three little words. Ones that make my heart sing, and in the right circumstances can bring tears to my eyes. No, not “I’ll make dinner” or “I was

wrong”. This goes much deeper than merely a happy and functioning marriage. The words I love to hear have been said to me repeatedly over the last few days, and that must account for the beatific smile on my face, my cloudless brow.

We have just returned from a quick Aussie-dollar escape to the US, and apart from the sublime spring weather and rare value for money, it was – as ever – the extraordinarily positive, helpful and upbeat West Coast attitude that most impressed us and buoyed us along on a sea of apparent goodwill. What are they all on that they are so cheerful and almost unfailingly polite? A stranger bumps you in the street and turns with a cry of “Oh my gosh” to apologise; commuters on streetcars earnestly discuss the weather; and the staff you encounter in shops, hotels, on public transport, in restaurants and museums are so helpful and, well, nice, that you almost burst into tears with gratitude.

But it’s when they say the magic words that I seriously consider emigration. In response to a query, a change of decision, a last-minute request, a clarification, if the response is not immediately “yes”, then it’s “I’ll

just check”. And I cannot adequately explain how uncommon that is in my life.

The genuinely legendary Age reporter, John Silvester, made this point recently during his brilliantly funny and touching speech at the Melbourne Press Club Quill Awards. He spoke of his early days at police rounds for the now-defunct Herald, and an early, crucial lesson:

“Assume nothing,” he said, “Check everything”, and if the equally legendary Michelle Grattan had been

speaking too, she would have added, “… and then check it all again”.

It seems to me that so much is assumed now – by colleagues at work, within the family, and in modern politics especially –

that I do wonder why church membership is at an all-time low: we seem to take pretty much

everything on faith. It’s assumed that all Australians want a government as big as a tuck-shop committee and want tax cuts every year; but when the assumption is tested, poll results almost universally show that we want a decent amount of the money collected from us to go to hospitals, schools and infrastructure and we accept that quite a few publicly paid people will be required along the way to administrate it. (Mind you, insulation and green-loans screw-ups don’t assist this somewhat altruistic outlook.)

On a more mundane level – and yes, I have banged

on about this before – the assumption is there almost every time you enter an Australian shop. No, we don’t have that/sell that; no, that’s out of stock/print, it’s been deleted; it can’t be ordered.

Now, do you know that, or are you assuming that? Could you check?

Speaking recently to a group of (mostly!) younger journalists, I was foolish enough to venture the view that if I was to generalise one characteristic of their generation, it would be their tendency to assume, and seemingly not to feel a burning, neurotic need to check. I have a theory that this is the true, toxic result of so-called political correctness. It’s actually not about saying the socially “right” thing: it’s the now all-pervasive view that anything a sweet young thing says or asserts in primary, secondary or tertiary school is OK, because everyone’s view is valid, and who’s to say what’s wrong or right anyway?

I’m old-school enough now to regard that point of view as rubbish. I believe in facts, and I believe there is a right and a wrong: the shades of grey are there to show up those distinctions more clearly. But if you’re not quite sure, then you can always check. \

t wasn’t the most auspicious start to Kirsten Tibballs’ career. She can still remember the shock of watching the cake she was baking exploding in the oven.

“I was about seven and my best friend, Fiona, and I decided to bake a cake at her house,” Tibballs

says, laughing. “But we made a mistake from the Mickey Mouse Cookbook and we put a cup-and-a-half of bicarb soda in the mix instead of flour. The cake exploded and baked on to her mum’s new oven. My relationship with Fiona’s mother is still quite strained.”

Today Tibballs, 38, has made an internationally successful career from her childhood passion of cooking cakes and chocolates. In May she heads to Brazil as one of a handful of ambassadors for Callebaut – a luxury brand made by Barry Callebaut, the world’s largest chocolate manufacturer. Tibballs will tour cocoa plantations and discover the latest in chocolate trends.

Last year she attended the World Pastry Team championships in Phoenix, Arizona, and in 2004, Tibballs won a gold medal for her chocolates in Germany at the Pastry Olympics. There have been many awards since.

At her Savour Chocolate and Patisserie School in Brunswick, Tibballs teaches chefs how to create flawless confections. The high-tech kitchens house towering croquembouches, delicate petits fours, a la carte desserts and handmade chocolates with blackcurrant jelly, ganache, and flavours of the moment such as the vanilla-like tonka bean and yuzu, an exotically flavoured Asian citrus fruit.

