COOKING TECHNIQUES
LUNCH DEGUSTATION
The program below is an example proposal; our chefs will be happy to prepare a tailor-made program upon request and depending on a guest’s level of cooking expertise.
We suggest, however, that the class focuses on the very best of Zanzibari ingredients: seafood and fish.
• Eggs (cobian, dorado, sail fish, lobster) • Boneless fish (octopus, squid) • Shellfish (lobster or cicale de mar, prawns) • Local fish – i.e. catch of the day (tuna, grouper, dorado, jackfish etc.) • Seaweed
Fish can change according to seasons and daily catch.
• Variety fish eggs as canapes / bruschetta • Raw fish (catch of the day) as sashimi / sushi, tartare, ceviche• Slow cooked octopus tentacles salad with olive oil, garlic, capers, celery, fennels, parsley • Lemon calamari marinated and grilled by clients • Lobster / cicale de mer as risotto or pasta • Seaweed as flavored jelly dessert
THE SECRET INGREDIENT IS ALWAYS LOVE.
