We believe that no dish can be better than its ingredients, and that the best ingredients are usually local. Freshness is ephemeral and geography expresses itself in the taste of the food sometimes subtly and sometimes profoundly. The foods and wines of our region share a similar motherhood of soil and weather, making for happier culinary marriages than those from dissimilar climates. The Herbfarm believes that chefs who cook with local ingredientsseason by season, year after yeardevelop a more complete understanding of their foods than chefs who do not. This understanding can give rise to greater expressions of the food, its preparation, and enjoyment. The Herbfarm believes that supporting local farmers, foragers, cheesemakers, wineries, and fishermen helps preserve and promote the foundation of regional cuisines.
Our cellar of more than 23,000 bottles encompasses what is most likely Americas largest selection of Northwest wines, as well as many rare and hard-tofind bottles from throughout the world. Explore the best the world has to offer. Our sommeliers are pleased to offer advice as well as to fulfill your requests. To the best of our knowledge, the wines in our collection have been kept under controlled temperatures and humidity since their release. Though the best-known names in Champagne are still the venerable Houses, theres a growing trend for the grape growers themselves to make Champagne. What is the difference? The big houses tell us that the greatness of Champagne comes from the ability to blend, to create a distinctive house style that can be experienced bottle after bottle, year after year. The growers counter that they are expressing terrior, a sense of place, in their bottles. Is one right and the other wrong? Not at all. Pacific Northwest Chardonnay
Northwest Chardonnays run a range of styles. Washington State Chardonnay tends to be a fuller style than those from Oregon, but the best Oregons can be very sophisticated indeed.We especially like Washington Chardonnay whose fruit has come from the Celilo Vineyard and Cold Creek Vineyards, though there are some other great sites, too. In Oregon, the new Dijon Chardonnay clones are now expressing themselves. These clones make a huge difference, allowing good producers to make Chardonnays very reminiscent of white Burgundy.

It was a native of Burgundy until it was all uprooted in the early 1700s. From there it was introduced in the Loire Valley where today it makes the famous Muscadet wines. Oregon Melons tend to be a bit fuller-bodied and fruitier than those of the Loire in France. They are a nice accompaniment to lighter seafoods and summer vegetables. The best of them can age for some years.

In Parisin 1979, the French food and wine magazine GaultMillau sponsored an Olympics of the Wines of the World. Thirty-three of the worlds wine regions entered 586 wines. In the final blind-tasting competitions, the Eyrie Vineyards 1975 Oregon Pinot Noir placed third in the Burgundy category. For the French, there was a good deal of consternation regarding the number of foreign wines that had outscored the home team in the Olympiads. Twelve of these winners were challenged to a rematch to take place in the heart of Burgundy itself. On the 8th of January, 1980, 20 French, English, and American wine judges gathered in Beaune at the 1,000-year-old Hall of Justice of the Dukes of Burgundy. The six top-scoring foreign Pinot Noirs and Chardonnays from the Olympiads were judged again, this time against the finest Burgundies of the best vintages. The Eyrie Vineyards 1975 South Block Pinot Noir finished just two-tenths of a point behind the 1959 Joseph Drouhin Chambolle-Musigny. The result was seen (at least at the time in America) as a far-reaching victory for the vision of Eyries founder, David Lett, who moved from California to Oregon to pursue his controversial plan to
grow Pinot Noir in cool climatic conditions. As a result of these Wine Olympics, others took notice, and the seeds of the modern era in Oregon viticulture were planted. With the help of David Adelsheim and David Lett, Robert Drouhinscion of the 120-yearold French ngociant firm Maison Joseph Drouhin invested 10-million dollars in the 1980s to create Domaine Drouhin Oregon, which is now overseen by his charismatic daughter, Vronique Drouhin-Boss.

Myron Redford is a native of Seattle. He worked as a cellar rat at Associated Vintners (now the Columbia Winery in Woodinville) before relocating to Oregon. There he made his first barrel of Pinot Noir in 1976. Myron does things his own way, typically using little or no new oak on his Pinot Noirs. He believes that this approach lets the grape better speak for itself.

Michael Etzel crafts alarge and elegant version of Pinot Noir. His beaux frre (brother-in-law) and partner is the wine critic, Robert M. Parker, Jr. As the years have passed, Michaels hand has lightened on the wine and they are now even more balanced and expressive. The wines of the mid-and-late 90s are drinking particularly well.

Camerons John Paul (the Pope of Pinot) has a doctorate in oceanography. After working in Oregon, France, and New Zealand, he started Cameron in 1984. His best Pinot Noir comes from the old vines at Abbey Ridge and from his estate fruit Clos Electrique, planted in clones from the Domaine de la RomaneConti in Burgundy.

Like most fine Pinot Noir, the wines give their full potential with a few years in the cellar. Laurne and Louise are barrel-selected cuves named after Vroniques daughters. The DDO Chardonnay is named after her son, Arthur.

He had strong opinions and did not believe that Pinot Noir should be a big wine. Patricia Green earned plenty of fans in her years as winemaker at Torii Mor. Now she and Jim Anderson have their own winery, Patricia Green Cellars, on Ribbon Ridge southwest of Portland and adjacent to Beaux Frres. Her wines attract the serious attention of Pinot Noir lovers.
Jim Anderson is theother half of the brains at Patricia Green. Patty and Jim use only wild, native yeast in making their wines, which is part of the secret of the complexity of the Patricia Green Pinot Noirs.

Marcus Goodfellows Matello Winery makes about 500 cases of wine each year. The Souris (French for mouse) is named for his friend, Tysan Pierce, Herbfarm sommelier. Marcus and Tysan worked together at The Heathman in Portland.
