Hello!The New Year brings with it a plethora of firsts and new beginnings and the first edition of Hillstone Harvest is no exception. With a new look and revived presence, our e-magazine is brimming with news and information, not only from Hillstone St Lucia and hundred acre bar, but also from Saint Lucy caffè e cucina!

We are very excited in this first issue to share our upcoming events, new menus and recipes, not to mention our 25 year milestone anniversary and year round celebrations!

We hope you enjoy reading this edition and look forward to your feedback and ideas for future issues.

Wedding Open NightThursday, 11 April 2013

5.30pm until 7.30pm

Hillstone St Lucia presents its first Wedding Showcase for 2013! Join us for a twilight soiree and enjoy bubbles and gourmet canapés under the night sky!

Mingle with our exclusive supplier network and experience our beautiful event spaces. Venue styling on the night will be inspired

by weddings through the ages, including Modern, Vintage, Classic and Contemporary themes. Join us for an evening of live entertainment, lucky

door prizes and an exclusive fashion showcase.

Ladies Clinic

Every Thursday from 1pm until

2pm. The main aim of this clinic

series is to establish good game

fundamentals so as to improve your

current game or prepare you for

playing on the course.

MIXED CLINIC

Held every Saturday from 1pm-2pm.

This clinic series follows a six week

rotation with different aspects of

the game covered each week. You

can join in any week. Class size is

capped at eight participants.

JUNIOR CLINICS SATURDAYS 10am until 11am 11-18 year oldsThe Saturday clinic is aimed at preparing junior players for games out on the course, with rules and etiquette alongside technique

development.

SUNDAYS 9am until 10am 5-10 year olds The Sunday clinic is aimed at developing player technique in a fun environment with skills tests and games using the Golf Australia “My Golf” program.

Head Professional Dave Simpson has commenced his ever popular golf clinic series for 2013...

All clinics are run in a relaxed and enjoyable learning atmosphere where questions and feedback is encouraged. Dave is regarded as one of the best professional golf coaches in Queensland. Please phone 3870 7084 for bookings.

INGREDIENTS 16 sprigs mint

1/2 cup caster sugar1 1/2 cups fresh lime juice

2 to 3 cups crushed ice500ml vodka

750ml soda water

METHODPlace mint and sugar into a 2L capacity jug

and muddle together. Add lime juice, stirring well to combine.

Pour in crushed ice, vodka and soda. Stir to combine.Pour into glasses and serve!

Welcome to the light of Saint Lucy

So, the low-down on Lucy - she was a fiery 4th century

sicilian, whose bravery, heroism and typically gory end

(google it), saw her become sainted and now associated

with all things light and illuminative.

Great, but how exactly does she relate to a cafe you ask?

Well, apart from the obvious nod to UQ’s address (we are

situated on the ‘St Lucia’ cane plantations purchased by

William Wilson in the 1860s), our menu is inspired by her

italian heritage and we like to think that her great courage

and tenacity makes her both an ideal fit for our team and

the perfect enlightened vision for our venue.

Besides, who wouldn’t want a little saintly patronage?

Well, apart from the obvious nod to UQ’s address (we are situated on the ‘St Lucia’ cane plantations purchased by William Wilson in the 1860s), our menu is inspired by her italian heritage and we like to think that her great courage and tenacity makes her both an ideal fit for our team and the perfect enlightened vision for our venue. Besides, who wouldn’t want a little saintly patronage?

IngredIenTS4 lamb loin (220g each)12 leaves of fresh sorrel or welsh rocket12 falafels100g cajun spice300ml marsala sauce

MeTHod• Preheat oven to 180F• Roll lamb loin in cajun mix (see recipe)• Heat oil in a large pan and add lamb loin, cooking

for two minutes on each side. Place on a tray and put in oven for seven minutes

• Fry felafels until cooked through (or oven bake for 15 minutes)

• Remove lamb from oven and let rest for two min-utes before slicing on an angle

• Place three felafels on a plate, add sorrel and then fan lamb slices on top

• Pour marsala sauce over and around the lamb• Finish the dish with a dollop riata on top

Cajun Spiced Lamb Loin w Marsala Sauce & Riata

Cajun Spice • 2 teaspoons salt• 2 teaspoons garlic powder• 2 ½ teaspoons paprika• 1 teaspoon ground black pepper• 1 teaspoon onion powder• 1 teaspoon cayenne pepper• 1 ½ teaspoon dried oregano• 1 ¼ dried thyme• ½teaspoonredchillflakes Place all ingredients in a bowl and mix well.

Marsala Sauce • 250ml marsala• 500ml beef stock• 1 red onion, sliced• 2 garlic cloves, sliced• 1 bunch lemon thyme, chopped

Gently sauté the onion, thyme and garlic before adding the marsala.Reduce the sauce by half, then add stock and reduce by half again.Strain well.

Cajun Spiced Lamb Loin w Marsala Sauce & Riata

Cajun Spice • 2 teaspoons salt• 2 teaspoons garlic powder• 2 ½ teaspoons paprika• 1 teaspoon ground black pepper• 1 teaspoon onion powder• 1 teaspoon cayenne pepper• 1 ½ teaspoon dried oregano• 1 ¼ dried thyme• ½teaspoonredchillflakes Place all ingredients in a bowl and mix well.
