Dao, PortugalAn unoaked blend that is pale, smoky and mineral on the nose. The searing acidity comes from the Encruzado, which is fleshed out by the Verdelho’s slight tropical grapefruit characteristics. This is a bright, elegant and unusual wine from one of the rising stars of the wine world, the Dao region.

Ken Forrester ‘Petit’ | 100% Chenin BlancStellenbosch, South Africa

Hand-harvested old vine Chenin Blanc from Ken Forrester’s vineyards. We’ve had the pleasure of this producer’s company for a tasting at The Tippling House and having visited the vineyards in

Stellenbosch themselves, we can only wax lyrical about the quality of his wines. This is an excellent entry-level, youthful yet with the mouthfeel that we come to expect from a South African Chenin Blanc.

Created by a cooperative of wine growers in the 1960’s, the winery was content to merely produce bulk wines until the 80’s, when a change of leadership resulted in the eventual high-quality production of Sardinia’s

best-known white, the Villa Solais Vermentino di Sardegna. This golden-coloured, dry wine is herbal and aromatic, displaying light almond flavours, attractive mineral notes and a fresh well-balanced finish.

Tesch ‘Queen of Whites’ | 100% ReislingNahe, Germany

Weingut Tesch is one of Germany’s most exciting producers. Turning his back on tradition, Martin Tesch wanted to create great wines for a new generation of wine lovers, focusing on simplicity and straightness.

Tesch uses only natural methods of controlling pests and disease, and in line with the VDP members’’ charter, the grapes are picked at a higher degree of ripeness and harvested by hand, resulting in great richness, with notes of acacia, honey and lime on the nose. On the palate it possesses an amazing concentration of fruit,

balanced by fine minerality and crisp acidity. An off-dry Riesling with amazing concentration and finesse.Organic, bio-dynamic

Inspired by a pink Sicilian sunset, this wine has a light and attractive nose with notes of rose petals, pomegranate and strawberries. On the palate, the wine is silky smooth, light and fresh with no angularity

and a beautiful finish. Fans of Provence rose wine will love this. Vegetarian, vegan

The Calchaqui Valley is a sub-region located in the Northwest of Argentina. Sandy alluvial soils, wide thermal amplitude, low humidity and drip irrigation from the Andes gives the wines a greater

concentration of colour, aroma and flavour. A juicy Malbec with notes of baked plums, raisins & hints of chocolate and vanilla.

This is dangerously easy to drink. It smells and tastes like strawberries, with the merest suggestion of spice, and it’s extraordinarily soft-textured, with such gentle tannins that they almost go unnoticed.

However, thanks to the high-altitude vineyards, there is nice, crisp acidity that keeps everything fresh. On the finish, the strawberry fruit gives way to an intriguing hint of blood oranges and blanched

almonds. This moderately ruby/purple-hued wine exhibits complex aromas of liquorice, roasted herbs, sweet cassis and cherries, smoked meat, and spices. A light style of Garnacha offering an elegant,

surprisingly silky and vibrant wine.Organic

A smooth and elegant Crianza from a well-respected Rioja producer, which deftly balances fruit and oak. This is Sierra Cantabria’s most-admired wine due to its incredible value and delicate but complex style. Ripe cherry and red fruit, hints of spice and smoke, and a dusting of cocoa combine

to form an elegant, complex Rioja with layers of oak and fruit. Environmental integrated agriculture cultivation, applying a viticulture respectful with the environment, following the biorhythms of

Intense red Organic Primitivo wine with violet hints, reminiscent of fresh red fruit. On the nose, fruity notes of currants and blackberries elegantly join an aromatic bouquet of nutmeg, liquorice,

chocolate and vanilla, released after a brief refinement in French oak. Its low-alcoholic degree (12.5%) is supported by a slightly acid structure that makes it balanced and long, leaving the palate full

Pedro XimenezThe sweetest style of sherry, produced with Andalucían grapes which are often sun-dried to concentrate

the sugar. Flavours of toffee, dried figs, walnut, lemon and coffee make up this utterly divine post-dinner tipple. Incredible with cheese, ice cream and most desserts in fact.

