WHAT'S YOUR FAVOURITE FOOD?I couldn’t cook without butter ... pastry and cakes without butter, toast without butter, mashed potato without butter – all unthinkable! Other than that it really
depends on time of year and where you are. However I couldn’t get away with answering this if I didn’t say chocolate, an open packet is never safe with me around.
BEST MEAL YOU'VE EVER HAD?In the south west of France, a group of usstumbled across an empty village squareand could smell fantastic cooking. Wefound a simple bar where I had the perfectomelette with a walnut and bacon salad.Great tasting food, cooked with care andeaten with friends. You can’t beat that.
WHAT'S BEST ABOUT THE MENU?We try to change the menu about every eight weeks, taking on new ingredients as they come into season. However, there is one dish that makes a return again and again – our Valrhona chocolate mousse and peanut butter cookies. It really takes some beating. Bristolians seem to be quite open to more unusual flavour combinations, such as soy glazed pigs cheeks with seared scallops.

Held in our bar on Saturday mornings, guests are guided through the cocktail bar alchemy, classic combinations and bartender’s top tips, before being let loose behind the bar to practice. Classes run from 10am-12noon and cost £25 per person:
March 26: Prohibition – discover the secrets of the speak easy cocktails and favourite tipples of those who braved the US alcohol ban in the 1920s. April 30: � e Drinks of Harry’s New York Bar – including Bloody Mary, French 75, Side Car and White Lady. May 28: Tiki Heaven – Mai Tais, rum and Hawaiian shirts! June 25: Gin, the Spirit of England – discover the great cocktails from an English institution. July 30: Hurrah for Hollywood – here’s looking at you kid... drinks that had a starring role in some of the most famous movies.

RECIPE 1.WEST COUNTY FIZZ:
› 10ml Beefeater gin › 15 ml poire william (pear liqueur) › 10ml pomme verte (apple) › 2.5ml frais de bois (strawberry liqueur) › 15ml lemon juice › 10ml elderfl ower cordial
›Harvey Nichols Prosecco
Method: Shake all ingredients and double strain into a fl ute. Finish by topping with Harvey Nichols Prosecco to taste.
RECIPE 2. SECOND FLOOR COSMO:
› 50ml Hangar One citron vodka › 15 ml lime juice › 15 ml agave sec › 3 dashes of peach bitters
› 50ml pomegranate juice
Method: Simply shake all the ingredients, double strain and then serve in a chilled martini glass.
