California Dreaming….
In October, Jean and her husband, Bobby, traveled to the incredibly, beautiful, and unique town of
Carmel, California located on the Pacific Coast about 330 miles north of Los Angeles and 120 miles
south of San Francisco. Carmel is quaint and picturesque full of natural scenery and rich artistic
history with wonderful restaurants, exceptional wine bars overflowing with California wines, art
galleries, boutique shops and romantic hotels and inns. The dog-friendly town is a only one square
mile filled with ocean breezes in a very, relaxed, slow-paced, atmosphere home to many artists,
poets, and writers in sunny, California.
They stayed at the Cypress Inn, a landmark, boutique hotel since 1929. The elegant hotel is owned
by the actress, Doris Day, and her co-owner, Dennis Levett, and offers a very, personal and luxurious
stay with a classic elegance of yesteryear. During their stay they walked on the beautiful beach of the
Pacific Ocean, visited the historical, Mission Ranch, owned by Clint Eastwood, on the Monterey
Peninsula and wined and dined at the Mission Ranch Restaurant with a gorgeous view of sheep
grazing in the meadow and the San Lucia Mountains in the distance, went on a wine tasting tour, and
attended pre and post wedding festivities with a beautiful wedding in the gardens of the Bernardos
Lodge and Spa, a resort, which sits on 28 acres along with its own grape vineyards and orchards in
Carmel Valley.

Traveling out of the country? Before traveling out of the country everyone should check with their health insurance policies and your credit card companies.
Most insurance companies may not cover you when out of the country or they have very limited coverage.
Credit cards may have a higher interest rate/fees for international charges and cash advances. Notify of travel to insure no fraud blocks are placed on your card. They may also not be valid in other countries at all?
Check with your bank with money exchange rates before departing, it may be easier and better to do the exchange locally here at your bank!

A manager at Wal-Mart had the task of hiring someone to fill a job opening. After sorting through a stack of
resumes he found four people who were equally qualified. He decided to call the four candidates in and ask them
only one question. Their answer would determine which of them would get the job.
The day came and as the four sat around the conference room table, the interviewer asked… “What is the fasted
thing you know of?”
The first man replied, “A THOUGHT! It just pops into your head. There’s no warning.”
“That’s very good!” replied the interviewer. “And how about you Sir?” he asked the second man.
“Hmmmm… let me see… A BLINK! It comes and goes and you don’t know that it ever happened. A BLINK is the
fasted thing I know of.”
“Excellent!” Said the interviewer. “The blink of an eye, that’s a very popular cliché for speed”
He Then turned to the third man, who was contemplating his reply.
“Well, out at my Dad’s ranch, you step out of the house and on the wall there’s a light switch. When you flip that
switch, way out across the pasture the light in the barn comes on in less than an instant. Yep, TURNING ON A
LIGHT is the fastest thing I can think of.”
The interviewer was very impressed with the third answer and thought he had found his man. “It’s hard to beat the
speed of light.” He said.
Turning to Bubba, the fourth and final man, the interviewer posed the same question.
Old Bubba replied… “After hearing the previous three answers, it’s obvious to me that the fasted think know is
DIARRHEA.”
“What!?” said the interviewer. Stunned by the response.
“Oh sure”, Said Bubba. “You see, the other day I wasn’t feeling so good, and I ran for the bathroom, but before I
could…
THINK, BLINK, or TURN ON A LIGHT SWITCH, I had already shit my pants!”
Bubba is now the new greeter at the local Wal-Mart.
OVEN ROASTED VEGGIES
1 Bundle of Asparagus
1 Small Bag of Frozen Snap Peas
2 Medium Yellow Squash
1 Zucchini
1 Small Bag of Baby Carrots
1 Pkg of Grape Tomatoes (Cherry Tomatoes)
2-3 Sweet Potatoes (or you can use Baby Red Potatoes)
2 Tbsp. Rosemary (if you are using fresh, then it would be 3 tbsp.)
2 ½ Tbsp. Basil (if you are using fresh, then it would be 1/3 cup)
1 ½ Tbsp. Garlic Salt
McCormick’s Steak Seasoning
Extra Virgin Olive Oil
Salt
Directions
Pre-heat oven to 425°. Cut squash, zucchini, and sweet potatoes into chunks. For the asparagus cut
off the ends usually about 1” from the bottom. I mix the rosemary, basil, garlic salt, McCormick’s and
salt together in small Tupperware container to get a good mixture. Then I put all the vegetables into
one large bowl and pour the EVOO and mix the veggies evenly with a spatula. I then pour the
mixture of seasoning into the bowl and carefully mixing the veggies with a spatula to make sure that
the ingredients are nice and spread out. When done, place your vegetables into a deep baking dish
(you may need two if you don’t have a large dish). Cover the dish with foil and bake for 30 minutes.
Then, take off the foil and bake for another 10-15 minutes. If you like your vegetables more al dente,
lessen the covered cooking time.
*You can use any type of vegetable that you like, the above are just suggestions!