Port

A sweet Portuguese fortified wine produced with grapes from the renowned Douro Valley. We usually serve an LBV (late bottled vintage), ruby or tawny, subject to availability. Think notes of plum, dried

cherries, chocolate, raisin and cinnamon. Best served with cheese or a chocolate dessert.

the bottle. The smoke level has been turned up a notch, but there is also a rounder, richer mouthfeel. Essence of campfire, baked shortbread and an earthiness on the nose, followed by warm spice, candied orange and slight

Ballechin 2007 (11yr, Straight From The Cask) | Highland | 11.5Very limited release from one of the smallest distilleries in Scotland, Edradour in Perthshire. Their Ballechin release is peated and very highly regarded. This is an oloroso cask with dried fruits, coffee,

cherry and chocolate. Once it’s gone, it’s gone.

Balvenie 12yr DoubleWood | Speyside | 4.6The exclusive Balvenie Distillery and Malt Master David Stewart never fail to disappoint. This is an excellent cross-over malt, matured in ex-bourbon casks then finished off in sherry. Gentle spice,

vanilla and an excellent body.

Balvenie 14yr Caribbean | Speyside | 6.7A quality cask choice for this one, a golden rum cask. The sweetness and light fruity notes

throughout this will keep you wanting more. Golden sugar and syrupy bananas come through well with a long buttery finish.

BenRiach 10yr | Speyside | 4.5A small, quaint distillery just a stone’s throw from Longmorn, Elgin, production at BenRiach only re-started in 2004. A perfect dram for those cool autumn nights – green fruits aplenty with warm

spices of clove and nutmeg, hazelnut and an earthy undertone.

Bruichladdich 2008 Bere Barley | Islay | 7.5The second release of Bruichladdich Bere Barley 2008 uses single estate grain, grown on Islay. This is an

incredibly unique dram with notes of honeysuckle, gorse and heather, followed up with a palate of tropical fruits, citrus and ginger. Released as a Travel Retail Exclusive, this was one of our personal highlights

from the recent Whisky Fringe in Edinburgh. Keep an eye out for our monthly whisky club (3rd Wednesday) with a potential appearance by these guys coming up soon.

Campbeltown 2014 Blended Malt Thompson Bros Batch 2Campbeltown | 5.2

A vatting of two refill hogsheads, filled in 2014, limited to 816 bottles. A young blend of 5 years old malts from undisclosed distilleries, expect citrus fruits, apple and chamomile notes. The label artwork is the fine

Caol Ila 12yr | Islay | 4.5A pleasingly floral peated whisky. Light and delicate with smooth smoke throughout,

Cragganmore 12yr | Speyside | 4.5The quintessential Speyside malt – rich, floral with notes of honey and stone fruits, married with

Dalmore Cigar Malt | Highland | 10.5A whisky created by Richard Patterson to drink alongside a cigar. It has bags of character and

complexity due to the mixture of casks used to create it. The finish is not overly long but the punch of flavour when sipped is beautiful. Quite sharp and bold so that it stands out above the cigar but still a

very pleasing new look at whisky matching.

Fettercairn 12yr | Highland | 5.0Re-packaged and re-imagined, this new release from one of Aberdeenshire’s most historic distilleries has

been matured in ex-bourbon casks for 12 years. Tropical notes and gingery spice abound.

Glasgow 1770 (2019 Release) | Lowland | 6.4Opened in 2014, becoming the first single malt distillery in Glasgow for over 100 years. This young

unpeated malt has been matured in ex-bourbon casks, finished in virgin oak. Dried fruits and tropical aromas give way to butterscotch, sweet almond, honey and shortbread on the palate. Marmalade and oaky

spice lingers on the finish. We may not like their football, but their whisky can stay.

