OUR ETHOSThe corporate philosophy extends to each

member of the staff at Harbor Beach. Marriott International is committed to forward thinking progress, such as environmental sustainability.

Recycling is a regular part of our routine, and our staff work diligently on green initiatives such as monitoring and protecting the endangered sea turtle nesting grounds on our private beach.

One effort that is especially close to our hearts involves volunteering in Haiti. With approximately 250 associates of Haitian descent at Harbor Beach, we work closely with the Great Commission Alliance (GCA), an organization that has been active in Haiti for more than 10 years.

“Each year we take a team of eight to volunteer for a week in Haiti,” says Lisa Larison, Harbor Beach’s director of human resources. “We just returned from our third annual volunteer trip to Mirebalais.”

In the past year, GCA has opened its own orphanage, school and church and is constructing a pharmacy and clinic for the locals.

“It is so gratifying to see how the local community of Mirebalais has benefited by this commitment,” Lisa says.

Each year we bring associates and managers from various resort departments to help GCA with menu ideas, food sanitation, room cleanliness, engineering projects and general facilities maintenance of the Guest House.

“We also have the opportunity to interact with the children at the orphanage,” Lisa says. “This year we made a Harbor Beach coloring book for fun and to start basic conversations about the types of jobs that we do at Harbor Beach, with the hope of planting the seed for these 4- to 8-year-old children about what role they will play in the future of Haiti.”

Just one week of volunteering per year leaves these associates with a lifetime of inspiration, they say.

3030 OCEAN

For the past 12 years, while Harbor Beach has enjoyed a stellar reputation for its amenities and service, its signature restaurant, 3030 Ocean, has set the benchmark for culinary excellence in South Florida.

The man behind the cuisine is Executive Chef Dean James Max, a three-time James Beard Best Chef South finalist and winner of the 2010 Great American Seafood Cook-Off. Max was among the pioneers of the farm-to-table concepts in South Florida with his emphasis on fresh ingredients and local seafood.

Max grew up on a small farm near the Chesapeake Bay in Virginia and spent summers fishing and cooking with his grandfather along the Jersey Shore. This foundation still inspires his culinary creations.

“Growing up in an organic environment gave me an early insight about what freshness really is and how foods work together,” Max says.

Seafood and Modern American cuisine are the heart and soul of 3030 Ocean’s menu, which draws foodies from around the world to the restaurant’s setting on the Atlantic. From the raw bar to the ever-changing menu that blends traditional favorites such as chilled Maine lobster and Florida snapper with more exotic items such as seasonal Florida stone crabs or Kusshi oysters, 3030 Ocean is, simply, seafood exquisitely prepared.

“Modern cuisine embraces a dedication to simplicity, freshness and intensity of flavor,” Max says. “Sourcing is the key. My cuisine relies more on balancing flavors than on heavy spicing, so finding the best ingredients available is a must.”

Several farms from around the region supply 3030 Ocean, with Swank Farms of Loxahatchee providing much of the produce. The chef and his team, which includes Chef de Cuisine Jeremy Ford, are

vigilant in monitoring their sources and work with suppliers who are socially conscious.

THE 3030 SEA BAR

With a welcoming lounge area located just off the hotel’s bustling lobby, 3030 Ocean’s bar provides a great setting for a pre- or post-dinner drink or a light bite from the Riva menu. A recent $1.2 million renovation transformed Riva into a lovely setting with two private dining rooms with meeting capabilities and a new buffet and omelet station.

In the morning, choose between the breakfast buffet or a selection of a la carte menu items from within the restaurant or at an alfresco table on the Oceanview Terrace where you can enjoy the fresh sea breeze with your cappuccino.

Executive Chef John Leslie and Senior Executive Sous Chef Patrick Moody prepare memorable dishes from quick bites, sandwiches, burgers, salads and a terrific selection of casual plates throughout the day.

SEA LEVEL RESTAURANT & OCEAN BAR

When you’re staying at the beach you want to be as close to the beach as possible, and the Sea Level Restaurant & Ocean Bar allows

for just that. With a delightful deck perched out over the sands that affords an ocean view, Sea Level provides the ambience that entices you to relax and unwind.

Executive Chef John Leslie and Sous Chef Sean Fortune are focused on providing Modern Tropical cuisine paired with vibrant cocktails.

