Albee,” two early plays by a c c l a i m e d p l a y w r i g h t Edward Albee,

“The Zoo Story” and ‘The

These plays are two of Edward Albee’s best. “The Zoo Story” is comprised simply of a pair of strangers and a park bench. One man, Peter, is just trying to take a break from his conven-tional routine, but the other, Jerry, needs someone to witness the final brilliant moments of his life.

In “the Sandbox,” a mother and father take Grandma to the beach. An angel disguised as a young man waits there for her, to ease her out of this life.

“Two by Albee” will be pre-sented at 8 p.m. on Fridays and Saturdays, Jan. 20, 21, 27 and 28, and at 2 p.m. on Sundays, Jan. 22 and 29. Admission is $20 gen-eral, $18 for members, $15 for students and free for season subscribers.

There are many misconceptions about low fat foods, mainly that they are bland, boring and unappealing. If you are one of the people who must follow a low fat diet for weight loss or medical reasons, here in our own area is a unique and timely opportunity to prove those low fat misconceptions false.

Byron's Market on Broad Street in Schuylerville is offering monthly ses-sions about low fat foods and how to make them delicious. Each 3rd Saturday, 12:00 to 1:30 p.m. group sessions led by K.J.Lee, creator of "Low Fat and Luscious Diet Plan" are held in the cafe section of the market.

While patrons relax at tables, using low fat food packages as illustration, Ms. Lee teaches how to achieve the goal of making tasty food that is in low fat. Using a simple 4 step process, Ms Lee demonstrates first how to find and read the 2 to 3 vital nutritional numbers on food packages and what the numbers mean.

Checking each patron to be sure they understand label reading, Ms Lee then discusses seasonings, where to find them, and what and how to use them. Pleasing personal taste is paramount. If people don't like the flavors, they won't eat the food, no matter how healthful.

Step 2 is exploring where to find the best array of low fat foods and ingredi-ents, which brands are best quality, and which to choose for what recipe. E.G. a low fat sour cream may be tasty but turns watery used in baking.

Step 3 is learning to revise favorite recipes into a low fat, delicious form.

Step 4 is learning new original, reci-pes from the files of "Low Fat and Luscious Plan".

One may ask why the emphasis is on such a seemingly narrow focus: low fat. Several wide spread, common health problems can be alleviated, possibly even avoided by educating ourselves to buy, eat, drink, and cook smart. We can learn simple techniques: marinate foods,

use herbs and spice rubs for flavor and variety. Steam or saute. Use spray-on oils, stove top grill pans (a skillet with raised ridges). Bake delicious crisp crusted juicy chicken pieces,and oven fry vegetables like potatoes.

We can try new flavors and methods. Cooking can be fun, an adventure in eat-ing. Low fat can be satisfying and lus-cious. It's all about having and using excellent information.

As Ms Lee discovered during years of taste testing recipes with 25 volun-teers, most people cannot tell the differ-ence between well-made low fat food and regular full fat.

his new Fox series “Hotel Hell” at the Cambridge Hotel on Jan. 25 to 28.

Ramsay, the British chef known for his hit series “Hell’s Kitchen,” and “Kitchen Nightmares” will do a make-over of the historic inn. For the show, he will partner with a team of hospitality experts to help struggling privately-owned hotels, inns and bed and break-fasts. Ramsay himself studied hotel management as a young man.

Built in 1885, the Cambridge Hotel is currently owned by local attorney John Imhof, who bought the hotel with his next-door neighbor back in 2007 after it had been closed for a year and a half. Imhof and his friend had run a pub before, but neither had hotel or restaurant experi-ence.

Today the Cambridge Hotel is run by his daughters Shea and Abigail. Imhof ’s wife Tina was the one who applied to the TV show in hopes of getting some guidance for solving their financial difficulties.

People who wish to be consid-ered for a stay in the hotel or for a dining reservation during filming should email [email protected]. While hotel guests can stay for no charge, diners will have to pay for their own food and drink bills.

Exhibit OpeningSALEM The Salem

Courthouse Community Center will hold an opening reception for a new exhibit entitled “The Old Washington County

Courthouse” from 5 to 7 p.m. on Friday, Jan. 27 in the Great Hall.

Created with the assistance of Salem Town Historian William A. Cormier, the exhibit will be an interactive display featuring

old photographs, diagrams, a CD produced by T o m M c M o r r i s ,

and artifacts from the

archives. The Courthouse, which was designed by noted architect Marcus Cummings and con-structed in 1869, is a historical-ly significant building which serves as the anchor of the Salem Historic District.

Funding for the exhibit was provided by LARAC, with pub-lic funds from the New York State Council on the Arts Decentralization Program. Additional funding from the Shoppe Off Broadway thrift store and the Dr. Asa Fitch Historical Society helped to make the exhibit a reality.

The CCC notes that LARAC has also provided funding for a 2012 chamber music series in the courtroom. Under the direc-tion of concert pianist and con-ductor Daniel Shulman, “Music in the Courtroom” will bring a

diverse group of noted musi-cians for 7 p.m. concerts on April 15, May 13 and June 17.

The old Washington Count Courthouse is currently man-aged by the Historic Salem Courthouse Preservation Association which is striving to restore the building. For more information, call the CCC at 518-854-7053.

National Historical Park invites everyone to ward off the effects of cabin fever with its 17th annual Frost Faire, to be held

Popular back in the 1700s, a

“Frost Faire” provided opportu-

nities to visit friends and enjoy winter activities, refresh-ments and entertainment.

The tradition continues today with events such as snow tub-ing on the “Big Hill,” a bonfire, and horse-drawn carriage rides. Participants should bring their own plastic tubes or sleds.

Other activities include games such as Giant Soldier Puzzle, Ice Bowling and Bottle Fishing. A warming tent will offer hot cocoa and cookies.

A Guided Snow-Shoe Trek will leave from the Visitor Center at 10:30 a.m. This event

At noon, there will be a Winter Nature Hike, complete with hid-den treasures and prizes, that is open to all.

The Visitor Center will host a variety of activities, including contra dancing and colonial handwriting demonstrations. A children’s craft room will fea-ture decorative tin piercing and copper embossing. There will also be a bonfire, along with cannon and musket firing dem-onstrations every half hour.

He has sung leading opera roles and has appeared in concert internationally with artists including Jon Humphrey and Elly Ameling. Dr. Kibler teaches in the music department at Williams College.

The Battenkill Chorale recently returned from a choral tour of Austria and the Czech Republic. Plans are underway for a 2014 choral tour to Estonia, Finland and St. Petersburg, Russia.

In conjunction with this con-cert, acclaimed artist and Battenkill Chorale soprano Annie McNeice will have her work for sale one half hour before each concert.

Argyle Livestock Station (formerly Millers Livestock Auction) reopened under new management in July, 2011, by Duane and Denise Herrington.Our main business is the collection of cows and calves for beef with sales held every Monday and Thursday. In addition to our weekly sales, we are always buying and selling dairy and beef animals. Family owned and operated, we pride ourselves on fair prices and guaranteed/ fast payment of all animals bought and sold. With a NYS Certified Scale on premises, a 20’ livestock trailer, and constant contact with our buyers, Argyle Livestock Station ensures that each animal that passes through the facility is properly weighed and priced.
