ushi is a Japanese food consisting of cooked vinegared rice

(shari) combined with other ingredients called neta. Neta and forms of sushi presentation vary, but the ingredient which all sushi have in common is shari. The most common neta is seafood. Raw meat sliced and served by itself is sashimi. The common ingredient across all the different kinds of sushi is sushi rice. The variety in sushi arises from the different fillings and toppings, condiments, and

their preparation. The same ingredients may be assembled in a traditional or a contemporary way, creating a very different final result.

Sushi is commonly eaten with condiments. Sushi may be dipped in soy sauce, and may be flavored with wasabi, a piquant paste made from the grated root of

Sthe wasabia japonica plant. The wasabi has anti-microbial properties and may reduce the risk of food poisoning. Also Gari (sweet, pickled ginger) is eaten with sushi to both cleanse the palate and aid in digestion.

The main ingredients of traditional Japanese sushi, raw fish and rice, are naturally low in fat, high in protein, carbohydrates, vitamins, and minerals. On the other hand, teppanyaki is a style of Japanese cuisine that uses an iron griddle or plate to cook food. The originator of the teppanyaki style is a Japanese restaurant chain Misono, which introduced the concept of cooking food on a teppan (grill) in Japan in 1945.

The style was quickly a hit with foreigners, who enjoyed both watching the skilled manoeuvres of the chefs preparing the food as well as the cuisine itself, which is somewhat more familiar than more traditional Japanese dishes.

hef Luckylou Ibasan has been making sushi since the tender

age of fourteen. Under the instruction of his father, who was then executive chef at the 5 star Shangri-La Hotel in the Philippines. He developed a passion for Japanese cuisine after seeing his father astound customers with his sushi skill. He fuelled his passion by studying during the day and working as an apprentice to his dad at night. His efforts were eventually rewarded, when he became associate chef to his father at the Shangri-La Hotel for over 2 years.

In 2001, he graduated with a hotel and restaurant

management degree from STI in Philippines. His journey to deliver quality sushi has taken him all over the world, most recently at the Four Seasons Hotel in Jordan where he worked as sushi and teppanyaki head chef for three years.Luckylou is a passionate sushi lover, he injects that passion into whatever sushi or teppanyaki dish he cooks up for his guests at the lounge.

Responsiblity for food and labour lies with Rabih Farhat, the Operations Manager. As well as managing the daily business he is responsible for delegating duties to the team in order to keep the restaurant clean and the products fresh.

A Lebanese national, Rabih has the responsibility for positioning and maintaining Chase as the number one destination for revellers in Accra. With over fifteen years experience in the industry he is an old hand. He holds a management degree from CIS College in Beirut and has risen through the ranks from waiter to bar tender through to his current position in senior

management. Rabih believes in staff development and aims at improving the professionalism of his team by granting them opportunities for further advancement.

Rabih brings to Chase, experience gained from previous positions at the Riviera hotel, Sea Rock Rotana, the Metropolitan Palace hotel and more recently the Anthurium Restaurant in Saudi Arabia, the Camelot Restaurant in Bahrain as well as his work with michelin star chefs. Through these experiences, he has learnt to maintain a balance between professional development and personal fulfillment.

He is passionate about his work and over the years has fallen in love with bartending and loves to surprise customers with his special cocktails.

Clubs Premium Lager’s 80th Anniversary Celebrations

Philip Norley the results driven Commercial Director of ABL is leading his team in taking ABL’s brands across the country to great acclaim.We met up with these two change managers at ABL and bring you this exclusive interview with them on the future ofABL and the Club brand.

that are top–of–mind for us.”

Our interview with Greg and Philip follows:

Alain Gbeasor (A.G): Club is synonymous with Ghana and you have touted the fact that you are the oldest brewery in West Africa. How important is this pride of place to Club Beer especially at 80?

Gregory Metcalf (G.M): It is of great pride to us at ABL that not only were we the first brewery in Ghana, we were the first in West Africa. This means Club Premium Lager really is the original beer for the region which is very gratifying.

A.G: What is the untold story of Club Beer?

G.M: We believe the untold story relates to heritage and consistency. Most beer drinkers appreciate consistency and quality and these are two areas where we have succeeded, Club Premium Lager has certainly “stood the test of time” in this regard.

A.G: In 80 years, what has been Clubs contribution to Ghana’s socio-economic fortunes?

G.M: That is a question that has been important to us as well as a company. In 2011, Professor Kapstein of INSEAD, a prominent French Business School, conducted a socio-economic impact assessment (SEIA) of our operations making use of the company’s 2010 financial data and the most up-to-date economic variables available for Ghana. This gave us a deeper understanding of the company’s impact on such measures as employment, value-add and household incomes. The report reveals that ABL generates US$117.1

million economy-wide value-add and are also the source of not less than 17,600 incomes in Ghana.

A.G: Philip, Club Beer in Ghana is like a national treasure, how has ABL achieved such a fit?

Philip Norley (P.N): It is true that Club Premium Lager is a national icon – we continue to link Club to “traditional” festivals and events which we know are important to our loyal consumers. We also like to enjoy “celebrating our

heritage and traditions with our consumers” – often they are one and the same.

A.G: What is the secret behind the consistency in taste of Club Beer over the 80 years period from its conception till today?

P.N: Quality ingredients and craftsmanship are the two elements that are top - of - mind. We therefore endeavour never to compromise and to deliver a consistently refreshing and crisp beer of superior quality.

A.G: Greg, Tell us about SABMiller and what you bring to bear on the Ghanaian brewing industry.

