BASSO SALENTO

The terroir of the Lower Salento is

represented by five doc wines – Leverano,

Galatina, Nardò, Alezio and Matino. Due to

the quantity of secondary varieties in the

blends, to the differences in soils and

climatic conditions of the vineyards, to their

aromas and flavours, these are really five

distinct expressions of the Negroamaro

variety. This is the king of Salento vines,

and is used in this corner of Apulia to

produce excellent red wines and also a

wide range of rosés. Although rosé wines

are made all over Apulia, production

quantity and quality in the Salento are

really very high. This is a true oenological

peculiarity which goes very well with the

seafood and fish cuisine along the Ionian

and Adriatic coasts of the Salento.

Along the entire length of the coastal tower

defence system, local cuisine uses a lot of

fish, cooked so as to bring out its taste and

freshness. The Old Town of Gallipoli lies on

an islet surrounded on two sides by the sea

and is a real treasure trove of flavours:

there are fish soups, molluscs in every kind

of sauce, and the famous red prawns

which chefs absolutely adore. Visitors

should not forget to try scapece, a local

speciality probably of Arab origin, which

was already known in the Middle Ages; it is

prepared using tiny fried fish called pupiddi

marinated with saffron in vinegar, and is a

real delicacy.

The cuisine of the hinterland also uses

some fish and offers some delicious

“intrusions” and combinations with

vegetables and pulses like aubergines,

tomatoes and peppers, which are very

common. Another chapter deals with

dishes based on fresh pasta: tria

(maltagliati with chickpeas, ciceri) are

typical, and so are sagne torte o

'ncannulate (twisted lasagne with a thick

horse meat sauce). There is also a very

good old tradition of using spelt and barley

flours instead of wheat flour.

Another delicacy consists of pittule (fritters

which can be plain or with a vegetable

filling), fried octopus, and pucce: and do

not miss out on wonderful baked ricotta,

pasticciotti (short pastry filled with cream)

or fruttoni (chocolate covered almond

paste).

Visitors really cannot leave the Salento

without visiting the aristocratic Nardò with

its seaside resorts Santa Maria al Bagno

and Santa Caterina; or Santa Maria di

Leuca and its splendid villas overlooking

the sea; or windy Otranto with its imposing

castle on the sea; or Galatina with its

aristocratic “palaces” and St Paul's

Chapel, the centre of “tarantism”. Even

today in the heart of the Lower Salento

music and legends still celebrate this

phenomenon which is supposed to be

caused by the bite of a spider. The “Night of

the Taranta” has made Melpignano

famous all over the world, along with the

Grecia Salentina - a linguistic and cultural

district including nine towns where the

locals still speak a neo-Greek dialect

called griko.

Fine and persistent perlage with a finish full of long fruity and floral echoes. Almost excellent. Ideal with a chicken, potato and onion casserole.

Primitivo Salento Rosso igt 2007Grapes: Primitivo 90%, Negroamaro 10%Alcohol: 13,50%Cost: euro 9,00Good intense ruby red hue. Unusual balsamic eucalyptus notes on the nose, followed by hints of cherry and nutmeg.Pleasantly full, fruity and balanced on the palate with a finish which is a little short.Worth trying with a pizza rustica four cheeses.

The Calò family's passion for wine

started about two hundred years ago

with Leopoldo Calò who grew vines and

olives on a small plot of land. The first

important development happened at the

end of the 1930s when Giuseppe set up a

network of distribution for the family

wines in Albizzate. When his son Mino

entered the business in 1963 he started

making the rosé wine which identifies

the winery and which has had a lot of

success. Rosa del Golfo is led today by

Damiano.

The winery continues producing quality

wines using traditional methods in the

vineyard and advanced technology in the

winery to process the local Negroamaro,

Malvasia Nera and Primitivo varieties

grown as bushes. It is possible to visit the

winery and buy its wines.

Filimei Salento Rosso igt 2008Grapes: Negroamaro 100%Alcohol: 13,50%Cost: euro 8,50Stunning lively ruby red colour with violet nuances. Fragrant hints of blackberries, dried violets and liquorice notes on the nose. Delicate on the palate, full-bodied, still developing but pleasant. Good fruity finish, medium persistence. Frank and unchallenging. Delicious with roast chestnuts.

Massaro Rosa Salento Rosato igt 2008Grapes: Negroamaro 100%Alcohol: 13%Cost: euro 8,00Intense cerasuolo pink colour with ruby highlights, and intense scents of cherry and hints of hydrocarbons. A little thin on the palate, but nicely fresh. Quite balanced with a delightful but short finish. Strong freshness and alcohol content suggest matching with a pulse soup.

