Welcome to the July issue of “exclusive”.

As a new member of the Edinburgh team I am very excited to be able

World Heli Challenge July 27 - August 11 2011

In 2009 the World Heli Challenge was reborn. After an 8 year hiatus and with an unwavering reputation as one of most prestigious free-ride events on the planet, the event nestled itself back onto the New Zealand snow scene. It flew under the radar here in New Zealand, but has been making significant waves in the international snow sports scene.

The first year back was supposed to be simply a “photo shoot”, an opportunity to regroup and gather some content to make presentations towards 2010 event sponsorship and to showcase to the world just exactly what this event was all about. Two x 30 minute television shows were produced and distributed globally, gaining over 1000 hours of television coverage across Australia, Europe and North America. What a way to make an impact, and the event has snowballed ever since.

So, what is the World Heli Challenge? It is a cross breed of intense world-class competition coupled together with the adventure lifestyle that New Zealand is so famous for. Sixty of the world’s top athletes, a mixture of World Champions, Olympians, legends and a smattering of “under dogs” to keep the big names honest, converge on Wanaka for two weeks in July-August. The athletes are some of the biggest names in the sport and hail from New Zealand, Australia, Japan, USA, Canada, France, Italy, UK, Germany, Switzerland, Czechoslovakia, Norway and Sweden. The recent winners include the current biggest name in snowboarding Travis Rice, 2 x Freeride World Champion Ane Enderud, Freeride World Tour Champion Aline Bock, N.Z.’s incredibly talented snowboard and ski sisters Maria and Janina Kuzma, U.S. Olympic team member Andy Finch and 2 x World Heli Challenge Challenge Champion Ted Davenport. They join an alumni of the Who’s Who of legends dating back to 1995 when the event was first held.

Everyone patiently waits for 2 days of perfect blue sky days and great snow conditions to hold the helicopter accessed competition. When the planets align and the weather is set it’s game on for the most explosive ski and

snowboard action in the world.

The Big Mountain competition tests the skills of athletes riding down steep, gnarly runs of the highest mountain peaks in over 5,000 square kilometres of the Southern Lakes Heli skiing terrain, dropping cliffs, negotiating rocks and couloirs. Those who display the most fluidity, control and choose technical lines through the maelstrom of this extreme terrain will be the winners of the day. The Freestyle Day is just that. It’s basically held in Mother Nature’s own uber-Terrain Park, just like those that are found in a resort except significantly bigger and provides more opportunity for self expression and pushing the limits of the sport than any set of man-made features ever could. The athletes who perform the most technical aerial tricks using this undulating terrain in the most creative way with flair and style will be awarded the most points from the judges.

By adding the points of the 2 competition days together we’ll find out just who is the best all-round skier and snowboarder. The fact that it brings athletes together every discipline including alpine racing, moguls, board and skier X, free ride and free style all vying to be the winner proves beyond doubt the significance of this event. To win the World Heli Challenge is a remarkable feat and looked on with legendary status from the snow sports industry, the media and peers. To hold the World Heli Challenge title means you are not only a legend in your chosen discipline – you are a true big mountain athlete.

The other 12 days of the event days are equally as action packed with adventure and lifestyle activities. These guys and girls really know how to make the most of life. If they aren’t putting on incredible free riding displays in the competition you’ll find them sky diving, mountain biking, white water river rafting, surfing on the West Coast with former ASP World Championship Tour Surfing Champion Mark “Occy” Occhilupo who will be joining the event this year as a TV host. When the crew decide to ease off on the adrenaline you’ll find them sitting back at one of the myriad of cafes around Lake Wanaka sipping on lattes, soaking in the views and reflecting on the array of lifestyle activities that they’ve

been getting up to. The athletes will also learn about conservation with Lake Wanaka Eco Adventures and head out to sample some of the fine local vintage at the Rippon Vineyard.

The financial partnerships that support the World Heli Challenge are drawn from international companies who invest in the event due to the global media profile, PR and leveraging opportunities. This is a most unique business model that proves just how valuable this event is to the economic development and tourism of the country. It’s a lot more then just the financial contribution that is of value, it’s the messages and visual authenticity that every piece media output of this event conveys throughout the television, print, online and social media place. The ski and snowboard events are actually a “hook” to be able to showcase the excitement of its adventure products, the beauty of its landscape and the pureness of the NZ lifestyle. No other sporting event ever staged in the country combines everything that is 100% pure New Zealand so deftly.

