Happy December and Merry Christmas!

As a child, reaching the month of December was very exciting, it was the end of another year and the best holiday of all: Christmas. It was a month filled with anticipation and expectations.

Hoping the items I put on my Christmas wish list would come true. It was so much fun to shop for gifts and clothing. It meant a new holiday outfit and new winter wear. When we lived in Germany, we celebrated two holidays, Saint Nicholas Day and Christmas. That was so cool because we doubled up on goodies.

There were plenty of activities, school plays, church and lots of outdoor fun--depending upon where we lived (and most of the time it was in cold country). Even though it was cold outside, we would go sledding and build sledding ramps, snow forts, and snowmen and snow angels in the snow. This was a big deal and generally involved the whole neighborhood. After an hour or so of outdoor fun, we would warm up with a cup of hot cocoa.

Mom was an excellent chef. We would traditionally have turkey, and or beef wellington, as our main protein and many vegetable dishes, sage stuffing and her famous apricot cream cheese salad. I loved the smell of Mom’s kitchen; especially when she baked homemade bread, rolls and several kind of pies. She also made Mexican wedding cookies, Spritz butter cookies, tunnel of fudge cake and poppy seed pound cake, to name a few. She loved making chocolate fudge and penuche, peanut brittle and sometimes popcorn balls. We always had plenty to eat and plenty of leftovers.

On Christmas Eve we had a smaller meal of sloppy Joes and homemade clam chowder. After dinner, and before we passed out the gifts, we would put on a skit and read the Christmas story of how baby Jesus came to be. Then, we tried to sit still as someone passed out the gifts. We opened family gifts on Christmas Eve, and on Christmas day each one of us had a special gift from Santa. I loved to lay on the floor and look up at the Christmas tree lights; it was so magical.

These are just a few of my childhood memories of Christmas. To this day, Christmas is still my favorite holiday for many reasons. These small bites pack a big punch, without gluten, grains or dairy. They are a great snack or sweet treat. Enjoy, in moderation of course :)

Prep Time: 10 minutes

Total Time: 60 minutes

Makes 12-14 cookies

INGREDIENTS: Use organic whenever possible.

• 1 ¼ cups almond meal (also called almond flour)

• ½ cup shredded unsweetened coconut

• ¼ cup dried cranberries, chopped into small bits

• ¼ cup grade B maple syrup

• ½ teaspoon almond extract

• ¼ teaspoon sea salt

DIRECTIONS:

In a large mixing bowl, stir together all ingredients until they create a sticky dough. Scoop a ping pong ball sized amount of the dough and roll into a ball with your hands. Chill the bites in the fridge for at least 30 minutes.

Preheat oven to 375 degrees F. After the bites are chilled, place them on a baking sheet and bake for 12 minutes, or until the bottoms begin to brown. Remove from oven and let cool before serving.

GettinG to the heartof Heart Disease

There is a big secret in medicine today regarding heart disease. The secret is that actively and mechanically intervening to open arteries with balloons, stents and bypasses may be useful in the short term to save a severely threatened heart. However, in the long run, the blockages will recur if the true cause of them is not addressed.

So what are we to do? The best way to treat cardiovascular disease is prevention! New research is starting to show that it has very little to do with cholesterol levels, or long term use of medications.

This is accomplished by the use of “phytonutrients” (plant and animal extracts and concentrates), by applying principles of clinical biochemistry. This is the long term solution. It involves far more than just taking synthetic or fractionated portions of whole vitamins (standard vitamins). It is the clinical application of therapeutic foods, extracts, concentrates and phytonutrients. These principles have helped thousands of patients reverse heart disease, and restore normal function to the heart muscle, without any toxic effects.

Of course diet and exercise play a big part in all this, but we have been misled as to the nature of the best diet. A low-fat diet has been proven (time and again) to not prevent heart disease, but rather contribute to its development!

Research shows the best diet consists of a higher protein, higher healthy fat and a lower carbohydrate protocol. This diet helps prevent “metabolic syndrome,” which causes obesity, high blood pressure, diabetes and heart disease.

