At the time of recession, allone can think of is to saveones earnings and notstart any business ven-

ture. However, in the last two

months, two new food jointshave opened. Ergo spoke to K.Kumar of Dosa Calling, a speci-ality restaurant in Kilpauk, andShamaz and his partners of 36Degrees, a swanky new restau-rant on Santhome High Road,to find out their ambitions be-hind starting afresh in times ofrecession.

Dosa CallingLittle did the four NRIs know

that the song London Callingwould inspire them to say

goodbye to their well-placedjobs in an overseas five-star ho-tel and come to India to starttheir own hotel company, Se-

rene Restaurant and Hotels Pvt.Ltd.K. Kumar, Raj Nanda, Gop-

inath and Hafidh are very hap-py about their 40-day-oldmaiden venture, Dosa Calling.

In spite of having more thana decades experience in thehospitality industry, it tookthem one year to make theirdream come true with an initialinvestment of about Rs. 1.5crore out of their personal sav-ings. We designed a businessmodel that would not get af-fected by recession. From ourresearch, we observed thatthere was a dip only in luxurygoods and fine dining. Al-though we have a fine dine, ourprices range from Rs. 23 to Rs.

    80. We serve about 30 varietiesof exotic dosas made of fivekinds of batter apart from othersouthern snacks and desserts.

With a beeline of foodies onSunday evenings, Kumar is sat-isfied with the way the business

has picked up. He says the se-cret is good service in a swanky western ambience chefs inclassy uniforms and an openkitchen where one can see thedosas being prepared. From Ju-ly onwards, they will have anexotic combination of dosaspertaining to one particular re-gion.

In a years time with NRIfunding of Rs. 4 crore, they planto take Dosa Calling to Banga-lore, Pune, Pondicherry andHyderabad and also open amulti-cuisine restaurant Wok:The Indian Way and a north-ern frontier and Chettinad spic-es fusion Inde.

Its during recession that weare able to negotiate better rentrates with the landlords for anideal price for lease of aboutseven years, they say. Howev-er, the only qualm is recruitingqualified chefs, but they haveback up plans for the same.

36 DegreesThe trio of Shiham V.P., Riyas

P.P. and Shamaz Mohammedof 36 Degrees were and are con-fident that the business will do

well in spite of the challengingtimes in the market. Shamaz, one of the partners who feels

that the food industry has notbeen adversely affected, says:People in Chennai drive downto any part of the city for goodfood. We have not compro-mised on our food quality andquick service, and hence are

confident of attracting foodconnoisseurs right from thestart.

While Shiham and Riyas havea hospitality industry back-ground, Shamaz is into timberand interior design. Shamaz,

who is also related to Shiham, says: We met Riyaz when he

was a partner of a coffee shopin Dubai and he expressed a de-sire to start his own in India.Hence, we took off from thereand opened a food joint out ofour savings. The initial invest-

ment was about Rs. 40 lakh. They have branded it 36 De-

grees: At 36 degrees u go minus. The name strikes a chord withevery Chennaiite as the averagetemperature of the city is 36 de-grees but one feels cool inside

our restaurant, says Shamaz. The business is quite encourag-ing and they expect it to im-prove considerably onceschools reopen.

As you enter the cool 1,200 sqft, 40-cover fruit cream joint

with low and soft sofas, one canchoose from a variety of milkshakes, fruit juices, all-veg piz-zas and grills. Their signaturedish, however, is the fruitcreams dry fruit faloodacream, kiwi cream, strawberrycream and so on.

On why they have stuck topure vegetarian, he says: Rightnow, we dont want to clutterour menu card with a large va-riety of dishes and hence havestuck to vegetarian. But we maystart non-veg items in due

course. The three plan to soon openanother branch at Gopalapu-ram and Anna Nagar and amulti-cuisine restaurant at As-cendas IT Park and extend theircurrent outlet on SanthomeHigh Road into an outdoorrestaurant.

There has been a lot of talk sincethe last few years on renewableenergy sources, particularlysince India started discussions

with the USA on the nuclear agree-ment. Previously, talk on wind tur-

bines was limited to companiestalking about putting up one for tax-saving purpose.

The sudden jump of crude pricesto over US $145 sparked the renewedview on renewable energy. Experi-ments with bio-fuels have backfired,

with the conversion of food into fuelcreating a virtual rise in prices andreal rise in political sentiments. Crit-ics now argue that bio fuels consumemore of earths resources than non-renewable fuels. Nuclear energy, however clean, is also exhaustible.

So what is the way out? Solar andsolar-related sources seem to be thebest alternative for long-term sus-

tainability. But the current methodsof conversion of solar energy to us-able energy (electricity, steam) areless efficient. The new RenewableEnergy Policy of the Government ofIndia, which envisages every build-ing beyond a certain square feet ofconstruction to have energy beinggenerated used in the form of solar

panels, solar heaters and mini-windturbines, is a welcome measure. This will help reduce the price of theitems and also increase their effi-ciencies by increasing the R&Dbudgets.

Apart from this, we can all contrib-ute to the revolution by consumingless power. Suggestions to turn offlights, ACs, fans and the omnipres-ent computer before leaving the of-fice need to be implemented morediligently now than ever before. Canbusiness leaders start thinking ofhaving more video conferences thancommutes to the airport? Can wehave the office ACs running at a few

degrees higher temperature? Habout reusing things more oftenopposed to recycling, as recyclinso consumes energy)? The abmentioned things are going to part of our lives sooner than latesupplies are running out.

So why an article on renewenergy in a personal finance

lumn? Imagine the opportunitieinvestment in the field. Wind, scommunication infrastructure, signer townships (to reduce cmute), water purification and rsystems, LPG & LNG (though nrenewable, they burn clean hence will substitute petrol andsel to a larger extent), energy edtion and electric vehicles are some of the areas where we canaggressive growth of companies

Do we have Indian companiethe above fields? Oh yes, and I wdefinitely invest in those compaHappy investing in a cleaner, grer, sustainable energy future!

    Oh, b-boying!

Choreographer-director Farah Khan, a judge ontelevision reality show Entertainment Ke LiyeKuch Bhi Karega, has promised a group ofcontesting 15 girls and boys a chance to be partof one of her films.

I have promised a group of very talentedyoung girls and boys who performed b-boying (atype of break dance) that I will give them achance in my film whenever I am working onsomething where I can use their talent, saysFarah.

A street dance style that evolved as part of thehip hop movement among African-American andPuerto Rican youths in Manhattan during theearly 1970s, b-boying has now caught the fancyof youth in several cities.

Farah says the act by the Mumbai-based groupinvolved innovative hip-hop, awe-inspiring stuntsas well as acrobatics, making it fascinating towatch.

The act they did has never been seen beforein Indian cinema and that is also one reasonwhich attracted me to give them my word, adds Farah.
