Her Royal Highness, Princess Marie Agathe Odile of Denmark

HRH Princess Marie was married to HRH Prince Joachim of Denmark on 24 May 2008,

and, in connection with the wedding, became HRH Princess Marie, Countess of

Monpezat.

HRH Princess Marie is patron of a great many national organizations, institutions, and

foundations, and is an honorary member of various associations and societies.

HRH Princess Marie is among others the patron of The Copenhagen Cooking and Food

Festival, the Danish National Commission for UNESCO and the DanChurchAid.

Esben Lunde Larsen

Minister for the Environment and Food of Denmark

Esben Lunde Larsen was appointed Minister for Environment and Food 29 February

2016 by Prime Minister Lars Løkke Rasmussen. Prior to that Esben Lunde Larsen

served as Minister for Higher Education and Science.

Lars Løkke Rasmussen

Prime Minister of Denmark

Lars Løkke Rasmussen has served as Prime Minister of Denmark since 2015 and from

2009 to 2011, and has held the role as Chairman of the Liberal Party since 2009. Lars

Løkke Rasmussen has previously served as Minister of Finance and Minister for the

Interior and Health. He holds a Master of Laws from University of Copenhagen.

Harsimrat Kaur Badal

Minister of Food Processing Industries of India

Smt. Harsimrat Kaur Badal is a determined Indian politician. She is presently the Minister

of Food Processing in the Hon’ble Prime Minister Shri Narendra Modi’s government.

Apart from being a great political leader, she is also involved in social work and is a

business woman. She is a graduate in Textile Designing. She was first elected as

Member of Parliament in 2009 to the 15th Lok Sabha from the Bathinda Constituency

and in the 16th Lok Sabha also she is a M.P. from Bathinda in Punjab.

René Redzepi

Head Chef, noma

René Redzepi is the founder of MAD, a non-profit organization that brings together a

global cooking community with a social conscience, a sense of curiosity, and an appetite

for change. Redzepi is also the chef and co-owner of restaurant noma in Copenhagen.

Since the establishment of the restaurant in 2003, Redzepi has developed a cuisine that

draws from the area's landscape and culture. Using a wide yet intimate network of

farmers, foragers, and other purveyors, noma celebrates the region's ingredients and

aims to present a kind of cooking that expresses its location and the seasons.

Carolyn Steel

Architect and Author

Carolyn Steel is a leading thinker on food and cities. Her 2008 book Hungry City: How

Food Shapes Our Lives is an international bestseller, and her concept of ‘sitopia’ (food-

place) is widely recognized in the emergent field of food urbanism. Carolyn has taught at

Cambridge University, London Metropolitan University, London School of Economics

and Wageningen University. She is a director of Kilburn Nightingale Architects, London.

PhD, Deputy Director General, Department of Registration, Certification and

Accreditation Administration of the People's Republic of China (CNCA)

Bin Huang graduated from China Agriculture University in 2004 and has since held

different positions at CNCA, currently serving in import and export food establishment

registration management and third party certification supervision.

Marcus Gover

Chief Executive, WRAP

Marcus Gover is Chief Executive of WRAP, a not-for-profit that works with governments,

businesses, and citizens to create a world in which we source and use resources

sustainably. He has worked in the environmental sector for more than 25 years, in the

UK and abroad. During this time he has held a wide range of roles including managing a

water engineering company, running an outsourced waste management operation and

setting up an office in China. Prior to joining WRAP, he was commercial director of a

renewable energy start-up.

Gilbert F. Houngbo

President, The International Fund for Agricultural Development (IFAD)

Gilbert F. Houngbo is the President of the International Fund for Agricultural

Development (IFAD), an organization dedicated to eradicating rural poverty in

developing countries and ensuring that agriculture is a central part of the international

development agenda. Born and raised in rural Togo, Houngbo has spent more than 30

years working to improve the lives of some of the world’s most vulnerable people, with

extensive experience in political affairs, international development, diplomacy and

financial management.

Tadahiko Ito

State Minister of the Environment of Japan

Tadahiko Ito is the State Minister of the Environment and has served in this function

since 2016. He was first elected to the House of Representatives in 2005. Ito holds an

educational background in law from Waseda University.

