PUBLISHER’S NOTEWelcome to what we hope will be the first of many Inside Jefferson Parish issues. For sometime, I’ve believed that Jefferson Parish deserves its own monthly magazine and, as a Jefferson Parish resident for the past 10 years, I’m happy to help produce it and bring it to you.

Our plan for Inside Jefferson Parish is to bring you lifestyle articles, profile interesting Jefferson Parish residents and business owners, and help show you some things that we think making living in Jefferson Parish great.

For our first issue, since it is Spring, we wanted to showcase Fashion and spotlight some of the great local shops in Jefferson Parish, and, since it’s May, that means Mother’s Day. We asked a couple of Jefferson Parish residents to discuss their Moms.

We also want to get you ready for the Summer with our Summer Shape-Up. We asked 3 fitness experts to try to help you get back into shape.

This issue of Inside Jefferson Parish also includes a regular feature called “In The Kitchen With…” where we’ll take you behind the scenes of a restaurant or into the kitchen of a Jefferson Parish personality and they’ll showcase some recipes for you. This month, we’re going “In The Kitchen with Chef Saul” from Salvatore Ristorante in Fat City. Chef Saul has picked out 2 great recipes that we hope you will try and enjoy.

Happy Mother’s DayMothers. Everyone has one and every second Sunday in May since President Woodrow Wilson signed it into law, we’ve officially celebrated Mother’s Day.

But, the true origin of Mother’s Day dates back to the Ancient Greeks. Greeks held a festival every year in March for Cybele, the mother of Greek Gods. Ancient Romans also held a similar festival patterned after the Greeks called Matronalia. Originally, Matronalia was celebrated on the first day of March, which was the first day of the year according to the Ancient Roman Calendar.

Since this is our first issue, our “birth” if you will, and it is May, I thought it only fitting that we include a feature on Mothers. For me, celebrating Mothers on one day a year doesn’t seem nearly enough. You see, I have extremely strong feelings about my mother. My parents got divorced when I was an infant and my mother raised me as a single mother. My mother worked two and sometimes three jobs to make sure that I had a roof over my head, clothes and food. Even though we struggled, my mom sacrificed so that I could attend private school.

While we probably weren’t even considered “Middle-Class”, I never lacked or wanted anything. Whether it was a new baseball glove, school clothes, or anything else, my mother always found a way to get it for me.

During the course of my now almost 50 years on this planet, I’ve had the opportunity to meet a lot of people. I can say that, without a doubt my mother is the strongest person that I’ve ever met. I know that I’m biased but, if you ever met my mother, I’m sure that you would agree.

My mom’s birthday is May 12th and we always celebrated her birthday and Mother’s Day together. Even though we combined the Celebration, she never complained and even though I wasn’t always able to get her an extravagant present, she always raved about whatever I gave her. She turns 77 this year and I will be in Florida celebrating her birthday and Mother’s Day. I wouldn’t miss it and I’m thankful that I can spend some time with her.

For Inside Jefferson Parish’s Salute To Mothers, I asked a couple of friends to discuss their moms as well.

So to my mother and mothers, grandmothers, great-grandmothers, moms-to-be and aunties that played a maternal role, Inside Jefferson Parish says “Happy Mother’s Day.” One day a year surely isn’t enough.

SummerSummer means many things: vacations, baseball, cookouts, beaches. But for many, Summer is a time of dread. How am I going to fit into my bathing suit this year? What am I going to look like on the beach?

Inside Jefferson Parish spoke with three Fitness experts: Darren Colletti, owner of Alternative Body Solutions and Snap Fitness of Metairie; Tracey Fletes, owner of Body N Spirit Athletic Club in Harvey; and Fitness Guru Leslie Hoffman from the TV show “Get Fit With Leslie”. We asked them for their tips on how you can get into Summer Shape.

With Summer time fast approaching the main goal for both men and women in the gym is to look good in a swimsuit. For women that means working on the backs of legs, the glutes (butt), and the abdominals. For men it’s a similar story except that men generally stick to the “beach” muscles year round and work extra hard for that coveted “six-pack” come summer. The biggest problem both sexes have when trying to whittle away the waist is that they fail to acknowledge or they deny the simple fact that – ABS ARE MADE IN THE KITCHEN, NOT THE GYM! What does that mean? It means that no matter how sit ups or crunches you can do those exercise will never burn off enough calories to get you a six-pack. Getting the coveted six-pack or flat abs is all about what you eat.

