“I decided to move to Palm Lake Resort Ballina 12 months after my husband died of dementia. I have been here now for just over two years and have met some lovely neighbours and friends (and a variety of dogs!). I have just been reading the ‘Thought for the day’ on my desk calendar which says: ‘Sometimes the difference between a bad day and a good day is simply the friendly smile of a stranger’. This sums up what it is like to live here. Just go out and walk around and it is amazing how many people (and dogs) you meet who say hello to you. I have never regretted moving here.”

2019 HAS STARTED well for the Palm Lake Group. Firstly, we handed over another eight-rink undercover bowls green and associated clubhouse, this time to delighted residents at our Caloundra Cay resort. The residents are loving this class-leading facility and we’ve heard many reports that they are also already giving it a good work out! You can read more about it on Pages 6-7. The next box to tick on the list at Caloundra Cay will be our opulent and highly anticipated Country Club which is progressing well and scheduled for handover mid-2019. Still at Caloundra Cay, we are well into construction of the brand new Sales and Selections Centre and the tropical landscaping is almost finalised so it’s really looking amazing. We’ve also just released a select number of homes in the next stage, so if you are interested in joining us at this stand-out resort, complete with its unique Caribbean styling and that coveted Sunshine Coast lifestyle, now is the time to check it out before our price adjustments in line with the Country Club handover. Our on-site Sales Team is available seven days a week, 9am-4.30pm, to show you around the resort and through our inspiring display homes.

We hit another exciting milestone in recent weeks, this time over at our Bargara resort. As I sit down to write this update, the very last home slabs have been poured so, by mid-autumn, all our Bargara homes (and therefore the whole resort) will be complete. This is definitely one of our stand-out locations in the Group. Bargara boasts a wealth of resort facilities – more facilities per capita, in fact, than any of our other locations. You’ll have to be quick though to secure one of those very last homes.

Over at Palm Lake Care, we have proudly handed in our submission to the Aged Care Royal Commission. We believe that this process is an important one for the industry to go through. It will ensure only high-quality suppliers exist to service our nation’s elderly and gives our company the incentive to continue to invest in this space. We are proud of our company’s coveted aged care offering and this was reiterated to us with the opening of Palm Lake Care Mt Warren Park late last year. We are already more than 80 per cent committed at this location – the uptake has been extremely fast. Residents and their families are really loving this carefully considered building, our highly engaged staff and the welcoming community that is developing there. Construction has also commenced on our Beachmere aged caring community and we anticipate opening it in mid-2020, while preliminary works on our Toowoomba aged caring community are just beginning, with the main game to kick off mid-year.

Caloundra Cay Bowls Club was unveiled recently, to the immense satisfaction of those first residents at this stellar Sunshine Coast location. Among them is Jenny Arthur who, along with husband Patrick, left their family home in Cairns for the delight of resort-style living at Caloundra Cay late last year. And Jenny admits, the proposition of a world-class eight rink undercover lawn bowls green in their backyard was one of the most important aspects in their decision to

Palm Lake Resort lawn bowls surfaces are installed by industry experts, Sportcrete. Sportcrete spokesperson Ben Sutcliffe says the world-renowned Greengauge woven bowls surface is used at all Palm Lake Resorts for its performance, durability and consistency.

“It’s a surface that’s renowned for providing consistent speeds of 15-16 seconds, which is ideal for all levels and styles of bowling,” Ben explains.

Coupled with the Sportcrete Bowls Base System, which utilises the latest laser technology and environmentally friendly polymer bonding, the greens at all Palm Lake Resorts are truly top of the range.

“The outcome is a precision bowls base built to the finest tolerances, designed to perform year in and year out,” says Ben.

“We were very specific about what we wanted out of the resort we would ultimately choose – it had to offer lawn bowls,” Jenny says. “This is a lovely green and the roof is fantastic. The clubhouse is especially nice – we are very, very lucky.”

Jenny played competitive lawn bowls with the Marlin Coast Bowls Club at Trinity Beach for seven years before moving south. She was the B Grade Women’s Singles Champion and also held a position on the club’s Pennants team. Jenny says there are quite a few talented lawn bowlers already living at Palm Lake Resort Caloundra Cay with more due to move in, in the coming months.

“We will have quite the formidable team once we get a full contingent of players,” she says.

With resident numbers still building at this new Palm Lake Resort location, Jenny says the lawn bowls enthusiasts are playing socially on Tuesdays and Thursdays. The better players are already offering coaching to those interested residents who are new to the game.

