“Encore, food galore, dis party cyar done” were the words of the satisfied, elated and mesmerized crowd at the 2015 edition of Fairwinds Foundation Jazz Brunch.

It was truly a symphony in “F for Fairwinds Major” as the event newbies remained in awe over the great food and entertainment unleashed on April, 26, 2015. Never to be outdone, The Fairwinds crew hosted the party of the weekend, even as the regular patrons commented that they did not think it was possible to surpass Jazz Brunch 2014.

Tobago’s very own Kay Alleyne started the crowd off with a jazzy rendition of the “Fairwinds” theme song, The Greatest Love of All and from the word go, the beat never stopped. It was escalation time moving to crescendo after crescendo with each virtuoso performer. From Kay to the cool sound of songstress Jean Lyons, to the wonderfully innovative sound of beat box jazz flutist Providence Brown, to the rhythmic and pulsating sound of Gerard Balfour on Pan, the symphony in F major continued to rock the patrons, creating one big Fairwinds family.

Providence Brown who honed his skill after spending twenty three years in the Far East, had the crowd spellbound with his novel and easy beat box jazz selections. However it was the emerging comedic artist of the evening, Professor X, who brought the house down with his “singing act”..

Through Fairwinds’ many kind donors, everyone had an opportunity to become a winner with the numerous door prizes donated for the event. Special thanks to Corporate sponsor TSTT as they took the time to visit and enjoy brunch at “Tobago Alps” as the venue is now known because of its beautiful view and scenery. None of this would be possible without the faithful corporate assistance through Repsol Trinidad, Coca Cola Trinidad, Boss Stationers, L.J. Williams, Water One, Hilton Trinidad, Hyatt Trinidad, Davin Groden, Max Fax Limited, Angostura Limited, CNC3, Radio 100.1 & 91.1, Radio Tambrin, Professor X, Alvin Holder, and Friends of Fairwinds. Thanks also to Mrs. Elizabeth Montano and the Ma-chel Brand for their support and attendance.

Fairwinds Foundation is a registered NGO created by its founder Angela Arnasalam with an objective of empowering children through the vehicle of education, assisting them with decision-making capacity, focusing on their vision and giving them the necessary tools for survival in this digital age, where there are so many distractions for their young minds.

All the proceeds from this event will go toward Fairwinds “Back to School and Scholarship Drive” scheduled for August 2015.Mark your calendars and see you next year!

The Healing with Horses Foundation is looking forward to the fifth Buccoo Integrated Summer Camp, to be held from

July 6th-17th in Buccoo, Tobago.

We project having 80 children ranging from six to twelve years, who are differently abled, registering for the experience.

Once again, the Buccoo Integrated Facility will be the ideal venue for our programme. The Community Center; football field; goat track; the Beach & the Mangrove area and Buccoo Point will also be utilised.

The Camp theme is ‘Healing Creatures’

The Activities scheduled for this year are:

- Graffitti & Singing - Art & Costume design - Love in a Lunch kit - Body awareness & Yoga - Organic Gardening - Fire & Dance - Being with Horses - Being with Nature

Our goals at Camp remain focused on integrating the children with their peers and challenging their physical and mental abilities with varied levels of activity.

With your support, and with the assistance of our experienced teachers and volunteers, we anticipate another successful and memorable venture.

“Ah remember when ah was young ah used to wash buckets of sapodillas for my grandmother with the fibres from the coconut shell” says a happy individual tasting the sapodilla ice cream for the first time. While some share stories of washing sapodillas or eating sour-sop off the tree, most remember the event of ice cream

making fondly for the simple fact that it was a moment they enjoyed as a family.

A very warm and beautiful childhood memory was the joy of turning the handle of the wooden ice cream bucket in anticipation of the sweet treasure that was being produced inside. There was always an eagerness piercing the air as the home-made mixture was carefully poured into the inner iron bowl, then the dasher placed inside and covered. The inner bowl is then placed into the outer wooden bucket and the cranking mechanism is positioned on top. Finally this outer bucket is filled with a salt and ice mixture and from this point, the fun begins.

Growing up with five (5) siblings made the act of ice cream making a rather entertaining event. The game was simple; each was required to do a 100 turns of the handle until the ice cream “came in.”

However the challenge was that as it got closer to this stage the effort became more difficult. In fact, this heightened the excitement because the aim was always to outdo each other. So it was from these early beginnings, unknown to this family in that moment, that a future ice cream venture was being conceived.

This family collectively contributed their time and energy to a product because, not only was it essential for their income it was essential in creating strong values for a group of young individuals. In a family run business it is important that each understand the importance of their role in order for the business to be successful. Thus this homemade ice cream enterprise took root from a cosy home about 25 years ago when a mother, passionate about making ice cream, did so at every opportunity for every occasion. Not only did this experience bring her family together; it brought together a large percentage of Tobagonian families, as it was a past time most enjoyed almost every Sunday.

