Recommended Resolution - Equipment food-contact surfaces and utensils shall be clean to sight and touch.This deficiency must be corrected within a maximum of 10 days.Observations and Corrective Actions - Ice machine needs to be cleaned and sanitized. Slime build-upobserved on the lip of the drop-down area.
(A & B) Cold time/temperature control for safety food not adequately temperature controlled.
CRITICALRISK FACTOR / INTERVENTION
Recommended Resolution - Except for raw shell eggs, which can be held at 45°F, potentially hazardous/time-temperature control for safety food that is being held cold must be held at 41°F or lower. This deficiency mustbe corrected within a maximum of 3 daysObservations and Corrective Actions - The small condiment cooler is a bit warm, ~44 degrees. Must becapable of holding at 41 or less at all times. Adjusted the temperature down during inspection.

Recommended Resolution - Cooling shall be accomplished in accordance with the time and temperaturecriteria by using one or more of the following methods based on the type of food being cooled: placing the foodin shallow pans; separating the food into smaller or thinner portions; using rapid cooling equipment; stirring thefood in a container placed in an ice water bath; using containers that facilitate heat transfer; adding ice as aningredient; other effective methods. Containers must be arranged to facilitate maximum heat transfer and beloosely covered or uncovered if protected from overhead contamination. This deficiency must be correctedwithin a maximum of 10 days.Observations and Corrective Actions - Need to cool foods quickly. From 135 to 70 within 2 hours and thenfrom 70 to 41 or less in an additional 4 hours.

This deficiency must be correctedwithin a maximum of 90 days.Observations and Corrective Actions - COS placed a thermometer in the small condiment fridge during theinspection.