And for those who prefer to watch from the sidelines, the Caloundra Cay Bowls Club is also the place to be for Friday night Happy Hour. Built alongside the green, the clubhouse (pictured right) offers generous options for dining and relaxation, as well as a large bar - the perfect end to any hard-fought lawn bowls match.

Engineered and natural stone with texture and pattern will accompany slick benchtops in whites and creams. Flooring will vary from chevron-style and light washed timber floors, to tiles with texture and subtle pattern.

“Colour concepts have been inspired by surf, sand and sky - think green, aqua, mango, saffron, white, calico, earthy browns and greys,” she says.

Nature is calling With only a couple of roads leading in and out of the town itself, Beachmere’s pristine natural surrounds make it a haven for local wildlife. Moreton Bay is home to six of the world’s seven turtle species, three species of dolphin and even dugongs – the only place in the world where you can see both turtles and dugongs so close to the city. On the shore, migratory birds – some that have travelled from as far as Siberia – can be seen navigating the treetops. The best place to see Beachmere’s native flora and fauna in their element is the Beachmere Conservation Park, situated just across the road from Palm Lake Resort.

Bay of plenty Being perched right on Moreton Bay means Beachmere is just a hop, skip and a jump from some of South-East Queensland’s most noteworthy islands. IF YOU DAYDREAMT about spending your retirement playing the best golf courses in the game, you’ll be pleased to know that you won’t need to book those flights to Scotland or that accommodation in Monterey – you can tee off on 19 different courses from all over the world, and still make it home in time for lunch.

With the addition of a GC2 golf simulator to Palm Lake Resort Toowoomba’s Pinnacle Country Club just last year (bringing to five, the number of Palm Lake Resorts now offering the impressive golf simulator facility), golf-mad residents and rookies alike have noted an improvement in their game, both in the simulator and on the real green. The technology, which is used by professional golfers, allows Palm Lake Resort residents to analyse their swings, the spin and distance of the ball, their grip, targeting and more. Toowoomba residents have gained a much better understanding of their technique and report that their efforts in the simulator rooms have translated to improvements on the golf course.

“My game has improved,” says Palm Lake Resort Toowoomba resident Barry Hartshorn. “I like to use the practice mode, which analyses your swing and your hits and gives you a lot of useful information to help you get a feel for what you’re doing.

I particularly like knowing about the shape of my hits.”

Housed in purpose-built rooms that are 4m wide and 7m long, the simulator’s camera-based machine takes photos of the player’s golf ball as it’s hit – allowing the simulator to accurately work out the ball’s speed, rotation, spin rate and where it’s going to fly, while projecting a simulation in real time. Players can use their own clubs, balls and tees – just like on a real course – but Palm Lake Resort Toowoomba has also provided two brand new golf bags and two new sets of clubs (one for left-handers and one for right) so that any residents can come in, pick up a club and have a go.

“It’s a great facility,” says Barry. “The simulators are very good, high-tech pieces of equipment and all of the information is there if you need it. You can change the settings to personalise the game to your preferences – whether it’s adding more wind or changing the length of the rough – and apply what you learn to your actual golf game.”

As well as Toowoomba, other Palm Lake Resort locations currently offering golf simulator technology include Bargara, Cooroy-Noosa, Ballina and Tea Gardens. Caloundra Cay and Beachmere Bay will be the next resorts to receive golf simulators.

GOLF SIMULATOR: TECH & SPECS

• Play a full 18 holes on almost 20 international golf courses, all from the comfort of your resort. The elevations and surroundings have been scientifically mapped, making these some of the most accurate simulators on the market.

• Play solo, with a friend or take part in live games with residents at other resorts. Take your pick from options like ‘nearest to pin’ or long-driving competitions, with up to eight people playing at once.

• The constantly evolving technology is class-leading, offering one of the most realistic and accurate simulator experiences available at the moment. It can also be easily upgraded at the software level, meaning residents always have access to the latest technology.

ONCE UPON A TIME, afternoon hangs meant lacing up your bowling shoes and taking turns on the lanes at the local tenpin bowling alley. These days, places to play tenpin bowling are becoming few and far between, and the game that was once at the centre of young people’s social lives is becoming something of a lost art. Or… is it?

“Before I moved into Palm Lake Resort Cooroy-Noosa, I hadn’t bowled for nearly 50 years,” says resident Ashleigh Groves. “It was something that we loved back in the day, but I hadn’t played it since I was in my early 20s. Now, I play weekly!”

