EASY BREEZY LEMON PIE

Makes 6 to 8 servings

Ingredients 1 3/4 cups cold milk 2 (3.4-oz.) packages vanilla flavored instant pudding and pie filling mix 1 (6-oz.) can frozen lemonade concentrate 1 (8-oz.) container frozen whipped cream topping, thawed 1 (6-oz.) prepared graham cracker pie crust 1 lemon, thinly sliced

Directions Pour milk into a large bowl. Add pudding mix, and beat with a whisk until mix is completely dissolved. Add lemonade concentrate, and whisk in thoroughly. The mixture will be thick. Immediately fold in whipped cream topping.

Transfer mixture into crust and smooth over the top with a spatula.

Refrigerate for four hours or until firmly set. Garnish with lemon slices and serve chilled.

In an 8x8” deep-sided baking dish, layer 6 vanilla ice cream sandwiches in the bottom, cutting to fit. Spread half of the whipped topping over the sandwiches. Top with 1/2 cup of chocolate chips.

Cover and freeze for at least 2 hours.

challenging, drive as you cruise through a network of river-crossing bridges and squeeze between 750-foot limestone cliffs which, in places, are no more than 70 feet wide. As the road ascends, the shoulder can seem a little too close to the edge of the sheer rock cliffs you’re motoring over.

As you might expect, the gorge posed an engineering nightmare. During construction, the river had to be re-channeled a dozen times and required eight bridges over a mere 13-mile span. A swamp buggy with 3.5-foot-wide tires was needed to traverse the boulder-strewn gorge and survey it. As crews carved and blasted their way through the rugged mountain terrain, the road was touted as “29 miles through 500 million years of geology.” While this roadway project was considered an engineering marvel, it was also one of the most expensive sections of interstate ever built at the time ($10 million per mile back in 1973).

The Virgin River itself runs 160 miles between Utah and Lake Mead and is credited for sculpting well-known Zion Canyon. The Virgin River Gorge has gone somewhat unnoticed, even though it’s been equated to a drive through the Grand Canyon. The Virgin River Canyon Recreation Area is located off I-15, about 20 miles southwest of St. George. Take the Cedar Pockets exit, where you’ll discover a beautiful wilderness surrounded by colorful cliffs and rocky canyons. This BLM area offers a developed campground with 75 sites, a picnic/day use area, access to the Virgin River, hiking trails, and a hilltop site, where geology and history are explained.

It’s August, and the window of opportunity for one last, memorable summer road trip is closing quickly. But where

can you go that’s new and exciting ... virgin territory? Just check out Interstate 15, where a sweet, 29-mile stretch of freeway cuts across the remote, northwest corner of Arizona en route to Zion National Park. It’s called the Virgin River Gorge segment of I-15 between Littlefield, Arizona, and St. George, Utah.

This scenic four-lane freeway was once called “America’s most spectacular highway” because of the gorgeous views seen while navigating its twists and turns through the narrows of the Virgin River Gorge. It’s an eye-opening, if not

Shake up your weekend plans with a little family-friendly fun every second

Saturday in downtown Tucson. It’s all happening on Congress Street, between Toole and Church Avenues from 5 to 10 p.m. Each monthly event features live local bands jamming from 6:30 to 10:30 p.m. on the Live Stage at Scott and Congress Streets. There’s room to dance and tables to sit back and enjoy the eclectic music. With polite, friendly crowds of 12,000 to 20,000, entertaining street performers, and 45 or so vendors,

the street scene feels like Ghirardelli Square in San Francisco. Rather than beer gardens, families can enjoy a Kids’ Area at 414 N. Toole. Starting at 6:15 p.m., it offers interactive activities for all ages, including a choo-choo. At 7:15 p.m., a free movie is presented.

POOL NOISE It’s great to see our residents enjoying the pool. As you have fun, please

remember to keep noise levels low. Sound carries over water and may disturb those residents who live near the pool. If you’re listening to music by the pool, please use headphones. Thanks for keeping down the sound.

HITTING THE WALL To avoid creating unsightly chips and nicks in the walls of your home, we

have installed doorstops to keep doors from swinging too far open. Please make sure your doorstops are working properly. If any are not, please contact the office to place a service request.

SERVICE REQUESTS We would like to remind our residents to contact the office if you have a

service request. It’s tempting to stop our maintenance staff on the grounds, but in order to assist you, a service order first must be completed. Thanks for calling the office—we’re at your service!

DISHWASHERS & DISPOSALS The phrase “use it or lose it” can be applied to your dishwasher and disposal.

To maintain motors and hoses, please run your dishwasher through a complete cycle at least once a week. Disposals are best maintained when used daily to keep the blades working smoothly. Keep them running!

KEEP YOUR COOL There’s an easy way to keep your cool and help your air conditioner run

efficiently at the same time. Simply change your A/C filter every month. For your convenience, free filters are available in the office. Please stop in at any time.

EASY BREEZY LEMON PIE

Makes 6 to 8 servings

Ingredients 1 3/4 cups cold milk 2 (3.4-oz.) packages vanilla flavored instant pudding and pie filling mix 1 (6-oz.) can frozen lemonade concentrate 1 (8-oz.) container frozen whipped cream topping, thawed 1 (6-oz.) prepared graham cracker pie crust 1 lemon, thinly sliced

Directions Pour milk into a large bowl. Add pudding mix, and beat with a whisk until mix is completely dissolved. Add lemonade concentrate, and whisk in thoroughly. The mixture will be thick. Immediately fold in whipped cream topping.

Transfer mixture into crust and smooth over the top with a spatula.

Refrigerate for four hours or until firmly set. Garnish with lemon slices and serve chilled.