G.M: SABMiller is one of the world’s leading brewers operating across 6 continents. In the past 10 years the group has invested in world class manufacturing and maintaining global brewing standards along with training and development of our people at ABL.

A.G: Philip, what makes an 80 year old beer, have such an appeal to your increasingly younger generation of consumers?

“A key measure without doubt is

market share and we are very pleased

with the progress Club Premium Lager has been making.”

P.N: Whilst Club beer is proud of its long standing heritage in Ghana, it continues to be a quality product with a taste that appeals to all. Recently we have been running an “in the picture” promotion, whereby consumers who were identified at a Club promotion and published in the press could win prizes including i-pads. This type of consumer engagement is clearly fun and relevant to many of our consumers.

A.G: What is the success story of Club and how do you measure your marketing performance with regards to the competition and what should your customers expect from you?

P.N: Consumer satisfaction surveys are conducted regularly nationwide amongst beer drinkers and it is important for us to listen to what our consumers are looking for from their favourite brand. A key measure without doubt is market share and we are very pleased with the progress Club Premium Lager has been making. This consumer awareness has enabled us to develop an exciting portfolio of other brands besides Club Premium Lager. These include Stone, Castle Milk Stout, Club Gold, Redds, Peroni and our Club Minerals range of products.

A.G: In the 80 years, how have the norms for manufacturing and production standards changed for Ghana’s favorite beer?

G.M: The recipe for Club is simple; malted barley, yeast, water and maize – nothing more nothing less. Our secret is the brewing art and consistency.

A.G: How has working at ABL been and what makes the company grow in strength with each passing year?

G.M: I am very proud to be working at ABL; we have a skilled and highly motivated team and we are all very proud of our heritage. We also have strong company values which are shared. The team spirit is exceptional and it is a very happy place to be.

A.G: ABL is 80, what should we take from this celebration and what are your plans for the future of a brand wholly and totally Ghanaian?

P.N: Essentially this is an opportunity for us to celebrate with our loyal consumers and customers our 80th birthday and a chance for us to simply say thank you to all those who have supported us over the years and hopefully will continue to in the future – thank you for helping us build a great Ghanaian company. e

Ingredients

» 3/4 pound unsalted butter, at room temperature» 1 cup sugar, plus extra for sprinkling» 1 teaspoon pure vanilla extract» 3 1/2 cups all-purpose flour» 1/4 teaspoon salt» 6 to 7 ounces very good semisweet chocolate, very finely chopped

» 55g/2oz caster sugar generous splash of whiskey, or to taste

» 225ml/8fl oz milk

» 100ml/3½fl oz double cream nutmeg, to garnish

Directions

Whisk the egg whites until thick. In a separate bowl, whisk together the other ingredients. Transfer to a heavy pan and cook over a very low heat, stirring occasionally with a wooden spoon, until the mixture is thick and creamy. Remove from the heat and fold in half of the egg whites until well combined. Fold in the remaining egg whites. Divide the mixture among four heatproof glasses. Grate a little nutmeg on top of each and serve at once.

Directions

Preheat the oven to 350 degrees. Mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk, about 1-inch thick. Wrap in plastic and chill for 30 minutes.

Roll the dough 1/2-inch thick and cut with a 3-by-1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, and cool to room temperature.

When cool, place on a baking sheet lined with parchment paper. Melt chocolate until it is smooth and slightly cooled; stirring makes it glossier.

Drizzle or dip 1/2 of each cookie with just enough chocolate to coat it. Place the cookie back on the parchment-lined baking sheet and let stand at room temperature until the chocolate has firmed up, about 20 minutes.

lice Massimino was born in Luzern, Switzerland. She

qualified as a primary school teacher and moved to Ghana in 1990 to teach at the Happy Home School in Agona Swedru. During this time she met her husband, Angelo, and started a family. Having managed the Volta Lodge for ten years she has now dedicated herself to her passion, her painting.

Inspired by her daily life in Accra, in her current work Alice is exhibiting a series of paintings of womens faces. Using acrylic paint, mixed with different materials through the simple lines, forms and shapes she is depicting the beauty of women.

Some paintings are specially made on different pieces of canvas so that you can change the order of them and thus create a new painting as the inspiration takes you.

They may explain why a particular leader emerged and survived, but they neither help us predict future leaders nor help us cultivate the capacity to lead. Three Types of PowerThe reasons followers follow can be examined from three different perspectives, each of which has different roots.

Coercive power, is when followers follow out of fear they are afraid of what might happen to them if they do not do what they are asked to do. The leader in this case has created and gives an impression to the follower that either something bad is going to happen to them or something good will be taken away from them if they do not comply. Therefore, their commitment is superficial and their energies can quickly turn to sabotage and destruction when no one is looking or when the threat is no longer present.

R Utility power, is exchange of goods and services that followers follow because of the benefits that come if they do. The followers have something the leader wants (time, money, energy, personal resources, interest, talent, support, and so on), and the leader has something they want (information, money, promotions, inclusion, camaraderie, security, opportunity, and the like). By far utility power is used in most interactions and is the most undermining for the leader and follower.

Legitimate power, is based on the power some people have with others because others tend to believe in them and in what they are trying to accomplish. Where an idea or ideal that is commonly shared. They are trusted. They are respected. Legitimate power is not blind faith, mindless obedience, or robotic servitude; this is knowledgeable, wholehearted, uninhibited commitment.

Principled centred leaders have the humility to say “thank you”, the courage to say “I am sorry”, the strength to say “you’re right”, and the wisdom to know when they should “follow”.