Most heart disease is preventable because it is caused by nutritional deficiencies and imbalances. Much of today’s heart disease and valve problems are a modern form of the B-vitamin deficiency disease called “beriberi” of the heart.

Without adequate B vitamins in the diet, the heart muscle will weaken and lose tone. Much of angina is nothing more than a “charley horse” of the heart muscle. This is caused by insufficient blood flow, oxygenation and flow of nutrients to the heart.

Research shows that by applying these principles, you may be able to really get at the cause, reverse blockages and actually turn lifelong medical treatment into temporary therapy. After three to six months on proper nutritional therapy, most patients are able to start weaning toward eventual elimination of heart medications with their doctor’s help. Even if you only do the basics, you can usually look forward to this “medical phenomenon.”

Did you know that the pig heart is very much like the human heart? In fact, pig heart valves are implanted into humans every day by modern medicine. I bet you didn’t know it has been proven that pigs with damaged coronary vessels, when fed proper nutrition, grow new coronary vessels in six to eight weeks!

You deserve to feel good in your environment, both at home and at work. But if you have cluttered surroundings, you have a chaotic point of attraction. Like attracts like. If you’re surrounded by unfinished work, incomplete projects, unattended-to tasks, unsorted piles of paperwork, stray magazines and catalogs, this can negatively affect your experience every day.

We live in a vibrational universe. Everything carries its own vibration and because you are a vibrational being, and therefore develop a vibrational relationship with everything in your life, your personal belongings do have an impact on the way you feel and on your point of attraction.

We humans have a habit of gathering stuff. It’s the way some of us keep score. We live in a physical world, so physical manifestation is important to us, but then we get buried in the accumulation and end up spending too much time looking for things. Many of us have a vague feeling of being unfulfilled, of emptiness, and we try to fill it up with stuff. We buy one more thing and bring it home. But, this gathering of stuff is contrary to the need for freedom that is inherent in all of us.

Why don’t we clean it out? Well, we may have thrown something away once and found out later that we needed it. And then there’s the problem of time. We don’t feel that we have the time to do this clutter clearing job. But it doesn’t have to be done all at once. If we can go through and just release those things we’re not wearing now or using now (or haven’t used for two years), it leaves our environment a clearer place and makes it possible for the things that are more in harmony with who we are now to more easily flow into our experience. We are all attracting constantly, and when that process is clogged with stuff that we no longer need, the new attraction is slower--and we end up with a feeling of frustration or of being overwhelmed.

because you knew where everything was and you had everything you needed to finish a project? Being able to find the “feeling place” of order and clarity and peace is important to actually achieving it. Desire for something is the engine, but emotion is the fuel. So, if you can FEEL what it would be like to achieve something (what the end product would look and feel like) it’s much easier to actually achieve it.

So start in one room--the room that gives you the most frustration. Get some boxes and label them: clothes, shoes, etc. Take one item at a time and if you haven’t used it for two years, put it in the labeled box. Do as much as you can, maybe 20 to 60 minutes of this activity today. Then take it up tomorrow and continue until you have cleared that room of everything you think needs to go in a box. Don’t even think about throwing those things away or who you might give them to. That will clutter up your mind and cause you to become instantly fatigued and overwhelmed trying to make those decisions. That will cause you to quit, once again. Just know that you’re putting the boxes in an area where you can get to them easily, and of course they’ll be labeled. That will put your mind at ease about being able to find the item later if you need it.

Do the same thing with your office stuff. Box up old files and label the boxes. Now you don’t have to look at the piles and worry about whether there’s something important there. Each one of those pieces of paper has its own vibration and is beaming it out to you. No wonder you feel overwhelmed every time you walk into that room! You’re getting bombarded with the

Hysterectomy, or surgical removal of the uterus, is indicated for many conditions including abnormal bleeding, fibroids, prolapse (dropping of uterus), endometriosis, chronic pelvic pain, and cancer or pre-cancer. Less invasive treatment options are available and include hormonal therapy, a progestin-releasing intrauterine device, surgical destruction (or “ablation”) of the uterine lining, surgical removal of fibroids (myomectomy), blockage ( “embolization”) of the uterine arteries, suspension devices ( pessaries) or pelvic reconstructive procedures, which spares the uterus. If conservative options have failed, or are not appropriate, hysterectomy is considered the definitive treatment. There are a lot of “horror stories” out there, scaring women out of the relief they need, and many are surprised to learn about the minimally invasive options for hysterectomy.