Her classes for the public are booked out ahead of time as Melburnians develop a more refined taste for chocolate and sweet treats.

Tibballs was born in Leongatha but spent her childhood in Pearcedale, where she started cooking – always cakes, and then chocolate – at about the age of 7. By the time she was 12 Tibballs was taking part in the Dandenong Show, cleaning up awards for her scones, roulades and birthday cakes.

“I remember doing a two-tier wedding cake and entering all 20 of the cake-making categories one year. I went to cake decorating classes every Saturday at a shop in Frankston but I was shy so mum would come with me,” she says.

Her mother, Chris, a schoolteacher, was also a supporter when Tibballs developed anorexia at the end of year 7. It took her about three years to recover and she says, ironically, cooking was part of that recovery. “I don’t know why it happened,” she says, shrugging.

“Towards the end of year 7 I got glandular fever and couldn’t eat. I lost a lot of weight, and people commented on that. Then I felt I couldn’t eat, because what would people think if I started eating again? I survived on a milkshake a day.”

Eventually Tibballs was put in hospital. Months in a private clinic helped her recover, and throughout she kept baking and decorating cakes, often completing orders for wedding and birthday cakes from home.

“A lot of people who develop anorexia satisfy their

own appetite by cooking for others,” she says. “They also tend to be perfectionists, and I still have that tendency, but I think I have moved my obsessiveness to running the school now.”

The illness took its toll on Tibballs’ schooling, and after she left high school at the end of year 7 she studied by correspondence before getting her first job at 15 – a pastry apprenticeship at a Mornington patisserie.

Tibballs started work at 2am and sometimes slept in the office, happily working 18-hour days. She found herself making up to 40 large cakes at a time as well as dozens of éclairs, pastries, tarts and mille-feuilles for restaurants and hotels.

Five years later Tibballs joined the Sheraton Hotel in Melbourne, where, at 22, she won the National Australian Baking Scholarship Award and the chance to work with elite chocolate and patisserie chefs in Brussels and Paris. She spent a couple of years in Europe. “I was inspired by the passion of the people I worked

with there and by the quality of the ingredients,” she says.

“But Europe was a very sexist environment. I remember being told I

had to work with a certain chef one day because he liked to watch me bend over. I was often the only girl in the kitchen and the men would say, ‘But don’t guys try and touch and kiss you when you work in Australia?’ It was a different world.”

When she returned to Melbourne, Tibballs became a

Callebaut ambassador, travelling and demonstrating to chefs. By

then she had met the man who is now her husband, Michael Louros, who

owns an accounting practice.“We met at a bar at Southbank one night

during the time when I was mostly working in Europe. I saw him that one night and I didn’t see him again for about two years,” says Tibballs. “Then he suddenly made contact again in 2001 and told me he’d tried dating other women but none of them came close to me. He kept calling me and for a long time we just went out for coffee. But gradually our relationship changed.”

Their son Charlie, 5, was born in 2006 and they married the following year.

In 2002, Louros encouraged Tibballs to follow her dream of opening her own chocolate and patisserie school. She opened Savour in East Brunswick but moved to her current larger premises off Sydney Road in 2008.

“Some people come here wanting a sea change – they want to go from being a policeman to owning a patisserie or chocolate shop,” says Tibballs. “I also get chefs who can’t travel to Europe, so I bring international pastry chefs here to teach them and I also pass on what I learn on my trips abroad.”

Tibballs starts work about 5am but finishes early as often as she can to collect her son from kinder. Movie and dinner “dates” with her husband also help her maintain that elusive work-life balance.

“But when I am at work I click off from everything else,” she says.

It’s a voice alive with love, hope and yearning – for a wife le� behind, a three-year-old daughter and the excitement of a long life together back in Melbourne. But Kate Baillieu’s grandfather William “Bill” Knox never did come home to see

his little girl grow up. In his last letter from the front line in Belgium, Bill

wrote: “Very much love lassie to you and Bubbykins”. Two days later, dying from wounds from a shell blast near Ypres, in Belgium, he asked for these words on his tombstone: “� e luck of the game.” Bill died on August 20, 1917, aged 30.

Today on Kate Baillieu’s dining table is some extraordinary living history. She has spent � ve years collating, transcribing and digitising the many letters Bill sent to his beloved wife Mildred, or “Mim”, from Gallipoli and, later, France and Belgium.