L'Astore Masseria has belonged to the

Benegiamo-Di Summa family since the

1930s. It was one of the first of this kind

of farmhouse to be rescued from the

state of neglect typical of the Salento

“masserie” before the recent re-

discovery of country homes. In the late

1990s, surgeon Achille Benegiamo

decided with his sons Paolo, Stefano

and Luca to revive the farm and its

wine-growing past by aiming at

quality. Nowadays the wines made

here are an excellent example of the

unique Salento terroir, thanks to the

modern technology used and the

experience of a very well-known wine-

maker and his professional team.

Visitors can tour the winery and see its

atmospheric cellar together with a

very old underground olive oil press.

Metiusco Salento Rosso igt 2008Grapes: Negroamaro 50%, Malvasia 25%, Montepulciano 20%, Primitivo 5%Alcohol: 14%Cost: euro 12,00Ruby red hue with prominent violet highlights. Scents of strawberry and red geranium on the nose, with hints of cinnamon.Strongly alcoholic on the palate, but elegant tannins intensify the balance. Satisfyingly consistent, full-bodied and persistent with a lovely bitterish finish. Perfect with cavatelli, tomato, rocket, black olives and mature pecorino cheese.

Impressive lively fragrances reminiscent of blackberry jam, cacao, toasted hazelnuts, vanilla and nutmeg with notes of pine and paprika.Excellent structure and intensity on the palate. Averagely persistent with a pleasantly vegetal finish. Suggested with horse's ragù.

The countryside around the town of

Cutrufiano has been a wine-growing

area for centuries, and Palamà is one

of the best representatives of this

tradition. Arcangelo Palamà started

the business in 1936 selling loose

wines. In the 1990s Cosimo joined the

business and the winery gradually

started to modernise, and completed

the process by bottling its own wines.

The winery concentrates on the local

native vines - Negroamaro, Malvasia

Nera, Primitivo and Verdeca – which

are grown using traditional methods,

and the range of wines produced here

is vast enough to meet the

requirements of several different

market sectors. It is possible to visit

the winery by appointment, sample

the wines and buy directly.

Cento su Cento Salento Rosso igt 2006Grapes: Primitivo 100%Alcohol: 15%Cost: euro 16,30Lovely ruby red colour with soft amaranthine highlights. Delicate floral scents of oleander and red carnation on the nose, and also memories of blackcurrant. Non completely balanced on the palate, but dry and intense. Fairly persistent. Very good with bucatini con pomodoro al forno.

Santi Medici Salento Rosato igt 2008Grapes: Negroamaro 100%Alcohol: 12,50%Cost: euro 6,50Good lively cerasuolo pink colour. Delicate scents of strawberry, plum, carnation and marjoram; hints of oregano. Medium-bodied, full and satisfying on the palate. Smooth and fresh with good persistence. Recommended with stewed swordfish.

Armecolo Salento Rosso igt 2007Grapes: Negroamaro 80%, Malvasia Nera 20%Alcohol: 14%Cost: euro 7,00Eye-catching brilliant ruby red colour. A delicate scent of quince jam is followed by spicy notes. Pleasant on the palate, with a very good structure. Warm with delightful bitterish finish. Perfect with a cheese like Canestrato dop di Corato.

Francesco Winspeare and Francesco

Marra are the owners of Castel di Salve

which has been producing wine near

Tricase since 1992. The two business

partners have two farms with a total of 40

hectares of vineyards where they grow

the grapes made into wine in an old

winery building from the last century. A

lot of care is taken with the cultivation

stage, considered as vitally important for

the production of quality grapes. The

vines here are almost all local native

varieties, especially Negroamaro,

Primitivo and Aleatico. International

varieties are not grown. Visitors can

sample the wines made here and take a

guided tour of the fascinating small

underground cellar and the winery

building which has recently been

restored to its former splendour.

Margìa Salento Rosso igt 2005Grapes: Negroamaro 60%, Cabernet Sauvignon 20%, Merlot 20%Alcohol: 13,50%Cost: euro 13,50Intense ruby red colour with garnet highlights. Suggestions of blackberry jam and fresh butter on the nose, with vegetal and spicy notes. Definitely more intense on the palate, with good balance and an interesting spicy finish. Perfect with a grilled caciocavallo podolico cheese.

Ruah Salento Bianco igt 2008Grapes: Fiano 100%Alcohol: 13%Cost: euro 8,00Straw yellow colour with gold highlights. Suggests peaches in syrup, yeast and meadow flowers on the nose. Fairly balanced, and appreciable on the palate because of its mineral vein which gives it a certain character. Body and persistence are average. Recommended with a chicken salad.

