Combine 1 lb tomatoes (cut up as needed), 1 English cucumber (sliced), 3 sliced avocados, ½ diced red onion, ½ cup chopped cilantro. Combine 2 Tbsp fresh lemon juice, ¼ cup olive oil, salt and pepper to taste. Mix and stir into salad. Add shrimp or chicken (optional).

We recently welcomed Jayne Ann Krentz to our monthly lectures to discuss her approach to health and wellness, learn about behavior change, and chat about her writing.

For those who already love Jayne’s books…’nuff said! Whether you know her as Jayne Ann Krentz or her other pseudonyms Amanda Quick and Jayne Castle, you may already be eagerly reading her most recent book “Secret Sisters,” just released this past week. Jayne is an accomplished writer in several fiction styles, more notably romantic-suspense, and her books have been on the New York Times bestseller list numerous times.

In our interview together we delved into the topic of pre-diabetes and how she has been able to keep diabetes at bay for over ten years now. She revealed how she is able to stay focused on her health, and how to keep motivated to follow supportive dietary and exercise regimens. We also moved into the topic of her writing – what keeps her ideas flowing, how she comes up with characters, and her process of writing and publishing.
