Welcome to Atlantic Canada and Maine’s first-ever directory ofnon-timber forest product (NTFP) businesses and organizations!

NTFPs are generally defined as forest plant, tree and mushroom resources other than timber. They includeunprocessed resources like fiddleheads and fir pitch as well as value-added products like bent willow furnitureand blueberry jam, and finally, they also include ecotourism opportunities like bird-watching tours.

NTFPs have been picked and produced by Aboriginals long before the arrival of European settlers to NorthAmerica. Through the years, NTFPs have provided economical, cultural and spiritual benefits to producers andconsumers alike.

“Buying locally” is a growing trend and it makes sense to support your neighbourhood businesses by buyingproducts that are produced mere kilometres away instead of whole continents away. The purpose of thisdirectory is to showcase the multitude of NTFPs being produced in our own backyards, be they decorative,edible, health-promoting or other. We also want to encourage linkages between growers and producers who maybe able to share resources and expertise.

From Our Woods To Yours: ‘Wild’ Goes National

Back in August 2005 when the first ‘Buy BCwild’ directory of non-timber forest products from the wilds of BritishColumbia was still hot off the press, we dreamt of the day when a directory focused on these remarkable and diverseproducts would stretch from coast to coast to coast. Four editions and almost 100,000 Buy BCwild directories later, animportant step has been taken in realizing this pan-Canadian vision with the launch of From Our Atlantic Woods. TheAtlantic Woods team has done a remarkable job of making the NTFP directory concept their own with unique productsfrom Atlantic forests and farms.

With a 5th annual edition due out in June 2009, Buy BCwild has proven itself to be an important tool for educating thepublic, helping to bring the sector together, and connecting consumers to producers. We know that the hard work of thepeople at INFOR Inc. and their partners across Atlantic Canada and Maine will pay off with the same benefits toproducers. The directories from east and west also contribute to strengthening a growing national network focused on thesustainable use and management of these often overlooked but important resources. Non-timber forest products havebeen an essential component ofaboriginal life for thousands ofyears. However, many, if not most,uses of NTFPs by First Nations inAtlantic Canada, Maine, andelsewhere were not developedusing an economic model.Knowledge regarding many NTFPssuch as plants used in traditionalmedicine was first and foremostregarded as a gift, and the use ofthat gift involved a respectfulrelationship with the land. Thefollowing quote from Parsons andPrest1 captures this concept well:

“Aboriginal forestrypractice is more than justfollowing a prescriptionoutlining when, whereand how to harvest, butprescribes how arespectful relationshipwith the natural world canbe developed.”

Almost without exception, NTFPshave been and continue to be usedwithin aboriginal communities.One only has to look at the carethat goes into the production ofNTFPs by First Nations Peoples torecognize the importance that isgiven to respecting the land and itsbounty.

Unfortunately, the NTFP sector asa whole has been largelyfragmented and First Nationsactivities are no exception. Thecommunication gap betweenaboriginal and non-aboriginalcommunities has contributed tothis problem. Hopefully the FromOur Atlantic Woods directory willhelp facilitate bringing aboriginalsand non-aboriginal people andcommunities together using amodel of mutual respect and fairbenefit sharing within the NTFPsector.

The Story of FiguredWoods

The unique characteristics of“figured woods” make themgenerally accepted in the world ofnon-timber forest products. Verycommon species of trees can havevery uncommon characteristics or“figures” in the grain of the wood.The most common figures found inAtlantic Canadian and Maine treesare: burls, birdseye maple, spaltedwood, curly maple and quiltedbirch.

BurlsBurls are abnormal growths thatoccur on the outside of trees. Theirunique swirling grain patternscreate some of the best patterns infigured woods for turners. Manybowl turners actively seek theseunusual anomalies. Often smallpockets of bark are captured withinthe burl adding to their uniquecharacter. No two burls are everthe same and therefore no twoproducts made from them will everbe the same. This uniquenessmakes products created from themsome of the most sought afterwood pieces in the region.

Birdseye MapleAlthough many people think theyknow what causes the patternresembling birds’ eyes in sugar(hard) maple no one has yet givenscientific proof of the cause. Whilethe birdseye feature is most oftenlinked to sugar maple, it can alsooccur in yellow birch, white birch,American beech and white ash. Asthe tree grows, small dimples beginto form in the cambium layerwhich is the layer responsible forthe new growth of bark and wood.Each year, as the tree puts on newwood, these dimples create aunique pattern in the wood whichwe call “birdseyes”. Since thebirdseyes radiate from the center ofthe tree, the pattern of birdseyes isbest seen when the wood is sawn atright angles to this growth. Mostpeople believe you cannot see thebirdseyes unless they remove thebark. However the presence ofbirdseyes can be seen in the outerbark by looking closely for thesetiny depressions.