While Ashleigh and his wife Wendy (who, Ashleigh begrudgingly admits, often scores a good few strikes on him!) like heading down to the lanes in their own time, it’s regular meet-ups with the resort’s tenpin bowling group that made them fall back in love with the sport. With impressive class-

leading bowling alleys and equipment all right at residents’ doorsteps, it’s hardly a surprise that a number of Palm Lake Resort Cooroy-Noosa residents have also picked up the old-school sport. Ashleigh says that their social group can draw up to 20 players at a time, most of whom – like Ashleigh and Wendy – haven’t played much since their youth.

“It’s a fantastic resort facility – much different to tenpin bowling back in the early days,” says Ashleigh. “The only thing that hasn’t changed is that we’re all still very competitive!”

The group meets on Wednesday afternoons and usually plays into the night. And while technology has been upgraded since the ‘good old days’, it is the social aspect that remains at the heart of this sport.

“It’s something from my youth that I can share with other people my

age, so it’s a lot of fun,” says Ashleigh. “We always bring our grandkids down to bowl when they come to visit, and that’s their big introduction to tenpin bowling since there aren’t many lanes around anymore.”

QubicaAMF business development manager Dion Leslie, whose company is responsible for installing tenpin bowling alleys across various new Palm Lake Resort locations, says the competition-level bowling alleys are ideal for players of all skill levels.

“The facilities have automatic bumpers so kids and adults can easily bowl on the same lanes, which also makes it a fairer game for people of different skill levels,” Dion says. “Plus, the range of bowling balls in each location go right through from lightweight bowling balls to heavier ones so that players of all ages and skill-levels are able to get involved.” Tenpin bowling really is a sport that spans the generations – in more ways than one!

Many of our Palm Lake Resort sales team members have spent a vast majority of their careers in real estate, matching impressive homes with equally as amazing home owners. Jen Nichols started in real estate in 2001 and oversees many of Palm Lake Group’s New South Wales resort locations. “First impressions count and presentation is especially important,” Jen says. “Set the standard from the start. Ensure the front of your property, including pavements, the garage door and front door area, is clean and clear of any hazards because first impressions really do last. Also, deal with any minor maintenance - it’s important for buyers to know they are purchasing a home that’s been well cared for.”

Palm Lake Resort Cooroy-Noosa Sales Manager Sandy Martin started with Palm Lake Group in 2007 and has

worked across resort locations including Bethania, Eagleby, Deception Bay, Upper Coomera, Hervey Bay, Bargara and Carindale. Sandy says that, inside your home, the first step is to declutter and de-personalise – a rental storage unit may be your best friend here. Not only will decluttering give you a clear space to work with, it will also be a big help when it comes time to pack up your things and move out. Sandy says ‘de-personalising’ helps a potential buyer see themselves living in your home, and they won’t be able to do that if every wall and surface is covered with family photos and knick-knacks you’ve collected over the years.

Palm Lake Resort Toowoomba Pinnacle Sales Manager Leisa Saunders suggests keeping your furniture and décor understated for the same reason – you might love your bright floral armchair, but a potential buyer might not be able to look past it long enough to envision themselves living in your home. Leisa says the more space you can create – without the house looking empty – the better. Clear the bookshelves and keep benchtops bare. Clean out wardrobes, too. Buyers will certainly look through them, to consider how much storage space your abode offers.

“Give your home a good spring clean,” Leisa says. “Hire a cleaning company for a few hours to help you out; it will be worth the investment. Ensure the kitchen and bathrooms, in particular, are immaculate and make sure that outdoor areas are manicured and maintained.”

MAKE an ENTRYWHILE KITCHENS ARE REGARDED AS THE ‘HEART OF THE HOME’, YOUR ENTRY WAY IS WHERE PEOPLE WILL MAKE THEIR FIRST IMPRESSIONS, WHICH IS WHY YOU SHOULD CONSIDER THIS AREA VERY CAREFULLY.

First impressions last and the entry to any home plays a critical role in setting the tone for the rest of your visitors’ experience. Someone with vast knowledge in styling Palm Lake Resort homes, country clubs and other facilities is Elle Interiors owner/director Eleanor Davis. Eleanor agrees that entry ways are important spaces yet always overlooked.

“It is here in the entry way that lasting impressions are made,” Eleanor explains. “When a visitor enters a property, they perceive from the moment they walk in the quality of the finishes and the attention to detail. If the attention to detail is there and the finishes have been done well, they will then go through the home with a good feeling and a positive attitude.”

Eleanor says this is especially the case when you are looking to buy/sell a home but is equally as important from a day-to-day perspective. Your entry way is the place where you generally dump your belongings on your return home, so it needs to be as functional as it is beautiful. Organisation is key.

