Brrrrrr…….Here we go, the weather is getting cold! We will get the
roads, driveways and sidewalks cleaned off of snow and ice as soon as
possible, but please still take caution when walking on campus.
Hope everyone enjoyed the kids coming for Trick or Treating this year. I
know we did.
The holidays are soon approaching. If you would like to come to our cottages to
celebrate with your loved ones, please let the household coordinator know so we can
reserve a room for you and your family. If you plan to eat with us we will need a count
of how many people will be joining us. Remember after 1 guest meals are $10 each.
At resident council meetings in October I discussed missing items. If you are missing a
personal item, please contact your household coordinator right away. We will make
sure we search everywhere for that item. In November I will discuss Winter Weather.

Worship Service with Pastor Byron Every Friday morning, there is a special Creekside
Worship Service with
Pastor Byron Simar from
Western Home
Communities. He provides
a spiritual message, along with a
friendly smile, gentle humor, and lots
of music. Pastor Byron has a program
in each cottage. Then he joins the
resident’s for a blessing and a meal,
rotating each week so each group of
residents can have this honor. Pastor
Byron has been very well received and
many of the residents look forward to
seeing him each week.
What’s Cooking with Wendy New Menus for your Dining Experience By Wendy Brewer RDN, LD Dietitian
We hope you are enjoying the new menus! Menu planning goal is to meet the needs of residents
in term of taste, texture and quality and in addition, various medical requirements and overall daily
nutritional needs. We have been blessed to partner with Martin Brothers who have provided us with a new
seasonal menu with a wide range of new items and variety meant to meet all these needs. There is never a
shortage of food to offer and provide with our new menus.
The Following are Steps in Menu Planning:
Determine what people like to eat: This is the first step. This is done informally by discussing menu items
and food likes and dislikes. Meals are a common topic at Residents Council meetings and provide very useful
information. The staff track which meals are well-liked through informal resident surveys, meal and plate
waste audits showing which meals are not popular and should be improved.
Plan the menu cycle: Menus are 4 weeks long. This means that the menu will repeat every 4 weeks. Normal-
ly, the menus will change again throughout year, to take advantage of seasonal foods, with heartier meals in
the winter and lighter foods and seasonal fruits and vegetables during the local growing season.
Allow for choice and variety: According to criteria, the menu must include a full breakfast and different
choices for both lunch and supper. There should be as much variety as possible, while providing choices that
residents find acceptable and enjoyable. In a 28 day menu cycle, that means 56 lunch and supper choices!
Avoiding repetition of foods is a challenge but can make a big difference to those with dislikes or intolerances
.
Plan for therapeutic diets and food texture modifications: After the main menu is set, the different diets
and textures are planned. Liberalized diets are warranted more and more since they encourage residents to
have better intake with fewer food restrictions. Different food textures are available. Thickened liquids may be
required for certain residents with swallowing disorders.
Determine what to purchase and standardized recipes: After the menus are developed, for each menu item,
special attention is given to the recipe so you can expect good quality meals each time. Also, the final portion-
ing is just as important as the preparation, to ensure that everyone gets the same serving size and nutrition.
You may request a ½ portion any time.

Analyze nutrients and adherence: The last and very important step is to ensure that the menu provides ade-
quate nutrition for each resident. Each day of the menu is compared to the nutritional standards. A nutrient
analysis of the menu is performed using a computerized program to ensure that the menu meets the Dietary
Reference Intakes (DRIs).
The Ultimate Goal: Ensure that residents are eating well and maintaining a healthy weight while they are
dealing with complex medical conditions. Residents with physical disabilities, visual and hearing loss, confusion
and other health problems may not respond well to assistance and encouragement to eat. Some residents are re-
ceiving many medications for their various conditions and this may have an effect on their appetite and interest in
meals, or their ability to smell and taste the food. Our goal is to assess each resident’s needs and work towards
optimizing their nutritional status.
Menu planning is the cornerstone of dietary services here at the cottages. It requires considerable effort and skill
to please all residents with the same meal; naturally people vary in their preferences. The staff who prepare and
serve food are to do their best to ensure that residents are provided with meals that are well-prepared, safe to eat,
flavorful and nutritionally adequate, as well as comforting and individually pleasing. We hope that your dining
experience is great and you enjoy the variety. Please let us know if we can improve.

Twas the Night of Halloween
(Lyrics were re-written just a little by the Music Therapy Group Residents)
Twas the night of Halloween and all through the cemetery, All the creatures were stirring, especially the Ghosts.
The garlic was hung on the doorknob with care, in hopes that the vampires soon would beware.
The children were eating all the candy they could, while visions of sugar plums danced through their heads.
And Mama as a witch and I as Dracula, had sat down on the coffin to relax and take a nap.
When out in the sticks, there arose such a clatter, that I had to jump up to see what was the matter.
The cats were tango-ing all over the place, with looks of relief all over their face.
As the danced filled with glee, these words came to me:
Happy Halloween to all and to all a stormy night!