For many years stored in shoeboxes, Kate has arranged them in chronological order into specially made boxes. � ere are also Bill’s personal e� ects, including his kit – razor, brush and comb, a campaign map with the trenches marked (and on it mud from the battle� elds) and the ribbons of the Military Cross he won by showing conspicuous bravery in what he called “a bit of a stunt”.

Bill Knox was the � rst head prefect at Scotch College, played in the cricket � rst XI, was captain of football, athletics champion and dux of the school. “He was a big, handsome man with masses of friends and people loved him,” Kate says.

A� er so many hundreds of hours reading through his letters, Kate feels she knows the grandfather she never met. “He would now be 124, but when I read his letters it’s as though he were alive today and a strapping 30-year-old. It’s as if he was writing to me, it’s extraordinary. You open another letter and he’s talking to you. He’s so compassionate and funny and wise. I’ve

fallen in love with him a bit.”Bill married Mim in Camperdown in 1914 and

enlisted to serve abroad the day his baby daughter Diana was born, on February 15, 1915. Diana, who was Bill and Mim’s only child, went on to have � ve sons and two daughters (one son is Ted Baillieu, the Victorian Premier and Kate’s younger brother).

Many of the letters were sent to Mim in England and in Cannes, France, where she had taken Diana to be closer to Bill so they could see him when he was on leave or visit him if he was wounded in hospital. Many were sent to the hotel in Cannes where Diana took her � rst steps.

“� ere’s this great yearning throughout all the letters that Bill might come on leave and see Mim,” Kate says. “Bill did manage to come on leave twice. � e second time, not long before he was killed, you can see the sadness in my grandmother’s face. She was so anxious. It was such a poignant time for them.”

Today it is desperately sad to look at the photos of Bill with Diana. He is so obviously besotted with his little girl. � ere are photos of Bill and Diana together – Diana on Bill’s shoulders at Bognor on England’s south coast, splashing in the shallows and riding on a donkey. “He’s just over the sea from where all this ghastliness is going on,” Kate says, “watching his little girl paddling.”

To know that Bill was killed just a couple of months a� er the photos were taken is to understand why Diana in later life for many years could not bring herself to look at the letters. It wasn’t until she was 90 that, with the encouragement of Kate, Diana felt able to read some of them.

“I’d helped mum because she found it so painful,” says Kate. “Poor mum. Like so many other little children who lost their fathers, she mourned for him all her life. She had a vague memory of being li� ed onto his shoulders … She knew a lot about him and felt very proud of him … She felt a tremendous a� nity with other people in her situation, people who’d lost their fathers in this terrible, futile war.

“She loved this man who she’d built up in her mind by knowing about him, but she mourned him so much

she couldn’t bear to read the letters. I helped initially, then said, ‘Mum, I‘d like to put them together properly’, and she got quite excited about that. Mum was quite excited about her father being revealed to her. A week before she died I went to see her and she said, ‘I think the letters should eventually go to Canberra, and I’m so, so glad you’re doing them’.”

Sometimes a letter would correct a family mythology. “I’d ring her and say, ‘You know how you thought this? Well that’s not how Bill says it happened’. She thought her mother was expecting another baby when he died. But in fact the letters revealed that a longed-for pregnancy a� er his last leave hadn’t eventuated, Bill saying, “Don’t worry old girl”. He did little drawings for Diana which she hadn’t seen. And photos sent when the Prince of Wales inspected them in Egypt.”

At times Kate has found the work overwhelming emotionally and logistically. “It can make me sad. I had to stop for a while and go and do some merry things. At the same time it’s such an honour to do it because I know mum wanted me to. It was the last thing she said to me, virtually.”

Bill served in Gallipoli, using the location “Anzac” in his letters. “In the beginning his letters from Gallipoli were almost as though it was a game they were playing,” Kate says. “� e full horror of it only eventually comes through.”

On September 22, 1915, he wrote from Gallipoli about his brother George (known as Jack) who survived the war and became a popular Victorian state politician and a� er whom the City of Knox is named: “Jack is holding a line of trenches known as Lone Pine – an important tactical point which we captured in our last big attack – it’s not a bad place, interesting, but more dangerous than most for the Turks trenches are so close (� ve yards in places) that they lob high-explosive bombs over and we retaliate – this goes on constantly and you dare not show the top of your � nger above the trench or you get a bullet in it.”

On October 13, 1915, he wrote excitedly about his daughter: “Our wee ‘mighty atom’ – she seems all that – from your last letters – all my other letters say

what a lovely kiddie she is and her daddy is just so anxious to see her – notice the date the 13th – she’s eight months old today and I’ll bet there’s not a � ner kiddy in the land.”

