Useful Information: Older eggs are easier to peel than fresh eggs. If you are planning to make hard boiled eggs for Easter and want to make sure that the eggs are easy to peel, buy your eggs at least a week ahead of time (two weeks even better, they'll keep). If you need easy-to-peel eggs and you have fresh eggs, you might want to try steaming the eggs for 20 minutes. Somehow the steam penetrates the shell a bit making the eggs easier to peel. If you've boiled a batch of eggs that you are now finding difficult to peel, try cracking the shells all around without peeling them and soaking the eggs in water for a while. The water often seems to seep in enough under the shell to make the egg easier to peel.

1. Place the eggs in a single layer at the bottom of a saucepan. Cover with at least an inch or two of cold water. The more eggs that are crowding the pan the more water you should have over the eggs. Heat the pot on high heat and bring the water to a full rolling boil.

Adding a teaspoon of vinegar to the water may help keep egg whites from running out if an egg does crack while cooking. Also some people find adding 1/2 teaspoon of salt to the water helps prevent cracking as well as making the eggs easier to peel.

2. Turn off the heat, keep the pan on the hot burner, cover, and let sit for 10-12 minutes. If you have the type of stove burner that doesn't retain any heat when turned off, you might want to lower the temp to low, simmer for a minute, and then turn it off.

Depending on how cooked you like your hard boiled eggs, the eggs should be done perfectly in 10-12 minutes. When you find a time that works for you, given your preferences, the types of eggs you buy, your pots, stove, and cooking environment, stick with it.

If I'm cooking a large batch of eggs, after 10 minutes I'll sacrifice one to check for doneness, by removing it with a spoon, running it under cold water, and cutting it open.

I also find that it is very hard to overcook eggs using this method. I can let the eggs sit, covered, for up to 15-18 minutes without the eggs getting overcooked.

3. Strain out the water from the pan and run cold water over the eggs to cool them quickly and stop them from cooking further. Or, if you are cooking a large batch of eggs, remove them with a slotted spoon to a large bowl of ice water.

The best way to store hard boiled eggs is in a covered container in the refrigerator. Eggs can release odors in the fridge which is why it helps to keep them covered.

They should be eaten within 5 days.

CDD April 2019 Update

What causes shoreline erosion? The most significant erosional force at the shoreline is also the subtlest. The simple lapping of ripples and loosening of saturated soils pulls soil particles apart just below the water surface; therefore, much of the bank erosion is occurring below the water level where it goes unseen until the exposed part of the bank slumps. Storm water ponds are also designed to fill and drain with each storm event. The repeated rise and fall of water creates currents that pull soils away from the bank. Of course, water enters storm water ponds through pipes that convey water from the paved surfaces in the community. The inlets where these pipes discharge into the pond are subjected to concentrated flow that can erode deep gullies and holes and affect the adjacent banks. Finally, many ponds are designed to receive surface flow from grassy swales between houses. These swales receive water from the gutter downspouts and direct it over the lawn to the pond or to the street. These shallow swales concentrate sheet flow, which can create gullies and depressions as the water flows down the pond bank slope.

How to use plants to stabilize ponds bank.

Wetland plants established on the shoreline are a preferred method for stabilizing pond banks, and they provide many benefits beyond erosion prevention. The deep, robust root systems of these plants bind soils in the area where the majority of erosion is occurring, just below the water surface. Unlike turf grass, these plants thrive in saturated soils. The main advantage of planting shoreline plants is that they provide other services such as filtering pollutants in runoff, absorbing nutrients that grow algae, trapping sediment and yard debris, deter nuisance wildlife, provide cover and forage for fish and invertebrates, and dampen wind and wave energy. We have begun planting Pickerel Weed and Arrowhead to help with our erosion issues.

Turf Barrier To also help with erosion control we will be letting the grass grow around the edge of the ponds. We will create a barrier with the turf that will be 6 inches high and approximately two feet wide. This will slow down water runoff each time it rains. Slowing down the runoff will help the erosion of the pond banks. We are asking home owners that live on the ponds to do the same.

Safety Tips Continued...

of you without looking. Be considerate of drivers who have the right of way. If a car is parked in your lane, you have the responsibility to stop and allow an oncoming vehicle to pass you. The fact that you are in a hurry does not give you the right of way. Be kind to your neighbors. Also, you should avoid parking in areas where you can be is-sued a violation. You should know the laws before you park on the street and cause a dangerous situation for drivers.