Spalted WoodSpalted wood refers to the figure inthe wood created by a type ofnatural decaying process. Themycelium of fungi penetrates thewood usually when it is still in theform of a log. As the wood beginsthe early stages of decomposition,unique patterns are created. Tomaximize the potential for spaltedwood, the trick is to cut or turnwood pieces at the right time--toosoon and the patterns are not welldeveloped, too late and the woodbecomes soft or “punky”. Spaltingcan occur in most species but thebest seem to be birch, beech andmaple.

Curly MapleThe curly maple pattern is mostcommon and striking in red (soft)maple but it can be found in otherspecies. It creates a very attractive3-D appearance in well-finishedproducts. Also referred to as “tigermaple”, this pattern is created inthe wood through a wave-likegrain pattern. Curly maple can beidentified in the log by looking atthe bumpy waves in the woodunder the bark. The larger thediameter of the tree, the morevaluable the curly maple log maybe. Musical instrument artisans,such as violin, cello and guitarmakers, seek out this unique grainpattern.

Quilted BirchQuilted birch sports a pattern thatis similar to the curly figure;however, the frequency of thepattern is much wider. For thisreason, this pattern is not as soughtafter for small wooden items butcan be attractive in cabinets andfurniture.

DirectionsBring all ingredients to a boil,reduce heat and let simmer untilthe mixture softens to a purée (5-10 min.).

Push the mixture through a finesieve using a wooden spoon toremove the seeds from the fruit andrecuperate the extracted juicewhich will be quite thick.

If necessary, add water to liquefy itor heat for bit more to thicken thesauce.

HarvestingBalsam Fir Sap:

A Sticky Business

For many centuries people all overthe world have used resin or gumfrom different fir species forvarious purposes. To name a few,fir resin is used in cough syruprecipes and the making of opticallenses and cover glasses formicroscopes. In Canada, balsam firgum is used in producing manyfinished and semi-finished goodssold on the market for domestic,commercial and pharmaceuticalconsumption. Harvesting balsamfir resin could represent a bit ofadded income for New Brunswickwoodlot owners who do not mindgetting their hands sticky.

Harvesting of balsam fir gum isdone with a picoué, which is acontainer with a jagged spout. Thisinstrument can be homemade witha small 300-400 ml (10-14 oz) tincan. The picoué must not be madewith aluminum or copper since theresin oxidizes when in contact withthese metals giving it a blackcolour and making it unusable asan edible product.

The harvesting period runs fromMay to November with sapbecoming more liquid as thetemperature increases. Collectionmust never be done in the rainsince the resin becomes whitewhen in contact with water,making it unusable.

To gather resin, the sharp teeth ofthe picoué are inserted into thebark, under the resin blister. Onlythe big blisters should be picked inorder to avoid damaging the healthof the trees. The regeneration ofthe resin blisters takesapproximately five years. If thesesimple guidelines are followed,harvesting should not harm thetrees as the blisters heal rapidly.

Once the sap is gathered, it thenneeds to be filtered to remove anyimpurities such as bark or leaves.Straining can be done with nylonsocks or in a strainer. The gum canbe stored in two or four litretransparent plastic containers suchas pop or juice bottles. Thecontainers must be cleaned anddried beforehand. The size ofcontainers accepted variesdepending on the companies. Thecontainers must be kept in a cooland dark area so the resin canconserve its properties.

An experienced harvester in astand with a high proportion ofbalsam fir trees can pick up to sixto eight pounds of resin a day.

Salmon:In the meantime, lay salmon filetskin-side down and rub in salt,pepper and lemon pepper onskinless surface only.

Preheat barbecue to 500ºF (260ºC).

Remove plank from water andplace on preheated BBQ grill untilit crackles and gives off a bit ofsmoke (3-4 minutes).

Place salmon on plank skin sidedown and reduce heat to medium-low. Close BBQ cover and cooksalmon for 15 to 20 minutes until itreaches an internal temperature of135ºF (57ºC).

Open cover periodically to makesure the plank doesn’t flare up;spray with water if it does.

Presentation:Once salmon is cooked, removefrom plank onto plate.

Squeeze juice from lemon halvesonto warm fish.

How to Make aBalsam Fir Wreath

Making a balsam fir wreath is notnecessarily a difficult process butthere is definitely a lot more to itthan just tying some random tipstogether on a wire ring with somewire.

