Executive Chef Dan Landsberg Creates a “Modern American Kitchen” with
a Playful, Creative, and Sophisticated Culinary Direction DALLAS (March 14, 2011) – Hotel ZaZa Dallas has reopened the ever‐popular Dragonfly
restaurant with a sensational new look and atmosphere, from décor to menu, to reflect
an exciting new energy. Dragonfly has been remodeled to incorporate lighter colors, clean
lines, bold fabrics and an art‐infused ambiance that now spills out onto the terrace and
around the pool for al fresco dining and cocktails under the stars. Executive Chef Dan
Landsberg has redesigned the menu, taking a playful twist on traditional modern
American food classics, which serve as a perfect complement to the restaurant.
“After nearly eight years as THE destination for the Dallas A‐list, we felt it was time
to change the scenery. The new Dragonfly is a popular, relaxed neighborhood restaurant,
with a one‐of‐a‐kind, creative menu, upbeat ambiance and an understated elegant
design,” said Charlie Givens, owner of Hotel ZaZa.
The new culinary and design direction allow the restaurant to expand its reach
beyond being a “special occasion” restaurant, to one more accessible for all tastes. The
restaurant will continue to deliver the unsurpassed quality, creativity and artistic edge
for which Hotel ZaZa is known, while adding energy into the Dragonfly concept.

Designed by Charlie Givens, owner of Hotel ZaZa, and Kimberley Miller, of Design
Duncan Miller Ullmann, Dragonfly boasts a fresh color palette of grays, black and white,
as well as upbeat cabana stripes and famous “Letters” fabric from the 1950s. Classic
20th century Bentwood bistro chairs and stools are poised in front of a 20‐foot white
Carrera marble bar. Iconic Fornasetti wallpaper is also used tastefully throughout the
restaurant, bringing a sleek feel to the restaurant and bar.
Chef Landsberg brings a new menu using the freshest foods of the season from
local suppliers, as well as incorporating specialties from the region. Guests will discover
many delicious additions to the dinner and lunch menus. A majority of the menu items
are new, with many favorites remaining that have been reinterpreted under Chef
Landsberg’s culinary direction.
“Dragonfly has emerged as a place that will impress every guest the minute they
walk in the door. The new design and menu changes we’ve implemented have turned
this restaurant into a place where food, décor and ambiance form the perfect blend to
exceed each guest’s expectations. Dan and Charlie have pooled their talent together to

art and light throughout Dragonfly defines ZaZa style and a new level of service for our
guests.”
Each and every Dragonfly guest will be surrounded with the vibrancy of a true art
hotel. The new Dragonfly features thought‐provoking photography and art throughout
the restaurant. A large, framed video installation is displayed near the bar, along with a
gallery collage of selected art and photographs to further enhance the artistic additions.
Many of the featured pieces of artwork are from the private collection of Charlie Givens.

Chef Landsberg’s new menu also remains a unique piece of art in the restaurant.
Chef Landsberg will gain dedicated fans with menu offerings such as Roasted Texas
Chicken, Roasted Pork Tenderloin, and Bay of Fundy Salmon to name a few.
Chef Landsberg also offers an entree called Comida, featuring exactly what the
kitchen staff is eating that night, from Bahn Mi Sandwiches to gourmet Tacos and
Tostadas. Desserts have a particularly playful twist, such as the cleverly named the
Afterschool Snack with a homemade chocolate Hoho, baked Twinkie and butterscotch
pudding cup, and Who Put Their Peanut Butter in MY Chocolate with peanut butter
mousse, chocolate bundt cake and fudge sauce.