GlenAllachie 15yr | Speyside | 7.2Not one to retire after selling BenRiach and GlenDronach to Brown-Forman USA, Master Distiller

Billy Walker has sunk his teeth into the revival of GlenAllachie. Having stormed the awards list at the Scottish Whisky Awards 2019, expect to see more of this distillery. A combination of PX and Oloroso puncheons and hogsheads give this sipper a bounty of sweet notes - peanut brittle,

dried Christmas fruits, chocolate and ginger.

Glencadam 15yr | Highland | 6.5Produced not too far away in Brechin, Angus, believe it or not, this is the first appearance for Glencadam on a Tippling House whisky list. Recently awarded a Gold medal at the IWSC in the Highland Single Malt

category, the majority of spirit produced at the distillery usually gets sold into blends. Fans of the sweeter style of Speyside malts will enjoy this. Expect warm, wintery spice and baked orchard fruits with a creamy texture.

GlenDronach 12yr | Highland | 5.0Look no further for an entry in the world of sherries whiskies. Using a combination of PX and Oloroso, there’s cinnamon, raisin, ginger, pain au chocolate, rich cereal and a smoky toffee finish. Great value for

money from one of Aberdeenshire’s most consistent distilleries.

GlenDronach 15yr Revival | Highland | 7.5Discontinued in 2015, before being ‘revived’ again, there is a ton if aromas and flavour going on in this.

Blackberry and apple crumble, dried fruits and orange peel, mingle with tobacco, new leather and oily walnut.

GlenDronach 18yr Allardice | Highland | 12.4Oh sweet sherry…this has a viscosity about it. Baked pineapple, brown sugar and rum-like molasses on the nose, with chocolate, hazelnut and honey on the palate. Autumnal berries and maple syrup finish this

beast off. Enjoy this after dinner or on the side of a Scotch ale / heavy.

Glenfarclas 25yr | Speyside | 16.7Oh dear lord, how can whisky be this good? The pinnacle of a sherried Speyside malt, this is the perfect

after-dinner malt - rich, generous flavours of fruitcake, hazelnuts, dried fruit and a hint of dark chocolate and coffee. Worth the splurge.

Glenfiddich 12yr | Speyside | 4.2Aged for 12 years in American and European oaks, a classic benchmark Speyside malt. Slightly floral

with orchard fruits on the nose, light, floral with subtle spice on the palate.

Glenfiddich 15yr Solera | Speyside | 5.5Using a Solera system common in the maturation of quality sherry, 15yo malt from three different types

of casks are married together in a wooden vat, which is constantly topped up to ensure the quality is maintained. (IWSC 2012 - Gold Outstanding Medal - Whisky – Scotch)

Glenfiddich Experimental Series #4 :: Fire & Cane | Speyside | 4.8The 4th in a series of intriguing releases from one of Speyside’s ‘Big Three’, following on from the IPA, Project XX and Winter Storm. Glenfiddich are the masters of marrying different cask types and this release is not different. Fire & Cane sees a rare peated malt married with unpeated ex-bourbon matured malt, with the

result finished in Latin rum casks. If you like Balvenie Caribbean Cask, this is the next level up.

Glen Garioch Founders Reserve | Highland | 4.5A fantastic Aberdeenshire malt from a distillery mothballed in the 90’s, before re-opening as an

unpeated production house. The Founders Reserve is chewy – biscuits, malt, oak and honey.

Glenglassaugh Evolution | Highland | 5.5The second edition of Evolution, the follow up to Revival. A limited release showcasing their spirit’s

interaction with ex-Tennessee whiskey casks, this was matured in barrels that used to contain George Dickel (don’t be surprised if this changes to Jack Daniels soon).

Glen Moray Port Cask | Speyside | 4.2A beautifully-balanced malt at great value for money. The heavy ruby tint in the hue cannot hide

the Port influence in this classic malt from the Elgin-based Glen Moray distillery. Warm spices such as nutmeg and cinnamon mingle with notes of lemon, dark chocolate, honey and oak. Enjoy with a

cheeseboard or certainly after dinner.