Dr. Donald A. Prater Assistant Commissioner for Food Safety Integration, U.S. Food and Drug Administration

Dr. Donald A. Prater is the Assistant Commissioner for Food Safety Integration at the

U.S. Food and Drug Administration in the Office of Foods and Veterinary Medicine

(FVM). He is the principal spokesperson on behalf of the FVM Program for imports

discussions with external stakeholders, including foreign governments, as well as being

responsible for import-related strategic resource planning activities across FDA’s Center

for Food Safety and Applied Nutrition (CFSAN) and Center for Veterinary Medicine

(CVM), and in coordination with FDA’s Office of Global Regulatory Operations and Policy

(GO).

Stephen Ritz Founder, The Green Bronx Machine

Stephen Ritz is a South Bronx educator and innovator who believes that

students shouldn’t have to leave their community to live, learn and earn in a better

one. Moving generations of students into spheres of personal and academic

successes, which they had never imagined – while reclaiming and rebuilding the

Bronx. Stephen’s extended student and community family have grown more than

50,000 pounds of vegetables in the Bronx while generating extraordinary

academic performance. Stephen was named a Top 10 Finalist for the prestigious

$1m Global Teacher Prize in 2015.

Terry von Bibra Alibaba Group General Manager, Europe Terry von Bibra was appointed Alibaba Group General Manager Europe in October

2016. He is also Managing Director of Alibaba Group Germany, a position he has held

since November 2015. Terry is responsible for helping businesses and consumers

across key European markets access the best of the Alibaba ecosystem and he brings a

wealth of experience in global omnichannel retail, ecommerce and marketing to the role.

Prior to joining Alibaba, Terry was Chief Retail Officer Omnichannel for German

department store chain Karstadt from 2013 to 2015. Between 2005 and 2013, he held

multiple roles within Yahoo!, including Managing Director of Yahoo! Germany, Vice

President of Central Europe and Vice President Marketplaces for Yahoo! EMEA. Terry

previously played a pivotal role in establishing Amazon in Europe, where he led online

marketing and business development for more than five years.

Terry holds a bachelor’s degree in Germanic Languages and Literature from the

University of California at Santa Barbara, a fine arts degree in Advertising Photography

from the Art Center College of Design, and an MBA/MBI from the Rotterdam School of

Management.

Flemming Besenbacher Chairman, Carlsberg Group

Professor dr.scient Flemming Besenbacher is Chairman of the Carlsberg Group, the

Carlsberg Foundation, the Tuborg Foundation, and Deputy Chairman of Innovation Fund

Denmark. He is also Founder and Chairman of the non-profit organization UNLEASH,

which is a global innovation lab that brings together people from all over the world to

transform 1,000 personal insights into hundreds of ideas, and build lasting global

networks around the Sustainable Development Goals.

Henrik Caspar Wegener Rector, University of Copenhagen

Henrik Caspar Wegner has served as Rector at University of Copenhagen since March

2017. Wegener holds a Master of Science in Food Science and a PhD in Microbiology

from The Royal Veterinary and Agricultural University of Copenhagen as well as a

Master of Public Administration (MPA) from Copenhagen Business School. Wegener

has worked as research assistant, researcher, center director, research professor and

head of research at the National Veterinary Serum Laboratory and the Danish Institute

for Food and Veterinary Research in the period 1988-2007. He has further held positions

as director of The National Food Institute of the Technical University of Denmark (DTU)

from 2007-11 as well as provost, and executive vice president of DTU from 2011-17. He

has further worked as Seconded National Expert at the World Health Organization

(WHO) from 1999-2000 and served as chairman of the Scientific Advice Mechanism of

the European Commission (EC SAM) from 2015-2017.

Dr. Abbots, Emma-Jayne Senior Lecturer in Anthropology, University of Wales Trinity Saint David Dr. Emma-Jayne Abbots is Senior Lecturer in anthropology at the University of Wales Trinity Saint David and Research Associate at the SOAS Food Studies Centre (University of London). Her research addresses the cultural politics of food and drink and the embodied experience of their production and consumption. She is broadly concerned with understanding why individuals make particular food and drink ‘choices’ with a specific focus on the relationship between food, migration and social justice, and the possibilities offered by alternative and post-capitalist economies. Abbots’ published works include the books The Agency of Eating (Bloomsbury 2017), Supermarkets and their Alternatives (Routledge 2018), Why We Eat, How We Eat (Ashgate 2013) and Careful Eating (Ashgate, 2015).

Abend, Lisa Journalist, Newsweek Based in Copenhagen, Lisa Abend is a correspondent for Newsweek magazine, and writes frequently about food for The New York Times, Saveur, Food and Wine, The Observer Food Monthly, and other newspapers and magazines. She is the author of The Sorcerer's Apprentices: A Season in the Kitchen at Ferran Adriå's elBulli.

