1.Pressthe'tilt'button,locatedatthetopoftheneckofthemixer.Whilethebuttonisdepressed,holdthehandle(1)andeasetheheadofthemixerback.Themixerheadwilllockintothistiltposition(2).
2.Selectthedesiredattachmentsdepending
onthemixingtasktobeperformed;
–Beatersforcreamingbutterandsugar,plusmixingheavycakemixes.

3.Insertselectedattachment;
Beaters–selectthetwobeaters.Takethebeaterthathasapointier,curvedbottomandhasaredcolouredbandaroundthetopofthebeater–illustratedasbeater(A).Insertbeater(A)intotheleftholeontheundersideofthemixerhead,theholeisidentifiedbyareddotbesideit(3).
Takethebeaterwiththeangular/flatbottom,illustratedasbeater(B)andinsertintotheremaininghole.

5.Onceyouhaveselectedthebowlyouwishtouse,placeitontherotatingbase.Gentlyrotatethebowlinananti-clockwisedirectionuntilitdropsintopositionorissittingflat(a).Thenrotatethebowlclockwisetolockitintoposition(b).Thebowlshouldfeelfirmwithnomovement(7).

Sunbeamlaunchedits3-waybeatingactioninthelate1920swhichrevolutionisedmixingattheturnofadial.The3-waybeatingactionisdeterminedbyeachofthetwobeatersturningagainsteachother,plusthenthebowlalsorotating.
Ourlatestinnovationofthishistoric3-waybeatingactionhasbeentheintroductionofanadditionalmotorintothedesign.Onemotorislocatedintheheadofthemixer.Thisdrivestheindividualbeaters,turningeachinoppositedirections.Thesecondmotorislocatedinthebaseoftheneckofthemixeranddrivestheturntable,inturnrotatingthebowlagainstthedirectionoftheoutsidebeater.Thespeedofthebowlrotationisautomaticallydetermineddependingonthemixingspeedselected.Thereforeasthemixingspeedincreasessodoesthespeedofthebowl,andasthemixingspeedisdecreased,thebowlspeedalsoslows.Theseactionscombinetoensureamorepowerfulandthoroughmixingresult.Thistwin-motordesignispatentpending.

Beforecleaningyourmixer,ensurethatthepoweristurned'Off'atthepoweroutlet,thenremovetheplug.Wipeovertheoutsideareaofthemixerincludingtheheadandbase,withadampenedclothandpolishwithasoftdrycloth.Wipeanyexcessfoodparticlesfromthepowercord.Washthemixingbowls,beaters,whisksanddoughhooksinwarmsoapywaterandwipedry–useabrushifnecessarytoremoveanystickyfoodparticles.Thestainlesssteelmixingbowls,beaters,whisksanddoughhooksmaybewashedinthedishwasher.Theturntablecanberemovedforthoroughcleaning.Thisshouldbedoneoccasionallytokeepyourmixerclean.

ShorteningShorteningisanyoneofthesolidfats(animal,vegetable,oracombinationofboth)whicharesuitableforgeneralcookingpurposes.Somearemoresuitedthanotherstoparticularrecipesandarethereforespecified.Wherethetermshorteningisused,selecttheonemostpleasingtoyourpalate.
ButterButterismadefromapproximately80%milkfat(cream),andischurnedoveraperiodoftimetoproduceasolid(butter).Butterisusedtostabilise,texturiseandaddflavour.Itisavailablesalted,unsaltedandclarified.Unsaltedbutterisbestforcakebaking.Clarifiedbutterhashadthemilksolidsandsaltremoved,makingitidealforpastrymakingasitcanbeheatedtohighertemperaturesthanregularbutter.
Note:Margarinecanbeusedasasubstituteforbutter;howeveritismadefromvegetableoils,soitmayslightlyalterthetextureoftheendresult.Therearevarioustypesofmargarinesavailableincludingbutter-margarineblendsandfatreducedvarieties.
YeastYeastisaraisingagentusedindough.Itisamicroscopiclivingorganismthatgrowsrapidlyinsuitablewarm,moistconditions.Theyeastfeedsonsugarandexpelscarbondioxidewhichexpandstheglutenframework.Whenfoamingyeastdonotallowthewatertemperaturetoexceed40°C,asthiswillkilltheyeast.A26˚C-30˚C,draftfreeareaismostsuitableforthegrowthofyeastduringtherisingprocess.BothDryYeastandfreshCompressedYeastmaybeusedintherecipesincludedinthisbook(7gofdryyeastisequivalentto20gofcompressedyeast).
SubstitutesHerearesomesuggestionsforsubstitutingingredientsinrecipes:

9. Allrecipeshavebeencarefullydevelopedandtested,butshouldyoufinditnecessarytoaltertheingredientsortin,youmustallowforavariationincookingtime.Alwaystestfordonenessinbakedgoodsbeforeremovingfromovenorothercookingappliance.
10.Duringmixing,ingredientsmaysplashtothesidesofthebowl.Turnthespeedcontroldialtothe‘O’positionandusearubberorplasticspatulatoscrapethebowl.NEVERUSEAKNIFE,METALSPOONORFORK,asthesecandamagethebeatersandbowl.Alightscrapingaftertheadditionofeachingredientassistsinachievingefficientmixing.

Step 1: Preparing the yeastForthedryyeasttobeactivateditneedstoferment.Todothisplacewarmmilk,sugarandthetepidwaterintoabowl.Adddryyeastandmix.Standinawarmplaceuntilmixturestartstofoamorbubble.Thisprocesswilltakeabout10minutes.Besurenottooverheatthemilk,ashottemperatureswillkillanddeactivatetheyeast.
Note:Ifdriedyeasthasnotbeenstoredproperly,hasbeenexposedtolight,extremeheat,orisoutofdateitmaybedeadorinactiveanditwillnotferment.
Step 2: Preparing the doughNOTE:Insertdoughhooksintothemixerhead(refertopage7).
1.Placethedryingredientsintothelargebowlandpositionitontotheturntable.SetthespeeddialonLOW(1),andgraduallyaddtheliquidingredientstothebowl.
NOTE:Usearubberorplasticspatulatoscrapethedryingredientsfromthesidesofthebowl(refertopage15).
SAFETY TIP:Donotattempttofeeddoughintothedoughhookswithyourhands,spatulaoranyotherutensilwhilethemixerispluggedintoapoweroutletorinoperation.
2.Whentheingredientsstarttoformaball,scrapedownthesidesofthebowlwithspatulaifnecessaryandremoveyourdough.
SAFETY TIP:Donotusethemixerneartheedgeofabenchortabletopwhereitmayfalloff.
3.Dependingontherecipe,youmayneedtokneadthedoughbyhandinadditiontousingthemixer.Inthiscase,placedoughontoadry,lightlyflouredsurfaceandkneadforabout3-5minutes,oruntildoughissmoothandelastic.Transfer
doughtoalarge,wellgreasedmixingbowl.Coverthebowlwithalightclothorplasticwrapandplaceitinawarm,draft-freeareauntilthedoughdoublesinsize.
5.Plungefistintothecentreoftherisendoughtopunchoutexcessair.Foldouteredgesintothecentreandturndoughoutontoalightlyflouredsurface.Cutandshapedoughtoformbuns,rollsorfree-formloavesandplaceonpreparedbakingtrays.Alternatively,placedoughintopreparedbreadtins.