The basic structure of a wreath is aring form, and while the size of thering determines the final size of thewreath you must take into accountthat the branches will addsubstantial volume to the finishedproduct. For example, a 20 cm (8")ring will yield a 30-35 cm (12-14")wreath.

To make a wreath from balsam firtips, first gather many tips of thesame length. Secondly, gather thebranches in small bundles and thenattach them to the form using wire.Continue to attach tips, workingcentrically until the tips areattached over the whole ring form.

Choosing andMaintainingYour Wreath

A good wreath should be compactand sturdy, with a distinct roundhole in the center. If you can stillspot the ring, wire or broken stemson the wreath, this probably meansthat it needs more tips or that itwas not constructed properly.Wreaths should also be ofappropriate weight. For example, a30-35 cm (12-14") wreath shouldweigh approximately 0.7-0.9 kg(1.5-2 lbs), while a 50-60 cm (20-24") wreath should weighapproximately 1.6-1.8 kg (3.5-4lbs).

Getting the most from your wreathis also important. If possible, yourwreath should be hung in a cooland damp location where it is notgoing to be directly hit by wind,rain or sunlight. If it is keptindoors, keep it in a well ventilatedarea. Finally, if your wreath beginsto wilt or dry out, spray it withsome water. It needs to be hydratedtoo just as your natural Christmastree needs to be watered regularly.

CCD is still quite misunderstood;it was first discovered in 2004, andits most notable symptoms are theabsence of adult bees in hives, withno record of their corpses, and thepresence of both honey and pollenin hives.

So far, it seems CCD has notaffected Atlantic Canada; however,we too are losing bees in recordnumbers. Eighty percent of NewBrunswick bees died over the2006-2007 winter, from the coldwinter and poor fall conditions.While many beekeepers are nowon the lookout for CCD, other risksto bee populations, which may alsobe partially to blame for the beedeaths in the United States, areparasitic mites, poor nutrition,pesticides and stress.

Tens of thousands of honeybeecolonies are rented out each yearacross Canada for pollinationpurposes. DirectionsMelt the butter in a soup pot over medium high heat then add the onions and mushrooms. Sauté for five minutesor so until the mushrooms are wilted and release theirmoisture. Add the wine, thyme, bay leaf andflour and reduce the heat to low. Continuecooking for another five minutes or sostirring constantly and scraping thebottom of the pot. Add the stockand cream and simmer foranother 20 minutes or so. Tasteand season with salt and pepper.Stir in the tarragon. Serve as is,or if you prefer, purée all or partof the soup. Sprinkle each bowlwith lots of chopped fresh parsley.

“Doubtless God could have made a betterberry, but doubtless God never did”.

Such is how 17th century writer Dr.William Butler described thestrawberry. From smoothies toshortcakes and jams to jellies, thestrawberry is a versatile accessoryfruit grown on almost everycontinent.

It is known that ancient Romanscultivated strawberries and that in13th century France the strawberrywas harvested for use as amedicinal plant to treat gout and toaid digestion, for instance, but alsoto remedy sunburns anddiscoloured teeth. It is also at thistime that it was first claimed thatstrawberries have aphrodisiacqualities, a claim that still persiststoday…

More recently and closer to home,Europeans found strawberries upontheir arrival in Virginia in 1588. InEurope, the wild strawberryremained the dominant varietyuntil cultivated strawberriesbecame popular late in the 17th

century. At that time, gardenersbegan breeding strawberries forsize, shape and flavour. Today thestrawberry is the most popularberry fruit in the world.

There are several theories as tohow these tasty treats came to beknown as “strawberries”. The mostpopular belief is that the Anglo-Saxon verb “to strew”, or a variantthereof. In time, the fruit assumeda number of monikers such asstreabergen, streberie, straibery,straubery, and as it is known today,“strawberry”.

As a young unfurled fern,Matteucia struthiopteris iscommonly known as a fiddleheadfor obvious reasons, but as amature fanned-out plant, it looksmore like the tail feathers of itsother namesake: ostrich fern.

Picking and eating fiddleheads is aMaritime and Maine springtradition, and according to theCanadian Encyclopedia, thefiddlehead is the most importantedible fern and the only nativeCanadian plant that has achievedcommercial success as a vegetable.The ostrich fern grows in all ofCanada’s provinces and even inpockets of all three territories andAlaska, as well as in northeasternUnited States, as far south asVirginia.

The best places to hunt fiddleheadsare along river and stream banks,in open woodlands, and at theedges of swamps and marshes.They should be picked away fromroadsides and other areas wherethey might be contaminated withpollution, herbicides andpesticides. Although it isimpossible to pin down reliablestatistics on fiddlehead sales,annual North American sales likelystand at between 7 and 10 milliondollars.