Glen Moray Rhum Agricole Finish | Speyside | 6.3Glen Moray have taken advantage (quickly) of a change in rules when it comes to ageing Scotch. A

greater range of casks can now be used, including the likes of Calvados and this, a rhum agrocole cask from Martinique in the Caribbean. This is a game-changer - sweet and spicy, it has soft aromas

of marzipan, apricot jam, pineapple and burnt sugar. The palate offers notes of treacle toffee, kirsch cherries and spicy gingerbread. Beautiful!

Glen Ord 2012 (7yr, Carn Mor) | Highland | 5.2Two ex-bourbon barrels of Glen Ord have been bottled by Morrison and Mackay for this release in their Carn Mor range. Both were distilled in 2012 and matured for 7 years. This is a bright, zesty and tropical

dram with lots of distillery character. Non-chill-filtered, natural colour.

(The) Glenrothes 12yr | Speyside | 4.8One of the key expressions in the newly-released Soleo Collection, this is a classic sherry-soaked malt,

fruity and sweet. Aged solely in sherry-seasoned casks, this Speyside whisky has notes of vanilla, melon, banana and cinnamon.

(The) Glenrothes 2000 | Speyside | 15.0Not quite a 17-year-old, but almost. Winner of the 2017 Spirit of Whisky Fringe Award, this Batch 1 single sherry cask beauty is one of only 575. Tasting notes read like a checklist for classic Speyside malts

– rich, fruity, nutty and spicy.

Glen Scotia ‘Victoriana’ | Campbeltown | 8.0Highly-rated release by Glen Scotia, one of the smallest distilleries in Scotland. These are cask-strength

bottlings so the ABV varies from release to release. Finished off partly in heavily-charred casks (aka alligator char), and partly in sweet Pedro Ximinez sherry casks, there is a bold richness to this, namely

dark berries, dark chocolate, molasses and citrus peels.

Jura Seven Wood | Island | 7.5A brand-new release as part of the revamped Jura signature range, the Seven Wood refers to a

combination of seven cask types: American white oak ex-bourbon, Vosges, Jupilles, Les Bertranges, Allier, Tronçais, and Limousin barrels. You’ll have your work cut out for you identifying each one on

the palate! Stone fruits, hint of smoke with notes of liquorice and candied orange.

Kilchoman Machir Bay | Islay | 7.0The sixth release of Kilchoman’s ongoing Machir Bay, one of the first whiskies we ever listed back in 2012. It’s a vatting of whisky matured in first-fill bourbon casks for around six years, married and then finished in oloroso sherry butts before bottling. Notes of vanilla, green apple, citrus and toffee,

along with peppercorns and smoke.

Mortlach 1993 (25yr, #4467 Adelphi) | Speyside | 22.9The virtues of Mortlach need no introduction. Indie bottlers Adelphi have unveiled a pure gem in this, limited to only 314 bottles. Sherry all the way, with a melting pot of boozy raisins, treacle tarts, Seville

marmalade, figs and a touch of polished leather, before a finishing crescendo of cinnamon, nuttiness and oak. It’s not cheap, but the finest things never are.

Monkey Shoulder | Speyside | 4.2The three WGS distilleries (Glenfiddich, Balvenie and Kininvie) blended to create a ground-breaking contemporary blend. Bartenders love it, as do consumers. A malty, creamy delivery with a suggestion

of berry fruits. Juicy toasted barley, cloves and butterscotch mingle with Manuka honey, hot-buttered-toast and dried apricot. Touch of pepper on this monkey’s tail.*Try the exclusive Smokey Monkey,

same richness with added peat smoke.