Hysterectomy is a very safe procedure, and most studies show significantly improved quality of life, including sexual function, for women after hysterectomy, however all surgery carries risk. The most common risks are infection and bleeding. Less frequent

complications include injury to urinary and gastrointestinal structures, nerves or blood vessels, reactions to anesthesia, and deep vein thrombosis (blood clots in the legs or lungs), or rarely more serious events. Measures are routinely taken to avoid these risks including appropriate surgical planning, routine antibiotics, careful surgical technique to minimize blood loss and avoid injury to adjacent pelvic organs, routine use of leg compression devices, and additional measures as needed depending on each individual patient’s medical and surgical history. When they occur, most complications are recognized and fixed immediately to avoid long-term effects.

Total Hysterectomy is removal of the entire uterus including the cervix. Supracervical Hysterectomy is removal of the superior portion of the uterus, leaving the cervix in place. Sometimes this is performed due to severe adhesions (scar tissue) around the cervix. Except for a slightly earlier return to sexual activity, most studies do not show any benefit of keeping the cervix. If the cervix is retained, the risk of developing cervical cancer

will remain and regular pap smears will need to be continued. Painful sex or cyclic spotting can develop, requiring future surgical removal. If a woman feels strongly about retaining her cervix, she should discuss the issue with her doctor.

Many women are surprised to learn that a hysterectomy does not automatically include removal of the tubes (salpingectomy) or ovaries (oophorectomy). Removal of fallopian tubes is becoming more common as recent studies have shown that some forms of ovarian type cancer actually originate from the tubes. Healthy ovaries serve to provide a woman with her own natural hormones. In an average premenopausal woman, the benefit of retaining ovaries outweighs the risk of developing ovarian cancer. However, each patient should discuss with her doctor whether her age or any personal or family history puts her at elevated risk for ovarian cancer, in which case removal of tubes and ovaries would be recommended at the time of hysterectomy.

In a Vaginal (Incision-less) hysterectomy, the uterus is detached and removed through the vagina, there are no abdominal incisions at all, and patients are discharged the same day. This approach carries the least risk for urinary tract injury. Most patients are excellent candidates for this approach. Most of the published literature and professional opinion supports that, when feasible, vaginal hysterectomy is the safest and most

cost effective approach. Most patients feel better in about two weeks, however pelvic rest is required for six weeks to allow the upper vagina to fully heal.

In Laparoscopic Assisted Vaginal Hysterectomy a small incision is made near the navel, the abdomen is distended with gas, and a long lighted camera is placed through it so the surgical team can see the organs on monitors. Two to three other small incisions are made in the lower abdomen for instruments. The upper attachments of the uterus are divided laparoscopically, however the remainder of the detachments are done vaginally and the uterus is removed through the vagina. Hospital stay is similar to vaginal hysterectomy. Recovery is also similar, however with the addition of very small abdominal incisions.

In Total Laparoscopic Hysterectomy, all of the attachments of the uterus are divided using the laparoscopic tools through the ports, the uterus is either pushed out through the vagina or removed in small pieces through the incisions (morcellation) and the vaginal incision is stitched laparoscopically. Morcellation carries a very small risk of spreading cancer cells, so modifications are often made to contain the pieces within a bag.

while seated at a console. The laparoscopic incisions may be placed higher on the abdomen to accommodate the robotic arms. Some patients may not tolerate the steeper positioning and often longer operating times required. There is a higher cost for robotic surgery. Most patients do not need the robot. However, in certain very complex or difficult cases, especially cancer, the robotic approach will prevent the need for a more invasive abdominal approach and is ultimately safer and more efficient with less pain and a shorter recovery time.