When eithereaten whole, steeped in tea ormade up in a spring tonic, they aresaid to aid with issues likeconstipation, scurvy and highblood pressure.

Most people would say that thebest way to serve cookedfiddleheads is straight up or with asimple dot of butter and asprinkling of salt and pepper inorder to fully enjoy their fresh andwholesome attributes. However,others have created a variety ofcream or other types of sauces toaccompany fiddleheads. The youngferns can also be incorporated intostir-fries, stews, casseroles andsoups. They are easily frozen aftera quick one-minute blanching andcool-down period.

InstuctionsCut ends off fiddleheads. Removescales and wash thoroughly.

Birch Syrup

So, you live in an area where thenearest maple tree is manykilometres away, but you wantsomething sweet to pour on yourpancakes. What do you do? Youstart tapping birch trees of course.

Although perhaps not well known,the practice of tapping birch treesis very old. Across the North, fromFinland to Ukraine, Alaska and theCanadian North, First Nations andearly settlers alike collected birchsap for a variety of reasons. It hasbeen used to make wine and beeninvestigated as an alternate sugarsource here in Canada and inEurope. Low sugar content (abouthalf that of maple sap), shortseasons and a different chemicalmake-up have generally impededthe commercial development ofbirch syrup. In the early 1990s, aspart of the growing interest in non-timber forest products, the state ofAlaska funded a study toinvestigate the viability ofdeveloping a birch sap industry. Itconcluded that although theproduction of syrup from birchtrees was more complex thantraditional maple products, it waspossible and commercially viable.

Similarities and Differencesbetween Birch and MapleThe basic principles behindmaking birch syrup are the same asfor maple, boil off the excess wateruntil you are left with aconcentrated sugar solutionmeasuring roughly 67 on the Brixscale. That’s where the similaritiesend. The major differences arisefrom the local climate and thechemical make up of birch sap.

Maple sap sugar content generallyruns between 2 and 4 Brix, whilebirch sap is around 1Brix. Theprinciple sugar in maple sap issucrose, while birch sap containsthe simple sugars fructose andglucose.

Fructose caramelizes at a lowertemperature than sucrose, meaningthat birch sap is easily burneddespite requiring longer boilingtime due to the reduced sugarcontent. Birch sap also containsdifferent acids and inorganiccompounds, all of which lead to adarker colour and distinctive tastefar different from maple syrup.

Beyond processing, the logistics ofcollecting birch sap are somewhatdifferent. Tap-ready birch trees aregenerally smaller in diameter thanmaples, meaning that fewer tapsper tree are possible in order tomaintain health and vigour. Theshort season, low trunk pressureand weaker root systems all makepipeline collection systemsimpractical, thus most producersuse old style bucket collection.However, pipelines are nowcoming into use.

Ingredients3 oz (80 g) dried wild mushrooms2 shallots, choppedOlive oil1/3 cup (75 ml) of Madeira (or 1/4

c. (60 ml) of port)1 cup (250 ml) 35% creamCorn starchSalt and pepper

DirectionsSoften the mushrooms inlukewarm water for 1/2 hour(make sure they are completelycovered with water).

Cook the shallots in olive oil in amedium-sized skillet.

Remove mushrooms from water(reserve water) and squeeze outmore water by pressing it out withyour hands. Add mushrooms toskillet and increase heat.

Deglaze (scrape up bits) withMadeira or port and reduce theheat to allow some of the liquid toevaporate.

Pour 1/4 c. (60 ml) of the waterused to soak the mushrooms andcream into the skillet. Bring to aboil with a pinch of corn starch.

Pour the mixture into a mixer andblend. Pour the mixture through afine sieve.

When ready to serve, reheat sauceon low heat and season as desired.

Pour over cooked veal, pork orwild game.

Maple Salmon with WildBlueberries

Ingredients1 to 1 ¼ lb (455 to 570 gr) salmon

fillet, skin off½ cup (125 ml) wild blueberries

Marinade½ cup (125 ml) real maple syrup¼ cup (50 ml) orange juice¼ tsp (1 ml) minced garlic¼ tsp (1 ml) black pepper2 tbsp (30 ml) soy sauce½ tsp (2 ml) finely chopped ginger

DirectionsCut salmon fillet into four serving-size pieces. Place fish in shallowglass dish.

Combine all marinade ingredientstogether and pour over fish, cover,and refrigerate for at least twohours.

Spruce gum is the hardened pitchfrom several species of sprucetrees including red, black andwhite spruce. Spruce gum resultswhen pitch, which flows at sites ofinjury to the tree, has hardenedenough to be chewable – generallyafter about four years.