While not many homes have a large entry way, you can still make it spectacular, according to Eleanor. Here are her tips and tricks for giving your entry way a little more pizzazz:

• Create some interest in your floor, just inside the front door, by cutting out either a square or a rectangle shape and tiling it with a stand-out feature tile. There are some really beautiful tiles on the market, including laser-cut marble options offering unusual shapes in contrasting colours. Adding a dark border is another great idea.

• Don’t forget the walls. As a feature, maybe wallpaper one wall of the entry area in a textured linen-look wallpaper. Paint is another easy option.

• As far as furniture goes, a small coordinating console gives you a functional place to drop your keys, wallet, small change, handbag etc. If you have no room, a floating shelf will also do the trick.

• Speaking of those important bits and pieces that need a home here, choose on-trend baskets and boxes for small-item storage. If this is also a place where you leave your shoes, maybe a wicker basket under your entry table would neaten up the space?

• A beautiful mirror in this space is also handy as it gives you a chance to take one last look at yourself before you leave your home, and it also helps bounce light around this space. Mirrors always make a space look bigger than they actually are.

• The ‘piece de resistance’ in any entry way would have to be a pendant light. It doesn’t need to hang down far if the entry is small - there are some very nice ones on the market.

• And finally, from a styling perspective, the entry is a great place to welcome your guests with a floral arrangement. Artwork is another super stylish option for decorating this space. Add a couple of other trinkets, books or meaningful accessories on your console (don’t clutter it up though) and, voila! - a stylish and memorable entry is yours!

Autumn is also the perfect time of the year to bushwalk. And, lucky for us, Australia’s east coast has plenty of bushwalks to choose from.

Bushwalking in QueenslandCOUGAL CASCADES, SPRINGBROOK NATIONAL PARK

Springbrook National Park is known for its cascading waterfalls, rock pools and glow worm caves, but it is Mount Cougal’s ‘Cougal Cascades’ that make for the perfect beginner’s hike alongside Currumbin Creek. The walk is a 1.6km round trip, partially on well-maintained bitumen, and you’ll pass the remnants of a 1940s sawmill that was once used to produce timber. Explore the area, keeping an eye out for the land mullet (the world’s largest skink, that calls this Gondwana Rainforest World-Heritage Area home) and then treat your trotters to a dip in the rock pools before heading home.RAINFOREST CIRCUIT, BURLEIGH HEAD NATIONAL PARK, GOLD COAST A beautiful 2.3km circuit through the rainforest and along the headland at Burleigh Heads on the stunning Gold Coast. Tumgun Lookout is the perfect place to spy humpback whales in winter and spring.CAVES CIRCUIT, LAMINGTON NATIONAL PARK, BINNA BURRA This is a great 5km walk to take your older grandchildren on. There are caves to explore and koalas can be seen on this walk. There are excellent views into the Coomera Valley as well as interesting rainforest trees and volcanic rock formations.

Bushwalking in New South WalesPOTAROO FALLS, TAPIN TOPS NATIONAL PARK New South Wales is home to hundreds of great hiking trails, but it’s the relatively unknown Tapin Tops National Park – about 90 minutes inland from Forster – that tops our list. While the walk itself may not take much longer than 30 minutes, it’s the beautiful surrounds that will have you spending all day at Tapin Tops. Aside from the falls themselves (which cascade into a small swimming hole that’s the perfect size for a leisurely float) there are many interesting species of plant and animal life in the Potaroo Falls area, so it pays to take your time and have a good look around. The most interesting just might be the watergum at the very start of the track – it’s the largest recorded watergum in Australia!PINNACLE CIRCUIT, BORDER RANGES NATIONAL PARKA short but beautiful 800m walk in the World Heritage listed Border Ranges National Park. This area is particularly unvisited, offering amazing views of the rainforest.THREE SISTERS WALKING TRACK, BROKEN HEAD NATURE RESERVELearn about the Indigenous heritage of the area and enjoy whale watching and picnicking by the beach on this 1.6km walk.DHARUG NATIONAL PARK, GUNDERMAN, CENTRAL COAST This 11km loop will take you the better half of a day, but the lush forests, creeks and ridge tops make it so worthwhile. It’s a great spot for birdwatching, and also known for goanna spottings and wildflowers.

