0.1 This Indian Standard was adopted by the Indian StandardsInstitution on 30 April 1984, after the draft finalized by the Spices andCondiments Sectional Committee had been approved by the Agriculturaland Food Products Division Council.

0.2 Spices in the form of oleoresins are increasingly used by food,pharmaceutical and flavour industries. The oleoresins are preferred astheir quality, flavour and strength can be standardized for better unifor­mity of the end product.

0.3 Turmeric oleorsin is 0 btained by extracting turmeric with food gradesolvent and subsequent careful removal of solvent by distillation. Asobtained, oleoresin will be mixture of non-volatile colouring pigment;"curcumin and the essential oil (turmeric oil). Deoiled oleoresin is alsoused since oil does not have a very attractive flavour and aromacharacteristics. The curcumin gives a bright yellow colour to theproduct.

0.4 In the preparation of this standard considerable assistance has beenderived from EOA specification No. 271 'Oleoresin turmeric' issued bythe E~sentialOil Association of USA.

0.5 This standard is subject to the restrictions imposed under thePrevention of Food Adult"alion Act, 1954, and the Rules framed thereunder,wherever applicable.

0.6 For the purpose of deciding whether a particular requirement ofthis standard is complied with, the final value, observed or calculated,exprel.ing the result of a test or analysis, shall be rounded off inaccordance with IS : 2·1960·, The number of significant places retainedin the rounded off value should be the same as that of the specified valuein this standard.

1. SCOPE

1.1 This standard prescribes the requirements and methods of samplingand test for turmeric oleoresin.

2. TERMINOLOGY

2.1 For the purpose of this standard, definitions given under2 of IS : 326­1968* shall apply.

3. REQUIREMENTS

3.1 Raw Material. - Turmeric oleoresin shalJ be obtained fromground dried rhizomes of Curcuma linga L.

3.2 Solveat. - The following solvents either singly or in mixture shallbe used. As far as possible they should conform to the specificationsindicated against each:

a) Isopropanol ( se, IS : 2631-1976t )

b) Acetone ( $" IS : 170-1976: )

c} Dichloromethane ( Sit IS : 4566-1979§ )

d) Trichloroethylene ( It' IS : 245-197011 )

~ e) Rectified spirit ( se« IS : 323·1959~ )_.

f) Ethyl acetate ( s" IS : 229·1972•• )

3.3 De.crlptloa -- The material shall be a viscous to powdery yellowto orange red material or shall consist of an upper oily layer and a lowerviscous yelJow to orange red mass, free from extraneous matter andadulterants.

S.t The material shall comply with the requirements given in Table 1.

4. PACKING AND MARKING

4.1.1 The material shall be protected from light and stored in a coolplace.

4.2 MarkiDI - The containers shall be marked with the followingparticulars:

a) Name of the material;

b) Manufacturer's name and trade-mark, if any;c) Net mass of the material when packed; andd) Batch or code number.

5. SAMPLING

5.1 Representative samples of the material, sufficient to give a compositesample for triplicate determinations, shall be drawn from the containersselected from the lot as prescribed under 3 of IS : 326-1968*.

5.2 Tests for all the characteristics shall be conducted on the compositesample.

6. TEST METHODS

6.1 Tests shall be conducted as prescribed in Table 1.

6.2 Q,aallty 01 RealeDt. - Unless specified otherwise, pure chemicalsand distilled water ( SI, IS : l070-1977t ) shall be employed in tests.

completely, using high vacuum towards the end. Mix the oil oCturmericalready obtained with the residue and homogenize the mixture. Thistwo-step procedure avoids 10S8 of essential oil during solvent removal andhigh vacuum helps to remove last traces of alcohol.

A-l.2 Odoar - Test the odour quality of the sample by comparing withthe standard oleoresin by smelling strip technique as prescribed under 4of IS : 2284-1963·.

A-l.2.1 The material shall be deemed to have passed the test if it givesno ott-odours but only the typical odour of turmeric.

A-I.3 T••te - Weigh out in a beaker 4-5 g of the neutral soup basecontaining 18 parts of sodium. chloride 22 parts of castor sugar and 60parts ofcorn flour. Mix into a smooth cream with 10 ml of cold water.Add, while stirring well, 100 ml of boiling water. Place the beaker ona hot-plate and bring the soup to boil for one minute. Add one gram ofsample and stir thoroughly. Cool to about 60°C and submit to tastingpanel for evaluation. A similar soup mixed with the standard oleoresinshall be prepared for comparison.

A-I.3.1 The material shall be deemed to have passed the test jf it hasno off-flavours.

B-2.1 Ethyl alcohol ( or suitable Denatured Alcohol) - 95 percent.

8-3. PROCEDURE

8-'.1 Weigh accurately 0-1 g of the turmeric oleoresin sample into asmall beaker and transfer into a 100 ml volumetric flask with alcohol.Dilute to mark with the alcohol and pipette 10 ml of this solution intoanother 100 ml volumetric flask. Dilute to volume with the alcohol.Measure the absorbance of the extract at 425 nm in 1 em cells against analcohol blank.