Abdominal Hysterectomy is a more traditional approach best for cases of unusually large uteri or when the vaginal or laparoscopic approach is not feasible for a patient’s situation. A horizontal (bikini line) or vertical incision approximately six inches long is made in the lower abdomen. It is associated with greater risk of complications, more pain, two to three days hospitalization, and longer healing and recovery times of six to eight weeks. However, this approach allows the surgeon excellent access to all the abdominal and pelvic organs and may be necessary for certain conditions.

Vaginal hysterectomy is overall the safest, most cosmetic and least invasive approach and is the preferred approach, if possible. No matter which approach is used, early walking, proper nutrition and hydration, anti-inflammatory and prescription pain medications, stool softeners, and close follow up with her surgeon will help to assure a woman’s swift return to normal activities and an improved quality of life!

A few weeks ago, the government announced the brain initiative at a cost of 4.5 Billion of taxpayer dollars over the next 10 years. The initiative’s stated goal is “to develop neuro science approaches over the next decade that will allow for deeper and more expansive interrogation of the brains neuro circuitry and how it functions in health and disease, create a consensus of brain cells and a road map of their circuitry and advancing tools for neural monitoring and manipulating brain circuits.” Translation: we are going to create tools to produce newer and more specific drugs.

How about putting money into further researching what we already know about the real drivers of brain dysfunction (i.e. autism spectrum disease, mental and emotional disorders, depression, anxiety, P.T.S.D., brain fog, short term memory loss, Alzheimer’s) and getting the insurance industry to cover non-drug known solutions for these?

They are the goals and intended destinations God has for you, but of which, you are often unconscious. They are the yearnings of your deeper self, the destiny that beckons you, the spontaneous unfolding of your psyche. They lie within you and also without you. They are something you discover, something you decipher from the clues held in your dreams and relationships, your symptoms, synchronicities and other signs. God’s secret intentions are the wisdom of your deepest self, guiding you to the fullest development of your individuality.

But this part of you suffers, imprisoned by the cage of your own reason. This cage is the ego, your conscious mind. Your ego is the part of you that thinks it is all of you; the part of you that thinks it knows best. It sets itself up as the leader of the personality, lives by its own logic and desires, and expects your soul to follow suit. It pursues one path, while God’s secret intentions point towards another. It tries to drag the rest of the personality with it, ignoring the troubling dreams, conflicts, and outer life frustrations that would redirect it. And so God suffers, your soul suffers, imprisoned by your private logic. This is the egocentricity that afflicts us all.

But Carl Jung wanted God to be alive and free from that suffering. In other words, he wanted God to be alive in him, to be unburdened and unfettered by the cage of the egocentric ego. He wanted to serve God rather than imprison him. He wanted to hear that small voice within rather than drown it out. He wanted creative and healing energies to be expressed, not shackled. And he sought to understand the language of God as it is expressed through the psyche. He wanted to learn from the unconscious and know the truth about himself. Simply put, Jung felt compelled to know the good, the bad, and the ugly in himself.

Carl Jung’s life was not miserable. In reading his autobiography, Memories, Dreams, Reflections, it is clear that Jung’s life had its share of joy, wonder and, above all, a profound sense of purpose, meaning and accomplishment. In saying that he made his life miserable, Jung is saying that he openly received and even sought out the puzzles and problems, wonders, contradictions and painful truths that reside in the unconscious. Rather than ignore or avoid the contents of his unconscious, he took active responsibility for them.

Jung felt a responsibility not just to the seen, but to the unseen in himself. Whereas most of us make little effort to know and understand the hidden factors that underlie our behaviors and decisions, Jung experienced a moral obligation to know and address them. His whole life was, in a way, an effort to be aware of his larger being, the conscious and the unconscious, so that he could help himself and help others make more responsible and conscious life decisions.