Bushwalking in VictoriaSHERBROOKE FALLS TRAIL, DANDENONG RANGES Like something out of a children’s storybook, the Sherbrooke Falls Trail has towering trees and many windy paths for you to explore. If you stick to the main loop track the Sherbrooke Falls circuit should only take you about 45 minutes, but as the trail intersects many other walking tracks you can make the trek as long or as short as you like. The falls after which this trail gets its name are by no means large – you won’t be able to take a dip in them on a hot summer’s day – but the beautiful picnic spot and lush forest landscape make this walk the perfect place for a day of adventuring. LORNE WATERFALLS CIRCUIT, GREAT OCEAN ROAD This mammoth 28.2km hike is certainly not for the feint of heart, but the beautiful scenery you’ll encounter on the way – including waterfalls, rainforests and swimming spots – makes up for the difficulty.SUMMIT WALKING TRAIL, BAW BAW NATIONAL PARK This trail takes you right to the top of Mount Baw Baw and back down again in about an hour-and-a-half, and is best enjoyed in the warmer months – snowfall can make it difficult to hike in winter! THE PINNACLE, THE GRAMPIANS One of the high points (literally and figuratively) of the Wonderland Range, the 4.2km Pinnacle trail takes you up to a fenced lookout offering sprawling view of the Grampians with plenty of geographical formations and views along the way.

PACK the PERFECT PICNICAUTUMN IN AUSTRALIA MAY NOT MEAN PILES OF GOLDEN LEAVES OR THE SMELL OF CINNAMON IN THE AIR LIKE IT DOES IN OTHER PARTS OF THE WORLD, BUT IT DOES MEAN THE PERFECT WEATHER FOR A PICNIC.

THERE IS AN art to packing the perfect picnic – to not arriving at your chosen spot and saying, “Oh shoot, I forgot the napkins!”. With so many perfect picnicking days on the horizon, now is the time to assemble your utensils and load up your picnic basket to ensure it’s ready to grab at a moment’s notice.

Start with your eating utensils – those mealtime essentials no matter what food you’ve got in your basket. Opt for reusable plastic cups, wine glasses, bowls and plates to avoid chipping or smashing glass ones in transit and to also reduce the amount of single-use plastics we throw into landfill. Try to find smaller knives, forks and spoons than the ones you would normally use at home – space is of the essence when it comes to packing a picnic basket and is best saved for essentials (like chilled bubbles, perhaps?). A small cutting knife that comes in its own sheath is perfect, as is a small chopping board. Don’t forget the bottle opener and a rubbish bag for clean up.

When it comes to your picnic basket itself, it should be big enough for all of your necessities, but not so big that you struggle to carry it from place to place. Two smaller baskets will be better than one monster basket. Opt for a basket with insulation, particularly if you want to venture far and wide for your picnic but still enjoy the finer things, like delicious cheeses and meats. If you’re planning on using public barbecues to cook food on your picnic, you’ll need a whole other set of necessities in your basket.

Some steel wool and cooking oil will get that barbecue plate up to scratch before you start, while a simple scraper/egg flip and tongs should cover you for cooking utensils. An often forgotten essential is a roll of paper towel. Whether you’re using it for napkins (no one needs to get too fancy when they’re eating on the grass), to wipe up spillage or to clean up that public barbecue, you’ll be amazed by how often you find yourself reaching for that trusty roll of paper towel. Optional extras that generally make a picnic more comfortable include a tea towel, tablecloth, moist towelettes and insect repellent (a mossie coil and matches could also be your unlikely best friends on a picnic).

There are other things that you won’t be able to fit in your picnic basket but will definitely want to have if you become a regular picnicker. A water-resistant blanket (one that rolls up with a carry strap is ideal) and a small esky are a few obvious ones, but you could find that a small portable table really takes your picnic to the next level. Ultimately, the key to the perfect picnic is preparation. Happy picnicking!

QueenslandLAKE AWOONGA It’s a relatively well-kept secret unless you’re from the Gladstone region, but Lake Awoonga might soon be your new favourite caravanning destination. The sprawling 6.7ha lake is popular for fishing and animal spotting, with the grey-headed flying fox and the yellow-bellied glider among some of its most fascinating residents. Adventure-seekers can jet ski or boat around the lake, but we recommend floating in the water or relaxing on the shore to soak up all that Lake Awoonga’s surrounds have to offer. Spend a weekend or a month here and we guarantee you won’t get tired of the view. DAINTREE NATIONAL PARK This slice of far north Queensland paradise is the ultimate road trip destination for its unparalleled beauty and variety of UNESCO World Heritage-listed natural wonders. The Daintree Riverview Lodges & Van Park is the best place to enjoy views of the Daintree River as well as everything that the national park has to offer, with the cascading Mossman River and Mossman Gorge just a short drive south. Head north and you’ll arrive at Cape Tribulation, famous for its rainforest-clad mountains that meet the white sandy beaches at the coastline. Stick close to the Daintree River and explore the ancient vegetation. JARDINE RIVER NATIONAL PARK The Jardine River National Park is only accessible by off-road campervans and trailers, but its hard-to-get-to nature makes it one of the most perfectly preserved camping spots in northern Queensland. Situated at the top end of the Sunshine State, the Jardine River is dotted with cascades of clear blue

water, flowing in from the Torres Strait. You can enjoy a leisurely float in one of the many swimming pools but be sure to obey crocodile warning signs and use your common sense to avoid any encounters with the river’s reptilian residents. Do your research before visiting to ensure you minimise your impact.

