjust preclude you from recording winners at a chili cookoff. I should point out that CASIholds the cookoff referee responsible for the accuracy of the cookoff paperwork. Thecondition of the paperwork is a reflection on you.

Poor legibility can create many problems, not the least of which is causing me to enter thewrong person as a winner. It is especially troublesome when the person in question is a newcook and I would be creating a new CIS record for them. Not being able to read a namecorrectly could cause me to create a new record for an existing cook. My backup systemis the Entrants List. If it is in poor condition, that just increases the difficulty of getting theresults right.

It has now been ten months since we posted a delinquent cookoff. That is just outstandingwork by our CASI referees. Keep up the great work.

SCHOLARSHIP UPDATEThis letter to the Scholarship Committee and the CASIBoard of Directors is long overdue. I am currently asenior at Texas Woman’s University with an overallGPA of 3.66. My major is Family Studies and upongraduation in December 2009, I will have completed myBachelor of Science Degree in Family Studies in a short3 1/2year period and have a Provisional Certification asa Family Life Educator. Uponcompletion of my ABA degree, I plan to work withautistic children and their families.

I am very proud to represent CASI as a scholarship recipient. My family has been anactive part of the chili community since prior to my birth. My grandparents, Bob andDoris Coats are long time chili cooks and both are past CASI world champions. Mymother, Dusty Hudspeth began cooking chili when she was my age and has served asan officer on a local level and is a past ICS world champion. My father, Ken Hudspeth,served as CASI Executive Director for a number of years and was on the CASI Boardof Directors when the Terlingua cook-off was moved to its current location.

Saturday morning I got up early, quietly dressed, made my lunch, grabbed the dog, andslipped quietly into the garage.

I hooked up the boat up to the truck, and proceeded to back out into a torrential downpour.The wind was blowing 50 mph, so I pulled back into the garage, turned on the radio, anddiscovered that the weather would be bad all day.

I went back into the house, quietly undressed, and slipped back into bed.

I cuddled up to my wife's back, now with a different anticipation, and whispered, 'The weatherout there is terrible.'

My loving wife of 10 years replied, 'Can you believe my stupid husband is out fishing inthat?'

And that's how the fight started ...

Winning designs may also be used for souvenir TICC shirts.

All entries should include in the title, “43 Annual Terlingua International ChiliChampionship”, and the date, “November 7, 2009”. It must also list the names of thecurrent Board members and include the CASI logo.

Designs may be sent electronically in a standard graphic format (PDF or JPG) or may bea hard copy, suitable for scanning.

Pictures of last year’s winners and sponsor logos will be made available and must beadded to the poster design before printing. Changes to the wording and design may berequested by the Board.

If selected, the artwork becomes the sole property of CASI and the Terlingua InternationalChili Championship and may or may not be used in any manner CASI desires. Thewinning designer will receive credit with their name included on the final product.

Bess’ Best Greetings to one and all out in chili land! Writing to youthis morning from the beautiful enclosed porch of ourretirement home located in gorgeous, but chilly, Lamar,Missouri. It is not that uncomfortable out here thismorning. Harry has clear plastic nailed to the openings,we keep a throw rug down at the bottom of the door,and with the two electric stoves going, it is not bad. Wehave been wanting to put screen wire over the openingsfor the summer but seems like we get a few dollarsahead and Harry spends it elsewhere.

The old timers in this part of the country have the saying, “If the Month of March comesin like a lion, it will go out like a lamb” or vice versa. Whichever way you want to say it, Ithink the lamb or lion came in wearing a coat. Who knows? Come the first day of spring,we may be going to cookoffs in short sleeves and shorts. I remember several years back when Harry and I attended the St. Patrick’s Day Chili Cookoffin Kansas City. It was held in the City Market Area. We went up on Friday afternoon,checked into a hotel that was within walking distance of the cookoff, and walked, touredand took in the sites of downtown in short sleeves. What happened overnight I don’t know,but we went up there only taking lightweight coats and Saturday morning was bitter. The people holding the cookoff had put up a big tent for us to cook under with sides onit and those bullet-type kerosene heaters inside. That was nice and it did make being insidethe tent somewhat better than outside, but with the heaters creating warm air, and warm airrising, when it came to the top of the tent moisture formed since it was cold outside.Everywhere there was a seam in the tent, water collected and dripped down on thecooks (and, yes, we were under one of those drips). Still didn’t keep our hands and feet warm. I am not sure who placed where in the standings; the main thing I remember was it was COLDand Carol West was wearing some type of blue parka jacket or whatever it was. It was morethan we had brought from Lamar. It is a 2-hour plus drive from Lamar to KC, and I thinkwe were home for an hour or more before we ever got thawed out.