It is important to realize what an important moral step and commitment Jung was making by seeking to know what lay within his own unconscious, for the same invitation is daily offered to you. You know how easy it is to ignore the unconscious or deny its existence. Then you need not look within. When you do something you didn’t consciously intend to do you say it was just a “mistake,” an “accident,” or fate. If all that you are is your ego, then you hold no hidden, unconscious goals, feelings or intentions. But if you recognize the reality of the unconscious then you open yourself up to new levels of responsibility. Once you are aware of something you can’t become unaware of it (although many people try to do just this). And once you know about something you cannot but take some stance towards it, for “even if you choose not to decide” as the rock band Rush sings, “you still have made a choice.”

Just as it did for Adam and Eve in the Garden of Eden, consciousness saddles you with moral responsibility, whether you sought it or not. You must choose, and the choice you make may work towards good or it may work towards evil. But being fully human, and being a servant of both humanity and your soul, involves taking on the gift and burden of consciousness. Only then does God live through you and his secret intentions find life.

BioMeridian Computerized EAV

In the 1990s, I was introduced to the BioMeridian MSAS (meridian stress assessment system) by Duane Davis. At first, I just used it for remedy compatibility testing. It has taken me all these years to become comfortable with the vast array of testing topics available on the computer. Not to denigrate remedy compatibility testing--because those of us who treat the very sensitive, highly allergic, multiple chemical sensitivity,

paradoxical reactors need some kind of testing (be it EAV or muscle testing) to determine what these patients can tolerate without severe reactions. Some of my doctor friends say “I don’t need to do any of that kind of testing; my clinical judgment is good enough.” I can tell you it is not good enough. Blowing up a sensitive, or any patient, is poor medicine. Even great therapies such as chelation, IV vitamin C or ozone therapy are not at all tolerated by some patients. If you don’t test, you don’t know. I test every patient on every new treatment during every visit, and I am often surprised. Even with good compatibility testing, a patient’s body can decide it doesn’t like something four or five days into therapy. It pays to be extremely flexible.

Lyme, Viruses, Bacteria

Many think that Lyme, Borellia Bergdorferi, is much more common than usually thought, and I agree. When patients come in with a plethora of symptoms and negative lab values and radiology, I frequently find Borellia on my BioMeridian. After many years of testing, I have great trust in it. Lyme is notorious for giving false negatives in lab testing. I treat it with antibiotics and herbs (after Lee Cowden, MD). We clear Lyme in about one month if it is not too deeply entrenched. Viruses turn up frequently, as do bacteria. I can ask whether it is Staph or strep and treat accordingly with drugs or Sanum isopathic remedies and IV’s of C or ozone.

Parasites

It seems that lab evaluation of parasites has also deteriorated. We send stool samples to reputable labs and the results come back unclear: parasites found taxonomy (name) unknown. Don’t you love it? NURTURE

There are a lot of really fun activities and traditions to share with one’s family around the holidays. My family isn’t particularly religious, but both my husband and I grew up celebrating Christmas, and our extended families still do. For us, it is a time to enjoy being together, to share good food, and to reflect the gratitude we feel for one another and the abundance we are blessed to experience. We express this gratitude, in part, by gift giving. We enjoy making as many gifts as we’re able, and trying to find gifts the receiver will truly enjoy. I remember as a kid my parents would tell me that for them, it was most fun to give gifts at Christmas, and as I have grown up, I have found this to be true as well.

There are lots of holiday traditions and activities I look forward to sharing with our son. At our house, we decorate a tumbleweed. We feel it is more sustainable than cutting a tree, or buying a plastic one, plus it gives homage to our Nevada heritage. I look forward to baking with my son, teaching him

different crafts, decorating our house, and hopefully enjoying some snow this year. There is one tradition I will not be carrying on however, and that is perpetuating the story that Santa Clause is an actual, real person.

I intend to tell my son the story of Santa Clause is intended to remind us of the joy of giving, especially to those in need. I want to instill in him that gift giving should be done for its own sake, without expectation of recognition for doing so. I want him to experience happiness by giving gifts, not just in receiving them.

