AN EDITION OF
Happy Sunday, Ono readers! If youdon’t know it yet, I’m a fiend forthe spicy. Yes, my palate prefers
intense levels of heat, and when it comesto my favorite cuisine, the hotter the bet-ter. I’ve even been known to carry a minibottle of Tabasco sauce in my purse fromtime to time, and I can eat jalapenos likecandy. OK, maybe that last one was a bitof a stretch, but I do love ’em!
Where to find more of the burn? Righthere. This week, I’ve decided to up theante and bring life to fire-breathing fare atthe following Ono, You Know establish-ments. They are dynamite!
Red House in HonoluluMy first stop this week was to the newly
opened Red House in Honolulu.Conveniently located on KeeaumokuStreet, this trendy and modern establish-ment entered Hawaii’s dining scene thispast December and serves up the finest inKorean cuisine. Yet, what’s more is RedHouse’s unique take on your traditionalKorean favorites.
“We offer a blend ofKorean and Americanfusion,” says ownerJustin Chun. “Forexample, on our menuyou’ll find an appetiz-er of Korean Noodle
on Garlic Bread ($6) and Bulgogi RicePizza ($12).”
This time however, Chun turned up theheat and presented me with the ever-pop-ular Red House Boneless Moa ($17.99grand opening special, $24 regular price)and Jjolmen ($20, serves two people). Now, if you’re asking yourself, what is
Boneless Moa? Let me tell you. It’s themost tasty mound of chicken wings youand your taste buds have ever experi-enced. Served family-style, these chick-en wings are finger-lickin’ good, featur-ing 16 to 22 pieces of bite-sized crispyfried chicken glazed with a blend ofspicy Korean kochi jun sauce and Koreanhoney. Finally, it’s topped off with bits ofchopped garlic. Next, Jjolmen is a vege-tarian’s premier choice, consisting ofthick buckwheat noodles surrounded byan assortment of vegetables includingbean sprouts, purple cabbage and mixedgreens.
“If someone requests a spicy dish, thisis what we definitely recommend becauseit’s mixed with kochi jun sauce (Koreanchili paste), and we can make it hotter ifasked,” Chun states.
So, step into Red House in Honoluluand let the dulcet tones of K-pop musicaccompany your choice of food. And ifyou dare, raise the temperature for yourtaste buds — super-spicy food is stan-dard in Korean fare, so you know it hasto be good!

Wailana Coffee HouseAt all hours of the day or night, Wailana
Coffee House is my top choice for localgrinds, and here at this landmark eatery inthe heart of Waikiki, spicy is the name ofthe game.
“We’re not known for our spicy foods,
but we do have a couple on the menu suchas Steak and Spicy Shrimp ($13.25) andHot and Spicy Chicken Wings ($11.50),”says general manager Kenton Tom.
Hot and Spicy Chicken Wings is thespicier of the two, and spotlights sevendelectable pieces of marinated chickenseasoned with just the right amount ofcayenne and white pepper. Served with aside of carrots and french fries, this mealisn’t for the faint of heart. You’ll notice abit of a kick with the first few bites, but

once you get to your sixth chicken wing,it’s like an electric shock to the stomach— in a good way, of course. Don’t worry, though, bleu cheese dressing accompaniesthe dish in order to tame the heat. For aheartier meal, with a lower heat intensity, opt for Steak and Spicy Shrimp, whichfeatures a 5-ounce top sirloin withmorsels of shrimp flavored with garlicbutter and a dash of cayenne pepper overa bed of pasta. Both seemingly delicious,
will you take the challenge? Don’t let theblazing spices get the best of you —there’s plenty of water to cool your palate.

Golden Palace SeafoodWhen in Chinatown, you can’t miss this
hot spot on North King Street. Known forsome of the cheapest dim sum in town,
Golden Palace Seafood makes mouthswater with its onolicious Northern-styleChinese cuisine. And since I was makingmy rounds in the spicy department thisweek, manager Gary Lam dished aboutone of the spiciest items on the restau-rant’s menu.
“Our Szechuan-Style Shrimp ($10.95) isspicy,” Lam says. Straight to the point, Lamdoesn’t skip a beat, “Northern-style dishesgenerally have more spice to it.” Szechuan-style Shrimp presents diners with a sym-
phony of tiger shrimp, diced green onions, minced garlic and chili pepper.
“We also can add a chili paste if it’s nothot enough for your liking,” Lamexplains.
So, if you think this zesty dish is almosttoo hot to handle, then you clearly are inneed of more chili paste!