In order to get beach ready for those that have already been a regular in the gym they should change up their routine to include more cardio respiratory training. That could mean adding more running or walking on the treadmill. It may also include more work on the elliptical or bike, or circuit training (moving from one exercise to the next with as little rest as possible). Besides circuit training, one can add in HIIT (High Intensity Interval Training) to the mix. These methods will help get that big calorie burn we all need to drop down to a smaller size.

Some of the best exercises a person can add to their repertoire to get beach ready are compound movements. Why? Because compound movements use multiple muscles in every movement; therefore creating a bigger calorie burn. Compound movements like the squat, lunges, pushups, pull-ups, bench press and others. These will help build muscle faster and the more muscle a person has on their body, the more calories they will burn around the clock. These movements can be performed with or without weight in most cases.

For those who are just starting out need to remember to start out slow. A newbie needs to develop a habit of going to the gym; and the best way to do this is by getting to the gym three times per week for at least thirty minutes. Start with using the treadmills or other cardio equipment and gradually start using the weight machines. If you are unfamiliar with the equipment ask a gym employee, trainer or even another gym member for some help. Gradually build up to four or five times per week of exercise. After just three weeks of getting to the gym three times a week you will develop a habit of going and your body will let you know you need to go.

When I train clients to get that beach body I focus on core exercises, the abdominal, back and obliques as well as hamstrings and triceps. These are the areas that will tone up the body for the summer. For men I would add chest exercises, women I would add legs for the hips.

For core - focus on using a resist a ball for the abs. This can be done at home or on break in the office-lie on the ball and perform sit ups. The ball gives more range of motion than the floor, so the results are greater.

Women - to work those legs-squats and walking lunges. At home or office, use light weights or soup cans for resistance. The exercise-squat-stand with legs shoulder width apart in front of a chair. Now as you were going to sit in chair but right before sitting, come back to the standing or your beginning point. Your weights or soup can should be in your hands. Perform this 10-12 times up to 3 sets.

Lunges - the exercise is like walking taking large steps. Walking across a room holding weights/cans for resistance, drop the back knee almost to the ground but not touching the ground. Perform this across the floor three times.

Let me add squats and lunges are two of the best exercises for the lower body when performed correctly. On all exercises, keep your abdominal area engaged and weight on your heels. You can perform theses exercises 3-5 times per. Week. Anything over three days a week changes the shape of the body.

Triceps and chest - at home or in the office, simply get a chair. For the triceps/back of arm, sit in chair with hands under buttocks. Lift buttocks off chair. Bend elbows as you drop buttocks to ground. Fingers are pointed down on chair. Perform 8-12 for 3 sets.

Chest - using the same chair. Face the chair with hands placed on the seat. Perform a push up on the chair. 15 repetitions to start.. Both of these exercises can be challenging so do what you can and work up to more!

Some extra things you can do - take the stairs, ride your bike, park farther away, get up from you desk, instead of sending email or text walk message to co-workers. These are simple tips that give big results. Stay committed and

you will see the change.

My number 1 tip - watch the diet. We don’t realize how much this plays a major role. 80% of what we eat goes to our belly. So drink plenty of water and cut out simple carbs (white breads, white rice, white pasta, cakes, donuts. Yes, the junk food.]

Leslie Hoffman is the host of the award-winning TV Show “Get Fit With Les-lie” seen locally on Cox Channel 4 daily at 7:30am and Mondays at 7:30pm and on Cox Sports TV (Channel 37) Mondays at 5:30pm and Wednesdays at 6am.

IJP Magazine: What are the problem areas for women and how can they get toned?

The areas that women find a challenge are the arms, chest and glutes. There are ways to tone these areas in the comfort of the home.

THE GLUTESOne of the best exercises for toning the butt is the squat. Stand with your feet hip width apart, hands at your sides and keep your abdominal muscles tight. Lower your body slowly as if you were going to sit down on a chair. Bend your arms as you are going down. Do this exercise slowly keeping your weight in your heels and slowly push your way back up but do not lock your knees. Repeat this move 8-15 times, pause for a minute. Perform 2-3 sets. THE CHESTThe best exercise for chest firming is the basic push up. Proper form is key to getting the best result from this exercise.

The push up can be performed from either your toes or your knees. Place your hands on the ground shoulder width apart. Keep the abdominal muscles tight and the back straight. The starting position for a push up is your toes on the ground, your arms straight down on the ground holding your body up. Lower yourself down slowly so that your elbows make a 90-degree angle. Then, slowly raise yourself back up to the starting position. My suggestion is to do as many as possible. Take it to fatigue. Do a couple of sets every other day. You will see yourself building strength.