Agarwal, Pawan Kumar CEO, Food Safety and Standards Authority of India (FSSAI) Pawan Agarwal is currently the CEO of the Food Safety & Standards Authority of India (FSSAI) and Additional Secretary of Ministry of Health & Family Welfare. He is an IAS Officer of 1985 from West Bengal Cadre. He has been the Joint Secretary, Ministry of Skill Development & Entrepreneurship in the Government of India. Earlier, he was the Advisor of Higher Education and Culture in the Planning Commission (now NITI Aayog). He has also worked as Director in the Ministry of HRD and Financial Advisor at the University Grants Commission. He has been Fulbright New Century Scholar at Harvard University / Emory University, visiting scholar and fellow at ICRIER, New Delhi and the Centre for the Study of Higher Education and the Australia India Institute in University of Melbourne. He has published on a range of higher education issues in India and comparative perspective in the South Asian context. His book ‘Indian Higher Education: Envisioning the Future’ published by Sage in 2009 is an authoritative and well-regarded book on India’s higher education system. Recently, he has edited a book, ‘A Half-Century of Indian Higher Education: Essays by Philip G. Altbach’ published by Sage in 2012.

Agerholm, Allan L. Chief Hospitality Officer, BC Group Allan L. Agerholm is the CEO of BC Hospitality Group, one of Denmark’s largest companies within the hotel, conference and hospitality industry. The group includes, among others, Scandinavia’s largest congress center, Bella Center Copenhagen, as well as Marriott Copenhagen, AC Hotel Bella Sky Copenhagen and Crowne Plaza Copenhagen Towers. Mr. Agerholm also holds positions as Vice Chairman of the Board for HORESTA (the national trade association for the hotel, restaurant and tourism industry) and Chairman of the Board for VisitDenmark (the Official Tourism Organization of Denmark), and is an appointed member of the Business Forum for Social Responsibility (VFSA), an advisory body to the Danish Minister of Employment.

Dr. Ainu Husha M S Suhaimi Deputy Director, International Networking Programme, Corporate Communication & Quality Centre, Malaysian Agriculture Research & Development Institute (MARDI) Dr. Ainu works with the FAO’s global Save Food initiative as well as with the Southeast Asian council for Food Security and Fair Trade. MARDI cooperates with the Ministry of Health to connect the nutritional aspects with the food waste agenda. She sees lacking data as the biggest challenge for food waste in Malaysia, and has since increased research on food waste within primary production, for example with post-harvest losses in transportation etc.

Andersen, Pelle Øby Managing Director, the Food Organization of Denmark (FOOD) Pelle Andersen is the Managing Director of Food Organisation of Denmark (FOOD). FOOD is a small public-private partnership started to nurture and feed the interest in Nordic and Danish gastronomy, nature, agriculture and culinary culture. The organisation is supported by private companies in the food sector and public funds, and has offices in Copenhagen and Aarhus.

Aobo, Tang Deputy Head of Department, Regulation and International Cooperation, Shanghai Food and Drug Administration Aobo Tang serves as consultant at the Regulatory and International Cooperation Division of Shanghai Municipal Food and Drug Administration. He holds an LLM in Civil and Commercial Law and has profound working experiences in legal affairs of government, especially in administrative review. He has engaged in important rulemaking, e.g. food safety law, regulations on food Safety in Shanghai Municipality, regulations on administrative penalty for food and drug Administration, regulations on reporting and managing food and drug complaints, etc. and he has published a series of papers in relevant fields.

Basse, Berit Head of Department, Export and Customer Relations, Trade Council of the Danish Ministry of Foreign Affairs Berit Basse is Head of Department for Export and Customer Relations in the Trade Council of the Danish Ministry of Foreign Affairs. She is former Danish ambassador to Singapore and Brunei from 2012-16. She has many years of international experience within economic diplomacy, internationalization, global public affairs, and development assistance.

Bastaki, Iman Al Director of Food Safety Department, Dubai Municipality In 2016 Ms. Iman Al Bastaki was promoted as the Director of Food Safety Department where she is responsible for all the strategic related to food safety in Dubai and for providing food safety awareness and education for better lives. She is one of the members of the national food safety committee in UAE.