Hukilau has been alunch and dinnerhot spot for area
employees and those pass-ing by since it first openedits doors five years ago. With a central location, good service and a menufilled with favorite comfortfood and other fare, it’s nosurprise the ExecutiveCenter restaurant has beenso successful.
Kimchee and OxtailFried Rice ($9 at HappyHour) is a good example oftraditional foods done dif-ferently. Adaptated from itsregular smoked pork friedrice, the new version has atangy flavor that benefits
from the kimchee spiceand the richness of theoxtail. Topped with twoeggs cooked any style, therice is moist, well seasonedand BIG.
Ahi and Avocado Poke($12 during Happy Hour)is another good choice.Creamy avocado is a greatcomplement to the fattytexture of the ahi withouteither one being overpow-ered. The Maui onion andshoyu/inamona sauce tie itall together.
Some places may com-pose songs about their ribs, but Hukilau’s GrilledBabyback Ribs with achipolte-mango barbecuesauce ($14) is delicious. The ribs are thick, fall-off-the-bone tender and thesauce contains just enoughfinger-sticking power tosignify a good meal.
Want to make a presenta-tion with your order? TrySizzling 10-ounce NewYork Steak ($12) withsauteed mushrooms andcarmelized onions. Theplume of smoke, the loud, crackling sizzle and theaccompaning aroma willannounce your choice longbefore it gets to your table. And if you think it looks, smells and sounds good —wait till you taste it.

With so manyV i e t n a m e s erestaurants pop-
ping up these days, it’shard to know which onesare truly un“pho”gettable. As Dining Out recentlydiscovered, though, there’ssomething special aboutSaigon Cuisine, located onthe corner of Liliha Streetand Vineyard Boulevard.
“They’re so friendly hereand the food is good,” saysregular KimberlyMakahashi. “It’s close tohome and affordable, so ithad everything I look for.”
Manager Jennifer Tranattributes the delightfulVietnamese spot’s growingsuccess to its unique, meat-filled eats. Oxtail Pho($9.75), for example, is anew take on oxtail soup.“We cook it a long time. It’s a pho technique, but
we put different ingredientsinside,” describes Chan. The richly flavored oxtailbroth is sensational withpho noodles, mushroom, onion, cabbage, parsley andcilantro.
Perfectly charred grilledmeats are perhaps the one-year-old eatery’s biggestdraw. Vermicelli Noodleswith Sliced Sirloin Pork andSpring Rolls ($7.99) featuressizzling pork atop noodles, fresh vegetables, roastedpeanuts, pickled daikon andhouse special fish sauce.“This dish we sell the mostof all,” says Tran.
The House Special Three-Choice Combination Plate($8.50) is a meat-lover’sdream as well, with a gen-erous choice of three savorytoppings served withJasmine rice, vegetables
and fish sauce. Choosefrom Grilled Pork Chop,Barbecue Chicken, GarlicShrimp and more.

In addition to the generousportion of aloha that goesinto every homemade
meal at
Ert’s Grill, childhood friendsand co-owners StephenIchioka and Clyde Higadon’t skimp on the skillfulpreparation of their local-style creations.
The friendly spot has onlybeen open for eight months, but the Wahiawa boys have hada lifetime of practice in the
kitchen. “I’ve always likedto cook, I cook for myfamily. I learned from mymom and ran with it fromthere,” says Ichioka.
There’s no doubtabout it as soon as youtaste Pulehu Chicken
Plate ($7.50), full of bone-less, skinless chicken thigh
goodness. “What makes ittaste good is that it’s on thegrill for the whole time,” says
Ichioka. “It’s very lightly sea-soned, so the smokiness fromthe grill, that barbecue flavor, comes out.”
Deep, smoky flavors alsoenliven Ert’s Smoked Meatand Eggs ($7.50) breakfastplate. Flavorful pork is mari-nated overnight, then smokedin house for five-and-a-halfhours, resulting in a rich, woodsy flavor with a teriyakiflair. “We had comments that(people) thought we bring itin from the Big Island, ’cuzBig Island’s known for itssmoked meat,” says Higa.
The meal is topped off withtwo eggs and rice, and like allof Ert’s breakfast options, cus-tomers may feast away all day.So day or night, don’t miss outon these smokin’ hot grinds.

