MANAGEMENT DEVELOPMENT – THE KEY TO A SUCCESSFUL BUSINESS
Management quality, i.e. the right managerial behaviour, is
crucial to the performance of the production.
The managers and supervisors must:
• Know their responsibilities
• Manage the personnel
• Master the professional disciplines in production and
yield control
• Understand the goals and their impact on profitability
of the company
• Prioritise the multiple tasks of a hectic working day.
The Danish Meat Trade College has developed a high level
educational program which combines practical exercises
in primal and de-boning techniques with knowledge of to-
ols for production optimisation with financial, strategic and
managerial tools.
The training aims at providing the course participants with
knowledge and skills necessary to be employed as a ma-
nager or supervisor.
CONTENT MODULE 2
During his/her training in the course participants are taught
the following subjects:
• Practical exercises in primal cutting and de-boning
• Practical exercises in management of data collection
and treatment for yield, production and quality control
• Work descriptions and recepies
• Attitudes and motivation of staff in regards to the im-
plementation of hygiene regulations
• Cooperation – time and motion study, lean manage-
ment, balancing of lines
• Study tour.
During this 5 days education the participants will be trained
and educated to work in the meat industry according to
the highest standards in the world. They will gain access to:

high yield and good quality at the Danish / European level.