Bitz, Christian Nutrition expert, cook book author and TV host Christian Bitz holds a M.Sc in Human Nutrition and is head of research at Bispebjerg and Frederiksberg Hospitals, where he is involved in several research projects and the development of better patient meals. Bitz has been host and expert on many TV programs and is one of Denmark’s most popular keynote speakers. He has written 9 books whereas the latest book is published in the US and many European countries.

Buhl, Torsten CEO, FoodDenmark Torsten Buhl holds a Master of Law from University of Copenhagen. FoodDenmark is an umbrella organization for small and medium-sized enterprises in the food sector. It includes Danish Cheese Shops Association, , Denmark's Fishmongers, SMEs Foods and Danish Butchers, including shops, slaughterhouses and processing companies, etc. Danske Butchers also runs a marketing organization with store concepts. Furthermore the organization runs the advertising agency CIBUS Graphic.

Čančík, Miroslav Deputy Head of Mission, Embassy of the Czech Republic in Copenhagen Miroslav Čančík serves as diplomat at the Ministry of Foreign Affairs of the Czech Republic. He has previously been posted as counsellor at the diplomatic missions in Athens, Helsinki, Brussels, and is currently in the position as Chargé d´Affaires a.i. in Copenhagen.

Cardenau, Francis Chef, food entrepreneur and CEO of AOC Francis’s mission is to support and develop local food production. Starting up Lindegården, an organic farm he has one mission: back to the basics. Permaculture agriculture is the new black and the most eco-friendly way of growing vegetables, why Lindegården supports, develops and practices permaculture. Dr. Chin Cheow Keat Director, ASEAN Risk Assessment Centre for Food Safety (ARAC) Dr. Chin is Director of the Secretariat of ARAC, the new ASEAN Risk Assessment Centre for Food Safety. The risk assessment body is located in Malaysia and pools and utilizes scientific expertise from across ASEAN to provide independent scientific opinion in facilitating the development of evidence-based common food safety measures and mutual recognition arrangements in ASEAN.

Christensen, Jens Zimmer Owner and CEO of Hotel Maritime and Chairman of HORESTA (the Danish Hotel and Restaurant Association) Jens Zimmer Christensen is member of the Advisory Board on Prevention of Food Waste in Denmark, member of the Board The Confederation of Danish Employers, Expert Judge at the Maritime and Commercial Court in Copenhagen, member of the Board (Excom) HOTREC, the association of Hotels, Restaurants and Cafés in Europe.

Christiansen, Lars Global Industry Team Leader – Agriculture, Food & Foodtech, Ministry of Foreign Affairs of Denmark Lars Christiansen is the team leader of the Danish Trade Council’s global Agriculture, Food, Foodtech & Agribusiness team with approx. 60 sector advisors globally.

Clarke, Renata Head, Food Safety and Quality Unit, Agriculture and Consumer Protection Department, The Food and Agriculture Organization of the United Nations (FAO) Renata Clarke has worked for the Food and Agriculture Organization on food safety and quality issues for the last 19 years. During this period she has overseen the development and implementation of numerous capacity development projects in all regions. For the last 7 years, she has led the FAO Food Safety Programme and has put an emphasis on promoting integrated programmes of technical assistance to developing countries and working with countries to strengthen their voices in food safety decision making internationally. She also provides general oversight to the FAO programme for the provision of food safety scientific advice which underpins Codex standard setting.

Deák, Ferenc Deputy Head of Department, Ministry of Agriculture of Hungary - Food chain Control Department Ferenc Deák has an educational background as agricultural engineer and food development engineer. He has been working in this area since 2005, in the position as Deputy Head of Department since 2008. The department covers the issues related to food and feed safety, bio agriculture and all questions related to food waste.

Dömölki, Marianna Ministry of Agriculture of Hungary – Department of Food Industry, Head of Unit Marianna Dömölki has an educational background as food engineer. She has been with the Ministry of Agriculture since 2010, covering issues like food labelling, food regulation, contaminants, food contact materials, etc. She is a member of several EU Expert Groups and also represents Hungary in the Codex Alimentarius Commission and a number of sub-committees.

Ejlsersen, Søren Co-founder, Aarstiderne and Haver til Maver Søren Ejlersen is co-founder of Aarstiderne, a company that provides organic produce to more than 70.000 households each year and works directly with 200 organic farmers. He is passionate about biodynamic farming, sustainability and biodiversity, and is very interested in compost as an “engine for making or keeping soil healthy”. He firmly believes that plants are magic and through his work with sustainable food systems, he wants to pass on a better world to future generations. In 2006 Ejlersen established the project “Haver til Maver” (“Garden to Bellies”), the world’s largest gastronomic school garden concept. “Haver til Maver” is a non-profit organization that works to strengthen primarily children and young people’s commitment to sustainability, food culture, and health.