One of the most exciting elements of staging this event is the ability to create many exciting events and media projects around it. In 2011 we’ve added a “Shootout” involving 15 leading and emerging photographers and

cinematographers. They will each shoot for a variety of award categories, incorporating action, drama, lifestyle, landscape and story telling. The World Heli Challenge has always been about developing cutting edge concepts and setting benchmarks within the snowsports industry and this will be even more relevant with the new judging system being launched this year. Every athlete’s run will be filmed by two long lens cameras. These runs are then posted on the www.worldhelichallenge.com website. An esteemed international judging committee sitting around the globe will scrutinise each athlete’s run and tally their results. Athlete’s and their friends, fans, families and supporters can also vote for their preferred winners and see all the action in detail.

The results of the competition are announced at a red carpet “Gala Awards” night on August 11th at the Lake Wanaka Centre giving the judges quality time to analyse each athletes run and appropriately allot scores. Up until now, judges have been required to make what can sometimes be hasty and inconsistent scoring decisions whilst on the mountain during the staging of the event. In the online judging format, we believe that this is the best and fairest way to award athletes their points and embraces the technologies available to

make our sport better.

The Gala Awards night will be an exciting evening for the athletes, photographers, cinematographers, VIP’s, media, even crew and public alike and will also include the announcement of the winners of the photography and filming “Shootout” awards. The audio-visual show is set to be jaw-dropping as the photographers present their award category images, followed by a five minute “mini documentary” by each of the seven cinematographers capturing the two weeks through their own creative minds and last but not least, the award winning runs and announcement of the 2011 World Heli Challenge Champions. The Gala Awards evening is open to the public and there will

On the edgeof technology

Pacific Edge Limited is a Dunedin based

biomedical company specialising in

the discovery and commercialisation of

diagnostic and prognostic technology

for the early detection and monitoring

of cancer.

Pacific Edge’s products are accurate and simple to use tests to help detect various cancers. The tests enable earlier detection and improved characterisation, resulting in better management of cancer. The products are for bladder, gastric, colorectal, endometrial cancers and melanoma. The company has recently completed and released its first product for the detection of bladder cancer, Cxbladder®.

Cxbladder® is a non-invasive urine based test for the detection of bladder cancer. It provides general practitioners (GPs) and urologists with a quick, cost effective and accurate measure of the presence of the cancer, and provides urologists with the opportunity to reduce their reliance on the need for invasive tests such as cystoscopy. The recently completed multi-centre international clinical study recruited 467 patients from Australia and New Zealand. Results show that Cxbladder® outperforms all of the benchmark technologies in the trial and detected nearly all of the tumours of concern to a urologist; greater than 95% of all late stage and high grade tumours.

Pacific Edge Ltd was formed back in 2001 with the specific intention of building a company to take advantage of the recently sequenced human genome and focus that on finding new genomic

tools that can enable the early detection and management of cancer; tools that will make a significant difference to the current clinical practice of the discovery and management of cancer.

Based in the Centre for Innovation on the University of Otago campus, the company began with a very focused initiative on five cancers; the first of those to come through the development and testing pipeline being Cxbladder®. A commercial laboratory has been built to provide the testing service to Australian and New Zealand urologists and GPs. The laboratory has a capacity of 35,000 tests per annum, which is a significant capability to have here in Dunedin.

A world first, Cxbladder® enables the accurate testing for cancer to be done very early in the process, from when the patient presents at the GP or urologist with blood in the urine (haematuria). A large number of people present with haematuria - approximately 10 times the number that actually have cancer; the other patients will have conditions like bladder stones or infection. A sample is taken at the urologist’s or GP’s clinic and sent to Pacific Edge’s laboratory for testing.

The sample that gets transported from the Cxbladder® kit is a very small tube; approximately 10ml size, and it’s very easy to transport the sample from Australia or any other part of New Zealand. Once the urine sample is in the tube, it mixes with a liquid that protects the sample and preserves it for 7 days, in plenty of time to get back to the laboratory. The average cycle time to get the sample back is 2-3 days. It is very cost effective, highly accurate and significantly enables the detection of bladder cancer with those patients.

Being a world first, the market is huge for this kind of capability globally. The laboratory is up and running for testing; this will be a year that more and more tests come through the facility and so this is the first step for the company towards generating significant revenue. Pacific Edge have recently licensed partners in Australia to help with the roll-out of Cxbladder®, partners in Spain for Spain and Portugal and are hoping to launch in the United States in the near future. The U.S. is a considerably bigger market than either Australia and New Zealand or Spain and Portugal.