New South WalesLAKE BURRENDONG Sprawling and still, Lake Burrendong is popular for watersports and boating, but it’s also a beautiful place for a dip after a long day of hiking around the surrounding state park. You can wile away the days casting a line or rent a kayak to explore the lake, but it’s the sunset over Burrendong that makes it the perfect place to park your RV. Reflections Holiday Park at Lake Burrendong is the best place to make the most of the water. SUSSEX INLET Separating New South Wales from the fascinating Jervis Bay Territory, Sussex Inlet puts you in prime position to explore all that the Shoalhaven area has to offer. Water sports, fishing and kayaking are just some of the activities you can do in St George’s Basin itself, but it’s just a short drive around the basin to the ocean – which offers surf and white sandy beaches – meaning you’re unlikely to ever run out of things to do. Situated right on the water’s edge, Talofa Caravan Park is the place to be to make the most of St George’s Basin, Jervis Bay Territory and surrounds. MORUYA RIVER Rich history and beautiful scenery are just two of the things that draw travellers to Moruya. The riverside town has homed Indigenous communities,

bushrangers and even a booming mining industry during the Gold Rush. Moruya offers more than just a wide flowing river for water lovers – the granite quarry mined much of the stone used for landmarks like the Sydney Botanical Garden’s Captain Cook statue, the Martin Place Cenotaph and even the piers and pylons of the Sydney Harbour Bridge. Stay five minutes down the road at Riverbreeze Holiday Park to enjoy the river, quarry and Malabar Creek.

VictoriaLAKE WELLINGTON Lake Wellington is one of the largest lakes in the expansive Gippsland Lakes network, which covers about 354km and is home to incredible flora and fauna – most spectacularly, a group of about 50 bottlenose dolphins. Lake Wellington itself is a popular family spot for its relatively shallow water and stunning natural surrounds, with local fishermen, swimmers, kite surfers, boaters and birdwatchers all making the most of the large lake. Stay at Roseneath Caravan Park for best access to Lake Wellington.STEAVENSON FALLS It’s one of Victoria’s highest waterfalls – cascading from a height of 84m into a deep pool surrounded by lush rainforest – but there are plenty of other reasons why Steavenson Falls, and the nearby town of Marysville, should be next on your travel ‘to do’ list. Get lost beneath the towering trees and explore the national park – which truly does give Yosemite a run for its money – or stroll around the town itself to discover its vibrant history. Marysville Caravan Holiday Park is just a 12-minute drive from Steavenson Falls, making it the perfect place to park your RV and explore the area.

WATERING HOLES

LAKE EYRE, SOUTH AUSTRALIA Lake Eyre contains the lowest natural point in Australia, around 15 metres below sea level. On the rare occasion that it reaches capacity (which has only happened three times in the last 150 years), it’s also the largest lake in Australia, with its surface area crossing three state borders. Typically, however, Lake Eyre is dry and shimmering with salt; so much so that it creates a hallucinatory effect that makes it difficult to distinguish between land and sky, which has caused several aircraft crashes. About once every eight years, the lake fills with water and bursts to life, becoming an oasis for migratory waterbirds and blossoming wildflowers.

LAKE HILLIER, WESTERN AUSTRALIA One of Australia’s many ‘Pink Lakes’, Lake Hillier sits right on the edge of Middle Island, just off Western Australia. This natural wonder gets its vibrant hue from the salt concentration in the water and is often confused with another lake on Western Australia’s mainland – which is literally called Pink Lake (formerly Spencer Lake). Tourists are often disappointed to arrive at Pink Lake, which hasn’t actually been pink for over a decade thanks to a change in the salt concentration. Lake Hillier, on the other hand, is still very much pink, and is best viewed from above by sea plane.

WHAT YOU EAT

THE MIND IS a faculty and the application of this faculty is needed for it to be strong, to grow and to be of utmost use. Strong minds are needed to adapt in our world, more so to flourish. It’s not something only some people (like genius minds or rocket scientists) can enjoy. There are different exercises and techniques to keep a grounded, clear and imaginative mind working, but before we consider these, ask yourself, have you been nurturing your mind? What have you been feeding it? How have you been treating it? Do you rest it enough?