So while most Tobagonians spend their weekends relaxing on the beach and dreaming of a better ice cream future. This family enterprise is making that dream a reality, with a big mission of bringing the experience of homemade ice cream back to the homes of Tobagonians. The above seems to compare Tobagonians with each other - while one is dreaming and relaxing – this family is working. True yes, but may offend somewhat. Perhaps?

This family has not only made their dreams a reality but they are driven by a mission to bring the experience of homemade ice cream back to the homes of Tobagonians.

This is a story about home-made ice cream but, more importantly this is a story about a family run business.

“Ah eating ah ice cream or ah sapodilla?”

At the head of this family stands a mother of six(6) Sherla McKenzie who, despite countless forms of adversity, grew a business which started from a basket and a bucket to a family operated enterprise and which to date is still associated with great taste and quality products.

“Ah eating ah ice cream or ah sapodilla?”

To taste the rich and creaminess of Ms McKenzie’s homemade ice cream is to taste an experience. Now you pause and wonder how that can be considered an experience but, almost every time someone samples this ice cream what usually follows is an animated account or a fond memory that they never hesitate to share.

Information Communications Technology (ICT) has had an indelible impact on our lives here in Tobago. Today ICT products and services are main staples and imperatives to our economic growth and sustainability and by extension the expanding of our telecommunications networks.

Today ICT supports every modern technical institution including our social lives. Our “developed” nation status can be measured by the advances made as a nation with ICT. In the field of Disaster Management and Risk Reduction it is more critical, for among all the phases of the Disaster Management Cycle, nearly all are enabled by ICT. TEMA has been accredited nationally as a Diamond Standard Certified Institution, especially owing to the employment of ICT tools.

ICT has been and will always serve as an integral ingredient in Disaster Risk Management Capacity Building at TEMA and by extension the THA.

In Tobago we join with the world in recognizing the role the International Telecommunication Union (ITU) has played in the governance of ICT, with a 150 years service, using the ITU theme “Innovating Together - the Past, Present and Future”.

TEMA along with ICT partners and stakeholders propose an itinerary of events which will take several forms:

1. An attractive display and demonstration of ICT products and services by way of an exposition at the Gulf City Mall, Lowlands, on 18th May 2015. A number of ICT dealers and organizations will display how they use ICT in their daily operations. There will also be an educational element incorporated into the displays in an attempt to educate target audiences and highlight careers linked to ICT.

2. The School ICT Caravan to be conducted between June 2015 and October 2015. This is also in an attempt to sensitize the younger generation about the practical science of ICT and the careers associated with it.

3. An ICT Museum to be located at the Scarborough Library. The target date for establishment is to start July/ August 2015.

4. An ICT Risk Management Symposium in October. This is to set a stage for experts in ICT to hold discussions on related issues such as:

• The future use and regulation the use of Unmanned Arial Vehicles (UAVs); • Regulating the use of Nanotechnology; • The timely and appropriate management of Social Media, and its impact on our youth and telecommunication regulations; • The significance of ICT in Disaster Risk Reduction; • Bridging the Gaps between ICT End Users and Service Providers; • Building Resilience into ICT infrastructure, manufactured products and services; • Government ICT Policies and the growing challenges of regulating the industry from a global perspective.

Our aim is to showcase the relevance of ICT in our lives by highlighting the innovated spirit demonstrated over time. This shall show an appreciation for our rich history and gauge what the future holds for Information Communications Technology and it‘s impact.

The objectives are:

• To educate and inform the target audience of the past present and future of ICT; • To bring together ICT stakeholders who will create various thematic platforms that will serve as a setting to allow for interactive informative sessions; • To influence the establishment of an ICT Museum as a constant reminder of the tangible products marking the corridor of our ICT past; • To plan and host an ICT Risk Management Symposium in recognition of

International Day for Disaster Reduction celebrated every year on the 13th of October.

Market Deh‘ prides itself on promoting the handmade and the home-grown, the organic and the sustainable. In keeping with this trend, we strive to encourage local economical entrepreneurship in crafts, food and produce.

Some of our most popular vendors offer such treats as local jams, chutneys, organic salads and ice cream. Not only do they help emphasise locally sourced fruits and vegetables; each makes use of seasonal produce which are harvested fresh from local sources thus making particular products specific to the time of year.

Such process can be seen in the products of local agribusiness, Tura homemade, which has been established since 2014. Located in Mt Irvine, Tura strives for the lowest carbon footprint possible. Their methods include growing their own produce, using all natural seaweed fertiliser and locally printed labels from recycled materials.

Newly established SHER Foods, which can be found in Signal Hill is also a beacon for this practice. Following their Market Deh‘ debut in April, they placed themselves firmly on the map with their tasty homemade ice creams. Flavours such as Soursop, sapodilla and barbadine are amongst the favourites.