Tasty nibbles include house-made potato chips, rock shrimpand avocado cocktails, traditional buffalo or mango chili wings, burgers, salads, sandwiches, flatbreads and grilled fish, chicken or steak. EXECUTIVE SOUS CHEF PATRICK MOODYKEEPING IT SIMPLE

W hen the decision was made to renovate Riva restaurant within Harbor Beach Marriott Resort & Spa, Executive Sous Chef Patrick Moody was intent on creating a dining

concept that would set Riva apart from the resort’s other dining options. It had to provide value in a casual, chic setting but would also need to fit in well with South Florida’s lifestyle. The result was a mission to provide “modern American classic cuisine using light and fresh ingredients.”

“It is a simple concept,” Chef Moody says. “Simple items done right, consistently.”

Chef Moody was born and raised in Charlotte, N.C. Inspired by the pace and action of a kitchen, he studied at Johnson & Wales University in Charleston, S.C., receiving an A.A.S. in Culinary Arts and graduating summa cum laude with a bachelor’s degree in Food Service Management. He joined the Marriott group at the Marco Island resort in 2004 and transferred to Harbor Beach in 2010 as senior banquet chef. In 2011 he was promoted to the resort’s executive sous chef.

Chef Moody finds his culinary inspiration by always trying to learn something new.

“I love going out to different types of restaurants – from burger joints to fine dining – to see the trends and ideas that are happening in the culinary world,” he says.

His approach to food is to keep it simple and always use the freshest seasonal items found locally. In South Florida, seafood is an obvious staple.

“I enjoy cooking seafood,” he says. “There are so many varieties and flavors. There is always something new to play with. It is also very light and refreshing, which fits in with the heat of South Florida.”

One of Chef Moody’s favorite dishes at Riva is the coconut shrimp appetizer, comprised of Florida rock shrimp with a mango ketchup sauce. Simple, really.

Of his role at Harbor Beach, Chef Moody says that what he loves most is taking care of the guests.

“Giving them a great experience is very gratifying,” he says. “The other thing I love about my job are the relationships built among our team. They pretty much become your family away from home.”

RECIPESPROVIDED BY EXECUTIVE CHEF JOHN LESLIE

SEAFOOD PASTA (as served at 3030 Ocean)

Ingredients

9 pieces of fresh Pappardelle pasta1 cup local � sh pieces3 mussels3 clams½ cup halved grape tomatoes1 teaspoon chopped garlic3 ounces white wine6 ounces white � sh stock2 Gulf shrimp2 teaspoons pecorino cheese3 ounces butter7 basil leaves, roughly choppedExtra virgin olive oilSalt and pepper to tasteLemon juice to taste

Procedure

In medium sauté pan add extra virgin olive oil, mussels, clams, tomatoes and garlic. Sauté and deglaze with white wine. Add � sh stock, � sh pieces and shrimp. Cover until shell� sh open – do not serve shell� sh that are unopened.

In the meantime, cook pasta in salted boiling water until al dente. Ensure that pasta is not overcooked.

Once shell� sh have opened, add in cooked pasta, butter, cheese. Season with salt, pepper and lemon juice to taste. Finish with the chopped basil and serve in a large glass bowl.

CHICKEN PAILLARD (As served at Riva)

Ingredients

8 ounces skinless, boneless chicken, pounded to an even ¼-inch thickness

1/8 teaspoon Kosher salt1/8 teaspoon black pepper1 teaspoon lemon juice1/8 teaspoon chopped parsley, fresh2 ounces cucumber, seeded, thinly sliced2 ounces tomato wedges, vine-ripe heirloom1 ounce rinsed cannellini beans1 ounce baby arugula1 ounce red wine vinaigrette1 crispy flatbread tortilla

Procedure

Season chicken with salt and pepper. Grill chicken until it is cooked through and has nice grill marks on both sides. Sprinkle with lemon juice and parsley and place on center of plate.

In a mixing bowl, toss together cucumber, tomato, cannellini beans, arugula and vinaigrette.

Mound salad on top of chicken in the center and serve atop a crispy flatbread tortilla.

Ingredients

3 fresh strawberries1 ounce Bacardi Dragon Fruit

rum½ ounce fresh orange juice

3 ounces Prosecco sparkling wine

Procedure

Add orange juice and strawberries to a shaker glass.

Muddle strawberries with juice. Add rum and ice. Cap and shake well. Strain into wine glass. Top with Prosecco and crushed ice.

Garnish with a mint sprig.

