The Belle public house started life as one of two village pubs in Bassingbourn and was named ‘The Pear Tree’ which became an unfortunate statistic of pub closures and sadly closed its doors in 2011.
The public house was reborn shorty after and was renamed the Belle free-house, named so because of the local area’s connection with the 2nd world war 91st American Bomber Group, notorious B-17 Bomber the Memphis Belle, which was stationed at RAF Bassingbourn.
The aircraft was named after pilot Robert K Morgan’s sweetheart, Margaret Polk, a resident of Memphis, Tennessee. Esquire magazine were contacted by the crew and asked for a pinup drawing to go with the name, which the magazine published in the April 1941 issue and was adorned on the front of the aircraft.
Having completed a refurbishment of the Belle in 2019, World famous artist Terry Bradley was commissioned to bring Belle up to date and gave a fresh makeover. Terry seemed the ideal choice as his latest work is inspired by the era of the Belle Époque in France and the contrasts and similarities with the Burlesque dancers of New York. Terry was also commissioned to create the artwork for arguably the best bar in the world, the Dead Rabbit in New York.
The new Belle now sits proudly over our drinkers in the lounge watching them with a cheeky eye, sipping cocktails and gins from our extensive list.
Cocktails
Etymologists aren’t really sure where the word “cocktail” comes from, but its first appearance seems to be in a British newspaper in 1798.
There’s a theory that “cocktail” represents the cocked tail of a perky horse, and is a nod to the fact that the first cocktails were intended to perk you up. Other
suggestions involve the French for “eggcup” (“coquetier”), a corruption of the 17th century English term “cock ale”, or any other number of bizarre origins.
One particularly odd idea is that mixed drinks in Mexico were stirred with a chicken feather, a literal “cock’s tail”.

ProhibitionDuring Prohibition in America when the sale of alcohol was banned, illegal bars called “speakeasies” popped up all over the country, the name coming from a
female bartender who would quieten down rowdy customers who were running the risk of being found out with the words, “speak easy, boy, speak easy”.
Prohibition actually made cocktails far more popular than they had been, as they were a way to disguise a beverage’s alcoholic content. During this time, gin and
vodka also replaced rum and whisky as primary cocktail ingredients, as they were easier to make illegally and didn’t need to be aged for so long.

History of Gin in England.THE GIN CRAZE
The late 1600s were pivotal for the upswing of gin in England, and not in a good way. William III of England, a Dutchman originally known as William of Orange (“Sounds very ‘Game of
Thrones,’ doesn’t it?” Ford says, rightly) became King of England, Ireland, and Scotland in 1689.
“He began his reign by implementing trade-war and protectionist-style economic tactics against France that might make some modern politicians jealous,”. “He enforced blockades and introduced heavy taxes on French wine and Cognac in an attempt to weaken their economy.”
At the same time, William III instituted The Corn Laws in England. These decrees provided tax breaks on spirits production, resulting in what Ford calls “a distilling free-for-all.”
“This led to a period in England that is often dubbed the ‘Gin Craze,’ a period where a pint of gin was cheaper than a pint of beer,”
Five years later, the government started to realize that society had a problem on its hands. The people of England began to either go totally insane or just die. Gin distillation was, again, a
free-for-all, with things like turpentine, sulphuric acid, and sawdust going into the juice.

As a means of getting the country’s gin-obsessed drunkards to tone it down a bit, a distiller’s license was introduced. The price tag was £50, an exorbitant cost at the time, and the industry
plummeted. Only two official licenses were issued in the next seven years. The business of informing, however, boomed in tandem. Anyone with information on illegal gin operations was
compensated £5.
“Gin Lane, depicted here shows a gin-drunk mother drops her baby over the side of a staircase, an inebriated man beats himself over the head with some bellows while toting a baby impaled on a spike, a suicidal barber, lots of syphilis sores. These etchings came in response to stories
like that of Judith Defour, a silk-thread spinner from Spitalfields. Defour was supposedly driven so utterly mad by her gin addiction that, in 1734, she took her 2-year-old daughter Mary to a field with a friend named Sukey. The two women removed all of the toddler’s clothes and
abandoned her in a ditch. The pair then proceeded to sell the clothing for money to purchase a quartern of gin. Poor Mary died and her mother was promptly sentenced to death by hanging,
hence the saying ‘mothers ruin’
