Did you know Thomas Edison endured over 10,000 failed attempts before his light bulb
came to fruition? Lucky for us all, he perservered and changed the world as we know it!
Surprisingly, electric light was fi rst invented in 1802 by inventor Humphry Davy, but it was not
until 1880 that Edison produced that fi rst commercial lightbulb. That’s 78 years that passed
before Edison came along and took Davy’s ideas to the next level! In the maple industry too,
there are technologies/ideas which have not been improved upon for a long period of time. It
takes someone like Edison to say “Why not improve this?”. In this way, Edison is our role model.
There are many ways in which Thomas Edison and Smoky Lake embody the same spirit.
We both respect those who have come before us, but we have an insatiable appetite
to continue making things better. Like Edison, we do not adhere to stagnant status quos.
WHY NOT AIM HIGHER? Where would we be if we had let tradition/
competitors tell us “Sky is not the limit.”? We would not be Smoky Lake. That is for sure.

Big Leaf Maple? What’s that?
A lthough the Big Leaf Maple Tree is prevalent
on the West coast, there are very few
producers taking advantage of their sweet sap each
spring. Why? It certainly doesn’t have anything to do
with the taste! In fact, many people seem to put Big
Leaf Maple Syrup in a league of its own; both because
it tastes so great and because it is so diffi cult to fi nd
for sale. We will share more about this sleeping giant
— Big Leaf Maple — and the Bergs on our Facebook
page and blog in the upcoming months. Stay tuned!

Comparison of Pan Styles All pan styles compared below are 2' wide x 6' long and are Smoky Lake brand pans.
Determining Evaporator Pan Size & Style There are four main factors to consider when selecting a new evaporator pan:
1) Sap Volume 2) Time 3) Features 4) Budget
On these pages, we compare all the various Smoky Lake pan styles so that you can better understand the features and benefi ts of each.
All comparison data was taken from 2' x 6' Smoky Lake pans.
> How many taps will you have this year?
> Will you add taps in upcoming years?
> Do you use a reverse osmosis system?
These questions help us estimate how much sap you will have to process. Folks with low sap volumes will typically choose Flat/Divided Pans or a small Hybrid Pan. Larger sap volumes require a larger size pan and/or a more effi cient pan style.
We all know there are only so many hours in a day, so we want to make sure your evaporator can process your sap within the time you have available. To increase effi ciency, you could use a larger pan size, upgrade your pan style (add fl ues), OR use a reverse osmosis system.

HOW MUCH SAP IS NEEDED TO MAKE 1 GALLON OF MAPLE SYRUP?
The answer depends on the amount of sugar in your starting sap. Sugar content of raw sap will vary from tree to tree. Also, each tree’s sugar may also vary throughout the maple season.
Sugar density can be measured using a refractometer or sap hydrometer. (See p 21, 22)