Market Deh‘ acts as a great promotional platform for local entrepreneurs and producers. In addition to enjoying the relaxed open-air atmosphere, it‘s the perfect opportunity for entrepreneurs to interfac e directly with the public.

It is held on the last Sunday of each month at The Shade nightclub in Bon Accord from 10am till 3pm and admission is free.

There’s no doubt that large animals are exciting, when at a zoo the kids and adults alike rush off to see the lions, tigers and elephants.

In diving, it’s the manta rays and sharks that attract the same attention, but en-counters aren’t as frequent in the wild as most of us would like, so then what?

Developing the ability to shift one’s focus from large animal encounters to fish behavior, smaller marine life or coral and sponge growth, will guarantee that you’ll always have a great dive!

The reef‘s full of smaller interesting creatures using a variety of strategies to avoid being eaten and the Long Lure Frogfish is an excellent example of using camouflage to both avoid being a meal, and to order home delivery. Found in a variety of colors, frogfish imitate sponges found on reefs, staying still to avoid being recognized by predators and prey. Waving a fleshy growth at the end of a bony ‘rod’ attached to their foreheads, they lure their prey within range and by rapidly expanding their mouth; create a vacuum which sucks their victim in!

The ‘Mt. Irvine Wall’ dive site is a great spot to observe frogfishes and other small interesting creatures such as seahorses, batfish and octopi.

When next you go diving, remember to keep an eye out for the small stuff!

YMCA Tobago is pleased to invite your Club to participate in its 5th Annual two (2) day Invitational Swimming Competition. This event is carded to be held at the YMCA Swimming Facility located at Courland, Tobago on Saturday 22nd and Sunday 23rd of August 2015.

Meet Start time will begin at 9.00am and there will be an open warm-up from 7:00 – 8:30am in the morning on both Saturday and Sunday. Saturday’s Compeition will begin at 9.15 and Sunday’s Competition will be at 8.45 am.

ENTRY FEES: Club Registration fee: $100.00 Individual Events: $12.00 per swimmer Relays: $30.00 per relay Spectators: $10.00 - adult $5.00 – child Please be advised that there would be a well-stocked cafeteria and programs will be on sale on the day of the meet. For entries, not submitted in Hytek, the fee is $TT15.00 per swimmer.

REGISTRATION & ENTRIES Registration and entries are to be made on the forms provided and must reach the organizing committee no later than 6pm on August 8th 2015. Entries should be submitted with times where possible, to facilitate seeding of the events. This will enhance the quality of the meet. Swimmers may enter any number of events in their category. If you are an eco enthusiast then you would love this nature tour that allows you to visit our unique eco system of the Buccoo Reef.

Our adventure begins with a 5 minute drive to the launch site. From there, we would first explore the Buccoo Reef mangrove lagoon with its consistently calm waters and almost no wind makes it an ideal home for various species of nes-ting birds, reptiles and sea life. The mangrove lagoon also acts as a natural sheltered harbour in times of rough weather. For the local marine operators, it is also a spawning ground for the Buccoo Reef fish life. The world famous Nylon Pool is our next destination; a natural forming sand bank in the middle of the Buccoo Reef. It was given its name by Princess Margaret in 1962 for having water clear as Nylon and warm like a pool. With only three to five feet of water, it’s great for swimming. Our last stop would be the Coral Gardens; for those whose love is being as one with nature. LIONFISHDERBY and

In 2014, the first ever lionfish derby was held in Charlotteville, Tobago. In two days, over 290 lionfish were caught with the largest measuring an incredible 38.3 cm (15 inches).

Over $28,000 in cash prizes were won by participants.

On July 4 and 5, the second lionfish derby will be held in Castara, Tobago. All hunting for the lionfish will take place on Saturday 4 July, 2015 with the prize giving and serving of various lionfish dishes occurring on Sunday 5 July 2015 at 10:00 a.m.

Registration for the derby takes place in Trinidad at the Institute of Marine Affairs (IMA), Chaguaramas from: Monday June 30 – Wednesday July 1 from 10:00 a.m. to noon.

In Tobago registration takes place on:Thursday 2 July in the Conrado Hotel, and on Friday 3 July at the Castara Beach facility.

Divers, fishermen and snorkelers are encouraged to come out and participate! ALL SCUBA Divers will need to present their certificates to register. There will be lots of prizes along with an information booth and live lionfish on display. Everyone is invited!

The lionfish is an Invasive Alien Species originally from the Indo-Pacific which has the potential to negatively impact marine fisheries, the dive tourism industry and significantly alter, if not destroy the Atlantic Reef ecosystem. They have a voracious appetite and feed on a variety of smaller fish including commercially and ecologically important species such as shrimp, lobster, grouper, snapper and parrotfish.

This derby is part of a Green fund project “The control and management of the lionfish in Trinidad and Tobago” implemented by the IMA and aims to create awareness and sensitize the public.
