Berberis vulgaris L., also known as European barberry or simply Bar-berry, is a shrub in the genus Berb-eris. It produces edible but sharply acidic berries, which people in many countries eat as a tart and re-freshing fruit. The shrub is native to central and southern Europe, north-west Africa and western Asia

History

Zereshk or sereshk is the Persian name for the dried fruit of Berberis spp., especially that of Berberis integerrima ‘Bidaneh’, which is

widely cultivated in Iran. A garden of zereshk is called zereshk-estan

Iranian farmers were familiar with properties and features of this plant. This plant had been used for treatment of fever, thirst, inflammation, cough, liver disorders and elimi-nation of depression. The berries are edible and rich in vitamin C, though with a very sharp flavor. Barberry is supplied in the form of tea, capsule, extracts, liquids tinctures and topical ointments. Medicinally, extracts obtained from this material contain 8 to 12 percent of standardized Isoquinoline alkaloids. Since barberry is useful for body espe-cially body skin, its consumption in no longer time will cause cleanness of skin from acnes and will help freshness and transparency of skin to a great extent.Barberry has a new sour taste, which can be used as a flavor to make your meals more delicious. What we highly recommend is to use this wonderful plant as a flavor for cere-als and all products which you use red fruits. You can have a sample to test its amazing taste. It is also available for us to supply Barberry concentrates.In Europe, the berries have been traditionally used as an ingredient in making jam. The berries are high in pectin which makes the jam congeal as it cools after having been boiled. In southwestern Asia, especially Iran, the berries are used for cooking, as well as for jam-making. In Iran, barberries are commonly used as a currant in rice pilaf.