I’ll bet Carol and Harvey West, along with Ray and Pat King, remember this cookoff. Theyhad come from the warmth of Texas and felt the cold worse than Harry and me. I bet eachof you has a cold weather cookoff story and I would love to hear it someday if and whenwe cross paths. Speaking of chili cookoffs, Harry and I are enthused about the outlook for chili in our area.We have a new Chili Pod that has been formed and will seek sanctioning at the GreatPeppers’ Meeting this fall. It looks like between the MO/KAN Pod and the newly-formedGladiator Pod that there are going to be several new cookoffs, along with the regularcookoffs, in our area this summer and fall. I know the economy is not the best right now, but things are really looking up at the DetailShop if the weather ever fairs up. That is good because our chili cooking money comes fromthe extra we bring in thru the shop. Perhaps, and just perhaps, this will just be the year ofHarry and Bess’ return.

Cabin Fever hasn’t really hit us this year as bad as some years in the past. Since the latterpart of January, we have been going thru the La Nina cycle. For every three or four cool ordreary days we have, we have been followed by several of these nice days that make youwant to think of more outdoor activities. I have had so many things going I really haven’t discussed weather in detail with Harry.Next week is Spring Break for the High School in Lamar and a week from this Saturday isthe big cookoff in Pittsburg, KS, so you wait and see - cold/snow/ice, you name it. In closing, I want to apologize for not having a column last month. So much just hit all atonce and here we are a month later and things are still not back to normal. For the past month,we have been putting in 16 and 18 hour days, 7 days a week.

On February 28th, 2009, with a “blustery” north wind approaching 30 knots, LynnHejtmancik was inducted as an “Admiral in the Brotherhood of Admirals of Admirals of theTexas Navy” on the flight deck of the USS Lexington (CV 16) in Corpus Christi, Texas! Admiralson board included: Senior Admiral Duke Walton, Admirals Larry Burruss, Walter Caldwelland Don Meehan. Admiral Ralph Hay was represented by his lovely wife Dee.

With family and friends looking on, Lynn received his Certificate of Admiralty, signed byGovernor Rick Perry, blue blazer, yachting cap and silver kazoo! The grand proclamationemphasizes the Admirals’ duties “to assist in preservation of the History, Boundaries,Water Resources and Civil Defense of the State”. Admiral Lynn will be especiallyresponsible for protecting all bodies of water within his jurisdiction, including but not limitedto swimming pools! To The Fleet!

Tales from the RanchOrale, CASI, que pasa? Hope all is well witheverybody. Steady as she goes here at the ranch;not much going on except for the rent.

What a wonderful time was had by all at theComstock, Texas fandango. Mrs. Juanita Hindsand company did a wonderful job of pleasingeverybody and making sure we all had a goodtime. Plenty of food to go around; Dodie, Barb,Karen, Connie, and some other folks fedeverybody a wonderful breakfast Saturday

morning. I even cooked up a pot of menudo for those who felt a need for a bowl.

Lots of out of town folks made the trip and were very much welcomed for making the trip.A fair piece of money was raised for the event. I don’t have any of the figures but it wasa bunch of pesos and a whole lotta centavos. For those who won a point - way to go!Thanks, Juanita, for a good time...

Times are tough, but the chili world keeps on trucking. Lots of cooks on the road every weekdespite the economy. But the charities really do appreciate the efforts from everybody.

My 401K has been downgraded to a 101B. Yeah, buddy. If there are any financial wizardsout there, feel free to call me cause I’m wide open for any frigging advice. You know whatI mean, Vern???

Anyway folks, things will get better. It’ll take a while. I’m gonna have to cut my article shortthis month. I just ran out of Engles. Recent events in my life have caused me to examine whatis important to me. CASI is important. Although notnumber one, it is very high on my list. For that reason, Iam seeking another term as a member of the CASI Boardof Directors.

