Sâo Tomé

Sao Palme 75% – OriginSão Tomé is part of the volcanic archipelago in the Gulf of Guinea, off the western equa-torial coast of Central Africa, next to Príncipe. The island is mountainous and has very fertile soil, which is ideal for cacao farming. Thanks to the seclusion of the island, the noble cacao beans Forastero Amelonando remains in its natural form.

São Tomé became the first world cacao producer in the first decade of the 20th century. The predominance of cacao was so impressive that the country became know as “Cho-colate Island”. Today, the government of São Tomé supports the country’s cacao farming and strongly encourages the farmers to preserve sustainable production processes in this sector.

The cacao from São Tomé has been recognised as one of the fine/flavour varieties of the world by the International Cocoa Organization (ICCO).

Sao Palme 75% – Flavour profileThe traditional and gentle roasting process reveals the original and intense aroma of the noble Amelonade Forastero cacao bean grown on São Tomé. The tasting reveals intense, but well balanced cacao flavours in interaction with strong ristretto coffee, underpinned by sweet, dried prunes and grapefruit notes. The finish is characterised by an intense black tea infusion, which remains on the palate.