North British 1995 (21yr North Star Spirits) | Lowland | 9.0A North Star Spirits independent bottling of 21yr single grain Scotch whisky from the North British

distillery, drawn from a single bourbon barrel. It was distilled in October 1995 and bottled in May 2017 with a very small outturn of 146 bottles. Butterscotch and milk chocolate on the nose, with a touch of

cinnamon underneath, followed by rich vanilla, melted chocolate, coffee bean, banana and peanut butter.

Octomore 10.4 Virgin Oak | Islay | 18.2An interesting new release of Octomore, distilled from Scottish barley in 2016, this is the youngest release to date of Bruichladdich’s super heavily peated single malt. The malted concerto barley has

been peated to 88ppm before distillation and the spirit was matured entirely in virgin French oak casks on Islay for three years.

Old Pulteney 12yr | Highland | 3.9A smashing maritime dram from Wick. Old Pulteney has short, squat pot stills that produce a slightly oily spirit which is filled into mainly ex-bourbon casks. Honeycomb, vanilla tablet, and soft oak, followed up

with a palate of chocolate peanuts, citrus and coastal salinity. Bang for buck, and much more.

Scarabus Islay Single Malt | Islay | 4.6This is the first expression from the new ‘Scarabus’ range by independent bottler Hunter Laing. Launched

at the Fèis Ìle 2019 at their newly opened Ardnahoe distillery, Scarabus is a mystery malt which showcases a traditional Islay whisky style of typical medicinal smoke balanced with rich, sweeter notes. It is named after a farmland on Islay where once a Scarabuss Distillery operated for a short time between 1817-18. Cold-smoked salmon, brine, crushed peanuts, burnt caramel and treacle, with a touch of stewed rhubarb

and vanilla.

Talisker 10yr | Island | 5.2A rich dried fruit sweetness with clouds of smoke and strong barley-malt flavours, warming

and intense. Underneath the smoke lies a sweet pear-like quality. Or as the islanders say: all of the warmth, but not the fire.

Wolfburn ‘Morven’ | Highland | 6.5The mainland’s most northerly distillery, based in Thurso, Wolfburn are distilling their whisky the

old-fashioned way – rustic, peated and a bit rough around the edges. This is a different dram for sure. Honey, wood shavings, vanilla and raisins, with some gentle smoke thrown in for good measure.

A high rye mash bill of 95% rye and 5% malted barley, this is a doozy of a whiskey for the money. Double Gold winner at the San Francisco WSC, expect cherry, all-spice, orange zest and stone fruits, along with a

little leather/tobacco. Sip it or Old-Fashion it.

Eagle Rare 10yr | Kentucky | 5.5Eagle Rare is great single barrel bourbon from the Buffalo Trace distillery. This 10 year old expression

is packed with sharp citrus peels over-lapped with fudge and coffee. A real treat.

E. H. Taylor Straight Rye (5th Release) | Kentucky | 13.5Aged for four years and bottled in bond, this is a fantastic straight rye and well worth checking out. Oily rye spices, citrus peels and all kinds of woody notes on the nose, with a palate thick with cooked

fruit and caramel. Potpourri, hints of butterscotch and prune before a long, sweet finish.

Gentleman Jack | Tennessee | 4.8Charcoal-mellowed twice, before and after the ageing process, this is a step-up from the entry-level JD. Not a bourbon due to the sugar maple filtration process, this Tennessee whiskey is packed full of vanilla,

dried stone fruits, green fruits and honey.

Hudson Manhattan Rye | New York State | 5.9The earliest Manhattan’s were rye-based, so it’s only fitting that this rye whisky from Tuthilltown

Distillery in the Hudson Valley would make an ideal base. On the nose, notes of honey and cereal, with stone fruits and vanilla on the palate. A touch of peppercorn and oak on the finish.

Michter’s US*1 Small Batch Straight Bourbon | Kentucky | 6.5Kentucky Straight Bourbon made by the Michter’s Distillery from a specific mash-bill including high quality American corn. Each small batch bottling includes no more than twenty barrels.

