INSTITUTE AFFAIRS - AFFAIRES DE L'INSTITUT LETTER FROM THE EDITOR This issue of the Canadian Institute of Food Science and Technology Journal is the last for which I shall serve as Editor. My six years in this position have been memorable and rewarding, if not always totally pleasurable. During this time our Journal has continued to grow, both qualitatively and quantitatively, and I am sure it will continue to do so in the future. I would like to express my gratitude to all those associated with the Journal who have given so freely of their time in assisting me and particularly to the reviewers for their collective wisdom. Our Journal would fail without the efforts of dedicated food scientists around the world who contribute their research findings - we remain in their debt. Dr. Fred van de Voort has agreed to assume the editor- ship, beginning with the next issue. He has served formally as Associate Editor and also as Acting Editor in my absence. I feel confident that under his direction our Journal will explore new directions and expand its reputation. I wish him well and would like to thank the members of the Institute for the opportunity given to me to serve them. D.W. Stanley EDITORIAL AIDES Bernice Mills Thibault and Carole Buteau, graduate stu- dents at the University of Guelph, have consented to aid the editor in the proof-reading of French language manuscripts and galleys. We hope, through their aid, to overcome and avoid minor technical and grammatical errors which reflect poorly on the Journal. Ms. Thibault is presently on leave of absence from the Departement de nutrition, Universite de Montreal. Ms. Buteau is a graduate from the Departement des vivres, Uni- versite Laval. M me Buteau est diplomee du Departement des vivres de i'Universite Laval. F.R.V. ACCEPTANCE SPEECH It is with considerable pride and pleasure that I accept the presidency of our Institute. I want all of the members to know how much I appreciate their confidence in providing me with the opportunity to coordinate their interests during my term as President. Special thanks are due to my col- leagues in the Manitoba Section for their nomination and to those with whom I work at the University of Manitoba, for inevitably, I will be seeking special assistance from them. This year promises to deliver to us the benefits of initia- tives from the past year. We now have a functioning National Office to serve us guided by our able Executive Director, Art Greene. High on the list of priorities is to identify those conference details that could be routinely handled by the National Office. This issue ofthejournal is the fourth published under our new contract with Pergamon Press. I am hopeful, and our newly appointed editor, Fred van de Voort, is determined, that this issue and all of those to follow, will appear on schedule. An on-time journal is essential to our communication system. Activities planned by your 1980/81 Council will lay some of the groundwork for coping with the 1980's, which our conference keynote speaker, Marie-J osee Drouin of the Hudson Institute, called the "decade of adjustment." Des- pite rising costs, membership fees are not being increased this year. Even though conference profits now go directly to the Institute budget, we will still need more sources of revenue to balance the budgets of coming years. Council is seeking ways to do this and still minimize our dependence on membership dues and conference fees. To this end the sale of advertising to be placed in the National Directory has been authorized. Also this year, a "Conference Draw" will be featured as a special fund-raising event. The feasibility of Institute workshops, symposia publications and regional "Mini-Expos" are being considered as continuing revenue sources.