Native Americans used spruce gummedicinally for coughs and skinproblems, and mixed it withanimal fat to patch seams inbirchbark canoes and to chew.While on his 1853 trip to theMaine woods, Henry DavidThoreau noted that his guide, JoeAitteon, was chewing spruce gumwhen tracking a moose.

Spruce gum was commerciallyharvested in the 1800s bylumbermen, trappers, and a fewfull-time harvesters. Lumbermenwould sometimes carve woodenboxes, often book- shaped, to holdgifts of spruce gum for theirsweethearts, whom they would notsee until springtime.

Spruce gum first saw production in1848 when John B. Curtis ofBradford, Maine beganmanufacturing spruce chewinggum, which eventually made itsway across the United States.Other companies followed suit,numbering 25 in Maine alone. In1900, the annual spruce gumharvest in Maine was 300,000pounds. Atlantic Canada also hadits share of spruce gum companiesincluding Row’s of St. Stephen,New Brunswick and Melanson’s ofChurch Point, Nova Scotia.

In manufacturing, spruce gum wasthe active ingredient in manycough and cold remedies from the1800s until the 1920s. Spruce gumfrom Eastern Canada and Mainefound its way into the remediesproduced in states that had littlenative spruce gum.

Though spruce gum is found morefrequently on older, larger treeswhich are sought out as saw logsfor lumber mills, plenty can still befound in the woods today.

Basket Weaving

Baskets have been around forthousands of years. While theyonce served countless purposes topeople in everyday life, today theyare mostly used as decorativeitems.

Basket weaving is a bit of a lostart, but it is still being done worldwide and locally. Baskets varygreatly in size, in the materials theyare made from and also in themanner with which they are made.

Baskets can be made of manyfibres. Generally baskets are madefrom pine needles, animal hair,grass, thread, reed and thin stripsof wood. No matter what is used tomake the basket, the fibre may beleft natural, or sometimes they maybe dyed or painted before weaving.In some cases the baskets are evenpainted or lacquered afterwards tohelp create a waterproof shield.

There are four primary types ofbasket weaving that are usedthroughout the world. A coiledbasket is one where a bundle offibres or thin rod is coiled andstitched to form a basket. A twinedor waling basket is one where twoor more flexible fibres are used toencircle a base. A woven basket,which is the type most of us know,is a basket made from inflexiblespokes and a flexible fibre that iswoven in and out between thespokes. The fourth type of basket isplaited; in this type of basket, thestakes and weaving fibres areidentical and woven together atright angles, often creating acheckered or diamond pattern.

Wild Blackberry Jam

Ingredients:4 ½ cups (1.125 l) crushed

blackberries (including thestrained seeds)

2 tbsp (30 ml) lemon juice8 cups (2 l) sugar2 pouches liquid pectin

Prepare crushed berries:Wash and crush one layer ofberries at a time. Blackberries arevery seedy so you may want to usea strainer to extract about half ofthe seeds.

Directions:Put fruit into a pot with the sugarand lemon juice. Bring to a boil for2 minutes, add pectin snd return toa boil. Turn off the heat and blendthe jam for a few minutes (a smallhand blender works great for this!).Bottle while hot using sterile jarsand seals.

Hawthorn Sauce

This makes a tangy and delicioussauce that goes well with richmeats; it is also a nice addition toice cream.

Ingredients2.2 lbs (1 kg) hawthorn haws

(berries)1 pint (600 ml) vinegar1 cup (250 ml) maple syrup2 tbsp (30 ml) salt1 tsp (5 ml) freshly ground black

pepper

DirectionsSeparate haws from the stems andwash.

Combine haws and vinegar andcook over a gentle heat for 30minutes.

Remove haws from liquid (savethe liquid) and press the pulpthrough a sieve.

Return pulp to the pan and addmaple syrup, salt and pepper.

Boil for 10 minutes, bottle andseal.

Depending on the pulp-to-liquidratio, and how long you cook downthe ingredients, the consistency canvary from a fairly thin sauce to athickness resembling ketchup.Experiment to your taste. If youproduce a thin sauce, then thesolids may settle with time, but allyou have to do is shake the jarbefore use.

Remember, “natural” doesnot necessarily mean “safe”. While some parts of a plant may be edible, other parts of the same plant may bepoisonous. Furthermore, some parts of a plant may only be edible after having been cooked for a minimumlength of time or prepared in a certain manner. Finally, even if a plant is classified as safe, you may have a highsensitivity to it as some plants are highly allergenic. Caution is key in the woods.
