Get exclusive behind the scenes access to farms and artisan food producers – go behind the scenes and visit farms, smokehouses, bakeries and butcheries that are never normally open to the public.

Learn new skills and discover new recipes – turn your hands to something new in our workshops and cookery demonstrations from shucking oysters to making sausages, from identifying edible wild mushrooms to filleting fish.

Food Safari’s packed programme of courses and

events goes one step further than a traditional

cookery school. From a beautifully converted

barn in the Suffolk countryside, not far from

the coast, we run butchery workshops, wild

food forays, fishing trips, cookery courses and

visits to artisan producers – from bakers and

brewers to cheese makers and smokehouses.

On a Food Safari you will be inspired by

people who are passionate and dedicated

to producing great food and drink.

Food Safaris make a fun day out with family

or friends, and you’ll always learn something

new – such as how to make sausages or skin

a rabbit. I’m sure you’ll enjoy the gourmet

meals, but I hope you will also start to think

about food and drink in a new way!

Wild Meat in a Day17 NOV | 2 DECA full day of preparing, cooking and eating

small game with the experts from The Wild

Meat Company. You’ll learn to bone and roll

a pheasant as well as skin and joint a rabbit to

take home. After, sit back and enjoy a game

cookery demonstration by acclaimed chef Peter

Harrison followed by a gourmet game lunch.

Whole Pig Weekend22-23 SEP 2012 | 16-17 FEB 2013A genuine nose-to-tail weekend using Food

Safari’s own rare-breed pork. With our butcher,

Gerard King, you will butcher your own side

of pork and prepare the meat and offal for

cooking. On Sunday, learn the art of curing

and preserving pork and making bacon, ham,

salami and chorizo. Come for one day or both.

Evening ButcheryMONTHLYJoin Gerard King for our butchery

classes at the award-winning

Broxtead Butchery at the Suffolk

Food Hall. You’ll tackle lamb,

pork, beef or poultry, learn some

simple butchery skills and take

home the meat you’ve prepared.

:\ɈVSR�/HTZ23 MAR | 3 NOVThis tour of the famous Emmett’s of

Peasenhall will reveal how hams and

bacons are still traditionally cured

at this 200-year-old smokehouse.

At lunch you will taste and learn

about a variety of Suffolk and

continental hams and charcuterie.

Free Range Pig in a Day12 MAY | 14 OCTVisit the famously happy Blythburgh

free range pigs to see how high welfare

farming produces such great tasting

meat. Gerard King will demonstrate

how to butcher a side of pork and then

you’ll get hands-on creating your own

sausages and enjoy a delicious lunch.

Seafood in a Day14 APR | 30 JUNCome aboard our boat on the river at Orford

and we’ll pull up the pots to find lobster, crab

and other shellfish. Then it’s on to Pinney’s

of Orford smokehouse to learn how oysters

have been cultivated in Butley Creek since the

Romans. And after a seafood lunch you’ll learn

how to shuck oysters and carve smoked salmon.

Catch & Cook28 APR | 6 OCTJoin us on board our chartered boat on

the North Sea for the chance to catch

fish and learn about different species

and seasons. Our chef will show you

how to scale and gut your catch, and

back on dry land provide a cookery

demonstration and delicious lunch.

Smokehouse Tour17 MAR | 10 NOVA tour of Pinney’s of Orford showing

you how fish is traditionally smoked

and how oysters are cultivated. Sample

all the products during a seafood

lunch at The Butley Orford Oysterage,

and learn how to open oysters and

carve whole smoked salmon.

Home Bread in a Day17 JUN | 27 OCTIdeal for anyone who has little or no baking

experience. Get to grips with making a range

of different doughs from white to wholemeal

and practise a variety of different breads

from flat breads to wholemeal loaves. Led

by our chef Peter Harrison, this course will

show you how to fit baking into a busy life!

Artisan Bread in a Day22 JUL | 24 NOVFor more experienced bakers, this course is

perfect for those who want to improve their

bread-making skills and discover the magic of

sourdough. Under expert guidance of Anna

Colquhoun, you will practise more advanced

techniques and styles of bread including

baguette, fougasse, croissants and brioche.

Festive Baking1 DECTry your hand at baking this

Christmas! Spend the day baking a

selection of festive favourites with

Anna Colquhoun. You’ll make stollen,

lebkuchen (gingerbread biscuits) and

mini Christmas puddings to take home

and show off to family and friends.

Artisan Bakery Tour27 APR | 23 NOVPump Street Bakery has a reputation

for world-class breads and pastries.

On this behind-the-scenes tour you

will meet Pump Street’s founder and

see the state-of-the-art bakery as well

as enjoying a delicious three-course

lunch at the Pump Street cafe.

Wild Food in a Day19 MAY | 15 SEPForaging for wild foods has become all the

rage and if you are a food lover, this is the

perfect introduction. A guided foray around

the Suffolk countryside is followed by a

demonstration with Peter Harrison to inspire

you to cook with wild foods at home. Then

relax over a gourmet wild food feast.

Mushrooms in a Day6 OCT | 20 OCTThis is the perfect introduction to mushroom

foraging for foodies! You will learn how to

identify edible wild mushrooms, find out how

to avoid simple mistakes and pick up some

ideas for cooking and preserving your finds. A

wild mushroom cookery demonstration will

be followed by a lunch showcasing wild food.

Preserving Summer21 JULLearn how to capture the flavour of

summer by making jams, jellies, curds

and bottling fruit. Pick soft fruit

from Food Safari’s garden, including

apricots, nectarines, currants and

raspberries and learn to preserve under

the expert tuition of Anna Colquhoun.

Children’s Food Safari14 APR | 9 JUNA ‘field to fork’ day for children aged

6-12. They’ll feed our rare-breed

pigs, collect eggs, find out about bees

and visit the vegetable garden before

learning how to make sausages and

burgers, bake honey biscuits and

create a salad fresh from the garden.

Beer Safari23 JUNJoin Adnams’ Head Brewer to

learn more about what goes into

creating great tasting beer on an

exclusive behind-the-scenes day.

This one day course is the perfect

day out for anyone with a genuine

interest in beer, its ingredients and

different styles and flavours.

Food Safari HQOur brand new Suffolk HQ, Brick Kiln

Barn, is a beautifully converted barn in the

Suffolk countryside. The timber framed

barn has a commercial kitchen and plenty

of space to run hands-on butchery and

cookery workshops. There are 15 acres

to explore for wild food and mushroom

foraging, a beautiful vegetable garden, as

well as rare-breed pigs, hens and bees.

Bespoke Food SafariWe can create a unique and personal day

or evening Food Safari for a fun family

celebration, client entertaining, a challenging

stag or hen do or a team building experience.

Corporate We have years of experience in corporate

events such as away days, team building and

private dinners. Our Brick Kiln Barn also

offers a practical space for meetings, which

can be combined with a delicious lunch or

dinner or followed by a fun activity like

sausage making or wild food foraging.