Bill’s letters from Gallipoli refer to the respect the Australian soldiers held for the Turks. “� ey are good sports, though, the Turks,” he writes. “Any amount of tricks and ruses but all here are agreed that they play the game very well. For instance I have it from the general that they wrote in apologising for shelling some mules which were carrying Red Cross supplies.” In 1916 he writes about the � rst Anzac Day celebrations.

A� er the evacuation of Gallipoli they went to Egypt to await deployment to France. Bill writes of riding three miles to see the Australian P&O boat come up the Suez Canal and galloping along beside the ship. “I yelled out, ‘I am Bill Knox from Melbourne. Are there any pals of mine on board?’. Some nice-looking lass got pretty excited and called out a lot of things but I couldn’t make them out as all the passengers were singing out to the boys on the bank.”

T he letters from France spoke of the atrocious conditions the soldiers so o� en faced. “When I tell you � ve of our horses got into a shell hole yesterday and absolutely disappeared in the slime

you’ll get some idea of the size and danger of them when trying to move guns at night.” And: “I started before daylight so as to catch the � rst streak of dawn down there and I got home in the dark about 4 o’clock covered in mud and indescribable � lth – one place I had to crawl on all fours over dead huns and bits of them. I am really physically and mentally sick tonight.”

Curating the letters has unearthed some amazing connections with some of the men Bill wrote home about. “It hit me emotionally when I read the last letter from two days before he died,” Kate Baillieu says. “And they stopped. And it was so real to me. And I thought, ‘I wonder what happened to the other men?’ So I went to the Australian War Memorial and followed up Lieutenant Wal McMullin, MC, a soldier Bill had huge admiration for, and saw, to my great sorrow, that he’d

died two weeks later. (Wal was awarded the MC when he and Bill were involved in “that little stunt”.)

“From his embarkation records I found out he came from a property in the Hunter Valley,” Kate says. “I got onto the Scone Historical Society, which led me to this man’s niece, of similar age to me, who said very little stu� of his came back. She said, ‘You might be able to solve a real family mystery for us. We’ve got a photograph of him with a little girl, a pretty little girl, in a white dress with a ribbon in her hair’. And I said, ‘I know who that’ll be. � at’ll be my mum.’ She said it had been a family mystery for 90 years.”

Another connection was closer to home. “A couple of years ago I received a letter from a friend, an eminent Melbourne cardiac physician, Peter Habersberger, who wrote to say he’d inherited his mother’s papers and among them was his grandfather’s letters from the Western Front. His grandfather, Jack Webbe, had written about Bill, and Bill had been talking a� ectionately about Jack in his letters. � ey were killed in the same shell blast and they’re buried side by side.”

Kate has not been able to locate the relatives of one young man about whom Bill Knox spoke highly. “Bill had chosen this boy to go out with him on this terrible, perilous expedition, and he’d done it because he was con� dent in his ability to keep going,” she says. “Bill said John Robinson’s courage was extraordinary and his humour kept them going. He said to Mim, ‘Could you send him a bottle of whisky? Just put your card in with it; you don’t need to say anything’.

“A few letters later the bottle of whisky has arrived but young Robinson’s been killed. Bill had to conduct his burial service. He was really grief-stricken. Bill said he

gave the whisky to a couple of John’s close mates. At the service there were shells landing around them as he was doing it. � is boy was a jockey who went to Burwood Primary. I’d love to � nd the descendants of this boy in Melbourne. It would be fantastic to be able to share the letters about him and his courage and � ne qualities.”

In the early 1980s Diana and, months later, Kate travelled to Belgium to visit Bill’s grave in a tiny cemetery near Ypres, in Belgium. “You walk up the side of the farmer’s house, past his onion patch and potatoes and cabbages, and there’s this beautifully manicured tiny cemetery with cows and sheep on the other side of the fence. And that’s where Bill is, along with Peter Habersberger’s grandfather and young John Robinson and Wal McMullin from the Hunter Valley.

“Mum made it a mission to go and see where her dad was,” Kate says. Diana wrote in the visitors’ book, “Daddy, at long last I’ve found you.” Diana Baillieu died in 2008, aged 93.

