Recipe Challenge Updates!
We have our October Recipe Challenge Winners for best Soups, Stews, & Chilis Recipes!
Both recipes will be featured at the Taste of VSU event tentatively scheduled for the Spring semester and
have a chance to make it into the VSU Campus Wellness Cookbook.
Bill submitted a Chicken Taco Soup. This soup was filled with
chicken, tomatoes, green chiles, corn, and beans. His secret
ingredients include V-8 juice, ranch dressing mix, and red pepper
flakes. He recommends you top the soup with fresh cilantro to add
a fresh taste. This delicious dish comes in at just over 4 grams of
fat and 18 grams of fiber per serving!
You can’t go wrong with this bowl of comfort food full of
vegetables! Great job, Bill!
Patricia was really thinking Fall for her recipe submission. She made a
lovely Pumpkin Soup. She combined pumpkin, vegetable broth, pumpkin
spice, milk, water, brown sugar, and butter to create this creamy dish. Her
recipe came in at a healthy 230 calories and 1.5 grams of saturated fat per
serving.
This is a perfect addition to any meal, or would be a great dish on its own!
Thanks Patricia!
Our November Challenge is Entrees!
Send us your best healthy recipe by Tuesday, November 15 at 5PM!