The Cxbladder® tests can be sent back to Dunedin but the international freight can be a cost deterrent. The laboratory recently received a sample from the United States; it arrived in Dunedin last week. However it is preferable to have a dedicated facility in the United States to deal with the U.S.-based samples – the volume of which will be significant.

Although the company is still setting up the procedures for GPs in Dunedin to use the facilities, the Cxbladder® tests are available and the laboratory is ready. The product is targeted initially at urologists, but as GPs are the first port-of-call for patients, that is a big priority.

There are five cancers in development. Of those, the closest to the market behind the bladder cancer test is the colorectal cancer prognostic test. This test has recently completed its clinical study in Germany and is in the process of being converted to run on a commercial platform, enabling Pacific Edge to offer it in Australia and New Zealand as the first point. So that will follow the same route to market as the bladder cancer test. There are two other product prototypes in development, those are a gastric cancer prognostic test and a melanoma prognostic test.

Pouring theperfect espresso

Continuing along with tips on getting

the best out of your home coffee, comes

this month’s topic: Pouring the perfect

espresso.

The previous articles are all available

The perfect espresso is a beautiful thing.

Rich mahogany and caramel colours

marble the surface. The crema is thick and

high and liquid is rich and dark. The taste

is smooth and sweet with intense flavours

and a quick caffeine hit. It is also the base

for almost all the espresso based drinks

so without the ability to ‘pull a good shot’

you cannot serve high quality drinks.

So it’s time for Espresso 101.

Like the production of most good food and

beverage, there is a recipe to be followed.

And the closer that you follow the recipe,

the better the result that you will achieve.

As in all recipes, there are 3 important

components.

1. Ingredients – Now this might seem

fairly simple, “its coffee right?” But there

is a bit more to it than that. The quantity

is also very important. The portafilter

or handle has either a single or double

basket in it that is the perfect measure for

a single or double shot. It is important to

fill this correctly. What we find works the

most consistently for us is to slightly over

fill the basket at the grinder and then give

the handle a gentle bump on the bench to

settle the uneven layers and air bubbles.

Then we use the flat side of the brush that

we always keep with the grinder to slide

across the top to give a perfectly filled

handle. The more consistently that you can

do this, the better your coffee will become.

So now that we have the perfect amount

of coffee, it also makes sense that there is

a perfect amount of water. There is only

a limited amount of good tasting coffee

in the shot that we have prepared. And

as water will dissolve almost anything

given enough time its lucky for us the

good tasting stuff dissolves out first. This

is quickly followed by the bad tasting

acidic flavours and heavy caffeine’s. Each

machine will have a different sized basket

and this will range from approx. 12 – 20

grams for a double. The tricky part is to

match the water quantity to the coffee

quantity but generally it will be between 35

and 50 ml for a full double espresso. The

cutoff point to look for is when the colour

changes from light caramel to white.

2. Heat – Water also fills one other

important requirement. It does the heating

as well. You can’t easily change the heat

of your machine but you can control how

fast it flows through the coffee. Most often

the water is let flow through too fast and

this doesn’t give the heat in the water a

chance to melt out all the good tasting

flavours resulting in pale crema and thin

harsh tasting coffee. So good consistent

dosing also goes a long way towards

getting the shot to flow at an appropriate

speed.

That’s the end of part one of Pouring the

perfect espresso. Next issue we will cover

more advanced techniques but until then

keep practising.

Susie Staley’s Baked Chicken wrapped in Prosciutto

Ingredients

1 large tablespoon butter (softened)

Salt and pepper to taste

4 cloves crushed garlic

2 tablespoons chopped fresh oregano

12 boned chicken thigh fillets

12 slices prosciutto

Serves 6

Mix the butter, salt, pepper and garlic with the fresh chopped oregano together.

Spread over the inside of the chicken thighs.

Wrap each thigh tightly in the prosciutto.

Put the chicken in an oven proof dish and bake for 15-20 minutes in a pre-heated oven to 150ºC or until just cooked. This takes a little bit of juggling, depending on the size of the chicken thighs and the oven temperature. They should be cooked gently to keep them moist.

Once cooked, remove the chicken from the oven, pour off any of the juices and grill the prosciutto until crisp (just before serving).

This dish can be served with roasted garlic potatoes and a green salad or try mashed potatoes and spinach.