I have several reasons for not wanting to perpetuate the idea of Santa Clause as a real, live person. For one thing, I feel like it exploits my child’s sense of trust in me. I have always been a bit of a romantic by nature, and I was completely taken in by the idea of Santa Clause as a child. When I discovered this was just a story, I was heartbroken. I have several adult friends who can recount similar experiences, of feeling somewhat betray

Anyone can celebrate Christmas, but some don’t. My family and I celebrate Christmas! On Christmas Eve, we open our presents from Santa clause!

Sometimes you don’t get what you want from your Christmas list. I got a scooter from Santa Clause last year and that was pretty nice of him.

WHO IS SANTA CLAUSE?

Santa is a man who gives out presents to those who were good. His ELVES make over a thousand presents!

Christmas is wonderful…and sometimes, depending on where you live, it might snow!

It is also pretty fun because you have time with your family, presents from your mom and dad, and maybe your whole family can spend time with you too.

even. I don’t share this to shame any parents who choose to let their kids believe in Santa Clause, the person, but I can honestly say that the experience deeply affected me. In a small way, it affected my ability to trust in the word of adults. It is very important to me that my son trust me, and so I feel I must be honest with him.

If I were to construct an elaborate staging, to make my son think a strange man is coming into his home to leave him gifts, I feel I would be manipulating his imagination and sense of wonder in ways that are unnecessary. There is so much magic inherent in life, but it is often subtle. Falling stars, rainbows, icicles, discovering animals in the wild...by letting the Santa Clause story remain a story, I feel I am preserving my son’s ability to experience the magic of this world authentically.

My biggest issue with the whole Santa Clause story is the notion that “good” children get toys, while “bad” children get coal, or nothing at all. For one thing, I take issue with labeling children “good” or “bad” because it is conditional. This idea of only the good children getting toys does not account for the reality of wealth inequity that exists in these times. It not-so-subtly implies that children whose families have less are bad, while children who receive plenty are good. I find this implication to be deeply troubling, and it is my hope that as a culture we can find a way to reframe this part of the story if we must perpetuate the Santa Clause myth.

I have a feeling my opinion will not be popular with some, and I apologize if I’ve hurt anyone’s feelings by expressing my distaste for the way we approach Santa Clause as a culture. Anyone who knows me knows I’m a strongly opinionated person, so please take my words with a grain of salt.

However you choose to celebrate this holiday season, from the bottom of my heart, I wish you and yours a happy one!

The sapphire has been associated with royalty, prophecy and divinity since ancient times. It can be found in the legends and stories of many religions. In Hebrew lore, both King Solomon and Abraham wore talismans of Sapphire, and the commandments given to Moses were said to be engraved on tablets of Sapphire. Sapphire is considered to be one of the “great gems” in the Hindu tradition. The ancient Greeks wore the stone for wisdom at Delphi when consulting with the Oracle at the shrine of Apollo, a Deity with whom the Sapphire is associated.

Sapphire is a variety of Corundum, an aluminum oxide mineral that forms in prismatic tabular, bipyramidal or rhombohedral crystals, as well as granular or massive habits, and may be transparent to opaque. While most of us associate Sapphire with the color blue, the crystal forms in a variety of colors including green, yellow, pink, violet, white, black and orange (also known as Padparadsha Sapphire).

Star Sapphires form when Corundum is inter-grown with fibrous inclusions of Rutile “silk.” The effect: the light reflects in stones cut as a cabochon, appearing as a six-rayed, or sometimes even a twelve-rayed, star that appears across the surface as it is moved in the light. This effect, also known as asterism, is rare and significantly increases the value of the stone. Each color has slightly different energy associations, so for the intents and purposes of this article, we will focus primarily on blue Sapphire.

Sapphire is a receptive stone, associated with the moon and the water element. Its powers are said to include the enhancement of psychic ability, love, meditation, defensive magic, healing, peace, power and wealth. Sapphire is considered a guardian of love. It promotes fidelity and attunes the energy between lovers. This could explain its popularity, and inclusion in engagement rings. Sapphire is helpful in non-romantic relationships too,

as it banishes feelings of envy, promotes reconciliation and supports clear communication.