THE UPPER ARMSTo target the underarm sagging, focus on the tricep muscles and toning them. All you will need are some dumb bells. Stand next to a table and rest your elbow on the table. Bend your knees slightly. In your opposite hand with the dumbbell, bend the arm to 90-degrees. This is the starting position. Straighten your arm out behind you and hold that position for a few seconds. Perform 8-12 reps, at least 2 sets. Then switch sides and work the other arm.

To work the opposite side of the arm, do a bicep curl. Use your dumb bells. Curl your arms up to raise the bar bell to your chest, and then lower them down. Keep your movement slow and controlled and make sure to keep your back straight. Lower the dumb bell back down to the starting position.

IJP Magazine: Any exercises that people could do in their home/office outside of a gym to tone up? There are many exercises you can do in the home/office outside a gym. Here are a few; LOWER BODYChair Squat: While sitting, lift up until your hips are just hovering over the chair, arms out for balance. Hold for 2-3 seconds, stand all the way up and repeat for 16 reps.

One-Leg Squat: Make sure the chair is stable and take one foot slightly in front of the other. Use the hands for leverage as you push up into a one-legged squat, hovering just over the chair and keeping the other leg on the floor for balance. Lower and repeat, only coming a few inches off the chair for 12 reps. Repeat on the other side. Frontal Thigh: Sit straight in your chair holding the abs in and extend the left leg until it’s level with hip, squeezing the quadriceps. Hold for 3 seconds, lower and repeat for 12-20 reps. Repeat on the other side. Do a couple of sets every other day.

Inner Thigh: Place a towel or an object of resistance between the knees as you sit straight with the abs in. Squeeze and release completing 15-20 reps of slow pulses. Desk Dips: Sit on edge of desk and place hands next to hips. Place legs on chair for support. Move hips in front of desk and bend the elbows, lowering the body until the elbows are at 90 degrees. Push back up and repeat for 12- 15 times. IJP Magazine: Any starting points for those that are really out-of-shape? First, it is important to get a heads up from your doctor before beginning an exercise program. I would suggest starting slowly. Walking is great!! Start at a slow pace and when comfortable, pick it up. After a few weeks, you can vary your walking program with speed walking. As far as toning exercise, stick with light dumbbells to tone and firm.

When you go out to eat, you want two things: great food at a great value and you want to be treated right. If those are your criteria, you’re probably a fan of Chef Saul Bollat and Salvatore Ristorante, 3226 N. Arnoult in Fat City.

Salvatore is celebrating it’s 19th Birthday this year and for 17 of those years, when you walk into Salvatore, you’ve probably been greeted by Chef Saul.

Chef Saul started at Salvatore in 1994 as a host. In 2001, he became the sole owner of Salvatore.

“I love the people,” Chef Saul said. “I’ve been cooking all my life but I have a wonderful time hosting people and they give me energy. I‘ve always had a passion for the restaurant business.”

Chef Saul also believes strongly in giving back to the community. After Katrina, he served over 2,000 people daily in Gretna and assisted after Gustav as well. He was made an Honorary Citizen of Golden Meadow, given the Key to the City of Kenner, and received accolades from many groups and communities.

Salvatore features menu items in the style of Elmwood Plantation and combines Italian Flavors with Creole Traditions.

“I have a lot of friends from the Bayou and I’ve learned to cook many Creole and Cajun items like Frog Legs, Rabbit, Gumbo, Shrimp Creole and Etouffee.”

And Chef Saul experimented with dishes and combined items to make some of his signature dishes.

“One minute you’re cooking Soft Shell Crab and you’re cooking Crawfish Etouffee for someone else and you think, what if I combine the two and you get Soft Shell Crab Lafitte.”

Chef Saul also takes standard menu items you’ve seen at many restaurants and adds his own twist to them.

“Everybody serves Chicken and Veal Marsala. I use a sweet Marsala wine to saute the onions and then we add a beef reduction. This gives our Chicken and Veal Marsala a great flavor.”

“A lot of restaurants now do Char-Broiled Oysters. The Char-Broiled Oysters at Salvatore are very unique because I use sweet butter, olive oil and Pinot Grigio wine for the sauce.”

Chef Saul’s Char-Broiled Oysters are also a little heavier than most with garlic, Romano and Parmesan Cheeses.

Salavatore has an extensive menu and Chef Saul also offers Daily Lunch Specials.

“We try to mix things up at lunch for people to give them a variety of choices. In addition to our regular menu, we offer items at lunch that aren’t on our regular menu like Beef Brisket, Red Beans & Rice, Meatloaf, etc. We usually offer 8-10 daily lunch specials some starting at $6.95.”

