Method1. Heat oil in a large nonstick frying pan over medium heat. Add
ginger, lemon grass, chilies and garlic. Cook for 1 minute, stirring. Add chicken and cook for 5 minutes or until chicken is cooked.
2. Remove from heat and allow to cool slightly.

4. Add onion, mint and coriander, reserving a few leaves for garnish, to the chicken mixture and toss together gently.
5. Place the lettuce leaves on a serving plate and add the mixture on top. Use some coriander to garnish and serve. This can be enjoyed on its own, or with some steamed rice.