Sapphire is an ideal gemstone for awakening the Throat and Third Eye Chakras. Working in unison, these chakras not only have the capacity of inner vision, but also the focus and ability to communicate one’s vision to others in an effective way. Diet (usually anti-inflammatory/anti allergenic); going gluten and or grain free; fixing your leaky gut; finding food allergies; using specific nutrients and herbs; using probiotic; detoxing yourself of yeast, bacteria, and parasites; stimulating your vagus nerve with brain exercises; dampening chronic stress mechanisms with brain exercise strategies and specific herbs and neurotransmitters, naturally decreasing high blood pressure, stabilizing blood sugar, stabilizing hormones (without drugs) managing adrenal gland stress, supporting EFAs, correction of chemical intolerances and more. And much, much more.

Don’t get me wrong, I like brain studies, and there are probably upsides and serious downsides to this project. But based on the stated purpose of the BRAIN initiative (and whose unstated purpose is to produce more drugs to manipulate brain chemistry) the current research that points to all of the above causes (as well as drugs, vaccines, chemicals, pesticides, environmental toxins), and the dramatic deficiencies and alterations brought on by the dismal American diet of fast and processed foods, sodas, trans fats, sugars, and grains of our kids and in fact much of our adult population, will be ignored.

I must admit, when it comes to the altered brain physiology causing most brain-related symptoms and dysfunctions and diseases that are becoming epidemics in America right now, we hold little hope for real answers from the BRAIN initiative.

Dog owners spend about $20 billion dollars annually on chow for their canine companions. A significant part of the national pet-food bill these days goes for so-called premium and super-premium varieties. But “premium” has no legal definition in terms of nutritional quality, in fact it is about as meaningless as the term, “natural.”

When we read words like “gourmet” or “premium” on a package of dog food, it is easy to assume that the ingredients are of a higher quality. Unfortunately, this is not the case. According to the FDA labeling guidelines, “Products labeled as premium or gourmet are not required to contain any different or higher quality ingredients, nor are they held up to any higher nutritional standards than are any other complete and balanced products.”

Many dog lovers may not realize the commercial dog food industry exists in part to find uses for agricultural waste that is declared unfit for human consumption. Some of the ingredients that are perfectly legal to add to dog food products include, spoiled supermarket meat, meat from diseased or disabled farm animals, contaminated grain middlings, slaughter house waste (such as hooves, beaks, and feet), bread and cereal rejects, road

kill, distiller fermentation waste, restaurant grease, dead zoo animals, and even euthanized cats and dogs! Currently there are no laws prohibiting the use of these ingredients in dog food.

The best way to avoid purchasing products that contain such horrible ingredients is to read the ingredient label carefully. Vague terms such as “meat meal” or “bone meal” should be considered a giant red flag. According to the pet food industry, “meat” can be sourced from any mammal. So, when the animal from which the meat originated is not specified, there is a good chance something about that meat should be considered suspect. Make sure the labeling is clear, for example, “chicken meal.”

There are lots of grain-free dog foods currently on the market, which benefits your dog in two ways. For one, dogs aren’t really designed to eat grains, and it is suspected that many health problems our pets suffer from are due to the fact they are consuming foods their bodies are not built to digest. Secondly, by choosing grain-free foods, contaminated grains will not be included in the ingredients.

Fennel, or Foeniculum vulgare, is a flowering plant species indigenous to the Mediterranean shores. A cousin of celery, it has naturalized in many parts of the world, and thrives in dry soil near river banks and sea coasts. The Greek name for fennel is marathos, root of the word, “marathon” which literally means a plain with fennel growing.

Fennel is a perennial herb that can grow up to four feet in height. It produces clusters of tiny yellow flowers that form into narrow aromatic seeds. Its leaves are similar to dill. The base of the leaves forms a bulb-like structure, which is also eaten as a vegetable. Both the bulb and seeds have a flavor that is reminiscent of anise, yet slightly sweeter.