Kate plans to make the letters into a book for her family. “Bill’s just one of countless thousands,” Kate says. “It’s a very poignant story for us and for me he’s very real, but all those men in his brigade and countless thousands all have stories. It’s a universal story. It’s repeated over and over and over. � e futility of it. And it’s so sad. I can hardly bear Anzac Day because I think of them all and I know mum used to. All those people. Mad.”

� e Baillieu family is watching Kate’s progress with interest. “Ted, who I think looks quite a lot like Bill, was very moved when he did an interview (for the ABC) looking at some of the letters with mum. I think it will be a lasting treasure for all of us. It’s history you can touch. It’s hard to believe it’s so long ago because it feels so close. It is one man’s story from a worldwide tragedy. It’s a love story and a tragedy and it’s one of the countless love stories and tragedies from all that ghastliness.” \

i t’s unusual to find a new house in this part of Ivanhoe, where bungalows or inter-war single-storey villas seem to be the

main architectural fare.This double-storey Metricon house

certainly stands out, but if you look at what it replaced – a very plain timber house – that was a good move. The new one is real eye candy.

Many of today’s latest lifestyle elements are behind its muted façade and stacked-stone pillars.

For starters, there is the zoned living aspect. It is very much a part of the house and shows why it can work for every stage of a family’s life.

The living room at the front can be a hideaway for mum and dad or, alternatively, a study. Their bedroom is next door – a large room with midnight-blue feature wall and rosewood-coloured timber plantation shutters. A sliding door, that great space saver, opens to the walk-in wardrobe, which is neatly divided into his and hers sections. Both have timber drawers and hanging space for everything from trousers to skirts, suits and designated shoe storage. The wardrobe leads to a sophisticated en suite. The beige tiled walls, square basins set in a chocolate-coloured stone bench, timber panels and an oversized shower are elegant and simple.

Then there is the open-plan kitchen/living/dining room at the end of the hall.

This area is designed to take the family from the early years, when the children are small, through to the teenage years and beyond. It is big enough to host a large party, but not so big that a few people will feel lost.

If a space says something about the modern Australian lifestyle – or the lifestyle we crave – it is the indoor-outdoor room. And this one is a ripper. You can tell Metricon has done this many times before because it works.

Bi-fold doors open the living room to the timber deck, with its timber-lined ceiling, lighting and view over the swimming pool. But you won’t get wet, as toughened-glass panels provide a barrier between the pool and deck. The deck is robust enough to use as a play area or dining space when the weather turns cool.

The kitchen features beige stone benches, fitted with a large stainless steel oven, cream cabinets and charcoal glass splashback. The cooking zone is separated from the rest of the room by a large stone bench and, along with the living and meals areas, looks out to the deck and swimming pool. This is great for families with young children as the kids can be in view while meals are being prepared.

On the first floor, a retreat or rumpus room is what many teenagers dream off – if only to be away from the adults in their lives. With a bit of luck the older generation will be doing their own thing downstairs, and this room works well for the younger age group and also for the older students in the family.

Ivanhoe, a leafy suburb of the north-east, is known for its tree-lined streets, Yarra River parklands and solid, tightly held family homes. The suburb gets its name from a farm established in the 1840s and called Ivanhoe after the novel by Sir Walter Scott. Ivanhoe was farming land supplying the growing market for food during the gold rushes.

Nothing much happened in Ivanhoe until the boom of the 1880s, when large houses were built and the suburb was called the “Toorak of the north”.

Building began in 1891 on Ravenswood, a two-storey mansion in Beauview Parade, but the main problem holding the suburb back was the poor connection with the centre of Melbourne. Things changed when a better railway service between Ivanhoe and Melbourne began in 1901, leading to a growth in comfortable Edwardian houses.

Building boomed in the 1920s and ’30s. A. V. Jennings, who is regarded as the father of suburban development, began building housing estates in Ivanhoe and Ivanhoe East in the 1930s. Some of his houses are still highly sought-after. In the post-war era architects such as Peter McIntyre, one of the greats of Melbourne architecture, designed houses in Ivanhoe and Ivanhoe East.

The old Sisters of Mercy Convent on Rosanna Road, now the Assisi Centre, is not the only building with architectural merit in this neck of the woods.

On nearby Maleela Grove, the property at No. 7 is a � ne example of what was cutting edge back in the early 1960s.

This house was built as a prototype for a new form of “open-plan living”, marking a breakaway from the discrete, singular rooms that dominated residential design in the decades before.

Even though the kitchen has been updated over the years, there are still many funky retro quirks on show here, including the � at roof with extended eaves and the timber wall cladding in the lounge.