Looking after the mind is as important as looking after the physical body. The principle is identical - use it or lose it. Physical exercise is equally as important as mental exercise. Physically we know we get stronger, leaner and fitter with exercise. Exactly the same goes for our minds to be healthy, strong and fit. When we don’t actively nurture and use our

mind, it becomes weak, uninterested and sluggish. Often it will take on negativity which will then ooze into other parts of our body. The fogginess clouds our thinking, impacting our body’s health and wellbeing. It creates an imbalance that can and often lead to our body being at ‘dis-ease’. Remember that your thoughts become your feelings and your feelings create your health. As Buddha stated: “The mind is everything. What you think, you become.”

The mind can hold you back or enable you to fly. The mind will keep you in bed or propel you out. The mind will control your level of physical exercise and enable you to get up and go, or equally, allow you to talk yourself out of it. When you can get out of our own way, so to speak, the sky’s the limit. Remember that by allowing yourself to stay safe (and sometimes stuck) in your comfort zone, there won’t be growth, discovery, adventure, education and other social benefits.

ACCORDING TO psychologist- turned-author Delia McCabe, our thinking, planning and focussed action-taking occurs across a huge network of very sophisticated and super-coordinated cells, chemicals, membranes and molecules, all of which rely on the nutrients we eat and how well they are absorbed.

“The brain uses up to 20 per cent of the carbohydrates that we eat, with that figure increasing when we are stressed. However, there is nowhere in the brain to store carbohydrates, so when blood glucose levels run low due to haphazard eating or choosing highly refined foods, the brain battles to function well and moodiness results,” Delia says.

“Another startling fact which most people are surprised to discover is that 60 per cent of the dry weight of the brain is made up of fat. Each and every one of the 100 billion brain cells that we have need good fats in their membranes to allow effective communication to occur between

them and to build neural pathways, so it’s critical that we eat the right fats to ensure optimal brain function. Most people think olive oil, coconut oil or omega 3 are the only ones to concentrate on eating, but other fats and oils also play an important role in brain health. If you have dry skin, it’s a sure sign that your brain isn’t getting enough of the good fats.”

Delia says the brain also needs protein to make hormones and tiny messengers called neurotransmitters, which allow brain cells to communicate effectively with each other. When brain cells communicate well our emotions are balanced and our thinking can be clear and decisive. A wide variety of vitamins and minerals also play critical roles in brain function, by supporting hormone and neurotransmitter synthesis, ensuring efficient use of carbohydrates for fuel and maintaining the important balance between brain activity and a sense of calm and peace. The brain uses up more nutrients during times of stress, so it’s important to continue eating a wide

variety of nutrients when life feels overwhelming.

“It’s vitally important to feed your brain well regardless of your age,” Delia says. “Getting enough sleep, exercising and thinking positively all help keep our brain in great shape, but if the building blocks aren’t there – the right amounts of the right nutrients – the brain will battle to perform its tasks optimally, making it hard for you to live your best life.”

Broccoli and pomegranate salad Serves 6–8. Prep time: 15 minutes.

Ingredients1 head broccoli, in small florets3–4 cups baby spinach or small lettuce leaves ½ Spanish onion, peeled, finely sliced2 cups fresh sprouts 1 large pomegranate, peeled, seeded (retain half the seeds to sprinkle over the salad just before serving)2–3 small spring onions, finely sliced

Method: Lightly steam the broccoli over boiling water for a few minutes un-til the florets turn bright green. Remove from the heat and spread on a plate to cool. In a bowl, combine the spinach leaves, Spanish onion, sprouts and pomegranate flesh and toss well. Add the cooled broccoli and toss through the other ingredients. Sprinkle the pomegranate seeds and spring onions over the top of the salad and serve with turmeric macadamia mayonnaise (recipe below). Variation: Replace spin-ach/lettuce with watercress.

Turmeric macadamia mayonnaise Makes: 1½ cups. Prep time: 5 minutes.

Ingredients 1 cup macadamia nuts 1 large garlic clove, peeled juice of 1 lemon ½ cup cold water ½ teaspoon turmeric salt and pepper, to taste

Method: Combine all the ingredients in a food processor and blend until thick and creamy — as it stands it will get thicker. Refrigerate in a glass, airtight container for up to five days. Variation: Leave the turmeric out, and stir in some finely chopped basil or coriander (cilan-tro) and a few tablespoons of fresh ca-pers and pulse briefly to roughly chop.

Quick bean soup Serves 4. Prep time: 1 hour.