Aruca Salento Rosato igt 2008Grapes: Negroamaro 100%Alcohol: 13%Cost: euro 7,50Intense cherry pink light in the glass. Fragrant notes of sour black cherry, tulips and citrus. Agreeable and delicate at first on the palate, followed by a smooth freshness. The sour black cherry finish is long and corresponds with the fragrances. Ideal with a lampascione omelette.

Santi Dimitri consists of lands

belonging to the Vallone family since

the 1600s and has an area of 200

hectares on the plain around Galatina,

Cutrufiano and Nardò.

Vincenzo Vallone is in charge

nowadays, together with his sons

Augusto, Carlo and Edoardo. This area

is a natural wine-growing territory

and the winery grows and processes

only the grapes from its 60 hectares of

vineyards. All stages of production are

very carefully followed, using

advanced methods and in close

collaboration with research institutes.

The impressive Mediterranean-style

farm building is very pleasant to visit,

and visitors can sample the wines in a

beautiful room overlooking the cellars

cut into the rock below.

Galatina Bianco doc 2008Grapes: Chardonnay 100%Alcohol: 12,50%Cost: euro 8,00Soft straw yellow hue, with pleasant hints of banana, jasmine and fresh cheese on the nose. Delicate on the palate, quite balanced and smooth, with definite fresh notes. Fairly good structure, with good persistence. To accompany pasta with courgettes.

Terra San Giovanni Salento Rosso igt 2007Grapes: Primitivo 100%Alcohol: 13,50%Cost: euro 8,00D e e p i n t e n s e r u by re d c o l o u r. Recognisable cherry scents come first on the nose, followed by notes of caramel and cloves. Pleasant and well-balanced on the palate, recalling fleshy fruit. Average persistence and structure. Good with medium-ripe spicy cold meats.

Valle dell'Asso was founded in 1920 and

continues the Vallone family's

centuries-old involvement with

agriculture by concentrating on the

typical features of Negroamaro,

Malvasia Nera, Primitivo, Aleatico and

Fiano. Already in 1860 Donato Vallone

– ancestor of today's owner Luigi – was

growing his grapes on the Cutrufiano

hills and dealing with the hot arid

climate. His passion for wine led him to

gradually convert dry land agriculture

into a quality, and the winery uses this

method on the 75 acres of vineyards

today, continually receiving interna-

tional recognition.

Wine tourists experience a professional

and cordial welcome to the winery

where they can take a guided tour and

buy wines.

The first fragrance is definitely ripe black cherry, followed by scents of vanilla, caramel, toasted hazelnuts and pot-pourri, with hints of hydro-carbons. Noble on the palate with a velvety body, expertly balanced and intense. Long-lasting soft toffee finish. Perfect with hare and juniper.

Conti Zecca Negroamaro Salento Rosso igt 2006Grapes: Negroamaro 100%Alcohol: 14,50%Cost: euro 8,80Intense ruby red hue. Delicate scents of blackberry, nutmeg and cacao on the nose, with notes of slate. Delicate and well-balanced on the palate with an appreciably full texture. Fairly persistent on the finish. Suggested together with a lamb carré en croute and herbs.

Conti Zecca Primitivo Salento Rosso igt 2007Grapes: Primitivo 100%Alcohol: 14,50%Cost: euro 8,80Dense ruby red hue. This leads the way to fine scents of cherries preserved in alcohol, walnuts and fresh butter, with cinnamon notes. Pleasant on the palate due to good correspondence of aroma and taste. Warm, with tannins not yet softened. Suggested with horse's braciole in tomato sauce.

Conti Zecca tells the story of 5

centuries of passion, tradition and

innovation which have made it one of

the most important wineries in the

area. The Zecca family moved from

Naples to Leverano in the 1500s,

attracted by the rich farmlands of the

district. Over the centuries the family

developed their activities until 1935

when Count Alcibiade took the brave

decision to make wine using his own

grapes. He established the winery at

Leverano which is now run by his

descendants, brothers Alcibiade,

Francesco, Luciano and Mario.

They control all stages of the

production cycle, from selection of the

grapes to bottling the wine.

It is possible to visit the winery and to

buy directly from the charming shop.

Impressive intensity on the palate, uncommon for a wine of this age. Full-bodied and balanced, with average persistence. Good longevity. Suggested with rolled rabbit stuffed with walnuts.