Customize Your PlayGroup activities that will make this a vacation or event to remember

If there is fun to be had during your stay at Harbor Beach, chances are Director of Recreation Steven Woytko will be involved. “A big part of my job is working with groups and our events team,” he says. Not only are there a variety of daily activities for guests of all ages, if you want to arrange for a private, structured event, Woytko is your guy. “I can arrange for everything from day-at-the-beach leisure-style set-ups to fully structured events for

large groups such as Beach Olympics or Survivor.” Smaller groups will love the resort’s “Build a Boat” activity,

wherein competing groups are given random supplies: inner tubes, plastic barrels, zip ties, ropes, PVC cloth, etc., and they have to design and build a boat. Points are awarded for teamwork, communication and how much the end result resembles the design. The event doesn’t end here, however. After constructing a vessel the teams must test their boat – yes, in the water – by paddling around a buoy marker while transporting an egg. Points are awarded for race time, staying afloat and keeping the egg intact.

Independent leisure activities for groups can also be arranged. These are ideal for down time between conferences or for company retreats. “We love to entertain people for the afternoon,” Woytko says. Whether it is a big barbecue on the beach with live entertainment, an evening bonfire, volleyball and beach games or any other team-building exercise, Harbor Beach provides a big playground for all of the above.

Mind the Turtle Eggs If you visit South Florida between March and October, you will likely see colored caution tape marking squared-off areas on the beach. These are endangered sea turtle nesting areas, which are protected by the Department of Environmental Protection, the city of Fort Lauderdale and Marriott Harbor Beach Resort & Spa.

As the most loyal guests of Harbor Beach, the female loggerhead sea turtles make their way to the beach each summer, as they have for centuries. Digging a hole with her back flippers, the turtle lays about 100 eggs and covers them with sand before returning to the ocean. In two-months’ time, the eggs will hatch. The hatchlings will wait for the cooler nighttime temperature and make their way to the sea.

Sea turtles are disoriented by artificial light, so the resort’s lighting meets Department of Environmental Protection standards, which is why covers block out the beach side of street lamps along A1A.

It’s Five O’Clock SomewhereWhat is a beachside vacation without a tropical beverage sipped under the thatched roof of a tiki hut? The Beach Bar at Harbor Beach is the only tiki bar in Fort Lauderdale located right on the beach.

Belly up to the bar for some shade, a little music, a cool beverage and tasty nibbles from the adjacent grill that serves up hot items, wraps and salads (hours vary by season). If you prefer to keep your toes firmly planted in the sand, raise the flag on your beach chair for food and beverage service delivered to you.

The Surf Club offers a variety of games and activities for children ages 5 to 12. A big draw is the Hawaiian Surf Simulator where kids can Hang 10 while being chased by monster waves from the huge video screen. The clubhouse features plenty of games, supplies for arts-and-craft sessions, four Mac computers, two Xbox 360s with Kinect, two televisions and a theater room with stadium seating.

The fully supervised Surf Club offers a variety of activities on any given day, from nature hikes and turtle talks to theme days, games and art experiences. Children of all ages will delight in the Surf Club’s exterior Splash Pad, which features a jumping water fountain and bucket-of-water pull.

JOSHUA MURRAYSENIOR BANQUET CHEF

Chef Joshua Murray believes that banquet food should be as beautifully presented and as satisfying as that served in a gourmet restaurant. “Culinary is such an entertainment for

most people now,” he says, “so I like to capture the vision of what the event is supposed to be and have the food become part of the entertainment, part of the décor.”

With a culinary career that included national and international competitions and work in high-end restaurants, Murray joined the Harbor Beach staff in February 2010 as the Senior Banquet Chef. Soon thereafter, Murray helped to implement changes that led to the resort being ranked No. 5 in the Marriott company overall for quality of food and banquets.

Murray is quick to point out that he can’t do this alone. Along with his Assistant Sous Chef Hamide Suuctugu – better known as Chef Ilkay – Murray works with a team of 35 associates. “It’s a pleasure to work with the staff and have them be part of my extended family as well,” he says.

Murray and his team handle events from one end of the spectrum to the other. Whether it’s the 400- to 500-person Marriott Masters event, a 250-person Iron Chef event, a wedding or the intimate and exclusive Chairman’s Circle gala dinner, Murray loves the challenge of creating something unique for the guests each time.

“I like to push the boundaries with these kinds of formats,” he says. “Instead of the typical carving station, I like to incorporate high-end culinary stations. They are not only fun but also an attention getter, like our salt block seared wahoo station with mango chili foam.”

In his down time, Murray enjoys the best that South Florida has to offer: golfing and fishing. He also spends quality time with his wife, Brennan, who also works at the hotel; and Hannah, their 100-pound Rottweiler mix.

“The beautiful part about being in South Florida is that it’s a melting pot of cultures,” he says. “The sky is the limit in what we can do.”

Originally from Jamaica, Andre Reynolds first experienced South Florida and the hotel industry through a university

work-and-travel program. After completing his degree in language communication and society, he emigrated to Fort Lauderdale and joined the Harbor Beach Marriott Resort & Spa as recreation attendant.