I am currently the CASI Vice-President but am betterknown as the TallyMaster, a position I have been

fortunate enough to have for several years. It has been an honor and distinct pleasure toserve CASI as TallyMaster. As TallyMaster, I get to communicate with the cooks and showteams, and the CASI referees on a regular basis. I also frequently interact with the otherDirectors (especially membership, Upcomings and the Executive Director) on cookoffissues. I can honestly say, I enjoy these duties.

But there is more to being a Director than just being the TallyMaster. As a CASI Officer,I am looked to for leadership on issues dealing with the well-being of the organization. Yes,CASI is important to me, but it is also important to our many members. We have an obligationto the membership which is a responsibility not to be taken lightly.

Over the past couple of years we have lost, through retirement, a tremendous amount ofleadership and experience; and we will lose more this year. I want to use my experience tolead and guide the next leaders we will elect.

As TallyMaster, I’ve also served on the CASI Rules Committee. This is not a position peopleaspire to, but it is necessary to insure our cookoffs are conducted fairly and in accordancewith CASI Rules. I feel I have approached this task with fairness and the best interests ofthe cooks in mind. I also serve as chairman of the new Events Committee. It is exciting tobe part of something new. To get this started and watch it grow into an asset of CASI willbe challenging and rewarding.

The Terlingua International Chili Championship is our most important product. It’s whyCASI exists. We are in a time where the economy has presented us with challenges tocontinue to make TICC a world-class premiere event. I feel I possess the experience to helpguide us through some difficult times.

Because there is work to do which I feel I can help accomplish, I will seek re-election as aCASI Director at the Great Peppers Meeting in Midland, Texas this September. I wouldgreatly appreciate your support of my candidacy.

I have mentioned to you in the past to “be prepared for the unexpected”. Please get the ideaout of your head that something is always going to happen to the other guy, not you. Go get you a camera, if you don’t have one, or get someone that has a video to come in andtake pictures or video everything you have in your house or business or mobile home, etc.That is something that Junior and I had talked about doing down at the church, and I didn’tpractice what I preach.

You have no idea what a difficult and tremendous task it is to try to make an inventory listfor insurance. As Caretakers and Maintenance, we were in and out of that church or aroundit seven days a week; still hard, don’t leave anything to memory. Besides, insurance peoplelike pictures better than words. Harry sent a couple of pictures to Bucky of the fire (see Page 24); and we will have a 2009Missouri State. We’re trying to work St. Mary’s into the picture and would like to see asmany as could afford to travel to come support us. I think I have probably troubled you long enough this month so better get out of here. Just remember “To Start Slow & Then Taper Off” and as my Dear Ole’ Granny used to say“If the Lord Is Willing & the Creek Don’t Rise” will talk with you next month. Bess & Harry

In Memory of: Ken Hudspeth August 14, 1945 – January 14, 2009

For those of you who remember Ken, I would like to let you know that Ken passed away onJanuary 14, 2009. His service is scheduled at the Dallas/Fort Worth National Cemetery, 2000Mountain Creek Parkway, Dallas, TX 75211 on Wednesday, March 18 at 2:00PM.

Ken was very involved in CASI chili from the early 1980’s until the early 1990’s. He servedas CASI Executive Director from 1986 – 1989. He was on the Board of Directors that selectedthe current CASI site at Rancho CASI de Los Chisos and was instrumental in establishingthe Old 320 sites. Ken held other various offices in Cowtown, DAM and TOT Pods. He alsoserved as the chairman for the 1985 Great Peppers meeting held in Dallas and was instrumentalin the “Great Peppers for One Terlingua” forum held during that meeting. Ken establishedthe Texas Open Committee that was responsible for working with the Lewisville Parks andRecreation Department to host the Texas Open Cook-off when it was held at Lewisville LakePark.

Ken was a Vietnam Veteran, serving in the United States Navy on active duty from 1963 to1966 and as a reservist from 1966 to 1969. He leaves behind two children, Kristopher Hudspethand Kassandra “Kasey” Hudspeth and two beautiful grand-daughters, Aydan and AdysonHudspeth.”Dusty Hudspeth

Braving the difficult Shimano Youth Kid’s Kup course were 19 youngsters including CaelanDevine-Ryan, age 5 (BBNP), Pruitt Urbanczyk, age 5 and Walt Urbanczyk, age 3 (Alpine),Carmen Tinney, age 12 (Terlingua) and Laine Hickle, age 5 (Terlingua).