Don’t tailgate slower vehicles. Be po-lite towards bicycles, golf carts, and scooters and keep a safe following distance until you can clearly pass them at a passing distance of greater than three feet from them.

Pedestrians have the right of way. Give it to them! Slow down when you see people in the road. Due to sidewalk parking, we have residents who must use the road for running, walking, etc. If a resident on a sidewalk is looking to cross, show them the courtesy they deserve.

Use your lights. From dusk to dawn, you should always use your headlamps to illuminate the road.

If every neighbor does his/her part to keep our community safe, it will be. Thank you for being a responsible neighbor. Heritage Isles appreciates it!!

What to plant:

Annuals: New varieties of coleus do well in sun or shade and provide vivid colors and patterns for months. Bulbs: Planting early-, mid-, and late-blooming varieties of daylily will insure months of color from these low maintenance plants. Herbs: Add nasturtiums to your herb garden. The leaves and flowers add a peppery zest to salads. Vegetables: Continue planting warm season crops such as bean, cantaloupe, and okra. Mulch well to prevent weeds, and provide water if the weather has been dry. What to Do:

Pests: Monitor landscape plants weekly for aphids on tender new growth. Flowering Plants: Check for thrips if leaves and/or flowers of gardenias and roses are damaged. Divide Perennials and Bulbs: Divide clumps of bulbs, ornamental grasses, or herbaceous perennials to expand or rejuvenate garden beds or to pass-along to friends. Lawns Problems: Many lawn problems, such as lack of water, mimic insect damage. Confirm the damage is being caused by insects before applying a pesticide. Lawns : Apply fertilizer after new growth has started. Choose a fertilizer (not a "weed and feed") with little or no phosphorus unless a soil test indicates the need for it. A fertilizer with controlled-release nitrogen yields longer-lasting results. Shrubs: Choose from a wide variety of shrubs to add to the landscape now.

H as a stranger ever done something that made your whole day look brighter? Perhaps they opened the door at the bank for you or let you go ahead of them in the queue? Remember how good it made you feel? Making someone smile and brightening their day is one of the most generous things you can do. It has a ripple effect that touches the whole community; if you are nice to someone it is likely they will be nice to

someone as well.

Why bother trying to make people smile? Try to think back to when someone last did something that made you smile or brightened your day. A simple smile or friendly gesture by that stranger had an effect on your whole world, even if only for a few hours. It rippled through the people in your life. Quite amazing when you think about it.

So we know that making someone smile can change the whole community. But what else can it do? Why else should we bother trying to make people smile? Well there are a lot of reasons actually.

Firstly, it makes you feel good about yourself. When you make someone happy you really feel like you have done something good. So making other people happy makes you happier.

Secondly, it is healthy. If you smile at someone and make them smile you are actively causing chemicals to be released in to your body that battle stress and cause feelings of joy. This is good. Making other people smile benefits both yourself and others.

Here are some simple and easy ways to make the people around you smile or brighten their day. They are small acts that have big effects.

Smile first - The easiest and possibly the most effective way to get someone to smile is to smile at them first. People don’t seem to do this anymore. I remember when I was a kid walking through the park with my family and everyone would smile at each other and say hello. Now people sort of just power walk through the park and avert their eyes when they get near you. Perhaps it is because we have so much more fear now. I don’t know. I do know is that if you smile at someone first they will almost always smile back and walk away feeling happier. Be chivalrous - Chivalry is a term dating back to the medieval knights and their values of honor, courtesy and good manners. It is a very simple practice where you endeavor to behave in a kind and courteous way to the people around you and especially to members of the opposite sex. A typical example would be holding the door open for someone or standing up to greet someone when they meet you for lunch. Listen - When someone is talking to you listen to them. Don’t just sit there waiting for your turn to talk. Actually listen. This is one of the best ways to make people feel good about themselves. Surprise someone - Have you ever brought flowers home for your wife or girlfriend because it was a Wednesday? Not Valentine’s Day that fell on a Wednesday, just because it was Wednesday? Surprising someone for no particular reason other than to make the person smile. Be humble - I am always shocked at how much a truly humble person can improve my day. Their inner warmth seems to radiate outwards and makes you feel protected and comfortable. Humility is truly a great quality. Make eye contact - Looking people in the eyes is a good habit to develop. It shows trust and demonstrates that you are truly trying to engage the person. When you show someone that you are trustworthy you make them feel good. This is particularly true of business related meetings.

A big “thank you” to anyone who is out there in the world making people smile. It is a truly admirable thing to do.