“What I studied at school wasn’t what I really loved,” he says. “I fell in love with the hotel industry and with making people happy.”

It is possible that Reynolds has one of the best jobs in the entire resort. As the pool host, his main responsibility is to take care of the pool guests and to assist in ensuring that their stay is a great experience overall. “I set up the cabanas, get the guests water, extra umbrellas, you name it,” he says. “Sometimes it gets pretty hectic, but I try to stay calm and make everyone happy.”

One busy day, Reynolds noticed that one of his bungalow guests was upset, so he went out of his way to alleviate the situation. “I paid her a lot of attention, checking in on her frequently,” he says. The guest was visiting for her birthday, which occurred a few days later, on Reynolds’ day off; but he came in anyway to deliver her a gift and a card. The result was a happy guest and a new friendship.

“To this day we stay in touch,” Reynolds says. “She has been back to the resort since and says that I am one of the main people that she looks forward to seeing when she visits. All of her family know me now.”

Reynolds has another love besides hotel work: soccer. “I sometimes play soccer with the guests on the beach.” After his shift at the hotel, he rushes off to coach at a Fort Lauderdale high school.

“Soccer,” he says, “is my second life.”Reynolds is passionate about his role and loves working at

Harbor Beach.“I’m always smiling,” he says, “and if I can do that to make

someone’s day I’m really happy.”

“I never thought I would be in the hotel industry, but I have fallen in love with it. Making people happy brings a smile to my face.”

As part of a team that oversees the event planning department, Mike Johnston manages all of the weddings, conventions and social events at Harbor Beach Marriott Resort & Spa. This

is no small task, as Johnston and his team take these events from start to finish, from managing room blocks to billing, operations, down to the small details of the event itself. “We interact with every department in the hotel,” he says, “and communication is critical. We rely on one another to ensure each event is exceptional.”

Johnston, who has worked in the event services department for the Marriott hotel group for 30 years, says that dealing with unique groups and people is the most rewarding aspect of his job.

“I’ve worked with Super Bowl teams, celebrities and presidents,” he says. “I met George W. Bush and worked with the White House staff during his stay here.”

Managing events is not all about celebrities and presidents. “We work very hard on all events,” Johnston says. “Sometimes you end up spending more time with your colleagues than you do at home. So first you have to have a good home base that understands your job and people around you who become family as well. My kids grew up here. My daughter would come in on the weekends with me and sit in my office and draw, play and get to know the staff.”

When he does have down time, Johnston enjoys a therapeutic game of golf and spending time with his wife of 24 years, Maria; and their children Lauren, 23, Michael, 21, and Lizzy, 14.

Twice nominated for the Marriott Chairman’s Awards of Excellence, Johnston is proud that Harbor Beach has an above-average longevity for business, with about 40 percent of its group business being repeat. He credits the hard work, dedication and cohesion of his team. “The people who work here love the hotel and want to make it show well,” he says. “That’s what inspires our guests to return.”

PHILIP CHENBANQUET SERVER

After 11 years, Philip Chen says his morning cheeriness has earned him a nickname. “They call me Grandpa,”

he laughs, “because I’m an early bird. I wake up early and I go to bed early. But that helps me work well with business people.”

As a banquet server, Chen works with all of the groups and events that are visiting the resort. “I do everything from the bottom to the top,” he says. “I make sure the groups have everything they need. If a client has a special request, we go the extra mile.”

Like most of the Harbor Beach staff, Chen has forged personal relationships with many clients and groups. When the Cleveland Clinic group returns each year, they request Chen’s service. “It’s like a family reunion when we get together,” he says. “That is the sort of reward I enjoy.”

Chen also has a quest for learning and a love for travel. Born in Taiwan, his adoptive parents are French and Cajun, which Chen says has given him a broad appreciation for cultures.

“To make the clients happy is the most important part of our jobs,” says Chen, referring to the work he does here with his “family” of nearly 50 service associates. “When I see a guest who is stressed, I try to make him feel more relaxed. I know he is far from home, he is concentrated on business, he is missing his child’s soccer game or birthday. If the server also has a long face the guest will not enjoy the experience, but if you have a nice face and are smiling and laughing, the guest will become more relaxed, won’t think about the long meeting or the business and will enjoy his stay.”

When Chen isn’t brightening his guests’ day, he enjoys reading, traveling – he’s been on 64 cruises – and rescuing animals. Oh, and eating chocolate. “Life is to be enjoyed,” he says. “Don’t be sad. Enjoy your life. Enjoy your friendships.”
