P IRODUCT NFORMATION
Concentration Measurementof Sugar
for Continuous Vacuum Pans
In the continuos cooking process, the cookingpans are permanently filled with thick juice.A typical arrangement is shown (BMA-Braunschweig in Germany), where four or fivepans are stacked vertically and connected asshown in the illustration. A part of thecrystallization process occurs in each pan, starting with thick juice introduced into thehighest chamber and finishing at the lowestchamber where magma is drained.
The sugar concentration in each pan must becontrolled precisely.
Berthold Technologies has developed asugar probe, which provides the
needed measurement accuracy. Together withthe model LB 450 evaluation unit, the sugarprobe offers high accuracy over the entiremeasurement range.