Leverano Riserva Rosso doc 2005Grapes: Negroamaro 70%, Monte-pulciano 30%Alcohol: 14%Cost: euro 7,50Intense ruby red colour with light garnet highlights. Intense overwhelming scents of cherry jam on the nose, with notes of tobacco, butter and graphite. Warm and full-bodied on the palate, corresponding to its scents. Persistent and pleasantly tannic. Suggested with pappardelle with wild boar's ragù.

Negroamaro Salento Rosso igt 2007Grapes: Negroamaro 100%Alcohol: 13,50%Cost: euro 5,50Ruby red colour with brilliant violet highlights. Hints of forest fruits, caramel, cloves and vanilla on the nose. Balanced on the palate due to an excellent contrast between hardness and smoothness.Splendidly full-bodied and persistent.Perfect with roast rabbit and peppers.

Vecchia Torre was established as a

cooperative at Leverano in 1959 by

about 50 wine-growers. Since then

growth has been constant and there

are now 1300 members farming about

1350 hectares, making this the largest

cooperative in the province. The

leading variety in the vineyards is

Negroamaro, alongside other local

varieties like Primitivo and Malvasia

Nera. The winery has a professional

approach to selection of the grapes

and to the use of modern wine-making

techniques, while still respecting the

ancient wine-growing traditions of

the Salento area. In this way wine

quality is ensured under the

management of Antonio Tumolo.

It is possible to visit the winery and to

buy its wines.

Arcovecchio Matino Rosso doc 2007Grapes: Negroamaro 100%Alcohol: 14,50%Cost: euro 7,50Intense thick ruby red hue. Aromas of blackberry jam and dried figs with spicy notes. Smooth, rounded and quite intense on the palate. Its robust alcohol content suggests drinking with horse's spezzatino.

Arcovecchio Matino Rosato doc 2008Grapes: Negroamaro 100%Alcohol: 13%Cost: euro 5,50Salmon pink hue with cerasuolo highlights. A delightful aroma with scents of raspberry caramel and ripe banana, and notes of rose petal. This changes on the palate: less intense and balanced, with a pleasant short citrus finish. To drink with a pizza rustica.

The Farmers’ Cooperative of Matino,

led by Ettore De Luca, is one of the

oldest cooperatives in Italy and has

been in the same building for 110

years. The date of foundation is clearly

indicated in the Cantine del Matino

1899 brand with which the winery

sells its wines.

Over the years the winery has

improved production with the help of

the latest technology which is

gradually giving very positive results

in terms of quality and sales. The

winery uses mostly local varieties:

Negroamaro and also Primitivo and

Malvasia from controlled vineyards in

the area.

Delightful, pleasant and quite balanced on the palate, but a little too intense. Good persistence. Excellent with fusilli with courgette flowers and prawns.

Nero di Monsignore Salento Rosso igt 2008Grapes: Primitivo 100%Alcohol: 14%Ruby red colouring with violet highlights. Clear scents of cassis and shallot with notes of citron. Tannins still a little aggressive on the palate and robust alcohol content. Fairly persistent and medium-bodied. Excellent with semi-mature cheeses.

Limina Patris Salento Rosso igt 2008Grapes: Negroamaro 100%Alcohol: 13,50%Consistent ruby red hue, surrounded by violet highlights. Fragrances reminiscent of bilberries at first, and then hints of toasted almonds, tobacco and carob with notes of caramel. Corresponding smooth toasted scents on the palate. Good structure and intensity with slightly peppery finish. Recommended with torcinelli alla brace.

Unione Agricola di Melissano was

founded in 1959 and now has over 600

members, who safeguard the identity

of their territory by making it their

mission to produce quality wines.

The winery is managed by Sergio

Macrì and rooted in the great Salento

wine tradition.

Cantine Menhir was founded by

Gaetano Marangelli in 2005, and has

quickly become successful. The

winery lies in the luxuriant country-

side near the megalithic park from

which it takes its name, and is engaged

in the reconstruction of an estate and

vineyards from the 1930s.

The winery buildings are in an 18th

century residence in the mediaeval

town of Minervino di Lecce.

There are two levels: the oldest part is

on the lower floor and contains the

c e l l a r s a n d t h e w i n e - m a k i n g

machinery, together with the drying

room for grapes, the laboratory and

sampling room; the offices and the

reception area for guests and visitors

are on the upper floor.

Shy perfumes are mostly notes of wild strawberry and oleander, with hints of acacia. An agreeable flavour and structure on the palate. The farm was founded in 1964 by Primo

Michele Bonsegna. His son Alessandro

has been in charge since 1991 and has

also inherited his father’s passion for this

work which is so tiring and demanding,

but also richly satisfying. Integrated

cultivation systems are used because the

aim has always been to cultivate the

vineyards and respect nature at the same

time. The winery grows local native

varieties like Negroamaro, Primitivo and

Malvasia Nera as well as other less

typical varieties which are now

widespread in the Salento like Malvasia

Bianca, Garganega, Trebbiano, Cabernet

Sauvignon and Sangiovese.