Lights curled through the desert on the Nite Fun Ride and record numbers met at LajitasResort for the Big Bend Ranch State Park Fun Ride. The event was wowed with the AustinBike Zoo, who brought their creations for folks to ride including an 80’ rattlesnake and anoutstanding diaphanous butterfly.

For the third year, this event was listed on the USA Cycling Mountain Bike Ultra EnduranceNational calendar. The Mas O Menos was part of the 2009 Hill Country Bicycle Works TexasMountain Bike State Championship Marathon Series and racers could also earn points inthe Cycle Progress/Pivot Texas State Mountain Bike Championship Series.

Massive THANKS go to the staff, sponsors, CASI, volunteers, Terlingua Fire & EMS, BigBend & San Angelo Amateur Radio Clubs. Another spring-like day is visiting us here in the frozennorthland. In fact, it’s warmer here in Kansas City thanjust about any place in Texas. That makes me reallyhappy because it means that maybe I wasn’t completelydemented when we moved here from Ft. Worth about30 years ago.

As you can tell, I have absolutely nothing to writeabout today, so I’m going to ramble amongst thejungles of my mind for a few words. If you’re expecting

some deep thoughts or profound insights, I’m sorry. Such things are beyond my powerson good days and certainly on early spring days.

For some years, I have had a strong urge to go sit down with each of my highly experiencedfriends and let them tell me of all the things that used to be. My friend, Russ, was born beforethe “Roaring Twenties” and lived through the “Great Depression,” the “Age of Flight,” andthe “Space Age.” He’s lived through a lot more than that, but the important thing is thathe has lived a lot! He’s done so much, overcome so much, and seen so much. So, all youyoung guys, go forth and find an old guy and learn about life. All you old guys, talk to someyoung guys and learn from them while you teach them. You’ll be surprised how enjoyableit is.

Ken Rodd invited me to join the Friends of Krazy Flats on Facebook. I’ve been hearing allsorts of stuff about Facebook, so I accepted Ken’s invitation. Now I’m trying to learn howto use this phenomenon. It’s another way to lose myself so that I don’t accomplish anythingmy wife wants me to do.

I’m having similar experiences with “Twitter,” which seems to be a place for even morefoolish comments. Then there’s another one called “Linkedin,” that claims to be a place for“professionals” to meet and interact. I don’t believe it defines “professional” anywhere,so I guess I’ll fit in. It can’t be any more anesthetizing than the many meetings and seminarsthat I attend. I expect all of those sites will turn out to be a lot of fun, once I learn what todo.

Speaking of fun, an old cookoff has been resurrected in this neighborhood. Several yearsago, we had a cookoff in Frontenac, Kansas, coupled with an event called “The Blessingof the Bikes.” A Priest, one who presumably liked motorcycles, invited all the motorcycleriders to come to town and be blessed. He prayed for safety and good times and gave thanksfor the freedom to ride. The event attracted a huge crowd and more motorcycles than I couldcount, along with a good number of chili cooks. For some reason, it was suspended for awhile, and now it’s scheduled to happen on May 3rd in Arma, KS. Good things happen insmall towns.

I just received an e-mail entitled “24 things about to become extinct in America.” I’ll haveto admit that most of them don’t bother me one way or the other, but some are interesting.Things like Yellow Pages may truly disappear, but for my money, it’s because the print hasbecome so small that I can’t read most of the listings. Other disappearing items might includeanswering machines, film cameras, and the milkman. He also mentions mumps and measlesas on the way out, for which I am grateful. Now if we can destroy cancer and heart disease,I’ll be happy.

One thing that I think will survive for a long time is this passion of ours for cooking chili.I think that we could be growing a lot faster if the majority of the world just knew that weexist. Seems to me that there is a lot of enthusiasm among normal people, but they just don’tknow how to start competing. Maybe you can think of the way to make it easy for othersto get involved.

Maybe next month I’ll have something to say.

once a year. To help you advertise your pod cookoff we alloweach pod to place one quarter page ad in the Terlingua Trails,each year, free of charge. This ad should run the month beforeyour cookoff occurs. Should you decide that you need an adlarger than a quarter page we will simply bill you for the differencein price. This ad should not be confused with the articleadvertising your cookoff in the "Cooking with CASI Calendar"section in the Terlingua Trails. That article will start to run as soonas you request your cookoff packet and will run until yourcookoff occurs.