Ingredients2½ cups cooked beans of any variety or roughly 2 tins (425 grams) barlotti or cannelini beans, drained1 large carrot, finely chopped 1 medium sweet potato, roughly grated2 medium onions, peeled and roughly chopped1 celery stick, finely chopped, including the leaves2 large garlic cloves, sliced1 tablespoon dried Italian herbs 1 bottle (500g) pasta sauce, or ¼ cup tomato paste 3 cups water few sprigs fresh basil

Method: In a medium-size saucepan combine all the ingredients except for the basil. Place over a low heat and sim-mer for about an hour. Remove from the heat and use a potato masher to crush some of the vegetables and beans. Serve topped with the fresh basil, green pesto or basil herb oil. Variations: Use lentils or chickpeas instead of the beans. Add 1 tablespoon of red pepper flakes to add a little heat. Served with gluten-free flat bread and a large leafy salad, you have a satisfying meal.

Bitter chocolate tart Serves 8–10. Prep time: 15 minutes.

IngredientsCrust1 cup coconut½ cup almonds

4 medjool dates, pitted2 tablespoons coconut oil¼ teaspoon saltpinch of cayenne pepperFilling170g 70 per cent dark chocolate1 ⅓ cups cashew nuts3 large medjool dates, pitted1 cup coconut cream (saving a few tea-spoons for swirling) 1 teaspoon pure vanilla extractpinch of salt

Method: To make the crust, combine the coconut, almonds, dates, coconut oil, salt and cayenne pepper in a food processor and blend until small-ish crumbs form. Transfer the mixture to a round 20cm pie plate and press down firmly. Transfer to the freezer while you prepare the filling. To make the filling, place the chocolate in a large bowl over a saucepan that contains water simmering over a low heat. Stir once or twice until it melts, which will take 3-4 minutes. Then remove from the heat and cool slightly. Transfer to a food processor with the remaining ingredients and blend until the mixture is smooth and creamy. Remove the crust from the freezer and pour the chocolate mixture over the crust. Swirl the leftover coconut cream over the filling, then refrigerate for a couple of hours before serving. Variations: Add 2 drops essential peppermint oil. Add 1 tablespoon psyllium husks to the base to add extra fibre.

Right across our group of aged caring communities, there are numerous stories of residents conveniently transitioning across from a Palm Lake Resort literally just over the fence. We are hearing more and more from proactive retirees seeking out specific Palm Lake Resort locations to set themselves up for their eventual move into Palm Lake Care. There are other stories of couples with differing care requirements living in adjacent complexes – one at Palm Lake Resort and their partner in neighbouring Palm Lake Care – to remain geographically close to one another while still having their individual needs met.

Meet the Herds Ian and Gail Herd don’t really know a life apart. The pair met in an airport in New Zealand and have been married for more than 40 years. Since moving to Australia in 1989, they’ve always been located on the southside of Brisbane. So when it came time to downsize and prioritise their respective healthcare needs, they knew they wanted to stay in their local area. Through Palm Lake Group, the Herds have found that meeting their care needs, while still maintaining a life together, isn’t just possible, it’s the norm.

“Ian was injured in the Vietnam War – a bullet went through his stomach – so he’s been in a wheelchair for 30 years and needs a bit of help with eating,” Gail explains. “We were previously living together at Palm Lake Resort Mt Warren Park, but Ian recently moved into Palm Lake Care Mt Warren Park and we’re very happy.”

Ian agrees. “Gail has been here keeping an eye on me the whole time,” he says. “It’s good because we can still have dinner together each night and spend

time together, but she doesn’t have to care for me all on her own.”

Meet the Stanleys A well-known and respected family within Cooroy and the wider Sun-shine Coast community, Chris and Sue Stanley have worked tirelessly over the years fundraising for Children with Disabilities. They’ve particularly focused on improving opportunities in sport for people with intellectual disabilities, and together they’ve been a catalyst for improved access and equity in that area – a cause close to both of their hearts. Chris and Sue have two boys, Ben and Clinton. Clinton is known locally as the “Aussie Super Fish” – a fitting nickname, considering his impressive national and interna-tional swimming achievements. He’s an Olympic gold medallist and was the Olympic Queen’s Baton carrier for Noo-sa. As both a Down syndrome athlete and a star in Masters swimming, he is a prominent role model in the local (and national) community.

Moving from the five-acre property they’d called home for three decades into Palm Lake Resort Cooroy-Noosa didn’t just signal a downsize for Chris and Sue, but also a chance to finally wind down after years of care, fundraising and community work. Learning that Palm Lake Care will be building an aged caring community right next door in the coming years, however, was a key selling point for the pair.

“It has been a big move but has been the best move for us,” Sue admits.

“Knowing an aged care facility will be built in the future means we never have to go through the stress of moving again.”