When most of us hear theword sushi, we conjure upvisions of raw fish paired
with rice. And while there’s a pletho-ra of sushi places here on the island, one Japanese eatery has its own ideasabout sushi.
Think fresh, light, clean-tasting,creative, and meat- and fish-free.
YuZu is a chic new restaurant con-veniently located in Ala Moana Hotelthat will change your outlook onsushi. Its namesake, the yuzu, is anaromatic citrus fruit similar to grapefruitthat is found in East Asia and used inJapanese, Korean and Chinese cuisines.Even the eatery's modern décor is infresh, citrusy colors.
“We wanted to serve somethingdifferent,” explains manager TatsOtake of YuZu’s menu.
And lucky for those who don’t eatmeat or fish, “something different”includes veggie sushi.
YuZu currently offers seven differentfish-free sushi — tomato, carrot,
eggplant, shiitake mushroom, lotusroot, eringi mushroom and yuba(soymilk skin) — at $4.95 for twopieces per a la carte order. Or, justorder the Veggie Sampler to try oneof each ($14.95). Not only is it freshand delicious, but the colorful sushiis beautifully presented. And keepingwith the theme, instead of sushivinegar, the chef uses yuzu vinegarfor the rice, adding a touch of freshcitrus flavor.
“We try to use locally grown andhealthy ingredients as much as pos-sible,” says Otake.
So for fresh, healthy and creativevegetarian sushi, udon and more,YuZu is for you.

L ocated on KapiolaniBoulevard, ShabuShabu House has
been renowned for its deli-cious hot pot dining sinceit first opened in Honoluluin 2004. However, duringthe last week of March, theeatery has expanded itsmenu to include sukiyaki.
Shabu shabu andsukiyaki are similar in thatboth use vegetables andmeats, and are served witha variety of dipping sauces. However, there are severalimportant distinctions betweenthe two, according to supervisorGrant Murata.
“We’ve been known for shabushabu, but we’ve recently intro-duced sukiyaki on our menu,”Murata says. “Sukiyaki uses ashoyu-based sauce that you canboil or sauté your vegetablesand meats (beef and pork) in.It’s unlike shabu shabu, whichis a konbu-based broth, so it’s
more soupy.” To commemorate the introduc-
tion of sukiyaki on the menu, customers can bring in thecoupon featured on Page 17 thisweek and receive 10 percent offtheir sukiyaki.
Murata explains that includingsukiyaki on the restaurant menuhas always been a desire of man-ager Kazuyo Makita.
“I think we’ve come up with agood shabu shabu; in Hawaii,we’re known for that,” Murata
says. “She’s (Makita)been wanting to puttogether a good sukiyakifor quite some time. There was a time shewould see the customersput the sauces inside(the pot) and try to cooktheir food that way. Shethought they would likesomething with moretaste, so that’s why sheeventually wanted to dosukiyaki.”
For customers who have triedit, the sukiyaki option is alreadya hit.
“The concept of doing spicysukiyaki is something they (cus-tomers) can’t get at too manyplaces, so the spicy sukiyaki isone of the newcomers to themenu that’s doing good,”Murata shares.
At Shabu Shabu House, cus-tomers can customize theirmeals to create the types of fla-vors they want, whether they
choose the shabu shabu orsukiyaki option.
“It’s a traditional Japaneseshabu shabu restaurant butit’s also a place where peo-ple can create the type oftaste they want,” saysMurata. He explains thatcustomers can select amongsesame, ginger and ponzusauces to add more flavors totheir meal.
“The concept of all thesesauces around the table isthe draw for Shabu ShabuHouse,” he says. “There’sreally no rules (on what youcan use). The sesame saucehas gone through some
changes; it now accents the foodbetter. Ponzu is made with citrusflavoring and shoyu.”
When it comes to customerfavorites at Shabu Shabu House,Murata is quick to name ExtraPremium Kobe Style WashugyuBeef Shabu Shabu. Customerscan choose among Kobe Set A($34.95) — supreme tastingKobe Style Beef Washugyu andprawn shrimp combination set —and Kobe Set B ($34.95), asupreme tasting Kobe Style BeefWashugyu set (large portionavailable for an additional $9).The Kobe (Washugyu) BeefSukiyaki Set ($38.95) and theBeef Sukiyaki Set ($14.95 lunch,$18.95 dinner) also are popular.
Besides the addition of sukiya-ki to the menu, a larger selection
of sake and wine also has beenadded. The sake and wine selec-tion available to customersinclude Plum Wine ($4), CraneLake Wine ($4.50), Sho ChikuBai ($5.75), Fuji Apple Sake($15.95), Okunomatsu Ginjo($16.95) and OkunomatsuJunmai ($16.95). Shabu ShabuHouse now offers Iced Coffee($3.50) as well.
Although Shabu ShabuHouse recently added more toits menu, further menu changesmay debut this summer, accord-ing to Murata.
“She’s (Makita) looking toadd more things to the menu andthinking of working on a takeoutmenu because the location of therestaurant is by business build-ings and offices,” Murata says.