It is possible to visit and buy directly from

the winery in the centre of Nardò,

situated in an early 20th century building

with typical Lecce arched ceilings.

The Cantina Sociale di Nardò was

established in 1937 by a group of 24

wine-growers who wanted to work

together on enhancing the most

typical local products in order to

develop the area.

Roberto De Benedittis is now in

charge, and the cooperative has about

150 members who deliver their

carefully cultivated and selected

grapes to the winery.

Cultivation of the cooperative’s own

160 hectares of vineyards mainly

centres on the characteristic Salento

varieties: Negroamaro, Primitivo and

Malvasia Nera for the production of

doc wines and a wide range of igt

Schola Sarmenti was founded in 1999

in Nardò by Luigi Carlo Marra, who

wanted to combine technological

innovation with tradition in order to

give a new impetus to a wine-growing

heritage which is still worth studying

and enhancing today.

His own vines are cultivated only as

bushes, the system which was used for

centuries in the Salento, and provide

the Negroamaro, Primitivo and

Malvasia Nera grapes for the dense

generous wines made in the recently

renovated winery buildings.

Reminiscent of chocolate-covered dried figs, tobacco and cloves on the nose.Gallotannins are pleasant on the palate and do a good job of contrasting the robust alcohol content. The Salentusole brand was created in

2001 by Andrea Stefanelli, who was

spurred on by the passion inherited

from his family. He began to produce

wines with a strong character using

native varieties like Negroamaro and

Primitivo, and also international

varieties like Cabernet, Merlot and

Chardonnay. Modern wine-making

methods combined with meticulous

observance of tradition have led the

winery to gradually select only the

best grapes. This daily commitment

and the desire to grow and develop

have allowed the winery to acquire

prestige and to expand its horizons to

Agraria Duca Carlo Guarini was

founded in 1065 by their ancestor

Ruggero.

now grow vines, olives, cereals,

vegetables and rear sheep on their

Cooperativa Agricola Salentina Tenuta

Palese was established in 1972 by some

local farmers with a long family

tradition of wine-growing. The

vineyards are concentrated only in the

southernmost part of the Salento and

enjoy an excellent combination of mild

climatic conditions and siliceous-

chalky soils which provide an ideal

environment for vines. The most

prevalent varieties in the winery

vineyards are Negroamaro, Malvasia

Nera and Chardonnay, which are

carefully and constantly tended.

The cooperative is led by Vincenzo

Pascuzzo and also has a consultant

agronomist who provides the

cooperative’s members with assistance

The area around Tuglie is a fertile strip

of the Salento which slopes gently

down towards the Ionian Sea. This is

where Michele Calò has been a wine-

grower for over fifty years, cultivating

his vineyards on little more than a

hectare of land.

The grapes used for wine-making also

come from rented vineyards where

Negroamaro and Malvasia Nera are

carefully reared using the traditional

Apulian bush system, considered ideal

for obtaining the best results from the

local native vines. Fernando and

Giovanni work with their father

Michele, and personally follow the

entire production cycle very closely,

from the grape harvest to bottling.

The Calò family has a very long history

of wine-growing, starting with

Salvatore who loved good wine for

family consumption.

In 1989 the Calò brothers came back

to Tuglie after thirty years in northern

Italy, and founded Calosm. They

extended the vineyards by buying the

vineyards of Tenuta Stracca in Alezio.

Since 2000, their sons Claudio,

Daniele and Raphael have gradually

taken over the care of the vineyards

and wine-making.

They are particularly careful to

combine the recovery of tradition with

wise use of technology in order to

obtain quality wines reflecting the

typical features of the territory.

Visitors can take a guided tour and buy

wines directly from the winery.

Perfect with grilled octopus.

Over 80 years ago Pasquale Mottura

put his dreams into practice around a

beautiful baroque-style estate from

the late 1800s and this is where the

wine still matures slowly in oak casks

and barrels.

Since 1927 four generations have

been involved in the production of

quality wines using native varieties

like Primitivo, Negroamaro and

Malvasia Nera, mostly grown as

bushes.

The last link in the chain is Barbara

Mottura who helps Pasquale’s

grandsons Antonio and Pasquale to

manage this solid business which

supervises the entire production

cycle, from the vineyard to the table.
