Would you please tell Salvador what goes onhere? He is very curious to know everythingthat happens where I work.

well, Salvador, meat goes through more thantwenty-five different kinds of jobs here, alldone by workers who are skilled in theirparticular job.

Salvador: Where do all the animals come from in this place?

Sam: Farmers and ranchers raise and sell their cattle, sheep, and hogs to the packing plants like thisone. The packers pay them for the number ofpounds each animal weighs when it arrives atthe stockyards.

Salvador: What is a stockyard?

Sam: A stockyard is a place where all the animalsare collected. They are then sent to thepacking plants such as this one to be cut upinto different kinds of meat -- beef, pork, orlamb. Sausages and different kinds of processedmeat are also made at the packing plant.

Papa: Tell Salvador what your job is here at theplant, Sam.

Sam:

Papa:

Tom:

I use a stunner, a type of gun, to make theanimals unconscious before they are slaughtered. They do not know what is happening to them then. Some plants also use a kind of pistol whichshoots heavy bolts instead of bullets which stunthe animals.

Let's go and see what happens next on this lineof workers. Here is a man who does another kindof a job. Hello, Tom, this is my boy, Salvador.could you tell him what your job is here?

I have to kill the animals after they aremade unconscious. I don't like to do this, butafter all, people like to eat meat, and by now,I am quite used to doing my job here. Thisfellow over here has a different kind of a job --taking off the animals' skins. Meet Leo.

I strip the hides from the animals. After theskin is off, they are cut up into different kinds

of meat cuts. This is called "dressing" theanimals.

I want you to meet Jess. He is a butcher. Jess, this is my boy, Salvador, who is interested inlearning the meat business.

Well, Salvader, I am a butcher. I know how todress the animals, or cut them up into differentpieces that finally get to the stores and shopswhere the meat is sold.

Salvador: Thank you, Mr. Jess. Papa, who is that manlooking at all of the animals hanging up therein the cooler?

Papa: He is called an inspector. He is employed byour government and he has to inspect all of theanimals to make sure that they are free fromany disease which humans might catch from eatingthem. Let's go and meet him. Joe, this is myboy, Salvador. He wants to know about your jobhere.

Joe: Hello, Salvador. So you want to see what Iam doing here, huh?

Salvador: Yes Sir. Why do you have to put those purpleletters on the meat?

Joe: Well, after I examine the meat, I have to stampthese numbers on it in purple ink to let peopleknow that it is good meat and fit to eat. Thegovernment has a list of rules which we mustfollow before we can ship meat to be sold topeople.

Salvador: What lappens to all the parts of the animalsthat a,.z1 not eaten?

Papa:

Joe:

Oh, everything is usedl Even the blood fromthe animals is used to make some of the colorsin cloth when it is dyed, and to prepare certainkinds of leather.

Yes, and did you know that glue, fertilizer, buttons, combs, and many other things are madefrom the animals' bones, hooves, and horns?

Salvador: Estoy aprendiendo mucho aqui.

Salvador: eCuantos carniceros trabajan aqui?

Salvador: Gee, I never thought about what those thingsare made of! What else is used to makethings?

Joe:

Papa:

Joe:

The fats and oils are used to make soap, lard, oils for certain uses. Hair from the hides isused in brushes, mattresses, materials forinsulation and other things. The hides areused to make things like traveling bags, belts, shoes, saddles, wallets and pocketbooks likeyour mother carries.

Things made from leather are very valuablebecause they last a long time. Do you knowthat your football is made from a pig's skin?Your catcher's mitt is probably made of steerhide from a plant like this one.

Even the organs and glands of the animals areused for medical purposes. Such medicines asinsulin and liver extract and also thread usedby doctors to sew people and animals come fromanimals.

Salvador: I am certainly learning a lot here. I willhave to look at cows and other animals in adifferent way f:om now on.

Papa:

Joe:

We have many rules in a packing plant too. Weare required to have a good water supply, agood lighting system and ventilation and a gooddrain system.

There have to be special places for cleaning anddisinfecting our tools, too. All the workershave to wear clean clothes everyday.

Salvador: How many butchers work here?

Papa: This plant employs over a hundred butchers whoknow how to cut the animals into the rightkinds of meat -- chops, steaks, and so on.The butcher is a very important fellow in ameat packing plant.

Salvador: What happens to all the meat after it is cut uphere?

ACTIVITY II.

THE TRADE-OFF,

A Story.

Salvador dressed for school in a big hurry. He couldhardly wait to get to school and tell his best friendJorge about his visit to the meat packing plant. Hethought to himself:

"Coco will really like to hear what I saw. He now andthen helps his papa in the butcher shop."

Jorge was waiting for Salvador by the door of the schoolwhere they would meet every day.

"Coco!," Salvador shouted. "Wait until I tell you whatI saw at the meat packing plant!"

Jorge listened as Salvador told him all about his visitfrom start to end.

"Hey, man!" said Jorge when Salvador had finished. "Youknow what would be really smart? We could trade places, and your papa could take me to the plant, while my papashows you around his butcher shop."

"Great!" answered Salvador. "Let's try to talk them intoit."

By the next Saturday the trade-off had been arrangedbetween Salvador's and Jorge's fathers.

Salvador had been waiting for Jorge's father for aboutten minutes when he saw Mr. Castro park his car in the lotnext to the supermarket.