On the nose, dried fruit, fennel seed and fresh bread, with a rich, spicy palate of juicy fruit and cinnamon. Touch of black pepper on the finish.

Old Forester (86 Proof) | Kentucky | 4.2Old Forester is one of the oldest distilleries in Kentucky - even being commissioned to craft ‘medicinal’ alcohol through the long years of American prohibition. Our new house bourbon and makes a cracking

Old Fashioned. Soft vanilla, light spiced orange and rich tobacco leaf, with a long, warm finish.

Old Forester Statesman (95 Proof) | Kentucky | 6.5Despite being one of the oldest distilleries in Kentucky, Old Forester is more recognisable at the moment

since playing a significant role in the film ‘Kingsman: The Golden Circle’. This expression takes casks from the warmest areas of the rickhouse to create a smooth, spicy and punchier version of the Classic 86.

Woodford Reserve | Kentucky, USA | 4.6

Hands-down a bench-mark for bourbon. Toffee, caramel, citrus, spice and cocoa. The distillery says “Each sip of this Distiller’s Select craft bourbon contains over 200 congeners, natural color, aroma and

flavor components.” Sure…however we say it’s just boss.

BOX Dalvve Single Malt | Sweden | 7.2A youthful but brilliant entry into the market from Sweden’s Box Distillery. A combination of

peated and unpeated malt, averaging only 5 years, this truly small batch malt is matured in first-fill bourbon barrels and casks that have come from Jack Daniels, Heaven Hill and our very own Speyside

Cooperage. Go to their website for one of the most comprehensive and transparent detailed processes we have ever seen from a distillery. Basically a how-to if you wanted to replicate this yourself (but don’t

kid yourself that you can…!).

Cotswolds 3yr (That Boutique-y Whisky Company) | England | 8.9English single malt whisky, batch 1 from a release of only 1785 bottles. I know what you’re going to say…don’t. Try it first, let’s embrace our Southern neighbours and their distilling efforts. Bread and

butter pudding, with candied ginger, nectarines, toffee apples and golden syrup.

Nikka Coffey Grain | Japan | 5.8Using the two Coffey stills at the Miyagikyo distillery, which were imported from Scotland to Japan in 1963, this is a wonderfully exotic grain whisky with Bourbon-like vanilla and corn notes on the nose

and a palate of sweet, fruity flavours of melon, grapefruit and thick syrup, balanced by crunchy biscuits and fresh vanilla. This will appeal to fans of both bourbon and grain whiskies.

Redbreast Lustau Edition | Ireland | 6.9A pot still whiskey from the Emerald Isle, consisting of both malted and unmalted barley, a truly

unique Irish dram. This is finished off in first-fill oloroso sherry casks from Lustau resulting in a creamy palate of liquorice, marzipan and dark fruits.

Stork Club Straight Rye Whiskey | Germany | 7.2If you’re going to turn up to a gunfight, bring a machine gun. That’s what the German’s have done with

this stupendous rye whiskey. Produced using a blend of malted and unmalted Bradenburg rye, in a distillery just south of Berlin, before being aged in a combination of ex-bourbon and ex-white wine casks, the result liquid is a banger. Brown bread with Nutella, cane sugar, nutmeg and clove notes mingle with

autumn fruits and a dusting of black pepper. If that didn’t sell it, check the sexy bottle out…

Teeling Small Batch | Ireland | 4.8This whisky has an interesting character. Rum casks have been used in its production so there are hints of spice throughout. Lots of floral notes, paired with a buttery finish, make for a unique whisky from a

new distillery in Dublin’s ‘Liberties’ historic brewing and distilling triangle.

Tullamore Dew | Ireland | 4.2The nose is fruity and biscuity. There are gristy notes with caramel and toffee sweetness and plenty of

peels. Palate is of good body with notes of sherried peels and spice, granary toast with butter and honey, grains and vanilla cream. The finish is quite vegetal and long with notes of caramel and toffee.