Fennel is one of the three main herbs used in the preparation of absinthe, the other two being anise and wormwood. Absinthe was originally used as a medicinal elixir in Switzerland, but by the late 19th century had become a popular alcoholic beverage throughout Europe, especially in France.

The bulb of the fennel plant can be eaten either raw or cooked. The bulb is a crisp vegetable that can be sautéed, stewed, braised, grilled or eaten raw. Young tender leaves are used for garnishes, as a salad, to add flavor to sauces, dressings, soups and fish sauce. Both the vegetable and the seed are widely used in many culinary traditions from around the world. It is especially popular throughout India, Pakistan, and much of the

Middle East. It is an essential ingredient in the Bengali spice mixture panch phoron and in China, the five-spice powder. Throughout much of India and Pakistan, roasted fennel seeds, or mukhwas, are served as an after-meal digestive aid and breath freshener. In Syria and Lebanon, the young leaves are combined with eggs, onions and flour in order to make an omelet-type dish called iijeh.

Fennel is also widely used in Italian cuisine, the vegetable is often tossed in salads with chicory and avocado, or braised and served as a side dish. The seeds give Italian sausage its signature flavor. In Spain, the stems of the vegetable are used in the preparation of a pickled eggplant dish known as berenjenas de Almagro.

Fennel’s actions are carminative, circulatory stimulation, anti-infammatory actions, diuretic and a mild expectorant. It is also said to encourage milk production in nursing mothers. Fennel is a uterine stimulant however, so pregnant mothers

should avoid high doses of this herb. In Chinese medicine, the seeds are known as hui xiang. They are used to tonify the spleen and kidneys, and to treat imbalances of the urinary and reproductive systems.

Fennel is widely used as a carminative to treat digestive discomfort and flatulence by encouraging the expulsion of intestinal gas. Fennel is sometimes made into a syrup to treat colic in babies, or infused into water and mixed with syrup and sodium bicarbonate to make “gripe water,” also used to help relieve gas in infants. A simple fennel tea can be made by pouring boiling water over a teaspoon of bruised fennel seeds.

INSTRUCTIONS

• Melt the coconut oil in a double boiler (or place the jar in a bowl with warm water)

• Place the soaked nuts, water, agave and salt in the blender

• Open the vanilla pods, scrape out the seeds and throw them in the blender

• Blend until everything is very smooth; thick but still runny

• Add the coconut oil at low speed (or while blending shortly)

• Let this mixture chill for 2 hours in the fridge

• Pour the mixture in your ice cream maker and follow its own instructions

• Usually it takes about 40 minutes to get a nice, firm ice cream

• Make the berry sauce by blending up the berries

• Sieve the sauce so all the pits are removed and you have a velvety texture

DRESS IT UP

• Take a nice soup plate or a lovely bowl

• Pour in some of the berry sauce

• Take a scoop of ice cream and place it in the middle of your “soup”

• Top off with some mint, a berry or a few cacao nibs

TIPS

• This nice cream is at its best freshly made, right of the ice cream maker

• After that, it is best consumed within a few weeks

• Store in a well-sealed container in the freezer

• Prepare the first step a day ahead and turn the ice cream while you are having your Xmas dinner: perfect timing for a delicious raw experience for your guests

INGREDIENTS: Use organic whenever possible • 1 cup unsweetened almond milk • ½ cup coconut milk • ½ canned pumpkin • ¼ cup pecans • 2 pitted dates, chopped • ¼ teaspoon vanilla extract • 1 teaspoon cinnamon • ½ teaspoon nutmeg • ¼ teaspoon ginger • pinch of allspice • pinch of cloves • pinch of sea salt

DIRECTIONS:

Place all ingredients in a high-speed blender and gradually blend from low speed to high speed for about 30 seconds. Then blend on high for another 45-60 seconds to make sure the dates are chopped up well. You can also add a couple of scoops of a clean protein powder to your smoothie for more protein!