England, Hildreth Assistant Director, Open Agriculture Initiative, MIT Media Lab Hildreth England manages people, potential and partners at the Open Agriculture Initiative. She also leads research in user experience and interaction design for the group, fusing her expertise in health behavior change with emotion-based design methodologies and persuasive technology to create easy, engaging, positive behaviors in food systems. Hildreth is a registered dietitian and designer who’s spent the last 15 years leading policy, technology development projects in the public and private sector. Before joining MIT Media Lab, Hildreth led digital innovation strategy for the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC), and is particularly passionate about designing for and serving the most vulnerable populations in our society. Hildreth is an award-winning performer and director whose designs (under HESTIA design lab) have been featured at Triennale di Milano. She has degrees in foreign service from Georgetown University, in nutrition from Texas State University, and completed a food innovation and design fellowship at the Università degli Studi di Modena e Reggio Emilia.

Ersbøll, Charlotte, Senior Advisor, UN Global Compact (UNGC) Charlotte Ersbøll is Senior Advisor with United Nations Global Compact (UNGC) and Partner at Hansen & Ersbøll Agenda. UN Global Compact is the world’s largest voluntary sustainable business initiative involving 9,300 business participants and 3,000 non-business stakeholders in 165 countries and with Local Networks in 73 countries. UN Global Compact is anchored with the UN and reports to the UN Secretary General. Charlotte spearheads the development of a new Action Platform for health and well-being in alignment with UNGC’s new strategy - Global Goals Local Business. Fabbri, Karen Head of Sector, Food 2030, EU Commission Karen Fabbri, Ph.D. is heading the FOOD 2030 Sector at the European Commission's (EC) Directorate General for Research and Innovation (DG RTD). Flore, Roberto Head of Culinary Research and Development, Nordic Food Lab Roberto’s gastronomic path started in Sardinia at age 4. By the side of his grandmother he recalls bread dough in his hands, the perfume of wild herbs, and the wood stove. In these youthful moments his passion for food was born. Studying agronomy allowed him to understand the origins of food, and consequently inspired his adventures in the kitchen. Roberto has travelled extensively with the goal of understanding how diversity of food is celebrated in other cultures. Since 2014 he has lead the culinary R&D at Nordic Food Lab.

Forés, Margarita Owner and Chef, Cibo di M, Manila In 1986 Margarita Forés packed her bags and flew to Italy for a 6 month crash course on Italian cooking and language. She traveled from Florence, Milan and Rome, soaking up as much as she could about the culture. This has been the foundation of her culinary education, from which she has now made a successful empire in her home country, the Philippines, including her restaurant chain, Cibo, champagne bar Lusso, farm-to-table restaurant Grace Park, and Alta in Ascott where she runs the hotel’s food and beverage operations. Her catering company Cibo di M Signature Caterer has been relied on to provide lavish banquets for celebrities and high profile personalities. In 2016 she was named Asia’s Best Female Chef by the Asia’s 50 Best Restaurants.

Frewen, Mella Director General, FoodDrinkEurope Mella Frewen is an Irish citizen, living and working in Brussels where she is Director General of FoodDrinkEurope, Europe's food and drink industry organization. A scientist by training, Mella has worked for close to 30 years in the food and agricultural industries. She holds a master’s degree in psychology and executive education awards from various business schools including INSEAD and Harvard. Guldborg, Pelle Behavioral Scientist, Roskilde University Behavioral researcher Pelle Guldborg Hansen holds a PhD in Game Theory from Roskilde University, and his primary research is on social processes, norms, and coordination from a game-theoretic perspective. Since 2009 he has applied this knowledge to the making of various forms of choice- and behavioral architecture in public policy with a special emphasis on how to use nudge as a means to behavioral change. In 2011 Pelle founded the Danish Nudging Network that seeks out the potential of using Nudge as a strategy on all levels of public policy as well as in collaborations between the state, its citizens, businesses and organizations. Haddad, Lawrence Executive Director, Global Alliance for Improved Nutrition (GAIN) Lawrence Haddad is the Executive Director of GAIN since 2016. Lawrence joined GAIN following his role as Research Fellow at the International Food Policy Research Institute (IFPRI) in the Poverty, Health and Nutrition Division. From 2004-14, Lawrence was the Director of the Institute of Development Studies (IDS). Prior to this, he was the Director of the Food Consumption and Nutrition Division at IFPRI, a lecturer in quantitative development economics at the University of Warwick and also a visiting scholar at the London School of Economics. From 2010-12, Lawrence was the President of the UK and Ireland’s Development Studies Association and from 2014-16 the founding co-chair of the Global Nutrition Report. He was also the UK’s representative on the Steering Committee of the High Level Panel of Experts (HLPE) of the UN’s Committee on World Food Security (CSF), with the aim of making the CSF more effective in research analysis. Lawrence’s research focuses on a wide range of issues related to the wellbeing of the poor, including the design of policies and programs intended to reduce poverty and malnutrition, the impact of gender differences in accessing resources on nutrition and poverty, the role of community participation in the performance of poverty programs, and the challenges that rapid urbanization poses for the poor. He has published extensively on these issues. Lawrence holds a PhD in Food Research from Stanford University.

