Loads of different tyes of pasties •500 g plain flour , plus extra for dusting • sea salt • 250 g cold unsalted butter • 1 large free-range egg , beaten • For the filling • 350 g skirt steak • 1 white onion , peeled • 1 white potato , peeled • 1 small courgette • 1 small carrot , peeled • 200 g butternut squash , cut into 1cm cubes • 1 whole nutmeg , for grating • sea salt • white pepper • a few sprigs of fresh rosemary and thyme , leaves picked • olive oil
