ASPARAGUS-FARROSALAD

Lent is on the horizon. That makes this the perfect time to plan your menu around diners who want to enjoy the pleasure of eating out while remaining true to religious beliefs or new year’s resolutions.Maybe Friday fi sh fries during Lent are a tradition at your operation, but don’t overlook this as a great opportunity to try out new seafood items. A limited time offer can be a great way to gauge the popularity of innovative dishes such as fi sh tacos and walleye sandwiches, or traditional entrées like shrimp scampi or fi llet of sole.

Don’t draw the line at seafood, and think beyond the dinnertime rush. Preparation Instructions

Wash hands. Wash all fresh, unpackaged produce under running water. Drain well.

1] Dissolve vegetable base in 1 gallon of boiling water. Reduce to simmer. 2] In a heated rondeau, sauté onions, celery, garlic, and bay leaves in heated oil until onions are translucent. Add farro and mix well. Add vegetable broth, cover, and bring to a boil. Reduce heat and simmer until farro is tender and broth has been absorbed. Season to taste with salt and pepper. 3] Spread farro mixture onto two 4” hotel pans, allow to cool uncovered. Cover, label, date, and refrigerate for future service. CCP: Refrigerate at 41°F or below. 4] Trim asparagus and carrots. Slice thinly on a mandoline. Cover, label, date, and refrigerate for future service. CCP: Refrigerate at 41°F or below.

To prepare à la carte:

Wash hands.

1] Crumble 8 oz. of farro into a stainless-steel mixing bowl. Add ½ oz. of almonds, 1 oz. asparagus, ½ oz. carrots, and ½ tsp. mint. Drizzle 1 oz. of dressing over mixture and stir well with a rubber spatula. 2] Place ½ oz. of spring mix in the center of a chilled serving plate. Spoon farro mixture on top of the spring mix.

1] Slice carrots on the bias 1/8" thick. 2] Cook potatoes and carrots separately in salted, boiling water until tender. Drain and cool under cold tap water. 1] Butter one side of two pieces of Texas toast. Place on a heated fl at griddle or grill buttered side down. Grill until golden-brown.
