The Coravin System was designed in the US by Greg Lambrect.
It took more than a decade of development and testing.
No removal of the foil or cork is required. A thin hollow needle is inserted through the cork to access the
wine. The bottle is pressurised by Argon, an inert gas that has no effect on the wine.
The wine can then be poured through the needle. Once the needle is removed, the cork reseals.

As each new season brings its unique beauty, it also produces a sake which is created to pair to the fresh
produce harvested in that season. All seasonal sake is namasake, which is served cold.
Current Season: Shiboritate
Considered the fresh sake, it is bottled immediately after the fermentation process, not allowing it to rest.
This process results in a sake with strong fruit notes.

Honjozo contains added pure distilled alcohol which ensures a lighter and lifted palate.

This quintessential Tokubetsu has quiet nose with
subtle coffee, sesame seeds, caramel and popcorn
notes on the palate
Yamahai method brings out a complex aroma with hints
of mushroom and crushed nuts. The texture is creamy and
gives a nice spice with a long finish
Ginjo (Cold)
Ginjo has a polishing rate of no less than 40%, which is no more than 60% of the rice remaining. Fermented at cooler temperatures for longer
periods, this creates a lighter and delicate flavour with hints of fruity fragrance

Miyamanishiki rice gives a light nose with hints of melon

Daiginjo (Cold)

Shochu
Shochu is a Japanese spirit produced in a similar way to vodka, but with various
ingredients including but not limited to rice, wheat, sweet potato, and shiso.