Hess, Pamela Executive Director, Arcadia Center for Sustainable Food and Agriculture A career national security journalist, Pam covered the wars in Iraq and Afghanistan from 2002-07. After a brief foray into national politics as a communications director on Capitol Hill, Pam returned to her first love: food and sustainable farming. In 2011, she took the helm of a local food and wine magazine that celebrated the sustainable food movement in the Capital Foodshed and in the course of it, met and fell for Arcadia. Pam has also overseen the creation and introduction of a custom data-gathering point of sale app now in use by 10 other mobile and farmers’ markets around the country. The Arcadia Farmers Register produces previously unavailable data and insight into how low-income households use SNAP, WIC and Senior FMNP nutrition benefits to feed their families. Jarosz, Dominika Campaign Manager, Feed the 5.000 Dominika is Feedback’s Head of Campaigns and Programmes and has in the past four years catalysed food waste movements in over 40 cities worldwide through Feeding the 5000 events – celebratory food waste feasts that have inspired people to take action, engaged decision makers and challenged businesses to change their behavior. Dominika also oversees Feedback’s other campaigns and programmes including The Pig Idea, the Gleaning Network and Supply Chain Research. Before joining Feedback, Dominika worked in documentary films researching and producing films focused on food production, seeing firsthand the environmental and social impacts of unsustainable practices. She was the head of campaigns and outreach for Farms not Factories, where she worked on collaborative campaigns with partner organisations including the Soil Association. Johnson, Arielle Visiting Scientist, Open Agriculture, Media LAB, MIT Arielle is responsible for the flavor and biochemical side of Open Ag’s phenome research, as well as experimental collaborations on environmental control of a variety of edible biological systems with chefs and restaurants. Her work emphasizes dismantling the disciplinary boundaries between the kitchen and the laboratory, drawing on her experience doing R&D in the sciences, fine dining, and food non-profits; and using tools from chemistry, plant science, microbiology, ethnobotany, history, psychology, engineering, design, and experimental cuisine. Arielle completed a BSc in Chemistry at New York University and a PhD in Agricultural and Environmental Chemistry from UC Davis with a focus in flavor chemistry. Keuchel, Anette Foreign Language Correspondent and Environment Scientist, Co-founder and deputy chairperson of Restlos Glücklich Anette Keuchel, foreign language correspondent and environmental scientist, is the co-founder and deputy chairperson of RESTLOS GLÜCKLICH e.V., a Berlin based non-profit association tackling food waste. With her fellow campaigners in 2016 she opened the first restaurant in Germany where mainly rescued food is served, rub&stub Copenhagen being the role model.

Knøchel, Susanne Professor and Head of Food Microbiology and Fermentation, Department of Food Science, University of Copenhagen Professor and head of Food Microbiology and Fermentation, Department of Food Science, at the University of Copenhagen, Denmark, and adjunct professor at NTNU in Norway . She has an MSc in food science and a PhD in Water and Food Microbiology. She has more than 35 years of research experience from several institutes and universities in Denmark, Japan, Norway, Iceland, and Scotland within the areas of foodborne bacteria, food safety and shelf life and has collaborated with large industries as well as SMEs incl. caterers. Pengas, Spiros Deputy Mayor, Tourism and International relations, Municipality of Thessaloniki Spiros Pengas has been an elected local council member of Thessaloniki since 2011. He graduated from the German School of Thessaloniki and studied Political Science and International Relations at the Universities of Freiburg and Munich.