At Salvatore, Chef Saul wants you to feel at home. If there’s something that you want that isn’t on the menu, just ask and more often than not Chef Saul will make it for you.

And, if you’ve got a sweet tooth, Chef Saul has you covered with Italian favorites like Spumoni and Tiramisu; Bananas Foster Cheesecake, Chef Saul’s spin on a New Orleans favorite; homemade Peach Cake and Chef Saul’s personal favorite (and mine) Cannolis.

Salvatore also has an extensive wine list with many California and Italian Wines ranging from $20-50 per bottle, a selection of Super Tuscan wines from $200-350 per bottle, and his Private Cellar with Bourdeauxs ranging from $1,500-3,000 per bottle.

Salvatore is also available for private parties of all sizes.

Salvatore is open Sunday through Thursday from 11am - 10pm for lunch and dinner and on Friday and Saturday the last seating is at Midnight. Call them for reservations or daily specials at 455-2433.

Chef Saul’s Italian BBQ Shrimp

“This is one of my favorite dishes”, Chef Saul said. “It’s simple to make at home and will impress your husband, friends or relatives.”

Ingredients:

1lb (about 12) Large Louisiana Head-On Shrimp8 cloves Garlic½ Cup Pinot Grigio Wine (you can substitute Chardonnay)¼ Cup Extra Virgin Olive Oil½ Tspn Oregano½ Tspn Thyme¼ Tspn Fresh Black Pepper¼ Tspn Salt8-10 Black PeppercornsBread for dippingParsley for garnish

NOTE: “99% of other Restaurants that serve BBQ Shrimp use about a pound of butter or margarine,” Chef Saul said. “I prefer to use Olive Oil as it is much lower in cholesterol and better for your heart.”

Sautee Garlic in Olive Oil over Medium High Heat and cook until Garlic is golden. Do not burn the Garlic. Add Shrimp and cook for

about 5 minutes or until the Shrimp are almost cooked through.

1 lb. (about 12) Large Louisiana Head-On

Shrimp.

Add Wine and season with Oregano, Thyme, Pepper & Salt. Add Peppercorns. Put pan in 350 degree

oven and cook for 7 minutes.

Toast Bread if you like and arrange in bowl. Add Shrimp and Sauce. Enjoy.

Ingredients:

½ - 1lb Leftover Steak, cut into small piecesSalt and Pepper to season¼ Green, Yellow and Red Bell Pepper, sliced1 Slice Red Onion2 Roma Tomatoes, Sliced6 White Button Mushrooms, Sliced½ Stick Sweet ButterPepper to taste (no more Salt)½ Tspn Beef Base or 1 Beef Bouillon Cube ¼ Cup ChiantiSpring Mix Greens

Put Spring Mix Greens on a platter and ladle the cooked Steak Mixture over it. Use the cooking juices as the salad

Season Steak with Salt and Pepper. Melt Butter and saute Onion and Peppers over Medium/High Heat. Add Steak and heat, but try to not

Food Festivals get cranked up in May across Louisiana with a major dose of music mixed in.

At the beginning of the month and one end of our state, the 54th Annual Contraband Days (April 26-May 8) will be held in Lake Charles. Contraband days celebrate someone near and dear to Jefferson Parish, Jean Lafitte and feature Carnival Rides, great food and some great National and Regional Musical Acts including Jars of Clay and Tracy Lawrence. Music and Food are also the focus that the New Orleans Jazz & Heritage Festival (April 29-May 8). Thursday, May 5th features Wilco and Cyndi Lauper. Friday, May 6th Better Than Ezra, Arcade Fire, Willie Nelson and Gregg Allman are among the acts scheduled. Saturday, May 7th brings Jimmy Buffett and The Strokes and the event concludes on Sunday, May 8th with Cowboy Mouth, Kid Rock, The Neville Brothers, The Radiator’s Farewell and it wouldn’t be Jazz Fest without Maze featuring Frankie Beverly. In Breaux Bridge, they are celebrating Crawfish with the Breaux Bridge Crawfish Festival (May 6-May 8). Lots of great crawfish dishes and music from Nik-L-Beer and Breaux Bridge native Hunter Hayes. Also May 12-May 15, our neighbors in Plaquemines Parish will be holding the Plaquemines Parish Heritage & Seafood Festival. Also, the last weekend in May brings Bayou Country Super Fest (May 28-May 29) to Tiger Stadium in Baton Rouge.
